ABSTRACT

In a granulometric analysis of coffee beans with different categories of defects, the data can be organized in contingency tables, and when considering the discrimination by harvest, they may have a structure that suggest a more complex model, by means of the counting of defective coffee beans compared to different crops interacting with the classification of defects and percentages of sieve grains, which characterizes a block design with multivariate responses. However, due to the techniques based on the analysis of variance, considering the uniform correlation structure for all plots, it becomes feasible to propose a model that allows contemplating different structures between the plots, associating the effects of the crops to the defects in the granulometric procedure applied to the coffee beans. Thus, the hypothesis of incorporating the effects of crops associated with defects arises using the biplot multivariate technique. This work aims to propose the use of corrected biplots by predictions obtained trhough the fit to the Generalized Linear Model in the coffee grain size classification, broken down by components of the effect of the harvests. In conclusion, the use of GEE models with the corrected biplot technique by the predictions is feasible for application to be applied to the granulometric analysis of defective coffee beans, presenting discrimination regarding the effects of harvests.

ABSTRACT

OBJECTIVE: To investigate the hygroscopicity of vitamin B12 and the related problems of its chemical reference substance (CRS) that should be paid attention to. METHODS: UV absorption coefficient was determined at 361 nm, using water as solvent. Dynamic vapor absorption analysis (DVS) was applied to evaluate the moisture sorption trend and capacities of vitamin B12 under different humilities. RESULTS: Owing to the strong hygroscopicity of vitamin B12, deviation in the process of weighing might result in smaller UV absorption coefficient compared with the actual value, especially for dried and low moisture content raw materials in high-humidity environment. CONCLUSION: In the study of drug quality control for vitamin B12, the strong hygroscopicity of the raw material should be paid attention to, particularly in the research and application of vitamin B12 CRS.

ABSTRACT

OBJECTIVE: To establish the detection technology of riboflavin polymorphism, and investigate the moisture sorption properties of riboflavin. METHODS: The two crystal forms of riboflavin were characterized by different analysis methods, such as powder X-ray diffraction method (p-XRD), differential scanning calorimetry method (DSC) and infrared spectrum method (IR). Dynamic vapor sorption (DVS) analysis was adopted to acquire moisture sorption dynamics of the two crystal forms. The influences of temperature, humidity and light on crystal transformation were explored. RESULTS: The crystal forms of two batches of riboflavin samples were identified as anhydrate I and monohydrate, respectively. The monohydrate could be obtained by recrystallizing in DM-SO. The monohydrate was hygroscopic, the number of crystal water may change at different relative humidities, and the moisture sorption dynamics of the monohydrate was greatly influenced by temperature. The anhydrate I was almost non-hygroscopic, and temperature hardly affected its moisture sorption dynamics. CONCLUSION: Characteristic data for riboflavin polymorphism are obtained, and the results show that anhydrate I is more stable than monohydrate. This study indicates that DVS could be used in studies on drug polymorphism.

ABSTRACT

This study was performed to evaluate served menu in Korean temples. Among available temples in the nation, 34 tem-ples were carefully selected considering location and the gender characteristics. A five consecutive day menu was collected to analyse by interview between Jan 2004 and Aug 2004. Mean energy content of menu was 1633.8 kcal, with 67.3% of energy supplied by carbohydrate, 14.8% by protein and 17.9% by fat. Beans and bean products were the major contribu-ting dishes for most nutrients. Contents of most nutrients except energy, protein and vitamin B were higher than RDA. Nutrient adequacy ratio (NAR )were 0.9-1.0 and mean adequacy ratio (MAR )was 0.9 for temples. Total number of dishes from menu was 7.3. Dietary variety score (DVS )was 26.4 and buddhist monk temples offered more diverse foods than buddhist nun temples. KDQI (Korean diet Quality Index ), overall diet quality index were 0.67 and those of bud-dhist nun temples were better than those of buddhist monk temples. From the result of this study it was concluded that the temple diet is nutritionally well balanced, rich in dietary fiber and low in cholesterol. So it can be a healthy diet for the mo-dern person. This is the very first study attempting the nationwide investigation of temple diet in Korea. It will be used as fundamental data to improve quality of diet to prevent modern chronic disease.

