ABSTRACT

@#Sports drinks consist of water, carbohydrates, and electrolytes specially formulated for athletes or individuals in need. However, coaches from the National Coaching Academy division experience budget constraints to obtain commercial sports drinks on a large scale to meet the needs of all athletes. Therefore, an experimental study was conducted to produce a low-cost isotonic sports drink (Rose Lemonade) with white sugar and brown sugar and evaluate its acceptance among university students through sensory evaluation. This study involved 50 panels with 25 students from UKM (nonathletes) and 25 students from UM (athletes). The overall acceptance of brown sugar Rose Lemonade has an average score of 3.52 ± 0.97 compared to white sugar Rose Lemonade, which is 3.50 ± 1.07. The data analysis showed a nonsignificant difference in the Kruskal Wallis test (p>0.05) for the overall acceptance of both types of sports drinks. In conclusion, this study showed that both white sugar and brown sugar Rose Lemonade isotonic sports drink formulations were acceptable to the panels. The findings of this study provide the formulation of cheap, and easy-making sports drinks. A suggestion for future research is to test the effectiveness of energy supply and electrolytes replacement and shelf life of this sports drink and produce a variety of flavors to meet individual tastes.

ABSTRACT

Introducción. Los cereales tienen aminoácidos limitantes y mezclarlos con harinas de origen marino presentan un mejor equilibrio en éstos mejorando la composición nutricional en productos de panificación, principalmente de proteína y aminoácidos. Objetivo. Desarrollar panes tipo "baguette" sustituyendo parcialente harina de trigo (HT) por harina de calamar (HC) y evaluar su calidad física, química y sensorial. Materiales y métodos. Se utilizó la técnica de masa esponja incorporando 7,5, 10 y 12,5 % de HC. Análisis físicos: tiempo de amasado, peso y fermentación de la masa, volumen específico, peso de los panes (g), % pérdida humedad y color de miga; análisis químicos: humedad, proteína cruda, cenizas, extracto etéreo, fibra cruda, carbohidratos, aminoácidos indispensables y energía bruta y evaluación sensorial: textura, olor, color y sabor. Resultados. Las propiedades físicas no presentaron diferencias (p>0,05), pero sí (p<0,05) para las variables de color en todos los panes, al igual que en los análisis químicos y perfil de aminoácidos (p<0,05), incrementándose la proteína (15,63 % pan con 7,5 % de HC hasta 23,27 % pan con 12,5 % de HC) y mismo comportamiento de aminoácidos indispensables conforme aumentó la inclusión de HC. Los resultados de la evaluación sensorial fueron similares (p>0,05) para 7,5 % de HC (me gusta), para 10,0 y 12,5 % fue indiferente. Conclusiones. La inclusión de HC (7,5 %) en baguette logró un aumento de proteínas y aminoácidos esenciales mejorando la calidad nutricional, con buena aceptación de acuerdo con la prueba de carácter exploratorio con consumidores que se empleó(AU)


Introduction. Cereals have limiting amino acids and mixing them with flours of marine origin could provide a better balance in these improving the nutritional composition in bakery products, mainly protein and amino acids. Objective. To develop and evaluate the physical, chemical, and sensory quality of three white breads of baguette type by partially substitution of wheat flour (HT) with squid flour (HC). Materials and methods. The sponge dough technique was used incorporating 7,5, 10,0 and 12,5 % of HC. Physical analysis: kneading time, dough weight, dough fermentation, specific volume, bread weight (g), % loss of moisture and crumb color; chemical analysis: moisture, crude protein, ash, ether extract, crude fiber, carbohydrates, indispensable amino acids and sensory evaluation: texture, odor, color, and flavor. Results. Physical properties did not show differences (p>0.05), differences (p<0.05) for color variables in all breads as well as in chemical analysis and amino acid profile (p<0.05), the protein show an increase (15,63 % for bread with HT to 23,27 % for bread with 12.5 % of HC) and the same behavior for indispensable amino acids, that increase as inclusion of HC increases. The results of the sensory evaluation were similar (p>0.05) in control and 7,5 % of HC (I like it), for 10 and 12,5% it was indifferent. Conclusions. The inclusion of squid flour (7,5 %) in the preparation of baguette bread achieved an increase of proteins and essential amino acids that improved the nutritional quality of this food, which also presented a good acceptance according to an exploratory test with consumers(AU)

