ABSTRACT

Resumen El objetivo del estudio fue determinar los efectos sobre los hábitos alimentarios de escolares en una intervención educativa alternativa al modelo convencional de promoción de alimentación a un centro con comedor y proyecto de huerto ecológico. Estudio observacional descriptivo de corte transversal y comparativo de 111 niños y niñas entre 9 y 12 años, en el periodo 2013-15. Se comparó un colegio con intervención alternativa con otro que únicamente incluía contenidos propios del currículo de Educación Infantil y Primaria, mediante evaluación de adherencia a la dieta mediterránea del alumnado con cuestionario validado Kidmed. El centro de intervención presentó mayor adherencia a la dieta mediterránea que el centro control. En el centro de intervención el porcentaje de alumnado con dieta óptima (64,52%) fue mayor que los que necesitaban mejorar su dieta (33,87%), mientras que en el centro fue inferior (42,86% y 51,02% respectivamente). Los escolares del centro de intervención presentaron mayor porcentaje de respuestas afirmativas en ítems Kidmed. El programa de promoción de alimentación saludable alternativo del centro de intervención podría ser efectivo para la adquisición de una dieta de mayor adherencia a la dieta mediterránea.


Abstract The objective of this study was to determine the effects on school feeding habits in an educational intervention alternative to the conventional model of feeding promotion to a center with school canteens and ecological garden project. Cross-sectional and comparative descriptive observational study of 111 boys and girls between 9 and 12 years old, in the 2013-15 period. A school with alternative intervention was compared with another one that only included contents of the Infant and Primary Education curriculum, by means of evaluation of adherence to the mediterranean diet of the students with a validated Kidmed questionnaire. The intervention center presented greater adherence to the mediterranean diet than the control center. In the intervention center, the percentage of students with optimal diet (64.52%) was higher than those who needed to improve their diet (33.87%), contrary to what occurs in control center (42.86% and 51.02% respectively). The students of the intervention center presented a higher percentage of affirmative answers in Kidmed test. The program of promotion of healthy alternative food of the intervention center could be effective for the acquisition of a diet of greater adherence to the mediterranean diet.

ABSTRACT

Antecedentes: el abastecimiento de alimentos en las ciudades es mayoritariamente dirigido por empresas transnacionales; usa circuitos largos, estimula el uso de agroquímicos en la producción de alimentos y con frecuencia no genera precios justos. Estas características han llevado a la construcción de un sector alternativo que articule nuevos mecanismos de producción, distribución y consumo de alimentos. Objetivo: describir las principales características de las redes alimentarias alternativas de Medellín y la subregión Oriente del departamento de Antioquia, sus actores, procesos y relacionamiento entre productores, distribuidores y consumidores. Materiales y métodos: estudio cualitativo de casos colectivos; se entrevistaron personas relacionadas con 15 redes alimentarias alternativas, se realizaron entrevistas semiestructuradas, observación participante en espacios de distribución y no participante en zonas de producción. Resultados: se halló en estas iniciativas el cimiento de un sistema alimentario alternativo, fundamentado en la agroecología, el comercio justo y el consumo saludable. Al ser analizadas desde los constructos teóricos del capital social, se halló que estas redes trabajan por tender puentes entre productores y consumidores y reforzar lazos entre los primeros eslabones del sistema; sin embargo, un posicionamiento más fuerte requiere fortalecer la asociatividad. Conclusiones: el naciente sector alternativo representa una oportunidad para consolidar sistemas alimentarios que contribuyan a generar capital social como bien público colectivo


Background: Food supply in cities is largely managed by multinational companies using widespread systems, promoting the use of agrochemicals in food production, and generating unfair pricing and access. These factors have led to the creation of an alternative sector highlighting new mechanisms of production, distribution, and consumption of foods. Objective: Describe the principle characteristics of alternative food networks in Medellin and the eastern sub-region of the state of Antioquia, highlighting the actors, processes, and relationships among producers, distributors, and consumers of said food products. Materials and Methods: Qualitative collective case study in which the participants were selected for interviews given their ties to 15 alternative food networks and systems. Semi-structured interviews were conducted, as well as active observation in distribution areas and passive observation in production zones. Results: The basis for healthy food systems was found in these alternative initiatives, which are based on agro-ecology, fair trade, and healthy consumption and consumerism. When analyzed from the theoretical constructs of social capital, it's seen that these networks help build ties between producers and consumers, and reinforce the bonds between the first links of these systems; however, stronger positioning is needed to strengthen these association. Conclusions: The recent advent of alternative food systems represents an opportunity to consolidate food sectors that contribute to the generation of social capital for the collective good of the population.