ABSTRACT

The purpose of this study was to assess the diet diversity, food habit and nutrient intake of obese adults who were visiting the health promotion center. This study was accomplished with the 138 obese adults (men = 103, women = 35) aged over 20 years old whose BMI were above 25 kg/m2. Nutrient adequacy ratio (NAR), the number of foods (Dietary Variety Score, DVS), and food group consumed (Dietary Diversity Score, DDS) by using the data from the three days record were analyzed and the food habit and lifestyle were assessed by self reporting questionnaire. The average energy intake of men was 2150.2 kcal which was significantly higher than that of women (p < 0.05). The intake ratio of carbohydrate, protein and fat over total energy was 54.8% : 19.3% : 25.8% in men, 59.5% : 17.8% : 22.6% in women, respectively. Frequency of the breakfast in a week above 4, 2~3 time and under one time was 75.7%, 10.7% and 9.7% in men, 77.1%, 5.7% and 14.3% in women respectively. Frequency of eating between meals in a day under one time was 73.8% in men, 57.1% in women (p < 0.05). The average DDS and DVS was 3.63 +/-0.07 and 14.10 +/-3.45, respectively which was significantly correlated with MAR (r = 0.40 in DDS, r = 0.64 in DVS, p < 0.01). The most frequent style of food pattern was DMGFV = 01101 in 35% of men, and DMGFV = 01111 in 37.1% of women. Our results show that dietary diversity and variety are useful parameters for evaluating nutrient intakes in obese adults. These findings suggest that nutritional education based on obese persons' eating behavior and eating diversity may be required to increase educational efficiency of weight control programs.

ABSTRACT

The differences in food consumption between highly educated, married, unemployed and employed women were analyzed by food group and common food item intake, DDS (dietary diversity score), and DVS (dietary variety score) and DVSS (dietary variety score including condiment). In food group intake, the total amount of food intake of the unemployed women (1,554.0 g) were significantly higher than those of the employed (1,477.9 g), while the amount of food from fungi and mushrooms (4.2 g), seaweeds (2.4 g), and fish and shellfish (60.5 g) of the unemployed women was significantly lower than those of the employed. And the amount of meat, poultry and their products (102.8 g), eggs (29.9 g), and animal oil and fats (4.0 g) was significantly higher than those of the employed. Moreover, the common food items of the unemployed women were ranked as eggs (29.7 g), pork (28.9 g), chicken (27.2 g), and beef (26.7 g) at 7, 8, 9, and 10, respectively. When counting the major food groups consumed, DDS = 4 has the highest proportion in both groups (unemployed 47.4%, employed 49.1%). In case of the subjects who had not consumed one particular food group in DDS = 4, dairy group was the first (83%), followed by fruit, meat, and vegetables. This order is same in other DDS levels. In dietary variety score (DVS and DVSS), the average number of foods consumed per day of employed women was higher than those of the unemployed. The level of DVSS in the employed women (31.9), especially, is significantly higher than in the unemployed women (30.6). Consequently, highly educated women should pay more attention to increasing dairy intake, and they have need of various foods, over thirty foods without condiments in their diet every day. In addition, encouraging unemployed women to have a nutritionally balanced diet, and offering nutrition education and guidance, such as appropriate choices about animal foods, are needed.

