R E S U M E N La pitahaya amarilla es susceptible a los daños mecánicos durante la vida en anaquel, lo que genera pérdidas económicas considerables, las cuales se pueden mitigar a través de la aplicación de ceras. Por lo anterior se evaluó el efecto de recubrimientos comestibles en la calidad poscosecha de frutos de pitahaya amarilla con el fin de mantener la calidad por más tiempo. Se empleó un diseño de tres tratamientos completamente aleatorizados (cerabrix, cera natural y testigo sin aplicación). Las aplicaciones de ceras en los frutos de pitahaya disminuyeron la pérdida de masa (PM) en promedio en un 21% durante el almacenamiento, especialmente el recubrimiento con cerabrix. La firmeza de los frutos disminuyó drásticamente a partir de los seis días después de cosecha (ddc), al pasar de 5I,2 a 7,3 N. Durante la poscosecha, los frutos de pitahaya mostraron un aumento en la intensidad respiratoria (IR) al pasar de 10,48 a 26,35 mg.kg-I.hI de CO2, además, el pH aumentó de 4,I3 a 5,I7, mientras que los los sólidos solubles totales (SST), la acidez total titulable (ATT) y la relación de madurez (RM) disminuyeron, no obstante, la aplicación de cerabrix mantuvo los valores más bajos de sólidos solubles totales (SST). Los frutos con aplicación de recubrimiento comestible presentaron al final del almacenamiento menores valores de luminosidad (L* = 62,6) con una tonalidad más oscura que los frutos sin aplicación (L*= 66,4), los cuales mantuvieron el color amarillo característico de la pitahaya. La aplicación de recubrimientos comestibles no afectó las características organolépticas de los frutos de pitahaya.


Yellow pitahaya is very susceptible to mechanical damage during shelf life, which generates considerable economic losses, which can be mitigated through the application of coats. Therefore, the effect of edible coatings on the postharvest quality of yellow pitahaya fruits was evaluated in order to maintain quality for longer. A completely randomized three-treatment design was used (cerabrix, natural wax and control without application) was used. Wax applications in pitahaya fruits decreased PM by an average of 2I% during storage, especially the cerabrix coating. The firmness of the fruits decreased drastically from six days after harvest, when going from 5I.2 to 7.3 N. During the postharvest, the pitahaya fruits showed an increase in IR when going from I0.48 to 26.35 mg.kg-I.hI of CO2, in addition, the pH increased from 4.I3 to 5.I7, while the TSS, TTA and MI decreased, however, the application of cerabrix maintained the lowest values of TSS. Fruits with edible coating application showed lower luminosity values at the end of storage (L* = 62.6) with a darker hue than fruits without application (L*= 66.4), which maintained the characteristic yellow color of the pitahaya. The application of edible coatings did not affect the organoleptic characteristics of pitahaya fruits.


A pitaia amarela é muito suscetível a danos mecânicos durante a vida de prateleira, o que gera perdas econômicas consideráveis, que podem ser mitigadas com a aplicação de demãos. Portanto, avaliou-se o efeito de revestimentos comestíveis na qualidade pós-colheita de frutos de pitaia amarela, a fim de manter a qualidade por mais tempo. Um desenho de três tratamentos completamente randomizado foi usado. (cerabrix, cera natural e controle sem aplicação). A aplicação de cera em frutos de pitaia reduziu o PM em média 21% durante o armazenamento, principalmente o revestimento de cerabrix. A firmeza dos frutos diminuiu drasticamente após seis dias após a colheita, ao passar de 5I,2 para 7,3 N. Durante a pós-colheita, os frutos de pitaia apresentaram aumento da IR ao passar de I0,48 para 26,35 mg.kg-I.hI de CO2, além disso, o pH aumentou de 4,I3 para 5,I7, enquanto o TSS, TTA e MI diminuíram, porém, a aplicação de cerabrix manteve os menores valores de TSS. Frutos com aplicação de revestimento comestível apresentaram menores valores de luminosidade ao final do armazenamento (L* = 62,6) com tonalidade mais escura do que frutos sem aplicação (L*= 66,4), que mantiveram a coloração amarela característica da pitaia. A aplicação de coberturas comestíveis não afetou as características organolépticas dos frutos de pitaiaia.

