ABSTRACT

RESUMEN Una política pública creada para abordar el problema de la obesidad en Chile, es la Ley de Alimentos del año 2016 y su Reglamento que incluye etiquetado frontal de advertencia. El objetivo del estudio es evaluar el reconocimiento, juicio de valor y utilización del etiquetado frontal de advertencia descrito en la reglamentación, en personas responsables de escolares de las comunas de La Serena y Coquimbo. En estudio transversal, se aplicaron 543 encuestas personales en 22 establecimientos educacionales seleccionados por muestreo probabilístico estratificado. Se utilizó prueba de Chi-cuadrado para bondad de ajuste y tablas de contingencia, se consideró significativo un valor p<0,05. El 98,7% reconoció los sellos de advertencia, principalmente en los envases. El 86,2% valoró como no saludable su presencia y 68,1%, como saludable su ausencia. La comparación de sellos fue realizada por el 67,5% de los encuestados, de los cuales un 97,4% eligió los alimentos con menor cantidad de sellos. El 91,3% señaló que disminuyó la cantidad de alimentos comprados con presencia de sellos en relación al período anterior a la vigencia de la Ley. Los sellos de advertencia son conocidos, entendidos y considerados en la selección de los alimentos.


ABSTRACT The Chilean Food Law of 2016 was a public policy created to address the problem of obesity in Chile and includes front-of-package warning labeling. The objective of the study is to evaluate the recognition, value judgment and use of the front-of-package warning labels described in the regulation, among caretakers of schoolchildren, in the districts of La Serena and Coquimbo, Chile. A cross-sectional study was conducted. A total of 543 personal surveys were applied in 22 educational establishments selected by stratified probability sampling. Chi-square goodness of fit test and contingency tables were used, a p value<0.05 was considered significant. Almost all caretakers surveyed (98.7%) recognized warning labels, mainly in packaging, 82% of the participants rated the presence of the labels as unhealthy and 68.1% reported the absence of the label indicated a healthy food. The label comparison was made by 67.5% of the respondents, of which 97.4% chose foods with fewer labels. 91.3% indicated that the quantity of food purchased with warning labels decreased in relation to the period before the law was launched. Warning labels are known, understood, and considered in food selection.

BACKGROUND/OBJECTIVES: With the advances in technologies, self-service kiosks at foodservice operations are becoming a new way of service provision. This study examined the relationships among the menu information quality, nutrition information quality, technology acceptance characteristics, and customer behavioral intention toward the kiosks in fast food restaurants.SUBJECTS/METHODS: A survey with a self-administered method was distributed online and offline. The sample consisted of customers who had used the kiosks at fast food restaurants in the last six months prior to the survey. The study hypotheses were tested by applying structural equation modeling.RESULTS: Structural equation modeling revealed the positive impacts of menu information quality and nutrition information quality, technology acceptance characteristics, and behavioral intention toward kiosks at fast food restaurants. On the other hand, one hypothesis (Hypothesis 4) on the impact of nutrition information quality on the perceived usefulness was rejected.CONCLUSION: The study is the first to investigate nutrition and menu information at foodservice kiosks and relate them to technology acceptance. The study is very timely and adequate in the time of the 4th industrial revolution. The critical importance of the presentation of nutrition information and menu information at the kiosks at fast food restaurants was verified. The academic and industrial implications of the study findings were discussed.

ABSTRACT

This study examined the perception and behavior of fast food restaurant customers toward ordering kiosk nutrition information. Specifically, the influence of nutrition information transparency and information quality on behavioral intention and revisit intention were identified. In addition, the difference in the nutrition information transparency and information quality was analyzed according to the health consciousness of the customers. The study employed a self-administered survey that was distributed both online and offline from November 8~22, 2018. The sample of the study was customers who had experienced ordering from the kiosk in a fast food restaurant in the six months prior to taking the survey. A total of 250 (98.0%) respondents completed the survey, which was used for data analysis. As a result, there was a significant relation between transparency and nutrition information quality (P<0.001). The higher the visibility and inferability of the nutrition information, the better the nutrition information quality. Nutrition information quality has a significant impact on the levels of customer satisfaction and revisit intention (P<0.001). For the differences in the transparency and nutrition information quality by health consciousness of customers, the results indicated that groups with high health consciousness (3.74 or higher) perceived a higher transparency and nutritional information quality than those with a lower health consciousness. These findings can form the basis of a strategy in developing nutrition information of ordering kiosks in restaurants. In addition, it can be applied to academia and industry.