ABSTRACT

Since ancient times, poor nutrition has been the primary culprit of iron deficiency, especially in the school going adolescent girls. There may be a number of factors that contribute to this. The production of affordable, wholesome, and practical foods is a challenge for the food industry. Spirulina platensis, a microscopic and filamentous cyanobacterium is a blue-green algae that is considered to be one of the ancient life forms on Earth. To increase the nutritive value and to provide other vital nutrients, best wholesome cereals must be chosen over or in combination with refined flour. Here, quinoas, soy flour and amaranth come in the picture. The preparation of pancake premix and the final product was done in the department of food and nutrition, school of home sciences , BBAU Lucknow in the duration of nine months from September 2023 to May 2023. The assessment was successful and yielded genuine beneficial outcomes. The spirulina pan cakes excel in terms of flavour, aroma, and mouth feel. The panellists found the pancake's green tint to be somewhat objectionable.

ObjectiveTo explore the effect of mint juice on the nitrite content in pickled cabbage, and to determine the best concentration of mint juice through comprehensive sensory evaluation. MethodsThe control variates method was used to conduct this single factor experiment. The pickled cabbage processing was divided into five groups, one control group CK, and four experimental groups, Lp100, Lp80, Lp60, Lp40, respectively. The data were analyzed by using test of normality, homogeneity of variance test, ANOVA and multiple comparisons. ResultsThe content of nitrite in the experimental group with mint juice was much lower than that in the control group. During each day, as the concentration of mint juice increased, the removal efficiency also increased and the nitrite content in pickled cabbage decreased, too. When the concentration of mint juice was 100%, the nitrite content in pickled cabbage remained the lowest during 1-5 days of fermentation. On the fifth day of fermentation, the removal efficiency of nitrite in pickled cabbage by mint juice with 100% concentration reached the highest (49.55%). Adding 60% mint juice to pickled cabbage showed the highest score of 92 in sensory evaluation. ConclusionMint juice can reduce the nitrite content in pickled cabbage and make pickled cabbage a better flavor. Result indicates that 60% mint juice is the best concentration for a comprehensive effect.

ABSTRACT

Phyllanthi Fructus is a highly unique medicine and food homologous item, which exhibits distinctive flavor, notable nutritional value, and abundant pharmacological activity. It has enormous potential in the creation of health products and pharmaceuticals. However, due to the unique laws of quality formation and transfer of Phyllanthi Fructus, its appearance, shape, chemical compositions, nutrients, and sensory flavors are frequently greatly influenced by botanical resources, the processing and storage conditions. As a result, the current quality evaluation model is difficult to meet the needs of Phyllanthi Fructus as a medicine and food homologous item in the development of diversified products. This paper constructs the hierarchical utilization mode of Phyllanthi Fructus based on its unique quality formation and transmission laws, explores the quality evaluation model for food-oriented use and medicinal-oriented use, respectively, and systematically describes the quality evaluation idea under diversified application scenarios. This paper aims to serve as a reference for the construction of a quality evaluation model suitable for the medicine and food homologous item of Phyllanthi Fructus.

Vibration sensation is related to motor function. However, it is unclear which vibration frequencies are associated with motor function. Therefore, in this cross-sectional study, we investigated whether a specific frequency of vibration sensation could explain motor functions. Thirty-two community-dwelling Japanese healthy older adults aged 70 years or older participated in the present study. Grip strength, one-leg standing time, and 10-m walking time were evaluated as indicators of motor function. Vibratory (40, 128, and 256 Hz) and tactile sensory tests were examined as sensory functions. Grip strength per body weight was significantly correlated with sex, body mass index, falls efficacy scale, vibration sensation with 40 and 128 Hz, and 10-m walking time (P < 0.05). Furthermore, one-leg standing time showed a correlation between vibration sensation (128 and 256 Hz) and fall history (P < 0.05). However, 10-m walking time was significantly correlated with only the grip strength to body weight ratio. Multiple regression analysis showed that vibration sensation with 128 Hz (β = 0.427) and sex (β = -0.335) (P < 0.05) were significant independent variables associated with grip strength to body weight ratio. Vibration sensation with 256 Hz (β = 0.465) and age (β = -0.343) (P < 0.05) were significant independent variable associated with one-leg standing time. No significant variables were identified for the 10-m walking time. Vibration sensation associated with motor function shows specific frequency characteristics in community-dwelling older Japanese adults.