Calcium is the third most crucial nutrient for andean blackberry; however, its absorption is limited in acid soils, and its low mobility in the plant decreases its effects on fruits. Therefore, the effect of foliar fertilizers with calcium on andean blackberry fruits was estimated. In three locations, experiments were established with five calcium sources (Ca chelate, CaB nitrate, Ca oxide, CaB and CaBZn gluconate) and a control without calcium, applied in three phenological stages and recording: weight, diameters, firmness, color, juice, pulp, pH, soluble solids, acidity, dehydration, and damage. Soil and tissue analysis was performed to identify the relationship between the plant's nutritional conditions and its fertilization response. For the statistical analysis were used mixed models, tests of means, and principal components. Foliar fertilization with chelate, nitrate, and calcium oxide in andean blackberry crops with thorns, in production, with pruning management, and in the phenological stages of flower bud, fruit set, and red fruit, is a viable alternative to improve firmness, weight, and diameter of the fruits. In contrast, the chemical and color parameters in andean blackberry fruits depend on the edaphoclimatic conditions of each zone. This fertilization should be considered as a complement in soils without acidity problems and with balanced cationic saturations.


El calcio es el tercer nutriente más importante para la mora; sin embargo, su absorción se ve limitada en suelos ácidos y su baja movilidad en planta disminuye su efecto en frutos. Por tanto, se estimó el efecto de fertilizantes foliares con calcio en frutos de mora. En tres localidades, se establecieron experimentos con cinco recursos de Ca (quelato de Ca, nitrato de CaB, óxido de Ca, KCaB y gluconato de CaBZn) y un control sin calcio, aplicados en tres etapas fenológicas y registrándose: peso, diámetros, firmeza, color, jugo, pulpa, pH, sólidos solubles, acidez, deshidratación y daños. Se realizó análisis de suelo y tejido, para identificar la relación entre las condiciones nutricionales de la planta y su respuesta a la fertilización. Para el análisis estadístico, se utilizaron modelos mixtos, pruebas de medias y componentes principales. La fertilización foliar con quelato, nitrato y óxido de calcio en cultivos de mora andina con espinas, en producción, con manejo de podas y en las etapas fenológicas de botón floral, cuajado y fruto rojo, es una alternativa viable para mejorar la firmeza, peso y diámetro de los frutos. En contraste, los parámetros químicos y de color en frutos de mora andina dependen de las condiciones edafoclimáticas propias de cada zona. Esta fertilización, se debe considerar como complemento en suelos sin problemas de acidez y con saturaciones catiónicas equilibradas.

BACKGROUND: Apple is one of the oldest and most valuable fruits. Water restriction is one of the major problems in the production of this fruit in some planting areas. METHODS: Effects of kaolin spray treatments were studied on two early apple cultivars of Golab and Shafi-Abadi under sustained deficit irrigation (SDI) in Alborz province, Iran during 2017 and 2018. Irrigation treatments were 100%, 85%, and 70% ETc and kaolin application were concentrations of 0, 3 and 6% in 2017 and 0, 1.5 and 3% in 2018. RESULTS: Results showed that 85% ETc treatment compared to other irrigation treatments improved apple tree crown volume in 2017. Deficit irrigation treatments significantly reduced fruit weight in both years. Application with 6% kaolin resulted in 33.3% increase in apple fruit weight compared to non-kaolin treatment at 100% ETc irrigation in the first year. Severe deficit irrigation (70% ETc) significantly reduced apple fruit length in both years, but 6% kaolin increased fruit length in both apple cultivars in 2017. Severe deficit irrigation treatment increased the firmness of apple fruit compared to control and mild deficit irrigation (85% ETc) in the first year of experiment. There was no significant difference between irrigation treatments for apple fruit firmness in the second year of experiment. Kaolin treatments of 1.5% and 3% at full irrigation increased the soluble solids content of apple fruit by 36.6% and 44.1% in 2018, respectively. Deficit irrigation treatments significantly increased leaf proline content compared to control in both years. In the first year, kaolin treatments increased leaf proline but in the second year, leaf proline was not significant. Deficit irrigation treatment of 70% ETc and 6% kaolin had the highest amount of glycine betaine content, malondialdehyde and hydrogen peroxide in apple leaf in the first year of experiment. CONCLUSIONS: Severe deficit irrigation stress (70% ETc) increased the activity of nonenzymatic defense systems of apple trees. Kaolin as a drought stress reducing agent can be recommended in apple orchards of Golab and Shafi-Abadi cultivars as an effective and inexpensive method to improve tolerance to drought stress conditions.

