RESUMEN

The effect of synthetic dyes [carmoisine, sunset yellow and tartrazine] as well as natural pigments [annatto, chlorophyll A and curcumin] on the energetic metabolites [ATP, ADP, AMP] and myokinase was studied in albino rats. Single dose for one day and daily administration of the synthetic dyes for 3 weeks caused an increase of ATP content in some of the organs [brain, liver and kidney] of rats. The kidney's ATP displayed the greatest increase by sunset yellow treatment. On the contrary, ADP and AMP contents were significantly decreased after treatment. Myokinase activity was inhibited by the synthetic dye treatment in cytoplasm and mitochondria of the three organs. The effect of the three natural pigments on these energetic compounds were lower than those of the synthetic dyes. At the end of the experiment, the effects of synthetic dyes on the energetic metabolites were continued. However, the effect of natural pigments nearly diminished

RESUMEN

The effect of synthetic food colorants as well as natural food colorants on subcellular fraction enzymes involving the pentose phosphate pathway, was studied. The results revealed that glucose-6 phosphate dehydrogenase [G-6-P.D] and 6-phosphogluconate dehydrogenase [6-PG.D] activities in cytoplasm and mitochondria of brain, liver and kidney were increased by single dose and daily dosage for 3 weeks. This increase was greater by synthetic food colorants than by natural food colorants. Also, the activity of G-6-P.D. was more affected than the activity of 6-P-G.D. particularly in cytoplasm. The effect of synthetic food colorants was continued for one week after termination of treatment which lasted for 3 weeks. Meanwhile, these enzyme activities returned to the normal control values when treatment with natural food colorants stopped