ABSTRACT

Licorzine granules are common preparations for children zinc deficiency. Considering the long course of treatment, the taste of licorzine granules may become a main factor affecting medication adherence. To date there have been no taste evaluation research into licorzine granules yet. In this study, both sensory evaluation and electronic tongue method were utilized to optimize licorzine granules formulations, evaluate the tastes of licorzine, excipients, optimized formulation in vivo and in vitro. As the results show, bitterness and astringency are the main unpleasant tastes generating from licorzine. Xanthan gum is the main taste-masking excipient, lowering down the bitterness and astringency of licorzine by at least one grade. Good correlation exists between the results of sensory evaluation and electronic tongue method, and an integrated combination of the two helps to obtain objective and rational research conclusions. The adult sensory evaluation study was a research-based clinical trial conducted with informed consent from all subjects in accordance with the ethical requirements of Good Clinical Practice.

ABSTRACT

This research work evaluates the production of biscuits from blends of acha and pigeon pea flour. Acha and pigeon pea flour were blended in the ratio 95:5, 90:10, 85:15, 80:20 and 100:0 (control) to produce biscuits. Biscuits made from this blend were analyzed for proximate analysis, antinutrient composition, physical attributes, and sensory qualities. The moisture, protein, fat, crude fiber, ash, and carbohydrate content of the biscuits ranged from 7.87-9.84%, 7.36-8.14%, 21.99-26.33%, 0.39-0.59%, 0.87-1.24%, and 58.06-63.01%, respectively. The antinutrient composition varied from 4.24-6.82% for tannin and 3.85-4.68% for phytate. The physical attributes of the biscuits ranged from 8.34-10.98 g, 0.56-0.85 cm, 4.77-5.03, 5.99-8.59 for weight, thickness, diameter and spread ratio, respectively. The sensory evaluation showed that the biscuit sample with the blend ratio of 95% and 5% (acha to pigeon pea flour) was the most acceptable because it gave the best colour, appearance, crispness and overall acceptability. The result shows that acceptable biscuits with improved nutritional attributes can be produced from the blend of acha and pigeon pea flour. This will eliminate or reduce the problems associated with protein-energy malnutrition common in most local communities, and reduce wheat importation, thereby increasing the use of the most underutilized sources of flour in most developing countries.

ABSTRACT In the dairy industry, fermented products are traditionally made with cow's milk, however, recently other ingredients have been used that give different qualities to the final product; among them is buffalo milk, which has distinctive characteristics and is rarely utilized industrially in Colombia, for this reason, the present study aimed to evaluate the effect of adding aloe vera (Aloe barbadensis Miller) on the physicochemical and bromatological properties and shelf-life of buffalo milk yogurt. First, an aloe vera sauce was made, which was added to buffalo milk yogurt in three percentages (5, 10, and 15 %), and one was chosen using a preference ordering test. Subsequently, the selected product was evaluated for physicochemical and bromatological parameters and mineral content. The shelf-life was also calculated using an accelerated shelf-life study at temperatures of 5, 15, 25, and 35 °C. According to the sensory panel the best yogurt was the sample with 15 % of aloe vera sauce. For the bromatological analysis, it was found that the final product had 2.57 % protein, 5.87 % fat, 0.49 % ash, and 74.9 % moisture. Shelf-life calculations yielded an average of 28.6 days. It is concluded that aloe vera positively impacted the bromatological parameters and mineral content of buffalo milk yogurt.


