ABSTRACT

Abstract The impact of fish oil concentration on the oxidative stability of microcapsules through the spray drying process using chitosan and maltodextrin as wall material was studied. Emulsions were prepared with different Tuna fish oil (TFO) content (TFO-10%, TFO20%, TF030% TF0-40%) while wall material concentration was kept constant. Microencapsulated powder resulting from emulsion prepared with high fish oil load have high moisture content, wettability, total oil and low encapsulation efficiency, hygroscopicity and bulk tapped density. Oxidative stability was evaluated periodically by placing microcapsules at room temperature. Microcapsules prepared with TFO-10% presented high oxidative stability in terms of peroxide value (2.94±0.04) and anisidine value (1.54±0.02) after 30 days of storage. It was concluded that optimal amounts of fish oil for microencapsulation are 10% and 20% using chitosan and maltodextrin that extended its shelf life during study period.


Resumo Foi estudado o impacto da concentração de óleo de peixe na estabilidade oxidativa de microcápsulas por meio do processo de secagem por atomização, utilizando quitosana e maltodextrina como material de parede. As emulsões foram preparadas com diferentes teores de óleo de atum (TFO) (TFO-10%, TFO20%, TF030% TF0-40%), enquanto a concentração de material de parede foi mantida constante. O pó microencapsulado resultante da emulsão preparada com alta carga de óleo de peixe tem alto teor de umidade, molhabilidade e óleo total e baixa eficiência de encapsulação, higroscopicidade e densidade extraída a granel. A estabilidade oxidativa foi avaliada periodicamente colocando microcápsulas à temperatura ambiente. As microcápsulas preparadas com TFO-10% apresentaram alta estabilidade oxidativa em termos de valor de peróxido (2,94 ± 0,04) e valor de anisidina (1,54 ± 0,02) após 30 dias de armazenamento. Concluiu-se que as quantidades ideais de óleo de peixe para microencapsulação são de 10% e 20% usando quitosana e maltodextrina que prolongaram sua vida útil durante o período de estudo.

ABSTRACT

O azeite de oliva é amplamente consumido devido às suas propriedades benéficas para a saúde e características sensoriais únicas. A composição química abundante em ácido graxo monoinsaturado, associada ao perfil de compostos fenólicos com importante efeito antioxidante, confere ao azeite de oliva alta estabilidade ao aquecimento. Embora existam muitas evidências sobre a estabilidade térmica do azeite, ainda existem muitas dúvidas, por parte da população, sobre o uso em técnicas culinárias que envolvam calor. O objetivo desse trabalho foi compilar evidências científicas a respeito da influência de técnicas culinárias sobre a estabilidade térmica do azeite de oliva, com vistas a elaborar material informativo, com linguagem adaptada à população em geral, sobre sua utilização na culinária, especialmente em preparações quentes. É de amplo conhecimento na literatura que o azeite de oliva é bastante resistente à cocção, no entanto, temperaturas elevadas, como as empregadas na fritura por imersão, podem levar a diminuição do teor de compostos fenólicos, a depender da quantidade e tipos de fenólicos presentes no azeite. Estudos no contexto da gastronomia molecular também relatam, além da estabilidade térmica, os benefícios da utilização do azeite de oliva na culinária devido às interações químicas entre os compostos do azeite e os compostos do alimento fazendo com que ambos (óleo e alimentos) se beneficiem dos efeitos protetivos desses compostos. Considerando que ainda é muito comum o uso do azeite de oliva apenas para temperar saladas e finalizar pratos, o infográfico elaborado no presente trabalho pode contribuir para apresentar o conteúdo científico sobre o uso do azeite em preparações culinárias quentes de forma simplificada e de fácil compreensão.


