ABSTRACT

Focus Group é uma técnica sensorial qualitativa baseada no comportamento de um grupo de pessoas quanto aos atributos sensoriais. É conduzida por um moderador que garante a interação para discussão diante às percepções. O objetivo deste estudo foi avaliar carne de sol a partir de análises sensoriais, associando-as com resultados obtidos por análises físico-químicas. Para tanto, quatro amostras foram coletadas de comércio varejista na cidade de João Pessoa, PB, sendo caracterizadas quanto à composição centesimal, atividade de água, pH e capacidade de retenção de água (CRA). Os participantes foram recrutados conforme hábitos de consumo e as amostras foram preparadas a partir do dessalgue e cocção em forno elétrico, sendo mantidas em banho-maria até o momento da avaliação sensorial. Com as respostas obtidas, observou-se que além da aparência, o teor de umidade e a CRA são considerados parâmetros que influenciam diretamente nos atributos sensoriais. O estudo qualitativo exploratório - Focus Group, em associação aos parâmetros físico-químicos, representaram métodos confiáveis para a interpretação do perfil de consumo da carne de sol. Conclui-se que por meio de critérios específicos, os fatores de qualidade foram melhor interpretados, definindo as preferências de um consumidor cada dia mais exigente quanto às características de seu alimento.


Focus Group is a qualitative sensory technique, based on the behavior of a group of people, regarding the attributes of a product. It is conducted by a moderator who ensures an interaction for discussion in the face of perceptions. The aim of this study was to evaluated dried meat by sensory analysis associating the evaluation with results obtained by physicochemical analysis. Therefore, four samples were collected from the retail trade in the city of João Pessoa, PB, which were then characterized for chemical composition, water activity, pH and water holding capacity (WHC). Participants were recruited according to consumer habits and the samples were prepared by desalting and cooking in an electric oven, and kept in a water bath until the time for sensory analysis. With the answers obtained, in addition to appearance, the moisture content and the WHC are considered parameters that directly influence the sensory attributes. The qualitative exploratory study - Focus Group, in association with physical-chemical methods, represented methods used for the interpretation of the consumption profile of sun dread meat. Thus, conclude what is the use of specific criteria, the quality factors that were evaluated, defining the preferences of consumers who are increasingly demanding as to the characteristics of their food.

ABSTRACT

This study is basic research focused on product development and market activation based on analysis of current usage and demand for development of processed blue crabs. A total of 556 subjects aged 20s to 60s living in the Seoul area were surveyed. According to the survey, 65.1% of subjects consumed blue crabs at home, and 82% of them purchased blue crabs whole and undressed. Respondents gave higher marks to taste, nutrition, and texture compared to ingredient preparation, eating method, and price. Majority of blue crab consumers had no experiences of consuming processed blue crabs. Exactly 57.0% of consumers purchased them at big shopping centers, and the reason for purchasing was their good taste. When female consumers purchased processed blue crabs, they checked every part carefully compared to male consumers. Women gave high scores to blue crab powder, blue crab extract, blue crab croquette, and blue crab cake compared to men, demonstrating the necessity of developing processed blue crabs. Furthermore, the experienced processed blue crab group recognized the necessity of developing processed blue crabs compared to the inexperienced group. People showed significant differences in purchasing processed blue crabs according to gender as well as previous experience of blue crab consumption.