ABSTRACT

OBJECTIVE: To assess compliance of school menu planning with the National School Food Program's regulations. METHODS: This cross-sectional study analyzed 133 menus for 542 schools in 49 municipalities of the state of Santa Catarina. The menus were assessed according to the National School Food Program's regulations, the "Dietary Guidelines for the Brazilian Population" and the "Qualitative Evaluation of Menu Components for Schools". The data were analyzed by descriptive statistics. RESULTS: Nearly all (98.5%) municipalities met the requirement of technical responsibility for menu development and 81.0% acquired foods from family farms. The menus contained fruits (87.2%) and non-starchy vegetables (94.0%), but the frequencies of fruits and non-starchy vegetables were smaller than two to three times a week. The most common high-sodium and high-fat foods were commercially processed meats (53.0%), but their frequency was smaller than once a week. Likewise, the frequencies of beverages (natural fruit juice, coffee, and tea) were smaller than once a week. Most menus (85.1%) repeated foods during the week, and only 3.0% of the menus listed organic foods. CONCLUSION: Some school menus from Santa Catarina need to be revised with respect to the frequency of fruits and non-starchy vegetables, high-sugar foods, high-sodium foods, and high-fat foods, and need to increase food diversity and variety. .


OBJETIVO: Avaliar a adequação do planejamento de cardápios escolares perante a regulamentação do Programa Nacional de Alimentação Escolar. MÉTODOS: Trata-se de estudo que transversal, que analisou 133 cardápios, de 49 municípios catarinenses, que atendiam a 542 escolas. Os cardápios foram avaliados com base na regulamentação do Programa Nacional de Alimentação Escolar, no Guia Alimentar para a população brasileira e no Método de Avaliação Qualitativa das Preparações do Cardápio Escolar. Os dados foram analisados através de estatística descritiva. RESULTADOS: A exigência de responsabilidade técnica pela elaboração do cardápio foi observada em 98,5% dos municípios, e 81% adquiriam alimentos da agricultura familiar. Os cardápios apresentaram frutas (87,2%) e hortaliças (94,0%), no entanto mais da metade teve frequência de frutas e hortaliças inferior a duas ou três vezes por semana. A presença de alimentos e preparações ricas em açúcar foi elevada (>90%), predominando frequência de até duas vezes por semana. Dos alimentos ricos em sódio e gorduras, destacaram-se embutidos e produtos cárneos industrializados (53,0%), porém a frequência foi inferior a uma vez por semana. As bebidas nos cardá-pios (suco de fruta natural, café e chá) tiveram frequência inferior a uma vez por semana. A repetição de ali-mentos na mesma semana foi observada em 85,1% dos cardápios. Já a identificação do alimento orgânico foi encontrada em apenas 3,0% deles. CONCLUSÃO: Alguns cardápios da alimentação escolar catarinense necessitam de revisão quanto à frequência de frutas e hortaliças, redução de alimentos ricos em açúcar, sódio e gorduras e de aumento na diversidade e variedade de alimentos. .

ABSTRACT

A pesquisa envolveu um diagnóstico das ações educativas e alimentação orgânica do Projeto Sabor Saber (PSS) em uma escola estadual em Florianópolis, Brasil. A partir de uma abordagem qualitativa, utilizou a entrevista semi-estruturada, a análise documental e os grupos focais para a coleta de dados. Participaram da pesquisa: gerente da alimentação escolar, diretora, grupo de escolares e professores da escola. Os resultados evidenciaram que o PSS avançou em seus objetivos, aliando introdução de alimentos orgânicos a ações educativas em alimentação, saúde, nutrição e meio ambiente, mas sem avaliações sobre este processo. O alimento orgânico está presente na alimentação escolar; contudo, não há registro de ações de educação em saúde e nutrição. A alimentação é conteúdo na disciplina de Ciências; todavia, os temas alimentação, saúde e nutrição surgem sem planejamento prévio. A avaliação dos escolares sobre a alimentação é positiva; porém, os alimentos orgânicos não foram referidos. Concluiu-se que a utilização do alimento orgânico ainda não integra o projeto pedagógico desta escola; no entanto, os professores refletiram sobre a necessidade do desenvolvimento de ações de educação em saúde, alimentação orgânica e nutrição com a comunidade escolar.


This research involved a diagnosis of the educational actions and organic food of the Taste and Awareness Project (Projeto Sabor e Saber, PSS) in a state school in Florianopolis, Brazil. Based on a qualitative approach, a semi-structured interview, documentation analysis and focal groups were used for data collection. The participants were managers of School Meals; a school head and a group of students and teachers representing the school. The results indicated that the PSS has advanced in its objectives, combining the introduction of organic foods with educational actions involving food, health, nutrition and the environment but with no evaluations of this process; organic food is present in school meals, although there is no record of educational actions; food is a subject on the Science course; the themes of food, health and nutrition in the school environment come up without planning; the evaluation of students regarding the food is positive, but no reference was made to organic foods. It was concluded that the use of organic food, is still not an element of the pedagogical project. However, the research contributed to the teachers, on the need to develop educational actions in health, organic foods and nutrition, within the school community.