RESUMEN En la industria láctea, se elaboran productos fermentados, tradicionalmente, con leche de vaca; sin embargo, en los últimos tiempos, se han utilizado otros ingredientes, que dan diferentes cualidades al producto final; entre ellos, se encuentra la leche de búfala, que tiene características únicas y además es poco utilizada industrialmente en Colombia. La presente investigación tuvo por objetivo evaluar el efecto de la adición de aloe vera (Aloe barbadensis Miller), en las características fisicoquímicas, bromatológicas y vida útil de un yogurt de leche de búfala. Primeramente, se realizó una salsa de aloe vera, la que se le agregó al yogurt de leche de búfala, en tres porcentajes (5, 10 y 15 %) y se escogió uno, mediante una prueba de preferencia por ordenación. Posteriormente, al producto seleccionado, se le evaluaron los parámetros fisicoquímicos, bromatológicos y contenido de minerales. También fue calculada la vida útil del yogurt, utilizando un estudio de vida útil, acelerado a temperaturas de 5, 15, 25, y 35 °C. De acuerdo con el panel sensorial, se estableció que la mejor muestra de yogurt fue aquella que tenía 15 % de salsa de aloe vera. En cuanto al análisis bromatológico, se encontró que el producto final tuvo 2,57 % de proteína, 5,87 % de grasa, 0,49 % de cenizas y 74,9 % de humedad. Los cálculos de vida útil arrojaron 28,6 días en promedio. Se concluye que el aloe vera impactó positivamente los parámetros bromatológicos y el contenido de minerales del yogurt de leche de búfala.

ABSTRACT

During the processing of fruits, large quantities of wastes are generated, these by-products contain large amounts of oil, starch and protein that can be exploited due to their good nutritional, technological, and functional properties. However, due to the presence of several antinutritional factors, such as polyphenolic compounds, phytic acid, cyanogenic glycoside and oxalates, the use of fruit wastes in human food is limited. The present investigation was aimed to study the effect of soaking and heating on antinutritional factors. It also examines the effect of substituting defatted apricot, peach, and mango seed kernel flours for wheat flour in various ratios (5, 10, and 15%) on the chemical composition, physical features, and sensory properties evaluation of biscuits. The results revealed a significant effect of soaking and heating on the antinutrients, detoxification led to a significant (p≤0.05) decrease in antinutritional factors with ratios 43.63-52.73% total phenols, 78.17-86.16% tannins, 45.92-54.34% phytic acid and 40.42-44.70% oxalates, along with the complete removal (100%) of hydrocyanic acid (HCN). Wheat biscuit contained 3.20% moisture, 6.31% protein, 15.46% fat, 0.64% crude fiber, 1.25% ash and 76.33% carbohydrate. Highly acceptable biscuits could be obtained by incorporating 5% of defatted apricot, peach and mango kernel flours in the wheat biscuits formulation. As a by-product, apricot, peach and mango kernels offer an exciting potential as a food ingredient permitting to enrich biscuits and enlarge the food base for consumers.

ObjectiveOn the basis of sensory evaluation, the changes of volatile components in gecko before and after processing were compared, and the odor correction effect of different processing methods of gecko was discussed. MethodRaw products, fried yellow products, vinegar processed products, wine processed products, talcum powder scalding products and white wine sprayed products after scalding talcum powder of gecko were prepared, and 10 odor assessors were invited to evaluate the 6 samples in turn by sensory evaluation. Headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS) and relative odor activity value (ROAV) were used to analyze the key odor components, and multivariate statistical methods were used to analyze the difference of volatile components between raw and processed products of gecko. Taking water-soluble extract and protein contents as internal indicators, sensory evaluation score and content ranking of differential components as external indicators, and assigning a weight of 0.25 to them respectively, the comprehensive scores of raw products and processed products of gecko were calculated to evaluate the odor correction effect of each processing method. ResultThe average sensory evaluation scores of the raw products, fried yellow products, vinegar processed products, wine processed products, talcum powder scalding products and white wine sprayed products after scalding talcum powder of gecko were 1.6, 5.2, 6.2, 6.1, 7.2 and 8.0, respectively. ROAV results showed that key components affecting odor of gecko were 2-ethyl-3,5-dimethylpyrazine, isovaleraldehyde, trimethylamine, 1-octen-3-ol, n-octanal, nonanal, 2-methylnaphthalene, γ-octanolide, 2-heptanone and phenol. Principal component analysis (PCA) significantly distinguished raw products from processed products. Orthogonal partial least squares-discriminant analysis (OPLS-DA) results showed that there were 16, 13, 16, 16, 16 differential components between raw products, fried yellow products, vinegar processed products, wine processed products, talcum powder scalding products and white wine sprayed products after scalding talcum powder of gecko. Among these differential components, there were 4 common components, namely, the contents of different odor components (2-methylnaphthalene and 2-ethyl-p-xylene) decreased, while the contents of different flavor components (2-decanone and 2,3,5-trimethylpyrazine) increased. The comprehensive scoring results showed that the odor correction effect of each processed products was in the order of talcum powder scalding products>wine processed products>vinegar processed products>fried yellow products>white wine sprayed products after scalding talcum powder. ConclusionTalcum powder scalding is a better method to improve the odor of gecko, and it can provide an experimental basis for the processing of gecko to correct the odor.