Olive oil is widely consumed due to its beneficial health properties and unique sensory characteristics. The chemical composition abundant in monounsaturated fatty acids, associated with a profile of phenolic compounds with important antioxidant effects, gives olive oil high heat stability. Although there is much evidence about the thermal stability of olive oil, there are still many doubts among the population about its use in cooking techniques that involve heat. The objective of this work was to compile scientific evidence about the influence of cooking techniques on the thermal stability of olive oil, in order to elaborate informative material, with language adapted to the general population, about its use in cooking, especially in hot preparations. It is widely known in the literature that olive oil is very resistant to cooking, however, high temperatures, such as those used in deep frying, can lead to a decrease in the content of phenolic compounds, depending on the amount and types of phenolics present in the oil. Studies in the context of molecular gastronomy also report, besides thermal stability, the benefits of using olive oil in cooking due to chemical interactions between the compounds of olive oil and food compounds, so that both (oil and food) benefit from the protective effects of these compounds. Considering that it is still very common to use olive oil only to season salads and finish dishes, the infographic prepared in this work can contribute to present the scientific content about the use of olive oil in hot culinary preparations in a simplified and easy to understand way.


El aceite de oliva es ampliamente consumido por sus propiedades beneficiosas para la salud y sus características sensoriales únicas. La composición química abundante en ácidos grasos monoinsaturados, asociada al perfil de compuestos fenólicos con importante efecto antioxidante, confiere al aceite de oliva una gran estabilidad al calentamiento. Aunque hay muchas evidencias sobre la estabilidad térmica del aceite de oliva, todavía existen muchas dudas entre la población sobre su uso en técnicas culinarias que implican calor. El objetivo de este trabajo fue recopilar evidencias científicas sobre la influencia de las técnicas culinarias en la estabilidad térmica del aceite de oliva, con el fin de elaborar material divulgativo, con lenguaje adaptado a la población general, sobre su uso en cocina, especialmente en preparaciones calientes. Es ampliamente conocido en la literatura que el aceite de oliva es bastante resistente a la cocción, sin embargo, las altas temperaturas, como las empleadas en la fritura por inmersión, pueden llevar a disminuir el contenido de compuestos fenólicos, dependiendo de la cantidad y tipos de fenólicos presentes en el aceite. Los estudios en el contexto de la gastronomía molecular también informan, además de la estabilidad térmica, de los beneficios del uso del aceite de oliva en la cocina debido a las interacciones químicas entre los compuestos del aceite de oliva y los compuestos de los alimentos, de forma que ambos (aceite y alimento) se benefician de los efectos protectores de estos compuestos. Teniendo en cuenta que todavía es muy común el uso del aceite de oliva sólo para aliñar ensaladas y terminar platos, la infografía elaborada en este trabajo puede contribuir a presentar de forma simplificada y fácil de entender el contenido científico sobre el uso del aceite de oliva en preparaciones culinarias calientes.

ABSTRACT

ABSTRACT: The objective of this research was to evaluate the fatty acid profile and physicochemical properties of buriti oil under storage conditions. The oil was analyzed for 70 days by evaluating the physicochemical characteristics of acidity index, refractive index, bulk density, absolute viscosity, peroxide index, lipid oxidation by TBARS method, color parameters (L *, a *, b *, C * e h *) and carotenoid profile (α-carotene and β-carotene) for every 10 days of storage, in addition to the β-carotene/linoleic acid system and fatty acid profile. Variables remained stable over the analysis periods and the total carotenoids ranged from 836.91 to 1036.96 µg/g. Oleic acid accounted for the highest content among fatty acids, with a value of 78.06 g/100 g of fatty acids and a ω6/ω3 ratio of 1.95. Buriti oil has a nutritional quality and a fatty acid profile that justifies recommendations for its consumption, suggesting the need for regulatory bodies to draw up a standardized protocol for extracting oil from the fruit pulp.


RESUMO: Objetivou-se neste trabalho avaliar o perfil de ácido graxo e a qualidade físico-química do óleo de buriti em condições de armazenamento. O óleo foi analisado durante 70 dias avaliando as características físico-química índice de acidez, índice de refração, densidade aparente, viscosidade absoluta, índice de peróxidos, oxidação lipídica pelo método de TBARS, parâmetros de cor (L*, a*, b*, C* e h*) e carotenoides (α-caroteno e β-caroteno) a cada 10 dias de armazenamento, além do sistema β-caroteno/ácido linoléico e perfil de ácidos graxos. As variáveis se mantiveram estáveis durante os períodos de análises e os carotenoides totais variaram entre 836,91 a 1036,96 µg/g. O ácido graxo com maior teor foi o ácido oleico com valor de 78,06 g/100 g de ácidos graxos e relação ω6/ω3 de 1,95. O óleo de buriti apresenta qualidade nutricional que justifica o estímulo ao consumo devido aos ácidos graxos que apresenta, necessitando dos órgãos reguladores a elaboração de um protocolo de extração do óleo da polpa do fruto.