Abstract Texture is an important parameter which influences on the quality and acceptability of yoghurts. The utilize of stabilizers in yoghurt manufacturing has become a prevalent application to improve the textural properties of yoghurts. In this context, guar gum obtained from Cyamopsis tetragonolobus is generally used as a natural stabilizer for its thickening and gelling properties. Accordingly, this study evaluated the use of chia seed mucilage as an alternative to guar gum to improve the textural properties of yoghurt. This study focused on the effect of using chia seed mucilage (CSM) and guar gum (GG) at 1, 2, and 3% concentrations on the textural and microstructural characteristics of yoghurts. The results of fortifications with CSM and GG on the physicochemical, sensory, and antioxidative properties of yoghurts were also evaluated. Compared to GG, CSM provided higher antioxidant activity which improved with increasing concentrations of CSM. An enhancement was observed in textural properties of yoghurts containing CSM and GG, but CSM concentrations up to 2% gave better effect on firmness. Besides, the microstructure of yoghurt was enhanced depending on the increase in CSM and GG amounts. No negative effect was determined on the sensory properties of the samples by CSM and GG additions. The results showed that CSM can be used in set-type yoghurt production as an alternative stabilizer by improving firmness and consistency and reducing syneresis. Furthermore, its use is suitable for industrial yoghurt production with regards to sensorial properties.

Objective To explore the application of radiofrequency lipolysis combined with line-ar lifting in fine lipolysis ,facial rejuvenation and treatment of common complications .Methods From February 2016 to October 2018 ,237 patients were treated by radiofrequency lipolysis combined with linear lifting .According to the patient's face shape ,skin laxity and fat accumulation ,the thickness of fat was measured by B-mode ultrasonography before operation ,and the operative plan was formulated after sufficient communication with the patients .Then ,we marked the range of lipolysis ,the orienta-tion of serrated line and the position of puncture point ,followed by the adjustment of the treatment parameters .Subsequently ,we placed FaceTite handle after swelling anesthesia ,moving slowly and fixing the treatment point ,as well as monitoring the temperature and swelling status of the skin .Im-mediately after the completion of lipolysis ,the treatment area of skin was ice compressed ,with the trocar needles inserted and serrated lines introduced for linear lifting operation .Neck-jaw sleeves were put on after operation .Results 237 patients had different degrees of post-operative edema ,of which the period ranged from 2 to 7 days .168 patients were followed up for 6 to 24 months ,and 8 patients had subcutaneous sclerosis that then gradually disappeared within 2 months after operation .Folliculitis occurred in 5 cases of scalp puncture ,and recovered after topical antibiotics .Facial skin relaxation and sagging ,fat accumulation ,facial shape ,pouch and wrinkles of 160 patients were improved in varying degrees ,and the outcomes of facial rejuvenation were obvious .However ,the self-reported treatment outcomes of 7 patients were not obvious .One patient was reported that the sagging of the skin after sacrificial lipolysis was worse than before ;48 patients underwent autologous fat transplantation ,botu-linum toxin injection ,hot pull ,E-light ,and water-light injection during the follow-up period ,and were not included in the evaluation of efficacy ;21 patients were lost to follow-up .Conclusions Radio-frequency lipolysis combined with linear lifting is an effective method for facial rejuvenation ,and it has obvious effect in fining lipolysis and facial rejuvenation by avoiding the disadvantage of single approach . Post-operative edema should be controlled and avoided to improve patients'satisfaction .