ABSTRACT

Dietary Variety Score (DVS) or Nutrient Adequacy Ratio (NAR) offers a way of comparing eating habits across populations and across countries. This study compared nutrients intakes, food intakes, DVS, and NAR between Korean and US adults using the large national survey data. 4662 Korean adults (men: 2201, women: 2461) aged 20 - 49 years were selected from the 'Korean National Health and Nutrition Survey, 2001' and 4199 US adults (men: 2127, women: 2072) aged 20 - 49 years were selected from the 'US National Health and Nutrition Examination Survey (NHANES IV, 1999 - 2002)'. The total plant food intakes were high in Korean adults, but the total animal food intakes were high in US adults. Intakes of legumes and nuts, vegetables and mushrooms were higher in Korean than in US adults. On the other hand, intakes of meats, milk and dairy products of US adults were higher than Korean. Beverage intakes were 8 - 10 times higher in US adults than in Korean. The mean DVS of Korean men and women were higher than US men and women. Intakes of fat, calcium and vitamin B2 of US adults were 1.5 - 2 times higher than those of Korean, which could probably related to larger consumption by US adults on milk and dairy product. While the intakes of carbohydrate and vitamin C of the Korean were higher than the US adults, which could presumably related to higher grain and vegetable consumption. Percent energy intakes from carbohydrate, protein, and fat were 64.1%, 15.8%, and 20.1% for Korean men, 52.4%, 15.0%, and 32.6% for US men, 65.9%, 14.9%, 19.2% for Korean women, and 52.1%, 14.7%, 33.2% for US women respectively, which showed higher %energy from carbohydrate in Korean and higher %energy from fat in US adults. Most nutrient intakes except energy and vitamin C expressed as %RDA were higher in US than in Korean adults. Mean Adequacy Ratio (MAR) of US men and Korean men were both 0.85, while the MAR was 0.81 for Korean women, 0.79 for US women. The Korean women's diet showed more diverse and adequate than the US women's diet.

ABSTRACT

Due to the common dietary practice of preparing foods in various ways using the same food item, in addition to rather a large number of food items that average Koreans consume, it is difficult to accurately assess the nutritional adequacy. In an effort to identify a reliable means of assessing the nutritional adequacy of Korean adults, we analyzed the association between the scores of dietary diversity (DDS) and dietary variety (DVS), and the quality of nutrient intake as assessed by Nutrient Adequacy Ratio (NAR) and Mean Adequacy Ratio (MAR). A three day-dietary record was obtained from each of 324 inhabitants, aged 40 to 69 years (mean +/- SD, 52.4 +/- 8.7), of a rural area (Ansung) and a mid-sized city(Ansan) of Korea. These individuals were randomly selected among the participants of the Korean Health and Genome Study. The number of consumed foods and food groups were assesses by DDS (scored 1 to 5) and DVS (ranked 30 < or = , 31 - 40, 41 - 50, 51 - 60, and 60 <) over three-day period, respectively. As DDS/DVS increased, mean daily food intakes tended to increase, and NAR/MAR was improved. Thus, DDS and DVS were significantly correlated with the quality of nutrient intake. Over 95% of the subjects scored less than 2 in DDS for the first one-day period, whilst over 62% recorded 4 during the full three-day period (p < .0001). The mean number of consumed food items increased from 24.9 to 44.4 as a function of days of the record period (p < .0001). We also analyzed the association of DDS and DVS with MAR, using regression analysis, controlling age and sex as covariates. For DDS, the adjusted coefficient determination (adj R2) values were 8.7%, 15.8%, 23.3% of MAR, also increasing as a function of the record duration, whereas they were 27.3%, 33.3%, 37.6% for DVS, respectively, demonstrating that NAR/MAR has a better correlation with DVS than DDS. Our data show that DDS, and DVS in particular, are useful parameters for evaluating nutrient intake in the Korean population. Our data also support that one day-dietary records are by no means adequate for accurately describing a wide variety of food choices offered for average Koreans, and that dietary assessment at least for 3 days or longer should be obtained for a reliable evaluation of dietary quality using DDS or DVS.

ABSTRACT

This study was conducted to investigate the drinking status, drinking habit and dietary habit of high school students using anonymous questionnaires. DVS and skipped meal status were obtained by 24 hour recall method. Two hundreds ninety seven of 380 students (78.2%) have experienced the drinking even though 73.7% of them was not addictive. One hundred sixty one students (54.2%) initiated drinking in the middle school, mostly because of 'peer pressure' and 'curiosity'. The most plausible reasons for drinking were 'for mingling' and 'for stress reduction', and they used to have desire for drinking mostly when felt 'anger or frustration' and 'feel good'. Drinking behavior was significantly different in age of first smoking, drinking history, amount, reason for drinking and desire for drinking between male and female student. There was no significant difference in dietary habits between drinking students and non-drinking students. DVS, skipped meal status, snack preferences and food intake frequency also did not show the significant differences. However, considering that the drinking experience of high school students increased, and drinking experience of female students approached to that of male student, more attention needs to be given to juvenile drinking and its' prevention.