ABSTRACT

Aim: To collate and analyse label information on nutrients for meat products (used as sandwich fillings) in the Netherlands, using a standardised methodology established by the Global Food Monitoring Group. The objective was to compare levels of saturated fat (in g/100 grams) and sodium (in mg/100 grams) from 2011-2015 and to evaluate reformulation targets for sodium and saturated fat levels that were due to be met by January 1, 2015. Study Design: Data collection study. Place and Duration: Data collection in two supermarkets in the Netherlands for one month. Methodology: Data were collected by photographing the Nutrition Information Panels (NIPs), front-of-pack communications (Guideline Daily Amounts, health logos) and other back-of-pack information from product labels of processed foods in-store using smartphone technology. Photos were uploaded to a central database where data were entered and checked and cleaned manually. Levels of sodium and saturated fat were calculated and compared with data available from reformulation monitoring reports and with the reformulation targets of the meat sector. Results: Data were collected for 911 processed meat products, with data available for 863 meat products after data cleaning, and 86% (n=745) displaying a NIP. Sodium levels in 2015 were similar compared to concentrations observed in previous years for all subcategories of meat products. For saturated fat, combined heated meat products' saturated fat content was 8 g/100g (SD=3) based on label information in 2015 compared with 10 g/100g (SD=3) based on the label and chemical analyses information of 2014: P<0.001. The percentages of products (2015) which complied with the reformulation targets ranged per product category from 14%-93% for sodium levels and 25%-88% for saturated fat levels. Only a small percentage of meats displayed a health logo (2%) or Guideline Daily Amounts (15%) on the label. Conclusion: Based on the comparison we observed no progress with sodium reductions and little progress with saturated fat reductions in the Netherlands between 2011 and 2015 in processed meat products. In light of the Netherlands’ reformulation covenant of 2014, focus on nutrient levels of meat products could contribute to help meet the national commitment to reduce sodium and saturated fat levels. This method of evaluation could also be used for other product categories to monitor progress and to ultimately decrease the burden of nutrition-associated diseases in the country.

ABSTRACT

OBJECTIVES: The purpose of the study was to develop a series of education materials as a card news format to provide nutrition information for pregnant and lactating women. METHODS: The materials were developed in seven steps. As a first step, the needs of pregnant and lactating women were assessed by reviewing scientific papers and existing education materials, and by interviewing a focus group. The second step was to construct main categories and the topics of information. In step 3, a draft of the contents in each topic was developed based on the scientific evidence. In step 4, a draft of card news was created by editors and designers by editing the text and embedding images in the card news. In step 5, the text, images and sequences were reviewed to improve readability by the members of the project team and nutrition experts. In step 6, parts of the text or images or the sequences of the card news were revised based on the reviews. In step 7, the card news were finalized and released online to the public. RESULTS: A series of 26 card news for pregnant and lactating women were developed. The series covered five categories such as nutrition management, healthy food choices, food safety, favorites to avoid, nutrition management in special conditions for pregnant and lactating women. The satisfaction of 7 topics of the card news was evaluated by 140 pregnant women, and more than 70% of the women were satisfied with the materials. CONCLUSIONS: The card news format materials developed in this study are innovative nutrition education tools, and can be downloaded on the homepage of the Ministry of Food and Drug Safety. Those materials can be easily shared in social media by nutrition educators or by pregnant and lactating women to use.

ABSTRACT

A menu labeling initiative is a lawful regulation with an aim to promote public health by providing customers the right to make informed menu choices. As college years are a critical period in which students form dietary habits, which are sustained throughout their lives, provision of nutritional information at the university dining services is important to students' health and life. Due to the lack of research on menu labeling at university dining services, the purpose of this study was to examine college students' attitudes and motivations toward menu labeling at university dining services, as well as their use intentions toward nutrition information at university dining services. Data were collected from a self-administered survey distributed to 484 college students who had experienced university dining services. Motivations of university students toward menu labeling were categorized into ‘knowledge pursuit’ and ‘health pursuit’. Students' attitudes toward menu labeling had a positive effect on their intention to use menu labeling at university dining services. The findings of the study indicated that female students, or those who frequently used nutrition information, tended to have higher attitudes, motivations, and use intentions toward nutrition information. The study results suggest that facilitation of healthy eating environments at university dining services by offering nutrition information, and nutrition and health education is necessary.