RESUMEN Debido a las consecuencias que presenta en la salud una dieta poco saludable y con gran contenido de grasas trans, se han desarrollado alternativas alimentarias para el cuidado de la salud, entre ellos, los alimentos naturales con el mínimo aporte de carbohidratos y de grasas saturadas. Por lo anterior, se propuso la formulación de oleogeles libre de grasas trans, a partir de emulsiones (w/o), usando aceite de aguacate y sacha inchi, estructurados con diferentes emulsificantes. Se consideró un diseño factorial 3x3, donde se varió el tipo de emulsificante: lecitina, monoesterato de glicerilo y la relación entre el aceite de aguacate y el aceite de sacha inchi para la fase oleosa del sistema oleoestructurado. Se obtuvo un producto con tintes verdosos y amarillos, cuya cromaticidad b* en sistema Cielab es afectado por el tipo de emulsificante, tomando tonalidades más amarillas, cuando se usa la mezcla lecitina-Monoesterato de glicerilo. Las formulaciones, con una relación de aceites 70/30 usando Lecitina, como emulsificante y la formulación con una relación de aceites 80/20 y usando Monoesterato de glicerilo, mostraron los mejores resultados en términos de fuerza firmeza, en contraste con las margarinas comerciales, cumpliendo con los requisitos fisicoquímicos, establecido en las normas vigentes para aceites y margarinas, como son: índice de peróxido (<10m-eq O2/kg de grasa), acidez (<0,8% de ácido oleico) y contenido de humedad (≥16% b.h).


SUMMARY Due to the health consequences of an unhealthy diet with a high content of trans fats, food alternatives for health care have been developed, including natural foods with the minimum amount of carbohydrates and saturated fats. Therefore, the formulation of oleogeles free of trans fats was proposed from (w/o) emulsion using avocado and sacha inchi oil and different emulsifiers. A 3x3 factorial design was used in which the type of emulsifier: lecithin, glyceryl monostearate and the ratio of avocado and sacha inchi oil was varied. A product was obtained with greenish and yellow dyes, whose chromaticity b* is affected by the type of emulsifier, taking more yellow tones when the lecithin-glyceryl monostearate mixture is used. Formulations with a 70/30 ratio of oils using Lecithin as an emulsifier agent and formulation with an 80/20 oil ratio and using glyceryl monostearate showed the best results in terms of firmness in contrast to commercial margarines, meeting the physico-chemical requirements established in the current standards for oils and margarines such as: peroxide value (<10m-eq O2/kg fat), acidity (<0.8% oleic acid) and moisture content (≥ 16% w.b).

Abstract Pork is the most popular meat in the world. Unfortunately, the selection pressure focused on high meat content led to a reduction in pork quality. The present study used RNA-seq technology to identify metabolic process genes related to pork quality traits and fat deposition. Differentially expressed genes (DEGs) were identified between pigs of Pulawska and Polish Landrace breeds for two the most important muscles (semimembranosus and longissimus dorsi). A total of 71 significant DEGs were reported: 15 for longissimus dorsi and 56 for semimembranosus muscles. The genes overexpressed in Pulawska pigs were involved in lipid metabolism (APOD, LXRA, LIPE, AP2B1, ENSSSCG00000028753 and OAS2) and proteolysis (CST6, CTSD, ISG15 and UCHL1). In Polish Landrace pigs, genes playing a role in biological adhesion (KIT, VCAN, HES1, SFRP2, CDH11, SSX2IP and PCDH17), actin cytoskeletal organisation (FRMD6, LIMK1, KIF23 and CNN1) and calcium ion binding (PVALB, CIB2, PCDH17, VCAN and CDH11) were transcriptionally more active. The present study allows for better understanding of the physiological processes associated with lipid metabolism and muscle fiber organization. This information could be helpful in further research aiming to estimate the genetic markers.

ABSTRACT: One of the most crucial steps in cheesemaking is the coagulation process, and knowledge of the parameters involved in the clotting process plays an important technological role in the dairy industry. Milk of different ruminant species vary in terms of their coagulation capacities because they are influenced by the milk composition and mainly by the milk protein genetic variants. The milk coagulation capacity can be measured by means of mechanical and/or optical devices, such as Lactodynamographic Analysis and Near-Infrared and Mid-Infrared Spectroscopy.


