ABSTRACT

Se realizó una evaluación del contenido de nutrientes de yac¢n proveniente de cinco departamentos del país: Cajamarca, Junín, Huánuco, Lima y Puno, determin ndose el contenido de lípidos, carbohidratos, proteínas y minerales como magnesio, cobre y hierro, encontó ndose en las muestras procedente de Lima mayor contenido de proteínas (4,52%) y cobre (1,14 mg/100g), mientras las muestras provenientes de Hu nuco tuvieron mayor contenido de magnesio (77,2 mg/100g). Presentan mayor contenido de grasa las muestras provenientes de Junín (0,87%) existiendo diferencia significativa con las de Lima (0,05%). Hubo diferencia significativa en el contenido de fibra siendo mayor en Cajamarca (3,31%), el contenido de los dem s nutrientes determinados fueron similares.


An evaluation of the nutritional content of yac¢n coming from five departments of Per£: Cajamarca, Jun¡n, Hu nuco, Lima and Puno was performed. We determined the contents of lipids, carbohydrates, proteins and minerals like magne sium, copper and iron. Samples from Lima showed higher content of proteins (4,52%) and copper (1,14 mg/100g), while samples from Hu nuco had higher contents of magnesium (77,2 mg/100g). Samples from Junin show higher contents of fat (0,47%), existing significant differences compared to those coming from Lima (0,05%).There was a sig nificant difference in the contents of fiber, being higher in samples from Cajamarca (3,31%) while the content of other nutrients were similar.