ABSTRACT

Suspensions of poly ε-caprolactone (PCL) nanoparticles loaded with thyme essential oil were prepared as a natural antioxidant in mayonnaise. Mean particle size was 204.9 ± 2.7 and 240.0 ± 5.5 nm respectively for nanoparticles prepared with PCL alone (NP-C) and for those loaded with thyme essential oil (NP-T). The polydispersity index indicated a homogeneous distribution of all particles, with no significant difference between NP-C and NP-T samples. The nanoparticles showed a large negative charge evidenced by zeta potential rates, indicating high physical stability. The use of PCL as a polymer provided high encapsulation efficiency for thyme essential oil (91.15 ± 2.12 %). DPPH (2,2-diphenyl-1-picrylhydrazyl) method determined IC50 rates were 476.4 ± 33.6 and 483.5 ± 20.4 µg mL-1respectively for unencapsulated oil and for NP-T, evidencing pronounced antioxidant activity. NP-C, NP-T and synthetic antioxidant butylhydroxytoluene (BHT) were applied to samples of mayonnaise and their oxidative stability evaluated for eight days in an oven at 63 ± 3ºC. Results of hydroperoxide value (HP) and thiobarbituric acid reactive substances (TBARS) showed that NP-T had a similar performance as synthetic antioxidant BHT in the prevention of mayonnaise lipid oxidation

ABSTRACT

Background: the analysis of the oxidative stability allows to determine the functionality of the antioxidants present in food, over time. Objectives: in this research, a functional mango drink is elaborated and the changes in the antioxidant profile and physicochemical parameters of the drink subjected to accelerated storage conditions are evaluated. Methods: the drink was distributed at 22, 35 and 45°C for 80 days. To monitor oxidative stability, the antioxidant analyzes ABTS, ORAC, mangiferin, total phenols and total carotenoids were performed; in addition, physicochemical properties (pH and °Bx) and L*a*b*coordinates, were monitored. The fit of the data to the Arrhenius model was verified and the shelf life was determined considering a 50% loss in the evaluated attributes, such as the critical limit. Results: the deterioration of the antioxidant attributes and the color at the study temperatures is observed, being more pronounced at 45°C. The least stable attributes are the carotenoids and the b-coordinate, presenting losses greater than 50%. The values of mangiferin exhibit deterioration lower than 40% and similar in the temperatures evaluated. The pH and Brix degrees do not show significant changes. The deterioration reactions are of order one and followed the Arrhenius law, presenting coefficients of determination greater than 0.90. The values of the activation energy (Ea) are within the range reported for fruit juices, standing out the value found for the b* coordinate (44.59 kJ.mol-1). Conclusions: the ORAC units are the chosen attribute to condition the life of the beverage, giving 10 months of useful life at 4°C, however, it is recommended to perform sensory and microbiological analyzes under the same conditions.