RESUMO: Uma das etapas mais importantes na fabricação de queijos é o processo de coagulação. O conhecimento dos parâmetros envolvidos nesse processo desempenha um papel tecnológico importante para a indústria de laticínios. O leite de diferentes espécies de ruminantes varia em termos de capacidade de coagulação, pois são influenciados pela composição e principalmente pelas variantes genéticas da caseína. Estas características podem ser avaliadas por meio de dispositivos mecânicos e/ou ópticos, tais como, a Análise Lactodinamográfica e a Espectroscopia de Reflectância do Visível ao Infravermelho Próximo (NIR) e Médio (MIR).

Tomato varieties having less number of locules, thicker pericarp and good firmness are preferred by the consumers. A set of 28 half diallel crosses were generated by crossing 8 inbred lines of tomato (Lycopersicon esculentum Mill) namely Gujarat Tomato 1 (GT 1), Pusa Ruby, H 24, Ec 490190, Arka Vikas, Ec 163599, Ec 177371 and Ec 398704. Parents, F1 hybrids and F2 populations using randomized complete block design with three replications were evaluated for fruit weight, equatorial and polar diameter, number of locules, pericarp thickness and firmness at Junagadh Agricultural University, Junagadh (Gujarat, India). Significant genetic differences were observed among the parents, their F1 hybrids and F2 populations for fruit firmness related characters except locules fruit-1 under study. The cross Arka Vikas x Ec 398704 followed by GT 1 X Ec 490190 and Pusa Ruby X Ec 163599 exhibited higher heterobeltiosis as well as standard heterosis along with considerable inbreeding depression for fresh fruit firmness hence, is desired for firm fruited tomato plants and would score over yield when tomato are cultivated for distant markets. This cross also involved at least one parent having grater firmness as well pericarp thickness and few locules, hence, can be recommended for breeding improved fruit firmness lines in future.

Objective. This research aimed to choose a best marination solution using the Analytic Hierarchy Process (AHP). Materials and methods. Pork meat samples were collected in a commercial slaughterhouse, and they were randomly distributed in four treatments with three different salt contents blend. Color, pH, retention of the solution, exudate and cooking loss, shear force and sensory attributes were assessed and evaluated. Multicriteria analysis using AHP was applied to the results in order to choose the best overall marination solution. Criteria used for selection were the physical and sensory characteristics of meat, and based on these criteria were classified solutions marination. Results. Results showed that the combination of the salts was the best alternative (Na2CO3+NaCl+Na5P3O10), followed by the solutions of (Na2CO3 + NaCl), and (Na5P3O10 + NaCl). Conclusions. All tested solutions with the salts used alone or in combination led to better physical and sensory attributes than the meat not marinated.


Objetivo. Esta investigación tuvo como objetivo elegir la mejor solución para los productos marinados, utilizando el Proceso Analítico Jerárquico (AHP). Materiales y métodos. Las muestras de carne de cerdo fueron recogidas en un beneficiadero comercial, y fueron asignadas aleatoriamente a cuatro tratamientos con tres contenidos diferentes de soluciones salinas. Color, pH, solución de retención, pérdida de exudado, pérdida de peso por cocción, fuerza cortante y atributos sensoriales fueron analizados y evaluados. Fue utilizado el análisis multicriterio AHP jerárquico con el fin de elegir la mejor solución de marinado. Los criterios adoptados para la selección fueron las características físicas y sensoriales de la carne y con base a estos criterios se clasificaron las soluciones del marinación. Resultados. Los resultados mostraron que la mejor combinación de sales fue la alternativa (Na2CO3 + NaCl + Na5P3O10), seguida por (Na2CO3 + NaCl + NaCl y Na5P3O10). Conclusiones. Todas las soluciones ensayadas con sales usados sólos o en combinación dieron lugar a los mejores atributos físicos y sensoriales de que la carne sin marinar.