ABSTRACT

The aim of this study was to determine whether nutrition labeling of foods containing lipid is consistent with the Brazilian Legislation, as well as whether the portions described on the label match the volumetric capacity of tablespoons. We analyzed the labels of 23 packages of mar¬garine, 11 packages of vegetable cream, 45 packages of butter, 41 jars of cream cheese, and 12 bottles of palm oil, identified through online search and/or commercially available. A sample of each food group was weighed in 30 different types of level tablespoons. We verified that 20.6; 79.4 and 17.4% of the margarine and vegetables cream analyzed were designated as ?hydrogenated?, ?interesterified?, and ?trans-fat?, respectively; 11.8% were designated as ?butter + margarine?, which is not in accordance with the legislation. There was heterogeneity in the levels of sodium declared, with mean values ranging from 50.0-94.2 mg/10 g for margarine and vegetable cream, 1.0-115.0 mg/10 g for butter, and 106.3-174.3 mg/30 g for cream cheese. The average cholesterol content declared in butter ranged from 35.0 to 196.0 mg/10g. The labeling of palm oil showed no list of ingredients in 50% of the products assessed and incorrect statement of saturated fat content was present in 41.6% of the samples. The difference between the tablespoons ranged from 232.0 to 255.0%. It is worth noting that only 6.7; 6.7; 5.0 and 4.4 % presented the volumetric capacity of the tablespoons for margarine and vegetable cream, butter, cream cheese, and palm oil, respectively, in accordance with the legislation. The results demonstrate the need for standardization of tablespoons, updating, overt and efficient monitoring regarding the labeling of lipid foods in Brazil.


El objetivo de este estudio fue determinar si el etiquetado nutricional de los alimentos fuente de lípidos está de acuerdo con la ley brasileña vigente, así como si las porciones descritas en la etiqueta coinciden con la capacidad volumétrica de cucharadas soperas. Se analizaron las etiquetas de 23 margarinas, 11 cremas vegetales, 45 mantequillas, 41 requesones y 12 aceites de palma, productos que fueron identificados a través de una búsqueda por internet y/o adquiridos en el comercio. Se pesó una muestra de cada alimento, usando 30 diferentes tipos de cucharas soperas. Se verificó que el 20,6; 79,4 y 17,4% de las margarinas y cremas vegetales se etiquetaron como ?hidrogenadas?, ?interesterificadas? y ?con grasa trans?, respectivamente; también se verificó que el 11,8% se etiquetó como ?mantequilla + margarina?, ítem no previsto en la legislación. Se observó heterogeneidad en los niveles de sodio declarados, con los siguientes valores medios: 50,0-94,2 mg/10 g en las margarinas y cremas vegetales; 1,0-115 mg/10 g en las mantequillas y 106,3- 174,3 mg/30 g en los requesones. El contenido medio de colesterol declarado en las mantequillas osciló entre 35,0-196,0 mg/10g. El etiquetado del aceite de palma carecía del listado de ingredientes en el 50 % de los productos, y el nivel de grasa saturada estaba etiquetado de forma inexacta en el 41,6% de las muestras. La diferencia entre cucharadas soperas varió desde 232,0- 255,0%, puesto que el 6,7; 6,7; 5,0 y 4,4 % de las margarinas y cremas vegetales, mantequillas, requesones y aceites de palma, respectivamente, presentaron la capacidad volumétrica establecida en la legislación. Los resultados demuestran la necesidad de estandarización de las cucharadas soperas, actualización, fiscalización rigurosa y eficiente en el etiquetado de los alimentos lipídicos en Brasil.