Antecedentes: el análisis de la estabilidad oxidativa permite determinar la funcionalidad de los antioxidantes presentes en los alimentos, en el tiempo. Objetivo: en esta investigación se elaboró una bebida funcional de mango y se evaluaron los cambios en el perfil antioxidante y los parámetros fisicoquímicos de la bebida sometida a condiciones aceleradas de almacenamiento. Métodos: la bebida se distribuyó a 22, 35 y 45°C durante 80 días. Para hacer el seguimiento de la estabilidad oxidativa, se realizaron los análisis antioxidantes ABTS, ORAC, Mangiferina, Fenoles Totales y Carotenoides totales; además, se realizó seguimiento de las propiedades fisicoquímicas (pH y °Bx) y las coordenadas L*a*b*. Se verificó el ajuste de los datos al modelo de Arrhenius y la vida útil se determinó teniendo en cuenta una pérdida del 50% en los atributos evaluados, como el límite crítico. Resultados: se observó el deterioro de los atributos antioxidantes y el color en las temperaturas de estudio, siendo más pronunciado a 45°C. Los atributos menos estables fueron carotenoides y la coordenada CIELab b*, presentando pérdidas superiores al 50%. Los valores de mangiferina exhibieron un deterioro menor al 40% y similar en las temperaturas evaluadas. El pH y los grados Brix no presentaron cambios significativos. Las reacciones de deterioro fueron de orden uno y siguieron la ley de Arrhenius, presentando coeficientes de determinación mayores a 0,90. Los valores de la energía de activación (Ea) estuvieron dentro del rango reportado para jugos de fruta, destacándose el valor hallado para la coordenada b* (44,59 kJ.mol-1). Conclusión: los valores ORAC estimaron un tiempo de vida útil para la bebida en 10 meses, bajo un almacenamiento a 4°C, sin embargo, se recomienda realizar análisis sensoriales y microbiológicos complementarios, bajo las mismas condiciones.

ABSTRACT

Abstract The present study aims to evaluate the influence of extraction methods on the quality of bioactive compounds and antioxidant capacity in Pterodon emarginatusVogel (sucupira) oils. The oils were extracted from the sucupira seeds by Soxhlet and by the extraction system of Bligh & Dyer. The oils were analyzed as to fatty acid profile, tocopherols, phytosterols, carotenoids, total phenolics, and total antioxidant capacity. The extraction by Soxhlet showed better yield of total lipids and was more efficient to extract tocopherols, phytosterols, and carotenoids, besides presenting better antioxidant activity by DPPH•. However, this method showed insufficient capacity to extract the polar lipid components of the sample, as evidenced by the low results of total phenolic compounds. On the other hand, the Bligh & Dyer method preserved the fatty acid profile and was also effective to extract higher phenolic compounds content and presented superior antioxidant activity when assessed by FRAP, ABTS•+, and oxidative stability index.

Background: Several investigations report to rosemary as a plant rich in bioactive components with antioxidant potential, in this work, a rosemary extract was obtained that combined with ascorbyl palmitate provides a synergistic protection to a high fat diet (palm olein). Objectives: The objective of this study was to evaluate the effect of the addition of two extracts of rosemary (Rosmarinus officinalis): AP10R and AP30R at three concentrations of 1000, 1500 and 2000 ppm, on the oxidative stability of palm oil subjected to accelerated oxidation conditions and in a frying process. Methods: Lipid peroxidation of palm olein with and without antioxidants was monitored by measuring the concentration of hydroperoxides and total polar compounds; the thermal stability of the phenolic compounds in the oil was evaluated by fluorescence spectroscopy. Results: The AP10R extract at 2000 ppm inhibited olein oxidation by 30% and 60% in terms of total hydroperoxide and polar concentrations, respectively. The AP30 extract at 2000 ppm had similar inhibition behaviors with values of 27% of total hydroperoxides and 54% by total polar compounds in a time from 20 to 25 h. Conclusions: The results indicated that heating reduces the concentration of polyphenols; this decrease was more evident in olein without antioxidants, reflecting the effect of the polyphenols of rosemary extract on the thermal stability of palm olein.


Antecedentes: Diversas investigaciones reportan al romero como una planta rica en componentes bioactivos con potencial antioxidante, en este trabajo, se obtuvo un extracto de romero que combinado con ascorbil palmitato brinda una protección sinérgica a un sistema alimenticio con alto contenido graso (oleína de palma). Objetivos: El objetivo de este estudio fue evaluar el efecto de la adición de dos extractos de romero (Rosmarinus officinalis): AP10R y AP30R a tres concentraciones de 1000, 1500 y 2000 ppm, sobre la estabilidad oxidativa del aceite de palma sometido a condiciones de oxidación acelerada y en un proceso de fritura. Métodos: La peroxidación lipídica de la oleína de palma con y sin antioxidantes fue monitoreada midiendo la concentración de hidroperóxidos y los compuestos polares totales; la estabilidad térmica de los compuestos fenólicos en el aceite se evaluó por espectroscopia de fluorescencia. Resultados: El extracto AP10R a 2000 ppm inhibió la oxidación de oleína en 30% y 60% en términos de la concentración de hidroperóxidos y polares totales, respectivamente. El extracto AP30 a 2000 ppm tuvo comportamientos similares de inhibición con valores de 27% para hidroperóxidos y 54% para el contenido de fenoles totales en un tiempo de 20 a 25 h. Conclusiones: Los resultados indicaron que el calentamiento disminuye la concentración de polifenoles; esta disminución fue más evidente en la oleína sin antioxidantes, reflejando el efecto de los polifenoles del extracto de romero sobre la estabilidad térmica de la oleína de palma.