Objetivou-se avaliar o desempenho produtivo e a qualidade pós-colheita de cultivares de pereira nas condições subtropicais da região leste paulista. Para tanto, um ensaio de competição de cultivares foi implantado no município de Jundiaí-SP, com cinco cultivares ('Centenária', 'Triunfo', 'Primorosa', 'Seleta' e 'Tenra'). O experimento foi implantado em 2007, no espaçamento de 3,0mx4,0m, com mudas enxertadas no porta-enxerto Pyrus calleryana. As avaliações foram realizadas em três ciclos vegetativos (2009/10, 2010/11 e 2011/12), analisando-se os aspectos fenológicos, produtivos e a qualidade pós-colheita das frutas. A pereira 'Tenra' apresentou a maior produção, com 6kg de frutos por planta. As cultivares estudadas produziram frutas com coloração típica e firmeza aceitável, porém pouco doces.


This research aimed to evaluate the production and postharvest quality of pear tree cultivars in subtropical conditions at eastern of São Paulo state. For such, an assay of competition among cultivars was implanted in the Jundiaí city-SP, with five cultivars ('Centenária', 'Triunfo', 'Primorosa', 'Seleta' and 'Tenra'). The experiment was implanted in 2007, the spacing was of 3.0mx4.0m, and the plants were grafting in Pyrus calleryana. The evaluations had been carried through in three vegetative cycle (2009/10, 2010/11 and 2011/12), the phenological stage, productive aspects and fruit postharvest quality were evaluated. The pear 'Tenra' presented highest production, with 6kg of fruits per plant. The cultivars produced fruits with typical coloring firmness and acceptable, but slightly sweet.

RESUMEN

Este trabalho tem como objetivo verificar a possibilidade de aplicação de vapor de etanol para a destanização, associado ao 1-metilciclopropeno (1-MCP) para prolongar o armazenamento de caquis 'Giombo' em ambiente refrigerado, evitando rápido amolecimento de polpa, decorrente do processo de destanização. Os seguintes tratamentos foram realizados: T1) controle: frutos sem tratamento, apenas colocados sob armazenamento refrigerado (AR); T2) aplicação de etanol (3,50mL kg-1 durante 12h) + AR; T3) aplicação de 1-MCP (1000nL L-1 durante 12h) + AR; T4) aplicação de 1-MCP e posterior aplicação de etanol + AR; T5) aplicação de 1-MCP + AR + aplicação de etanol após o AR. O AR consistiu no armazenamento dos frutos por 30 dias a 5ºC e 90% UR. Posteriormente, os frutos foram mantidos a 25oC durante 15 dias. Frutos não tratados (controle) e os tratados com 1-MCP apresentaram maior firmeza de polpa que os demais tratamentos, mas não alcançaram a destanização. Frutos submetidos ao etanol apresentaram rápida perda de adstringência, acompanhado de elevada perda de firmeza. O 1-MCP, quando aplicado antes do armazenamento, em frutos que posteriormente à refrigeração foram tratados com etanol, manteve mais alta a firmeza de polpa em relação aos frutos que foram submetidos ao etanol imediatamente à aplicação do 1-MCP e aqueles tratados apenas com etanol. Esse tratamento pode ser utilizado nessa cultivar para manter a qualidade durante a comercialização.


This study is carried out with the objective to verify the ethanol vapor application possibility for astringency removal, associated with 1-methylcylopropene (1-MCP) to increase 'Giombo' persimmons shelf life under cold storage, avoiding quick flesh softening by astringency removal process. The following treatments were performed: T1) control: fruit without treatment, only cold stored (CS); T2) application of ethanol (3.50mL kg-1 for 12 hours) + CS; T3) application of 1-MCP (1000nL L-1 for 12 hours) + CS; T4) application of 1-MCP and later application of ethanol + CS; T5) application of 1-MCP + CS + application of ethanol after cold storage. Fruit were cold stored (CS) for 30 days at 5°C and 90% RH. After CS, fruit were exposure to 25oC during 15 days. The untreated fruits (control) and the ones treated with 1-MCP showed higher flesh firmness than the rest of the treatments, but did not reach detannization. Fruit treated with ethanol showed fast loss of astringency and firmness. The 1-MCP, when applied before CS, to fruits which after CS were treated to ethanol, kept higher flesh firmness as compared to the fruits which were treated with ethanol immediately after the application of 1-MCP and those treated only with ethanol. This treatment might be used in Giombo persimmon in order to maintain the fruit quality during marketing.