Verificou-se que 20,6%; 79,4% e 17,4% das margarinas e cremes vegetais foram designadas como ?hidrogenadas?, ?interesterificadas? e ?com gordura trans?, respectivamente; 11,8 % foram denominadas ?manteiga + mar¬garina?, item não previsto na legislação. Verificou-se heterogeneidade nos teores de sódio declarados. Os valores médios encontrados foram: 50,0-94,2 mg/10 g nas margarinas e cremes vegetais; 1,0-115,0 mg/10 g nas manteigas e 106,3-174,3 mg/30 g, nos requeijões. O teor médio de colesterol declarado nas manteigas variou entre 35,0-196,0 mg/10g. A rotulagem do azeite de dendê demonstrou ausência da listagem de ingredientes em 50% dos produtos e a declaração incorreta do teor de gordura saturada esteve presente em 41,6% dessas amostras. A diferença entre as colheres variou entre 232,0% e 255,0%, sendo que 6,7%; 6,7%; 5,0% e 4,4% destas apre¬sentaram capacidade volumétrica para marga¬rinas e cremes vegetais, manteigas, requeijões e azeites de dendê, respectivamente, em conformidade com a legislação. Os resultados demonstram a necessidade de uma padronização das colheres de sopa, atualização, fiscalização ostensiva e eficiente quanto à rotulagem de alimentos lipídicos no Brasil.

ABSTRACT

OBJECTIVES: This study was conducted to examine the preferences and needs of typical Korean females adults for food and nutrition information provided by the mass media. METHODS: A total of 343 females (77 in their 20s, 85 in their 30s, 88 in their 40s and 93 in their 50s) residing in the Seoul/Gyeonggido area was surveyed on general characteristics, main sources of food and nutrition information and needs for sources and contents of nutrition information. RESULTS: The survey showed that typical Korean females obtained knowledge of food and nutrition mainly through the Internet (30.4%) and broadcasting (29.0%). Typical Korean females were interested in 'dietary management for weight control' (21.9%), 'the prevention and treatment of disease' (20.0%), 'food safety' (16.8%), 'proper dietary habits' (14.6%), 'cookery' (11.8%), 'functional foods' (9.6%), 'restaurant details' (3.5%) and 'life-cycle-specific dietary guideline' (1.6%). Needs for food and nutrition program forms on TV were 'educational programs' (34.3%), 'documentaries' (20.8), 'expert lecture-style' (13.0%), 'entertainment programs' (11.9%), 'expert conversation' (11.4%), 'news-style' (4.6%) and 'public campaign advertisements' (4.0%). On the Internet, 38.6% of the respondents preferred to get information provided by food and nutrition-related institutions (38.6%) while 26.1% preferred webtoons for nutritional information. The favored forms in mobile applications were 'monitoring their diets' (29.5%), 'data-based texts information' (21.4%), 'experts feedback' (20.6%), 'communities' (15.1%) and 'games' (13.1%). The rates of the preference to obtain information from experts such as nutritionists and dietitians and doctors - or dietitian turned reporters increased markedly with older ages. CONCLUSIONS: Since the mass media is a main source of food and nutrition information for the general public, the effectiveness and accuracy of the information provided should be enhanced by taking the needs of the public into account. The quality of information should be improved by involving more nutrition experts.

Introduction: Consumers are advised to read the nutrition labeling when purchasing packaged food. To what extent consumers read nutrition labeling and understand what they read is not well established among Malaysian older persons. Methods: Data from the National Health and Morbidity Survey III (NHMS III) undertaken in 2006 was analysed to determine the use and understanding of nutrition labeling and its associated factors among free living elderly men and women aged >60 years. Descriptive analysis and binary Logistic Regression were used to analyse the data. Results: A total of 4,898 respondents provided self-reported information on their use and understanding of nutrition labeling when they bought or received food. Use of nutrition labeling was higher among elderly men [61.9% (95% CI: 59.6-64.1)] than for women [36.6% (95% CI: 34.5-38.8)]. Nutrition labeling use was significantly associated with age, formal education, higher household income levels and marital status among both elderly men and women. Understanding of nutrition labeling among elderly men and women was 91.8% (95% CI: 90.1-93.2) and 89.7% (95% CI: 87.4- 91.7) respectively and was significantly associated with formal education for both elderly men and women. Conclusion: Overall, the reading of nutrition labeling among Malaysian elderly is moderate. Elderly men and women with formal education were more likely to understand nutrition labeling. The importance of reading nutrition labels should be inculcated in consumers including older persons so that they choose foods that are nutritious and safe.