Quality evaluation of Chinese medicinal decoction pieces is vital for the development of the downstream industries, and is an important channel for implementing the strategy of "higher quality, higher price, and priority for the high quality" for traditional Chinese medicine. At the moment, the quality of Chinese medicinal decoction pieces is mainly evaluated based on chemical component examination. Considering the weak preliminary research foundation and poor research conditions, traditional experience-based evaluation is undervalued in the quality rating of Chinese medicinal decoction pieces. However, traditional experience is a summary of the quality of Chinese medicinal materials based on clinical experience, which thus can be a potential basis for the quality evaluation of the decoction pieces. It is a challenge in the evaluation of Chinese medicinal decoction pieces to objectify the traditional experience-based evaluation from multiple aspects such as chemistry, effect, and characterization via modern techniques. Therefore, this study developed the "experience-ingredients-activity-electronic sensing" evaluation system for Chinese medicinal decoction pieces on the basis of experience-based assessment, chemical ingredients that can truly reflect the traditional experience, biological effect assessment, and electronic sensory evaluation, which is expected to quantify the traditional experience of quality evaluation of Chinese medicinal decoction pieces via chemistry, biology, and sensory simulation. The evaluation system can serve as a reference for clinical experience-based quality evaluation of Chinese medicinal decoction pieces.

ABSTRACT

It is a common understanding that turbidity and precipitation of traditional Chinese medicine are easy to occur in the process of decocting. At present, our research group found that the cause of "multi-phase of traditional Chinese medicine decoction" mainly came from the interaction between the effective components of traditional Chinese medicine, especially the interaction of acid and base components. For example, the Liquorice and Rhizoma chinensis was a supramolecular system formed by a large number of active components in the decoction (>30%), and could stably exist in the decoction system. In this study, the supramolecular part was extracted, and the morphology of the supramolecular part was characterized by scanning electron microscopy and dynamic light scattering. It was observed that the supramolecular particles were uniform in size and regular in shape. The main components of supramolecular sites were identified by liquid mass spectrometry (LC-MSn). The results of UV and IR spectra showed that the chemical components of Liquorice and Rhizoma chinensis in the co-decocting process collided with each other, and weak bonds were formed between the functional groups of the molecules, which then induced the aggregation to form supramolecules. Thereafter, Through the diarrhea model of mice, sensory evaluation and antibacterial activity evaluation found that Liquorice and Rhizoma chinensis decocted together enhanced the antibacterial activity of Rhizoma, and compatibility "reconcile" Rhizoma "big bitter cold" property compared with single decoction group and interval administration group. All animal experiments were approved by the Animal Ethics Committee of Beijing University of Chinese Medicine, and the relevant regulations of Beijing University of Chinese Medicine on experimental animals were strictly followed. In this study, supramolecular chemistry method was used to preliminarily discuss the scientific connotation of "increasing efficiency and decreasing toxicity" of Liquorice and Rhizoma chinensis combined decoction from three perspectives of "property, efficacy and taste", and provide new ideas for the basic research of "reconcile" compatibility of Liquorice.

