ABSTRACT

Fifty random samples of market raw milk, collected from different retail outlets in Giza city were examined for the presence of thermophilic bacteria. The obtained results revealed contamination of 84% of the examined samples with thermophiles, with a mean count of 8.50 X10[2] +/- 2.57 X 10[2] /ml. The highest frequency distribution [57.14%] lies within the range 10[2] - 10[3]. B.subtilis, B.stearothermophilus, B.pumilis, B.lichen formis, B.coagulans, B.alvei, Strept. thermophilus, L.bulgaricus and L.acidophilus could be isolated from the examined samples at different percentages [5-21.25%]. The economic and public heath importance of the isolated organisms, as well as the suggested control measures were discussed

ABSTRACT

Bacteriological investigations of forty samples, 20 each of dish A and dish B obtained from a large catering plant in Cairo were conducted. Aerobic plate count, total enterobacteriaceae count, staphylococci count and MPN of coliforms as well as presence of salmonella organisms were investigated. Salmonella organisms could not be detected. The public health significance of isolated microorganisms as well as suggestive measures for production, handling and storage of meals in air catering premises were discussed

ABSTRACT

Milk samples from 10 buffaloes were bacteriologically tested before [control] and after treatment with the sanitizers Mikro-Quat and Webco Sol extra. The average MSC/ml milk of control samples was 4.3 x 10[8], while after treatment with the two disinfectants, it was 8.24 x 10[7] and 1.35 x 10[7] respectively. The average coliform content [MPN/ml] in examined samples before treatment was 2.67 x 10[3], while it was reduced to 1.7 x 10[2] and 0.9 x 10[2] after treatment respectively. Thermophilic bacteria had an aveage of 9.4 x 10[2] in control samples, while in case of examined samples after treatment with the two disinfectants it was 62.53 and 71.41 respectively. Psychrotrophic organisms were present in all examined milk samples before treatment, with an average of 4.57 x 10[7], while it had an average of 9.6 x 10[6] and 8.7 x 10[6] respectively after treatment with the sanitizers Mikro-Quat and Webco Sol extra. Suggested measures to improve the quality of produced raw milk are given

ABSTRACT

One hundred samples [50 each] of market raw milk and farm milk, collected from different localities in Cairo and Giza, were bacteriologicaly examined for detection, isolation and identification of coliform organisms. All examined samples of market raw and farm milk pro vied to be contaminated with colfiorms, with a mean value [MPN/ml] of 43.82 x 10[11] and 80.63 x 10[9] respectively. Escherichia coli could be isolated from 22% and 10% of examined samples of market raw and farm milk respectively. Entrobacter cloacae, Ent. Agglomerans, Ent, aerogenes, Ent. Sakazakii, Citrobacter freundit, cit. dversus, Cit. amalonaticus, klebsiella oxytoca, K.pneumoiae, K.ozoenae and K. rhinoscleromatis could be isolated at varying percentages serological typing of isolated E.coli strains, revealed identification of 12 strains belonging to five different serotyging to five different serotypes: [0]128: k67: [B]12, [0]125: [K]70: B[15], [0]112:, B]11, [0]111: [K]58: [B]4 and [0]78: [K]80: B'. The public health importance and economic significance of existing microorganisms as well as the suggested measures for improving milk quality have been discussed

ABSTRACT

One hundred and fifty market hen eggs collected from different localities in Cairo and Giza were examined microbi logically. Obtained results revealed that the mean values of aerobic bacterial count, coliform content [MPN/ml], staphylococcal count and mold and yeast count were 52.17 x 10[4], 96.25, 168.57 and 115.71/ml respectively. S. pullorum, proteus vulgaris and P. mirabilis could be isolated from 0.66, 6.66 and 5.33 percent of examined samples respectively, while Escherichia coli, Enterobacter cloacae, Citrobacter freundii, Klebsiella oxytoca, K. ozoenae and Pseudomonas spp could be isolated at varying percentages [2%-12%]. Staphylococcus aureus and Staph. epidermidis could be isolated from 3.33% and 23.33% respectively, while the genera Penicillium, Asperigillus, Cladosporium, Ascopularsis, Helmenthosporium and Mycelia sterilia could be isolated at different percentages ranging from 2.66% to 40%. Strict hygienic measures should be adopted in the farm during production and handling to improve the quality of produced eggs