ABSTRACT

The purposes of this study were 1) to investigate eating behaviors and patterns in breast cancer patients using a newly developed food frequency questionnaire and 2) to examine perception and use of nutritional information about breast cancer treatment among cancer patients treated with radiation therapy. Sixty breast cancer patients (case group) undergoing radiation therapy in Ajou University Hospital, Suwon, South Korea and 79 healthy women (control group) participated in this study. Mean age of subjects in the control group was 46.00 +/- 7.88 years and BMI was 23.12 +/- 2.85 kg/m2, and that of the case group was 50.06 +/- 11.64 years and 22.32 +/- 3.24 kg/m2. The results of eating behaviors showed several significant differences between control and case groups. Breast cancer patients ate meals on a more regular basis, on time, and more frequently compared to control subjects. In addition, they preferred more salty or spicy and bland food compared to healthy women. According to answers from the food frequency questionnaire, breast cancer patients consumed significantly lower amounts of boiled white rice, meats and processed food, fish and shellfish, coffee, milk, and cheese, whereas they consumed a significantly large amount of boiled multigrain rice, vegetable, seaweeds, soybean and processed food, and yoghurt compared to healthy women. This study also observed the way in which cancer patients and healthy control subjects obtain information about breast cancer treatment and its reliabilities. Results showed that healthy women did not hesitate to obtain information from mass media, while breast cancer patients would obtain nutritional information from specialists rather than mass media. Results of this survey confirmed that breast cancer patients avoided intake of red meat protein, even though they already recognized the importance of dietary protein intake for recuperation and treatment of the disease. These results could be used for future diet and nutrition guidelines for breast cancer patients.

ABSTRACT

The purpose of this study was to provide preliminary data for better safety control over children's preference foods sold in school stores. The survey was conducted from June to July 2009, to collect 749 types of children's preference foods sold in 150 middle and high school stores nation-wide excluding Jeju Island and general and nutrition information were analyzed. Out of 749 types of snack food items, 689 and 602 snacks were sold at high school and middle school stores respectively. Among children's preference foods, cookies, bread, and ice-cream were the main items. Among them, 98% of snacks were domestic products and the price range of each individual snacks were mostly between 600 and 900 won. 27.8% of children's preference foods sold were found to be in the high calorie/low nutrition food group. Even though the proportion of candy and fruit/vegetable beverages sold were not high, their proportion in high calorie/low nutrition snack group were higher than 68.1%. Among the children's preference foods sold in middleand high school stores, carbonated drinks and ramen were continuously sold in certain middle and high schools, even though sales were prohibited. This study concludes that government, corporations and retailers should work together in developing healthier children's snack distribution environment. In addition, dairy products, which take up 15% of children's preference food, should be diversified to meet their nutrient requirements.

ABSTRACT

This study was researched to provide the accurate nutrition information and the menu. We questionnaired an recognition and necessity of the nutrition labeling to 684 customers in fast-food restaurants. After data cleaning, we used spss package 14.0 and analyzed about the nutrition contents and place that display the nutrition labeling. First, we finded out lower recognition of nutrition labeling in restaurants than processed food. Second, many people hoped that calory and fat in various nutritions were displayed each 100 g or 100 mL. Third, the place displaying the nutrition information was the menu board and the counter to identify easily. Fourth, we analyzed the recognition and necessity of the nutrition labeling in fast-food restaurants by t-test and ANOVA. So, we knew that the recognition and necessity of the nutrition labeling was higher woman than man. And the more they earn much money and learned, the more the nutrition labeling are needed. But house-wife recognized the nutrition labeling lower than others.

ABSTRACT

The purpose of this study was to find out the information on nutrition labeling and how many calories and nutrients the high school students consumed for 1 day from cookies. A total of 74 male and female high school students in Suwon were surveyed and 56 cookies that they consumed were examined. Background data were collected by questionnaire, cookie intake by 24-hr recall, and the calories and nutrients content in cookies and the amount of intake by nutrition information on the wrapping paper of cookie. The statistical analysis for the data was done by SPSS 12.0. Energy contents in 1 serving size of cookie were 90~315 kcal, average of 170 kcal. The protein contents were 0~7 g, fat 2~20 g, cholesterol 0~55 mg, and sodium 30~390 mg in 1 serving size of cookie. Most of the cookies (80%) examined contained no trans fat at all, which is desirable. Among the types of cookies, snacks contained higher quantities of calories and sodium, the pie contained more sugar and cholesterol, and the biscuit had more trans fat. One fourth of the cookies examined belonged to 'high calorie, low nutritious food' according to the criteria proposed by The Ministry for Health, Welfare and Family Affairs. Thus the excessive intake of cookies might result in nutritional imbalance. There were large differences in calorie intake among students, from zero who did not intake any cookies at all to maximum 818 kcal/day, an average of 75 kcal/day. When the students who did not intake cookies were excluded, energy 205 kcal. fat 10g, sodium 177mg were consumed from the cookie for a 1 day on average.