Lettuce is the most important leafy vegetable in Brazil. Hydroponic lettuce cultivation has grown due to the viability of harvesting throughout the year. In this context, this study aimed to evaluate the agronomic characteristics, color, and preference of curly lettuce in the NFT hydroponic system. Six lineages (6601-1A, 6601-2L, 7016-6A, 7119-1B, 7223-1A, and 7224-4A) and two commercial cultivars (Brida and Vanda) of lettuce were used, in a completely randomized blocks design with four replications. Shoot length, root length, stem length, number of leaves, stem diameter, plant diameter, shoot fresh mass, root fresh mass, chlorophyll content, instrumental color, and sensory characteristics were evaluated. As for agronomic evaluation, the bolting of 6601-2L lettuce was relevant in different attributes. The Vanda lettuce and the lineage 7016-6A presented best performances for shoot fresh mass (399.44 and 378.63 g, respectively), while the lineages 7119-1B and 6601-2L present the worst performance (279.50 and 273.13 g, respectively). There was variation in chlorophyll content and luminosity, however, the evaluators did not notice differences between lettuces for brightness or green color, as well as for crunchy texture. Lettuces 6601-2L, 7224-4A, 6601-1A, Brida, 7223-1A, and 7119-1B were preferred. The variation among plants may be due to different situations, such as harvesting times and bolting, and a direct relationship between agronomic properties and preference among lettuces has not been established yet.

ABSTRACT: This study investigated the production of pasta with the addition of microencapsulated soybean molasses and its effect on the physicochemical, sensory, and microbiological characteristics and shelf life of the product. Three formulations were prepared, as follows: F1, control pasta; F2, pasta made with free extract; and F3, pasta made with soybean molasses microparticles, which were characterized in terms of their pH, water activity, color measurements, sensory evaluation, microbiological characterization, and shelf life via determination of the phenolic compounds remaining during a 28 day storage. The cooked pasta containing the microparticles retained 25% of the original phenolics up to 14th day of storage, meanwhile, the raw pasta presented 15% of the original phenolics up to the 21st day of storage. Good sensory acceptability was observed for all pasta containing the microparticles, with no differences from the control pasta; however, pasta made with free extract was less accepted when compared to the other types. The addition of microparticles did not change the microbiological profile, pH, water activity, or color of the pasta.


RESUMO: Este trabalho teve como objetivo desenvolver massas alimentícias adicionadas de microcápsulas de melaço de soja e avaliar o efeito das microcápsulas sobre as características físico-químicas, sensoriais, microbiológicas e vida de prateleira. As formulações das massas foram, controle (F1), com extrato livre (F2) e com microcápsulas (F3), foram realizadas as análises de pH, atividade de água, cor, análise sensorial, microbiológica e vida de prateleira dos fenólicos por 28 dias. As massas cozidas contendo microcápsulas permaneceram com 25% de fenólicos até o 14º dia, e as massas cruas com 15% de fenólicos até o 21° dia de armazenamento. As massas com microcápsulas mostraram boa aceitabilidade não diferindo da massa controle, entretanto as massas com o extrato livre mostraram menor aceitação em relação às demais. A adição das microcápsulas não alterou a parte microbiológica, pH, atividade de água e cor das massas.

ABSTRACT

RESUMEN El fermento natural o starter es un insumo panadero, que se ha revalorizado, en la actualidad, por sus beneficios y por su aporte de sabor. En este estudio, se determinaron los parámetros de cultivo del starter espontáneo de Lactobacillus, a partir de harina integral, para aplicarlo en la elaboración de pan campesino, en función de sus características sensoriales y mecánicas. Se elaboraron tres starters, para lo cual, se mezcló harina integral con agua, en una proporción de 45,5 y 54,5%, respectivamente; posterior a ello, se fermentaron, espontáneamente, a 20, 24 y 28°C, hasta un pH final de 4, a partir de los cuales, se elaboraron panes campesinos. Los panes fueron evaluados sensorialmente, por un panel de expertos (07), mediante una escala lineal no estructurada de 5 puntos, en cuanto a la forma ovalada, apariencia de la costra, masticabilidad de miga, gusto ácido y apariencia de los alveolos. El pan elaborado con el fermento a 24°C fue seleccionado por los panelistas, debido a que presentó puntajes superiores (p<0,05), en los atributos de apariencia de la costra (4,24), masticabilidad de la miga (5,0), gusto ácido (4,67) y apariencia de los alveolos (4,0). El fermento empleado presentó 79 x 107 UFC g-1 de bacterias acidolácticas. Finalmente, la textura del pan campesino seleccionado fue caracterizada instrumentalmente en términos de dureza (102,09N), gomosidad (43,02N), masticabilidad (37,36N), elasticidad (0,87) y cohesividad (0,42), perfil que se puede emplear como parámetro de calidad, para pan campesino y otras variedades similares.