ABSTRACT

The purpose of this study was to evaluate the diversity of food intake among Korean college students of a nutrition education course through the internet. Subjects were 796 nation-wide college students (male 278, female 518). A dietary survey collected from 3 day-recalls were analyzed by the Computer Aided Nutritional Analysis Program. Diet variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). The foods consumed in largest amounts were rice (54.42 g), citrus fruit (36.41 g) and milk (30.91 g). The foods consumed most frequently were rice (65.28%), garlic (63.65%) and salt (63.64%). The average food intake was 1325.3 g (male 1420.6 g, female 1274.1 g), with vegetable and animal food comprising 78.5% and 21.5% of total food intake, respectively. The consumption of the major five food groups comprised DDS, and 66.0% (male 56.1%, female 71.3%) of subjects had a DDS of 5 and 27.4% (male 33.5%, female 24.1%) of subjects had a DDS of 4. The groups most frequently missed were dairy products (56.5%) and fruits (41.6%). The average of MBS were 10.88 (11.61 in Seoul, 11.03 in Kyungsang, 10.88 in Chungcheong, 10.85 in Incheon, 10.57 in Kyunggi) in male and 11.08 (11.47 in Kyungsang, 11.20 in Seoul, 11.18 in Kyunggi, 10.82 in Chungcheong, 10.64 in Incheon) in female. Male students in Seoul (18.2) and female students in Kyungsang (18.6) had the greater number of consumed food items. Subjects who had higher DDS had significantly higher DVS (p < 0.001). Based on these results, the food intake of the subjects regarded as not adequate, especially with regards to the dairy and fruit groups. Considering their nutritional characteristics, dietary guidelines as well as education should be made to improve the food intake and include various foods in their diet.

ABSTRACT

The purpose of this study was to evaluate the relationship between the diversity of food intake and nutrient intake among Korean college students participating in a nutrition education class via the internet. The subjects were 796 college students throughout South Korea (278 males, 518 females). A 3 days dietary recall survey was conducted and results were analyzed using the Computer-aided Nutritional Analysis Program. Dietary variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). Dietary quality was assessed by NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio). As the DDS, MBS and DVS increased, the NAR and MAR improved. The subjects with a DDS of above 4 or a MBS of above 10 or a DVS of above 11 met two-thirds of the Korean recommended dietary allowance for most nutrients. The DDS, MBS and DVS correlated positively and significantly with the NAR and MAR. Associations between the NAR and high levels of DVS were more positive than those between the NAR and the DDS. Based on these results, the food intake of these subjects was not adequate. Specially, the dietary intake of calcium and iron were not adequate. Therefore, dietary guidelines should be made considering nutritional characteristics so as to improve the intake from all of the major food groups and provide a variety of foods in their diets.

ABSTRACT

To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B1, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B2 had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. ABSTRACT

The study was curried out to collect information to establish a framework for nutrition education for the prevention of chronic degenerative disease. We analyzed differences in diet quality, food habits and health status of workers by work condition. Anthrometric parameters of height, weight and body fat were measured and biochemical parameters including glucose, total cholesterol, GOT, GPT and hemoglobin were determinded for 194 subjects. To assess the nutrient intake and diet quality of workers, dietary intake was measured by the day 24-hour recall method, Average daily nutrient intake, except for phos-phorous and vitamin C was lower than Korean RDA. The obesity related behavior score was significantly better in laborers than in office workers, while chronic degenerative diseases related to food habit score was significantly better in laborers than in office workers, while chronic degenerative diseases related to the food habit score was beet in offices workers than in laborers. Blood pressure, blood glucose levels were significantly higher in laborer than in office workers. Dietary variety score (DVS) food composition group score(FCGS), mean adequacy ratio(MAR) of office worker were better than those of labor workers. When diet quality was evaluated by FCGS(food composition group score) 16.0% of the subjects acquired 5 points and 14.4% of the subjects acquired 2 points. MAR and INQ showed a significantly positive correlation with DVS and FCGS . This results indicated that the onset possibility of hypertension and diabetes mellitus among chronic degenerative disease was higher in laborers than in office workers, while the onset possibility of obesity was higher in office workers than in laborers. In conclusion the overall diet quality of office workers is betters than that of laborers, therefore, nutrition education for prevention of chronic degenerative disease of industrial workers needs to be more focused on the improvement of the health status of laborers.