ABSTRACT

The purposes of this study were to investigate use patterns of nutrition information service of 50-and-older adults and analyze the differences in use patterns of nutrition information service according to their socio-demographic variables. The survey was conducted with 500 adults aged 50-and-over living in Seoul between March 28 and April 10, 2007. A total of 401 questionnaires were used for analysis (use rate 80.2%) and the statistical data analyses were completed using SPSS Win (ver 12.0). The main results of this study were as follows. First, most respondents (73.3%) realized the need for nutrition counseling or education. However, 65.3% of respondents have little experience in nutrition counseling or education. Second, the most preferred methods of nutrition counseling or education were field trips (27.7%), counseling in hospitals/public health centers (23.4%), cooking classes (23.2%). And the most often cited sources of nutrition information were TV/radio (66.6%) and newspapers/magazines/books (41.6%). Third, sociodemographic variables such as sex, age, education level, occupations were significantly related to methods of nutrition counseling or education. And variables such as age, education level, occupations were significantly related to often cited sources of nutrition information. Also sex, age, education level, occupations were significantly related to needs for nutrirtion information service.

ABSTRACT

This study was to examine the needs among elementary school dietitians (n = 115) for developing a nutrition information internet site for children. A survey questionnaire included general characteristics, internet use regarding health and nutrition information, and needs for developing a nutrition information site. The mean age of the subjects was 36.2 years. The higher working experience group (> 10 years of working as dieticians) had higher mean age (p < 0.001), had a larger number of enrolled students at school (p < 0.01) and the number of those receiving school lunch (p < 0.01) than the counterparts (< or = 10 years group). Sources of health and nutrition information were mainly PC/internet (60.4%) and seminar (14.4%). About 95% used health or nutrition information using the internet, however, the majority of users (71.6%) used internet information only when they needed it. Major reasons for using internet information was 'to get nutrition education materials' (63.8%) and 'to obtain general nutrition information' (21%). One third of the subjects were satisfied with nutrition information internet sites; major problems with internet sites were 'lack of content' (38.9%) and 'lack of practical information' (33%). These characteristics regarding internet use were not different between work experience groups. Major problems with nutrition education were 'lack of nutrition educational materials' (41.1%) and 'lack of nutrition education skills' (32.1%). These were significantly different between the work experience groups (p < 0.01). Subjects preferred CD/ internet to leaflet/booklet as nutrition educational materials. In developing nutrition sites for children, subjects wanted topics such as obesity assessment, dietary assessment, and obesity. Subjects responded that contents of nutrition information should be 'suitable to the children's knowledge levels' (31.1%), 'interesting enough by including quizzes, games and songs' (27.8%), 'inserting many illustrations/icons' (16.3%). In terms of designing internet sites for children, they wanted that internet sites should 'be easy enough to find the sites' (29.2%), 'use illustrations and characters' (24.8%), 'use communication channels such as Q&A' (18.7%). Needs for developing internet sites for children were not different by the work experience group. This study suggests that web sites for children should be carefully developed considering the contents and design, have less information with more illustrations, designed to induce the interest of children, as well as including sections such as eating habit assessment and games.