ABSTRACT

The excessive application of pesticides for agricultural production has raised quite some concern about environmental safety and sustainability. To reduce environmental impact of pesticide overuse, there is an increasing interest in using different elicitors including Jasmonic acid (JA) to induce resistance against pathogen and insect in crop. Chilli (Capsicum annuum L.), which is an important vegeTable cum spice crop around the world. The aims of this study were to compare the effectiveness of Jasmonic acid on growth, Phyto-physiological responses, yield and viruses control in chilli plant. It was evaluated the effectiveness of single spray of JA (JA1), double spray of JA (JA2), conventional pesticide (Malathion 50%) and without any of those or control. The experimental results showed that pesticide-treated plants perform much better at early growth stages and become less competitive to JA2 treatment at maturity. Double spray of jasmonic acid showed less stress symptoms in different antioxidant enzymes activities (GPX, APX and CAT), reduce percentage of disease incidence and severity as well as improve growth and yielding characters of chilli plant. Therefore application of Jasmonic acid in chilli could be a possible alternative of pesticide application and its two times exogenous spray (0.5mM) is most effective.


A aplicação excessive de pesticidas na produção agrícola tem provocado algumas alterações na segurança ambiental e na sustentabilidade. Para reduzir este impacto ambiental aumentou o interesse no uso de elicitores incluindo o ácido Jasmônico (AJ) para induzir resistência contra os patógenos e insetos na cultura da pimenteira (Capsicum annum L.), a qual é uma importante hortaliça ou planta olerícola ao redor do mundo. Neste estudo foi comparada a eficácia do ácido Jasmônico no crescimento, resposta fisiológica, produção e controle de viroses na pimenteira. Foi avaliada uma simples aplicação (AJ1), duas aplicações (AJ2), inseticida malathion 50 % e uma testemunha (controle). Os resultados experimentais demonstraram uma redução nos sintomas de doenças viróticas pela atividade das enzimas anti oxidantes (GPX, APX e CAT), que reduziram a porcentagem da incidência e severidade das mesmas e promoveram o crescimento e melhoram os caracteres da produtividade da pimenteira. Portanto, a aplicação do ácido jsmônico em pimenteira pode ser uma alternativa para reduzir o uso de inseticidas e sua aplicação em duas vezes durante o ciclo (0,5 mM) foi mais eficiência.

ABSTRACT

Sementes de maracujá foram submetidas à prensagem sob diferentes taxas de alimentação (1,2 a 3,0kgh-1) com o objetivo de avaliar o impacto desta variação no rendimento do processo de extração, nas características de qualidade e na composição em ácidos graxos do óleo de semente de maracujá. O rendimento de extração de óleo variou entre 24 e 25%, com eficiência de 84 a 86% e teor residual de óleo na torta parcialmente desengordurada em torno de 5%, indicando que o processo utilizado foi adequado à matéria-prima. O menor valor de temperatura de saída do óleo da prensa foi observado na taxa de alimentação de 2,4kgh-1. Não houve diferença significativa (P>0,05) para a composição em ácidos graxos, estabilidade oxidativa, densidade e para os índices de iodo, saponificação, refração e de peróxidos. No entanto, houve diferença (P<0,05) quanto ao teor de ácidos graxos livres, que foi menor para o óleo obtido na maior taxa de alimentação, e para umidade do óleo, que foi maior para a menor taxa de alimentação. A taxa de alimentação na prensagem de sementes de maracujá promoveu diferenças quanto à qualidade do óleo.