ABSTRACT

The objective of this study was to estimate changes on the flood and nutrient intake patterns of men over thirty years old in Jeon-Ju area. The first survey was conducted from December in 1991 to January in 1992, tile second one from January to February in 1994 and the third one from July to August in 1997. The nutrition survey using 24-hour recall method was executed to 303 subjects : 89, 82, 132 in 1991, 1994 and 1997, respectively. Results of the study are as follows : Kimchi, rice, garlic and onions were the most frequently eaten food items. Total daily intakes of foods were 85 : 15, 81 : 19 and 81 : 19 in 1991, 1994 and 1997, respectively. The average numbers of foods per person were 15.7, 20.1 and 21.9 daily in 1991, 1994 and 1997, respectively and tends to increase significantly(p<0.05). The minimum numbers of foods per person were 4, 7 and 9 and the maximum numbers of foods per person were 27, 35 and 39 in 1991, 1994 and 1997, respectively. KDDS(Korean's Dietary Diversity Score) is determined by how many among the five food groups (cereals, vegetables, meats, milks, oils groups)were consumed per day. Most subjects earned the KDDS "3" ; 61, 46 and 42% in 1991, 1994 and 1997, respectively. Average daily energy intakes wee 1,62 kcal(72% of RDA), 2,063 kcal(89% of RDA) and 1,818 kcal (79% of RDA) in 1991, 1994 and 1997, respectively. Energy intake rates of cereals : total energy intake were 65, 59, and 60% in 1991, 1994 and 1997, respectively, which were decreasing. Protein intakes were 58g(72% of RDA), 79g(107% of RDA) and 71g(97% of RDA), respectively and animal protein comprised 46, 53, and 59%, respectively ; which were increased. Fat intakes were 12g, 20g and 20g, respectively and animal protein comprised 38, 46, and 48% ; which were increased. Fat intakes were 12g, 20g and 20g, respectively, of which animal fat comprised 46, 53, and 59%, respectively ; which were increased, too. Malnourished (under 75% of RDA) rates were respectively 64, 34, and 47% in terms of energy ; 64, 31 and 33% in protein ; 67, 51, and 61% in calcium ; 53, 26, and 18% in iron ; 85, 74 and 84% in Vitamin A. Super-nourished(above 125% of RDA) rates were respectively 1, 13, and 3% in energy ; 1, 29, and 21% in protein ; 5, 18, and 7% in calcium ; 16, 31, and 7% in iron ; 16, 31, and 7% in Vitamin A, 42, 76, and 62% in Vitamin C. The percentages of calories from protein : fat : carbohydrate were 14 : 12 : 74, 15 : 16 : 69 and 16 : 17 : 67 in 1991, 1994 and 1997, respectively. KDDS(number of five food groups per day), Meal Balance(number of five food groups per meal), DVS(average numbers of foods per person), amount of foods correlated positively with all the nutrient intakes(p<0.05). KDDS was positively correlated with energy, protein, fat, calcium, thiamin, riboflavin and niacin(p<0.05)

ABSTRACT

Precise verification is required in the execution of intensity-modulated radiotherapy (IMRT) for its complexity. Thereinto, the verification of dose distributions is the emphases and nodus. Some problems in the verification by using radiotherapy planning dose verification system (DVS) are explored such as how to verify the precision and credibility, how to reduce errors in every verification step, how to provide quantified analysis. A suit of practical methods and techniques are summarized from equipment selection to quantified analysis.