ABSTRACT

The purpose of this study was to do the quantitative analysis about food and nutrition informations in TV program by monitoring newscastings, health-related food and nutrition information programs, dramas for family, education programs for children, and seniors' information programs in major TV broadcasting companies (KBS, MBC, SBS, EBS). In this study, number of cases about the health-related food and nutrition informations and the length of program were analyzed. Also, they were compared and analyzed by the year. Monitoring staff, who had majored in food and nutrition and completed the monitoring training, monitored programs and analysis the quantity of food and nutrition informations in each program from 2002 to 2003. Results of quantitative analysis for this study are as follows; There were total number of 15,226 cases. Among them, the total number of health-related information was 5,623 cases(36.9%), and the total number of food-related information was 3,848 cases (25.3%). The ratio of total food and nutrition information to total health-related informations was 86.2%. In news programs from 2002 to 2003, the total number of health-related information to total cases decreased to 16.1% from 17.9%. The ratio of total food and nutrition information to total cases decreased to 3.6% from 6.6%. The frequency of the health-related informations was mostly served in the newscastings was highest, in both October 2002, and September 2003. In health information programs from 2002 to 2003, the ratio of food and nutrition information to total cases increased to 57.4% from 32.4%. In dramas from 2002 to 2003 , the ratio of broadcasting time of food-related scenes to total cases decreased to 17.2% from 20.8%. In education programs for children the ratio of food and nutrition information to total cases was 8.2% in 2002. In information programs for seniors the ratio of food and nutrition information was to total cases 26.2% in 2002. As the result of this study, the rate of health-related information in TV program and the rate of food and nutrition information were changing. And the rate of nutrition information in health information programs are increased. To give sound informations to the public, monitoring should be established and managed continuously.

ABSTRACT

The study aimed to perform the qualitative analysis of food and nutrition informations offered in TV program by monitoring newscastings, health-related programs giving food and nutrition information, dramas for family, education programs for children, and information programs for elderly in major TV broadcasting station(KBS, MBC, SBS, EBS). In this study, statistical analysis were done for numbers of information items related to health or food and nutrition informations. Duration of program the main, subject, sources, evaluation criteria of the contents. Results of qualitative monitoring for TV program are as follows. For health-related informations major propotions of subjects for the newscastings were about diseases. Those for health information programs were about foods. Those for children-education programs were about groceries. Those for seniors' information programs were about eating habits. The analysis of food and nutrition information sources for most of programs were interviews with specialist and normal person, and on-the-spot-investingations. For food and nutrition informations those were evaluated as inappropriate, the propotion of news was increased to 72.2% in 2003 from 49.3% in 2002. For health information programs, it was increased to 67.7% in 2003 from 54.0% in 2002. But, in drama the propotion of inappropriate scenes were decreased to 16.2% in 2003 from 63.2% in 2002. In children-education programs, it was 40.0%. In seniors' information programs, it was 17.9% in 2002. The propotion of cases that the quantity of foods is inappropriate in the food scene of serial drama, decreased to 15.8% in 2003 from 28.6% in 2002. The rate of drinking scenes increased to 11.5% from 10.7%. The rate of smoking scenes decreased to 0.2% from 1.6% due to the broadcasting self-regulation of smoking scenes in dramas. In the newscatings and information programs, reasons of being evaluated as inappropriate was that they didn't have any practical suggestions and proper intakes. There were also insufficient explanation for technical terminology, different comparison standard of nutritive value, and exaggeration for physiological effect of food. The drama contained a lot of unnecessary scenes of alcohol drinking, coffee drinking, midnight meal, and had more quantity of foods than the quantity needed for persons to the scene. As the result of this study, the rate of food and nutrition information were high, but the rate of information which was evaluate as appropriate was not sufficient. There are need to improve contents of information and to moniter the contents for consumer.