Passion fruit seeds were subjected to pressing under different feed rates (1.2 to 3.0kgh-1) in order to assess the impact of this variation in the yield of the extraction process, the quality characteristics and fatty acid composition of the passion fruit seed oil obtained. The yield of the process ranged between 24 and 25% and presented 84 to 86% of efficiency and residual oil in partially defatted cake around 5%, indicating that the procedure was adequate to the raw material. The lowest press oil outlet temperature was observed at the feed rate of 2.4kgh-1. No significant difference (P>0.05) were observed for fatty acid composition, oxidative stability, density and iodine, saponification, refraction and peroxide values. However, significant differences (P<0.05) was observed on free fatty acids content, which was lower for the highest feed rate, and oil moisture, which was higher for the lowest feed rate. The feed rate in pressing of passion fruit seeds promoted differences in oil quality.

ABSTRACT

O objetivo do estudo foi comparar a composição química e a capacidade antioxidante das sementes e dos óleos de linhaça marrom e dourada, e avaliar a estabilidade oxidativa dos óleos. Nas sementes, foram determinados: composição centesimal, capacidade antioxidante total e compostos fenólicos totais. Nos óleos, foram determinados: índice de acidez e peróxido, matéria insaponificável, composição em ácidos graxos, tocoferóis, capacidade antioxidante, compostos fenólicos totais e estabilidade oxidativa em quatro condições de estocagem por até um ano. Não houve diferenças significativas entre os tipos de sementes quanto às variáveis investigadas, e ainda entre os óleos quanto ao rendimento da prensagem, composição em ácidos graxos insaturados, índice de acidez, teores de insaponificáveis e compostos fenólicos totais. Apesar do declínio da estabilidade oxidativa de ambos os óleos durante o armazenamento, o óleo de linhaça marrom e os óleos estocados sob refrigeração apresentaram-se mais estáveis. O índice de peróxido foi maior no óleo de linhaça dourada. O teor de tocoferol total e capacidade antioxidante total foram maiores no óleo de linhaça marrom. Contudo, observou-se uma igualdade entre as sementes de ambas as variedades de linhaça e uma superioridade do óleo de linhaça marrom.


The aim of the study was to compare the chemical composition and antioxidant capacity of the brown and golden flaxseed and their cold-pressed oils, and evaluate the oxidative stability of oils. We determined the chemical composition, total antioxidant capacity and total phenolic compounds of the seeds. In the oils we determined acid and peroxide value, unsaponifiable matter, composition of fatty acids and tocopherols, phenolic compounds, antioxidant capacity and oxidative stability in four storage conditions up to one year. There were no significant differences between the flaxseed types in the analyzed properties and between the oils in terms of yield after pressing, composition of unsaturated fatty acids, acid value, unsaponifiables and phenolic compounds. The oxidative stability of both oils decreased with storage time, however the brown flaxseed oil and the oils stored under refrigeration were more stable. The peroxide value was higher in the golden flaxseed oil. The total tocopherol content and antioxidant capacity were higher in brown flaxseed oil. It was observed equality between the brown and golden flaxseed and a superiority of brown flaxseed oil.

Avaliou-se o efeito da suplementação com óleo de linhaça na dieta, com ou sem injeção de selenito de sódio, sobre o perfil de ácidos graxos e sobre a estabilidade oxidativa do leite de vacas leiteiras. Catorze vacas foram distribuídas em três tratamentos: as do grupo 1, que receberam diariamente 400mL de óleo de linhaça (LIN); as do grupo 2, 400mL de óleo de linhaça + 0,2mg/kg de selenito de sódio IM (LINSe); e as do grupo 3 (controle), que não foram tratadas (C). O óleo foi fornecido diariamente após 15 dias da aplicação única de selenito de sódio, e o experimento teve duração de quatro semanas. Os animais suplementados com o óleo de linhaça produziram leite com altas porcentagens de ácido linoleico conjugado (CLA) e de ômega 3, contudo mais suscetível à oxidação. A aplicação injetável de selenito de sódio mostrou-se eficaz ao impedir a oxidação prematura do leite. Concluiu-se que a inclusão do óleo de linhaça na dieta de vacas leiteiras resulta em aumento do CLA, do ômega 3 e, consequentemente, da oxidação do leite, necessitando, assim do uso de substâncias antioxidantes ou promotores antioxidantes, como o selenito de sódio injetável.