RESUMEN

O objetivo desta revisão é apresentar alguns métodos de conservação que podem ser utilizados para prolongar a vida útil do melão minimamente processado. Dentre os métodos, serão abordados revestimento comestível, irradiação, antimicrobianos naturais, antioxidantes, agentes de firmeza, atmosfera modificada, branqueamento, luz ultravioleta e alta pressão. Dependendo do método pode haver redução das alterações associadas ao processo mínimo do melão, como a perda de água, alteração da cor e firmeza, alteração do metabolismo e crescimento de micro-organismos, sendo o resultado muitas vezes dependente da cultivar do melão utilizado.


The objective of this review is to present some conservation methods that can be used to prolong the life of fresh-cut melon. Among the methods, edible coating, irradiation, natural antimicrobials, antioxidants, firmness agent, modified atmosphere, whitening, ultraviolet light and high pressure will be discussed. Depending on the method, the changes associated to minimum process of melon, such as water loss, change in color and firmness, change in the metabolism and growth of micro-organisms can be reduced and the result is often dependent on the melon cultivar used.

RESUMEN

Este trabalho teve como objetivo verificar o efeito da aplicação de 1-metilciclopropeno (1-MCP) e do salicilato de metila (MeSA) no controle de injúrias pelo frio em nêsperas 'Fukuhara'. Quatro concentrações de 1-MCP foram aplicadas (0, 50, 500 e 5000nL L-1), além do MeSA (0,01mM), associado ou não ao 1-MCP 500nL L-1. Após os tratamentos os frutos foram armazenados a 1°C durante 60 dias. As determinações realizadas foram: firmeza de polpa, índice de escurecimento e podridão, acidez titulável, pH, teor de sólidos solúveis, teor de ácido ascórbico e atividade da enzima polifenoloxidase (PPO). Após 60 dias de armazenamento refrigerado, não foi observado desenvolvimento de escurecimento interno nos frutos tratados com 1-MCP e MeSA. Os frutos controle apresentaram elevados índices de escurecimento interno, juntamente com elevada atividade de PPO. Os frutos apresentaram aumento de firmeza de polpa durante o armazenamento refrigerado, independente do tratamento aplicado.


This study was carried out whit the objective to verify the effect of 1-methylcyclopropene (1-MCP) and methyl salicylate (MeSA) in chilling injury control of 'Fukuhara' loquat fruit. It was applied four concentrations of 1-MCP (0, 50, 500 e 5,000nL L-1) and 0,01mM of MeSA associated or not to 500nL L-1 of 1-MCP. The fruit were stored at 1°C during 60 days. The variables analyzed were flesh firmness, pH, titratable acidity, soluble solids content, ascorbic acid content and activity of polyphenol oxidase (PPO). After 60 days of cold storage, there was no development of internal browning in fruit treated with 1-MCP and MeSA. Fruits without treatment showed higher levels of internal browning and high activity of PPO enzyme. All treatments showed increase of flesh firmness during cold storage.

Wood boxes kind "k" are the most used in table tomato (Lycopersicon esculentum P. Miller) commercialization in Brazil. Due to the fruit accommodation process that occurs during the transport from the production place to the commercialization point, producers fill tomato boxes a little bit over its physical capacity, and they close it with wood strips fixed with nails. In order to prevent strips from cracking, it is common to keep them inside water before using, to increase flexibility. When boxes are opened, many fruits are cracked or kneaded in a significant part of their total area, and normally they are thrown away. The purpose of this paper was to quantify the compression tomato fruits are exposed to in consequence of the "k" box fill / closing system. For this study a special instrumented box was constructed with a scales plate located at the bottom, with a hydraulic load cell instrumented in the box. This instrument was then used to study the compression of fruits as the box is filled and the compression increase caused by the addition of its wooden lid. The "k" box closing system caused an initial compression increase 3.5 times the compression of the open tomato box, and during time as the fruits are substantially deformed. This compression was reduced two about two times de initial reference value. The consequence of this observed fruit compression is compatible with the fruit deformations and even cracks observed in the market, which are known to be relevant post harvest losses causes in the Brazilian tomato handling industry.