ABSTRACT

Introdução: Buscar satisfazer as necessidades dos usuários de serviços de saúde consiste em uma forma de medir a qualidade da atenção oferecida pelos profissionais desse setor, ainda que a qualidade da assistência continue sendo uma grande preocupação na saúde. Objetivo: Avaliar a satisfação dos pacientes em tratamento fisioterapêutico em quatro clínicas do município de Campo Maior, Piauí. Materiais e métodos: Foi realizado um estudo descritivo e transversal em uma amostra de 80 pacientes. A pesquisa consistiu na aplicação de um questionário contendo 20 perguntas objetivas para avaliação da satisfação dos serviços oferecidos pelas clínicas selecionadas. Resultados: Dos 80 entrevistados, 55% eram do gênero feminino, 26,25% pertenciam à faixa etária de 40 a 51 anos (26,25%), 46,75% fizeram o ensino fundamental, 66,75% possuíam renda mensal de 1 a 3 salários mínimos e 66,25% não disponibilizavam de planos de saúde.A maioria dos indivíduos foi encaminhada por médicos e considerou a clínica de fácil acesso; 55% utilizava transporte particular ou alugado para locomoção; e a indicação de terceiros foi o principal motivo de escolha do serviço (65%). Os pacientes, em grande parte, mostraram-se satisfeitos com o tempo de espera para consulta, atendimento e uso dos aparelhos e confirmaram haver ótima relação com o fisioterapeuta. Os entrevistados ainda relataram ótima limpeza, conforto e boas instalações e consideraram suas necessidades de tratamento atendidas. Conclusão: No geral, observou-se grande satisfação dos usuários dos serviços de fisioterapia do município de Campo Maior. Entretanto, outros estudos se fazem necessários, correlacionando o grau de satisfação aos dados socioeconômicos.


INTRODUCTION: Search meet the needs of users of health services is as a way of measuring the quality of care offered by professionals in this sector, although the quality of care remains a major concern in health. OBJECTIVE: To evaluate patient satisfaction in physical therapy at four clinics in the city of Campo Maior, Piauí. MATERIALS AND METHODS: We conducted a cross-sectional descriptive study and a sample of 80 patients. The survey consisted of a questionnaire containing 20 objective questions to assess satisfaction with services offered by clinics selected.RESULTS: Of the 80 respondents about the socio-demographic profile was mostly female, age 40-51 years, had the level of elementary school education, monthly income 1-3 times the minimum wage, and most did not provide plans health. In the item accessibility was observed that most individuals were referred by physicians, as they judged as easy access to the serum, using mostly private transport or hire, did not show difficulties to attend, and details of others was the main reason for choosing the service. On the professional/ patient relationship, most respondents were satisfied with the waiting time for consultation, assistance and use of equipment, the service was very clear to patients, and they have confirmed there is a great relationship with the physiotherapist. Considering the ambience of the clinics, was judged as excellent cleanliness, comfort and buildings, users also reported having privacy during the visits and their treatment needs met. CONCLUSION: In general, there was great satisfaction of users of physiotherapy services of Campo Maior. However, other studies are necessary correlating the degree of satisfaction to the socio-economic data.

ABSTRACT

OBJETIVO: Caracterizar o perfil sociodemográfico e avaliar a satisfação dos usuários de serviços de Fisioterapia em Teresina (PI), com relação à agilidade para agendamento da consulta e atendimento, acolhimento, confiança, ambiência, humanização, acessibilidade, eficácia e expectativa sobre os serviços recebidos. MATERIAIS E MÉTODOS: A amostra foi constituída por 376 pacientes selecionados em três clínicas de fisioterapia da rede particular, municipal e estadual. Utilizou-se um questionário contendo dados sociodemográficos, de acesso ao serviço e informações relativas à satisfação dos usuários. Foram calculadas médias para variáveis contínuas por meio do teste de Kruskal-Wallis e do teste de Student-Newman-Keuls. RESULTADOS: Os usuários, na sua maioria, eram mulheres (62,5 por cento), com uma média de idade de 49,5 anos (p<0,01), casados, analfabetos, com renda familiar entre um e três salários mínimos e SUS-dependentes. Consideraram fácil o acesso aos serviços; o meio de transporte mais utilizado foi o coletivo, e gastaram uma média de tempo de 28,8 minutos (p<0,01) para chegar ao local de atendimento. Relataram não ter tido nenhuma dificuldade no atendimento, porém 14 por cento referiram a marcação de consulta e o tempo de espera como os problemas enfrentados nos serviços das redes municipal e estadual. A indicação médica foi o motivo principal da escolha do serviço, confiavam no atendimento recebido e os resultados do tratamento foram alcançados. CONCLUSÕES: A despeito da insatisfação apontada, a maior parte tem satisfação (75,5 por cento) com o tratamento recebido e indicariam os serviços a terceiros.