The aim of the present study was to evaluate the effect of dietary linseed oil supplementation with or without injectable sodium selenite on the fatty acid profile and oxidative stability of milk from dairy cows. Fourteen cows were allocated into four treatment groups: Group 1 which received 400mL of linseed oil daily (LIN); Group 2, 400mL of linseed oil + 0,2mg/BW sodium selenite IM (LINSe); Group 3, untreated controls (C). The oil was supplied daily after 15 days of a single application of sodium selenite and during 4 weeks. Animals supplemented with linseed oil produced milk with higher levels of conjugated linoleic acid (CLA) and omega 3, but were also more susceptible to oxidation. The application of sodium selenite was effective to prevent premature oxidation of milk. We concluded that the supplementation of a cow's diet with linseed oil promoted increased CLA and omega 3 in milk, which in turn becomes more susceptible to oxidation, requiring the use of antioxidants or promoters of antioxidant activity such as injectable sodium selenite.

ABSTRACT

The purpose of this study was to evaluate the quality characteristics of chicken sausage prepared with turmeric (Curcuma longa L.) powder (T) during storage at 4degrees C for 20 days. The pH and color values (a and b values) of sausage containing turmeric powder were significantly higher (P<0.05) than the control for both uncooked and cooked sausage. The hardness, chewiness, and gumminess of control sausage significantly changed after 15 days of storage, while the hardness and gumminess of turmeric-supplemented sausages (T) significantly increased after 5 days (until 15 days) for cooked sausages. The total phenolic content and DPPH radical scavenging activity of turmeric-supplemented sausages was significantly higher (P<0.01) than the control for both uncooked and cooked sausage during storage. On the other hand, the acid value of the control was higher than the turmeric-supplemented sausages and the peroxide value of the control was significantly higher (P<0.05) than the turmeric-supplemented sausages after 15 days of storage. Microorganism analysis revealed that total plate counts of uncooked and cooked control sausages were significantly higher (P<0.05) than turmeric-supplemented sausages at 20 days of storage. As a result, sausages prepared with turmeric powder demonstrate antioxidative activity and lipid oxidative stability during storage.

ABSTRACT

The main objective of this work was to quantify the migration of iron and aluminium ions and to evaluate the influence of recipients made of iron, stainless steel, aluminium and glass on the oxidative stability during frying with soy (Glycine max) and refined nhandiroba oils (Fevillea trilobata). Soy oil during the frying process in the four distinct recipients presented increased Free Fatty Acids index (FFA) and Peroxide index (PI) values and decreased Iodine index (II) values. Refined nhandiroba oil presented decreased FFA rates in all the recipients investigated. The analysis of results showed that soy oil presented relevant oxidative alterations when compared to the heating time of 72 h and the types of frying recipients used, and in iron and stainless steel recipients, these differences were higher when compared to glass and aluminium recipients. The analysis of the nhandiroba oil presented moderate oxidative modifications in all the frying recipients investigated.


O Objetivo fundamental foi quantificar a migração dos íons ferro, alumínio e avaliar a influencia dos recipientes de inox, de ferro, de alumínio e de vidro no processo de estabilidade oxidativo, durante a fritura em óleos refinados de soja (Glycine max) e de nhandiroba (Fevillea trilobata). O óleo de Soja durante o processo de fritura nos quatro tipos de recipientes apresentou valores aumentados de (AGL) e (IP) e valores diminuídos (II). O óleo de nhandiroba refinado apresentou taxas de (AGL) decrescidas nos recipientes pesquisados. As análises dos resultados mostraram que o óleo de soja apresentou alterações oxidativas relevantes, quando comparado com o tempo de aquecimento de 72 horas e os tipos de recipientes de frituras utilizados, sendo que, em recipientes de ferro e inox essas diferenças foram maiores do que em recipientes de alumínio e vidro. As análises do óleo de nhandiroba apresentaram modificações oxidativas brandas nos quatro tipos de recipientes pesquisados.