ABSTRACT

This study was conducted to analyze how appropriate the on-line nutrition information was externally as a web information. Four-hundred-ninety-seven web sites from 5 internet search engines (Yahoo, Empas, Nate, Hanmir, Naver) were selected on the basis of April 25th, 2004. The skillful personnels monitored them about 8 evaluating categories: clarity, purpose, authority, durability, advertisement, privacy and/or security, responsibility, and contents. Forty percent of the selected web sites were operated by the companies which had commercial purpose like internet shopping malls and 5.6% by academies, societies, research institutions, schools/colleges and public institutions. Most of web sites (76.1%) were managed for advertisements and sales of companies' commodities, and 32.6% had the food and nutrition information as first purpose. Ninety-three percent of web sites were targeted to healthy individuals through whole life cycle. Specifically, there were lots of web sites for the obesity which were offered by diet related companies. Of the 497 web sites, 193 mentioned the name providing the nutrition information, but only 1/3 had reliability on their specialty. As a source of nutrition information, 52.7% of web sites were using 'books of the major field' and 42.0% 'newspapers' and 23.7% 'broadcasting', respectively. Most web sites mentioned 'setting-up date' but not 'renewal date'. Thirty-six percent of web sites took '2 - 3 days' for the operators to answer the questions through the bulletin. Forty-seven percent of web sites answered '1 - 10 questions' per 1 week, but 40.1% of them didn't answer for a week at all. There were 118 web sites (23.7%) to record the connected frequencies and 36.0% of them put the advertisements. Around 96% of web sites mentioned feedback addresses. Among the menus of web sites, 68.0% were about self-advertisement and 64.0% about nutrition information. Each web site was scored to judge its external quality according to the operators by selecting 13 items. Web sites managed by public institution had highest scores (9.5), and lowest in private vendors', food companies' and individual web pages. Among search engines, Naver got the highest score of 7.0 and Nate the lowest one of 6.1. As it was only the pilot study, there were several limits in evaluating tools, time and monitored quantity. To make monitoring of on-line nutrition informations actively, standardized monitoring forms might be developed under the integrated studies.

ABSTRACT

The object of this study is to investigate and analyze the quantity and quality of informations on health, food and nutrition reported by newspapers. Six different major domestic daily newspapers(Hankook Ilbo, Donga IIbo, Chosun IIbo, Kyunghyang Shinmun, Hankyoreh Shinmun, JoongAng Ilbo), were monitored from 1st of May to 31st of Oct. 2002.. The results of monitoring in the newspapers were summarized as follows; 1. The total percentage of the articles on health and food nutrition was 2.7% and the percentage of the advertisements on health, food and nutrition was 17.5% of total area of the newspaper. The ratio of the number of food and nutrition topic on the total number of health and food nutrition topic was 35.8% for the articles, was 62.9% for the advertisements. Among advertisements on food and nutrition, the percentage of advertisements on healthy foods was the highest (3,481 or 55.0%). 2. Contents of 340 articles(26.1%) were reported as suitable informations. Contents of 259 articles(19.9%) were reported as inaccurate informations on health, food and nutrition. In the analysis of advertisements, the number of advertisements without sufficient reliable sources was 2,488 cases(23.0%), and with exaggerated contents was 2,268 cases(21.0%). The articles and advertisements should be backed by scientific research or reliable sources and also the opinions of people with expertise in order to report accurate informations to the general public. In order to achieve these results, there should be continuing monitoring activity for the newspapers.

ABSTRACT

The desire for the healthy life is increasing as a result of rapidly changing social and economic environment in Korea. Because of the need, informations on health, food and nutrition are being introduced through the mass media. The object of this study is to investigate and analyze the quantity and quality of informations about health, food and nutrition in women's magazines. Six representative domestic monthly magazines(Lady Kyunghyang, Women Donga, Women Chosun, Women JoongAng, Women sense, Jubu Senghwal) were selected for this study. The results of monitoring from June 2002 to September 2002 for the women's magazines were summarized as follows; 1. The percentage of the articles on health, food and nutrition by total area of the women's magazines was 23.1%. There were total 595 articles on health, food and nutrition. Among these, 400 articles(67.2%) were about food and nutrition. 2. The percentage of the advertisements on health, food and nutrition was 35.3% by total area of the woman's magazines. There were 2,353 advertisements on health, food and nutrition. Among these, 1,574(66.9%) advertisements were about food and nutrition. The most frequently advertised advertisements on food and nutrition were about processed foods (527 cases, 33.5%). The second most frequently advertised advertisements were about diet (374 cases, 23.8%). The third one was healthy foods (345 cases, 21.9%). 3. The contents of 215(53.8%) articles (the total number of articles was 400) was suitable. The contents of 89 advertisements(22.3%) did not have accurate informations on health, food and nutrition. For the advertisements in women's magazines (the number of total articles was 2,203), the percentage of the advertisements which was not able to capture the feature of the advertisements was 27.9%, insufficiency of reliable sources was to 21.9%, and exaggeration of the contents in the ads was 16.0%. Articles and advertisements should be backed by scientific research or reliable sources and also the opinions of people with expertise in order to report accurate informations to the general public. In order to achieve these results, there should be continuing monitoring activity for the women's magazines.