OBJECTIVE: To evaluate user satisfaction about Physical Therapy services in the city of Teresina, State of Piauí, Brazil, and to characterize users' sociodemographic profile and evaluate their satisfaction regarding the time required to setting up appointments and to provide services, reception, trust, ambiance, humanization, accessibility, effectiveness and expectations relating to the services received. METHODS: The sample was comprised of 376 patients who were selected at three physical therapy clinics in the private, municipal and state networks. A questionnaire on sociodemographic characteristics, access to services and user satisfaction was administered. Averages for continuous variables were compared by means of Kruskal-Wallis and Student-Mewman-Keuls tests. RESULTS: Most of the users were women (62.5 percent), with a mean age of 49.5 years. They were married and illiterate, had family income between one and three minimum wages and were dependent on the national health system. They considered that they had easy access to the services. The means of transportation most used was buses, and it took them on average 28.8 minutes to arrive at the service location. The services users indicated that they did not have any difficulty with the service, but 14 percent mentioned that setting up appointments and waiting times were problems they faced in the municipal and state services. Medical indication was the main reason for choosing the service. They trusted the service they received, and the expected treatment results were achieved. CONCLUSIONS: Despite the dissatisfaction shown, the majority (75.5 percent) were satisfied with the treatment they received and they said they would recommend the services to other users.

ABSTRACT

OBJECTIVE: This study was carried out to obtain basic data required to plan and develop consumer-centered internet health information site for Korean population. METHODS: An internet survey was conducted on 5 internet patient community sites between 23 January and 5 February, 2007. A total of 958 surveys were completed and included in the study. Data were analyzed with descriptive analysis, Pearson's correlation analysis, and stepwise logistic regression analysis using SPSS version 12.0. RESULTS: According to our logistic regression analysis, the more internet usage, foreign country residents, members of breast cancer internet community, any workers except sales, and higher level of necessity/usefulness/reliability showed a higher Odds ratio for frequency of internet health information usage. Educational status, frequency of using internet, importance, necessity, usefulness, reliability of internet health information (p<.001), income, and satisfaction of internet health information (p<.05) were statistically significant in the frequency of internet health information usage. CONCLUSION: Above characteristics should be considered for planning to develop consumer-centered internet health information portals.

ABSTRACT

The purpose of this study was to investigate consumer preferred formats of nutrition labels: the type of nutritional information provided on the labels. A survey was conducted on 222 housewives between the age of 20 and 65 in Daejeon city in 1998, using an interview questionnaire showing illustrated nutritional label formats. Among twelve nutrients and caloric values listed on the nutrition labels, the housewives ranked their interest in the items in the following order of calorie (58.56%), calcium (56.76%), cholesterol (54.05%), protein (39.19%) and vitamin C (36.04%). The majority of the subjects (69.37%) checked labels when they bought milk or dairy products, whereas only 8.11% looked at labels when they bought Ramyon or noodles. Most of the subjects (90.99%) preferred products with labels with nutritional information as compared with products without labels. this was especially so true of the younger individuals and of people who checked food labels more frequently. The subjects preferred labeling which described the nutrient content per package (55.41%), serving size (32.88%) and food weight of 100g (11.71%) as a standard unit. Generally, they preferred a simplified list to a detailed list of the number of nutrients, a figure graph to bar graph in nutrition claim, vertical bar graph to horizontal bar graph showing the nutritional content of foods and a web-type graphic format to a radiationformat when describing the item's percentage of the Korean RDA's nutrient content. The subjects who checked labels frequently especially preferred detailed list, while housewives with job or with unhealthy family members preferred a simplified list and graphic, rather than a numerical display. From this result, it is suggested that providing consumers with more nutrients information in a more easily understood graphic format would encourage the consumers to check nutritional labels. Therefore this should be considered when developing the regulations for nutrition labeling or when educating the public about nutrition.