Caixas de madeira do tipo "K" são as mais utilizadas na comercialização de tomate (Lycopersicon esculentum P. Miller) de mesa no Brasil. Em razão do processo de acomodação dos frutos que ocorre durante o transporte desde o local de produção até o local de comercialização, os produtores enchem a caixa de tomate um pouco acima de sua capacidade física e a fecham com ripas de madeira e pregos. Para evitar que as ripas rachem, é comum mantê-las imersas em água antes do fechamento, para que fiquem mais flexíveis. Quando as embalagens são abertas, muitos frutos estão rachados ou amassados em parte significativa de sua área e, normalmente, são descartados. Para este estudo, construiu-se uma embalagem cujo fundo é uma balança, com uma célula de carga hidráulica acomodada no fundo da caixa. Desse modo, a pressão que os frutos sofreram no interior da caixa com e sem o fechamento da tampa foi registrada ao longo do tempo, com auxílio de um tubo manométrico. O fechamento da caixa aumentou, inicialmente, em 3,5 vezes a compressão e depois, com a deformação plástica dos frutos, a compressão diminuiu para cerca de duas vezes em relação à compressão observada na caixa aberta. Portanto, as pressões observadas no fechamento da caixa comprimem os frutos de tomate, causando amassamento e até mesmo rachaduras. Estas injúrias têm sido observadas frequentemente na pós-colheita deste e outros produtos e são causas primárias de perdas consideráveis.

Perfil Livre, uma técnica sensorial descritiva, foi utilizada na caracterização de três amostras de pudins com açúcar e cinco de pudins dietéticos comerciais. Quatorze provadores realizaram o levantamento de atributos pelo método Rede. Foram elaborados para cada provador, as listas de definições de atributos e as fichas de avaliação, empregando escala não estruturada. Utilizou-se a Análise Procrustes Generalizada para tratamento dos dados. Foram ainda determinados o perfil de textura instrumental e a cor. Foi obtida boa discriminação e os pudins foram caracterizados com base, principalmente, nos atributos cor marrom, sinérese, aroma e sabor de chocolate, sabor residual, firmeza e cremosidade. A técnica de Perfil livre mostrou-se eficiente para discriminação sensorial das amostras estudadas considerando-se atributos de aparência, sabor, odor e textura.


Free-choice profile, a descriptive sensory technique, was applied to develop the profile for three regular and five dietetic commercial chocolate puddings. Fourteen panelists were selected using triangular tests, and the Grid method was used to obtain the descriptors. Besides, individual lists, definitions of the attributes, and score sheets, where each attribute was scored on an unstructured scale, were made for the assessors. The Generalized Procrustes Analysis was applied to data. Instrumental texture profile and color were also determined. Good discrimination was observed between the samples. Puddings were mainly characterized by brown color, sineresis, chocolate aroma and flavor, aftertaste, firmness and creaminess. Free-choice profiling was efficient to discriminate studied samples considering appearance, aroma, flavor and texture attributes.

Objective To know the preventive effects of using hammock firmness sheets for pa-tients with pressure ulcer.Methods Divided 98 patients into the application group (31 cases), the treatment group(30 cases) and the control group(37 cases) according to themselves condition.Hammock firmness sheets was used in the application group, while the routine preventive method of pressure ulcer was used in the control group.To know the preventive effects of pressure ulcer betweent the two groups.The patients in the treatment group was patients had pressure ulcer, hammock firmness sheets combined with local massage were used for them, observed the treatment effects for them.Results The condi-tion of preventive effect of pressure ulcer in the application group was better than those of in the control group.The cure rate of pres sure ulcer in the treatment group was 90%.Conclusions The hammock firmness sheets can prevent pressure ulcer effectively.