ABSTRACT The natural ferment or sourdough starter is a bakery input that has been revalued nowadays for its benefits and flavour improve. In this study, the incubation parameters of the spontaneous Lactobacillus starter made with wholemeal flour were determined to be applied in sourdough bread production depending on its sensory and mechanical characteristics. Three starters were made with wholemeal flour mixed with water in a proportion of 45.5 and 54.5% respectively, then were fermented spontaneously at 20, 24 and 28°C until a final pH of 4, from which sourdough breads were produced. The breads were sensory evaluated by a panel of experts (07), using a 5-point unstructured linear scale, in terms of oval shape, crust appearance, crumb chewiness, sourness and alveoli appearance. The bread made with the starter at 24°C was selected because of the higher scores (p<0.05) in the attributes of crust appearance (4.24), crumb chewiness (5.0), sourness (4.67) and alveoli appearance (4.0). The starter used exhibit 79 x 107 CFU g-1 of lactic acid bacteria. Finally, the texture of the selected sourdough bread was characterized in terms of hardness (102.09N), gumminess (43.02N), chewiness (37.36N), springiness (0.87) and cohesiveness (0.42), a profile that can be used as a quality parameter for sourdough bread and other similar varieties.

ABSTRACT

OBJECTIVE@#This study was undertaken to investigate the antihyperglycemic potential of miracle fruit (MF) as well as its hepatic safety as compared to aspartame in alloxan-induced diabetic mice.@*METHODS@#MF extracts were prepared and screened for their phytochemical composition using high-performance liquid chromatography (HPLC). Total phenolic, flavonoid and tannin contents and antioxidant potential were also determined. Additionally, MF was evaluated for its sensory attributes. For in vivo work, MF ethanol extract at high (MFH: 500 mg/kg body weight [BW]) and low (MFL: 250 mg/kg BW) doses as well as aspartame were injected intraperitoneally into alloxan-induced diabetic mice. Blood glucose levels were determined following acute and subchronic treatment. At the end of the study, animals were sacrificed, serum was collected for biochemical analysis and liver tissues were obtained for histopathological examination.@*RESULTS@#MF ethanol extract contained more flavonoids and tannins, and had higher 1,1-diphenyl-1-picrylhydrazyl radical-scavenging activity (79.61%) compared to MF aqueous extract (P < 0.05). HPLC analysis of MF ethanol extract also revealed the presence of 10 antioxidants with quercetin comprising the major polyphenol. Additionally, sensory analysis of MF showed that its intake is effective in masking undesirable sourness. Subchronic administration of MFH proved amelioration of hyperglycemia in mice as compared to aspartame. Moreover, aspartame treatment significantly elevated (P < 0.05) the level of alanine aminotransferase and had destructive effects on the liver histopathology; however, hepatic architecture was restored by low and high doses of MF.@*CONCLUSION@#MF is an effective antihyperglycemic with hepatoprotective properties that can be used as a healthier alternative sweetening agent in place of aspartame for sour beverages.

ABSTRACT

Objective::To determine the relationship between the characters and the main components of Chelidonii Herba pieces. Method::The main components of the samples were determined by HPLC, and the characters of Chelidonii Herba Pieces were evaluated by sensory evaluation. The correlation between the characters and components was calculated by correlation formula. Result::The content of 6 components, such as chelidonine, was determined by HPLC. Based on the result of sensory evaluation, there was a certain correlation between the characters and the components. Character descriptions that " some have visible white powder, some have white pubescence, and sometimes they have visible yellow florets" had a very low similarity with total alkali, indicating that these characters and total alkali content was not related. The similarity between the description of " hollow stem" had a high similarity with total alkali content, indicating that the amount of stem was related to the total alkali content. The character description of " more broken leaves" was negatively correlated with total alkaloids in the similarity, which indicated that the content of total alkaloids was less when there were more leaves(or more broken leaves), otherwise, the content of total alkaloids was relatively higher. Conclusion::The established HPLC method is simple and feasible. This study objectively quantifies the descriptions of Chelidonii Herba pieces characters, correlates them with the main components of Chelidonii Herba pieces, and then preliminarily judges the quality of Chelidonii Herba pieces according to the appearance of the characters, which provides a theoretical basis for the identification of Chelidonii Herba pieces in the market by experience, and ideas for the study of the characters of other traditional Chinese medicines.

ABSTRACT

OBJECTIVE: To investigate the taste-masking effect of montelukast sodium orally disintegrating tablets using electronic tongue technology and human sensory evaluation and determine the optimum formulation. METHODS: Orally disintegrating tablets were prepared with five different concentrations of flavoring agents or without flavoring agent.The tastes of those tablets were determined by electronic tongue, and principal component analysis and linear discriminant analysis were used to evaluate differences of different formulations. The taste-masking effect of the tablets was investigated combined with electronic tongue analysis and sensory evaluation of subjects. RESULTS: The taste of orally disintegrating tablet was the best when the total amount of flavoring agent was 1.6 mg, and the ratio of sweetening agent to aromatic agent was 5∶3. CONCLUSION: The combination of electronic tongue and human sensory assess can evaluate the taste-masking effect of orally disintegrating tablets and provide the basis for determining the optimum formulation.

Cañihua (Chenopodium pallidicaule Aellen) es un grano andino que está ganando interés como alternativas nutritivas sin gluten frente a los cereales convencionales de cara a las personas con trastornos relacionados al gluten. El objetivo de la presente investigación fue elaborar un pan libre de gluten a base harina de cañihua y evaluar su aceptabilidad sensorial. Se propusieron y elaboraron tres formulaciones en las que se variaron los porcentajes de harina de cañihua (7,6% 9,5% y 8,3%), almidón de yuca, (19%, 21% y 15,4%), suero de leche (3,8%) y goma xantán (0,6 y 1,2%). La formulación que contenía harina de cañihua (8,3%), almidón de yuca (15,4%), y goma xantán (1,2%) fue el que presentó mayor aceptabilidad (HC83). La composición proximal del pan de Cañihua mostró un contenido de proteínas (11,2%), grasa (11,2%) y fibra dietaría (4,74%). La evaluación sensorial por los consumidores celiacos mostró una aceptabilidad general de 4,6/5 puntos sobre la escala hedónica con una puntuación "me gusta mucho". En conclusión la harina de cañihua es un recurso adecuado y aceptable para los consumidores celiacos y puede utilizarse para la producción de panes.


Cañihua (Chenopodium pallidicaule Aellen) is a naturally gluten-free Andean grain that is gaining interest as a nutritious alternative to conventional cereals for people with gluten-related disorders. The objective of the present investigation was to elaborate a gluten-free bread formulation containing cañihua flour and evaluate its sensory acceptability. Three formulations were proposed that contained: cañihua flour (7.6% 9.5% and 8.3%), cassava starch (19%, 21% and 15.4%), whey (3.8%) and xanthan gum (0.6 and 1.2%). The results showed that the formulation containing cañihua flour (8.3%), cassava starch (15.4%) and xanthan gum (1.2%) obtained a satisfactory acceptability (HC83). The proximal analysis showed a protein content (11.2%), fat (11.2%), and dietary fiber (4.74%). The sensory evaluation by celiac consumers showed a general acceptability of 4.6/5 points on the hedonic scale with a score "I like it a lot". In conclusion, cañihua flour is a suitable source and acceptable for celiac consumers and can be used for the production of breads.
