Aims@#Edible coatings developed from biodegradable materials such as starch and zinc oxide nanoparticles (ZnO-NPS) are efficient antimicrobials that could be used as a food additive to reduce the bacterial load on the food surface. Therefore, this study was aimed to examine the effect of chemical and green synthesized ZnO-NPS with different concentrations on the survival of Escherichia coli and Staphylococcus aureus in fish fillets during chilling storage at 4 ± 1°C.@*Methodology and results@#ZnO-NPS were chemically prepared by mixing zinc acetate dihydrate with sodium hydroxide. Lavandula officinalis was used for the green synthesis of ZnO-NPS. The sterile biodegradable coating containing 2 and 5% of both chemically and green synthesized ZnO-NPS were made using starch, gelatin, xanthan gum and glycerol. Different bacterial cocktail strains of both E. coli and S. aureus were inoculated onto Tilapia fillet samples. The coating solution with different antimicrobials was aseptically spread in Tilapia fillets and examined periodically within two days intervals for the survival of S. aureus and E. coli during chilling at 4 ± 1 °C. Both chemically and plantsynthesized ZnO-NPS reduced the growth of both S. aureus and E. coli by about 3.7 log10 CFU/cm2 of Tilapia fillet. The incorporation of L. officinalis increased the antibacterial activity of ZnO-NPS. Staphylococcus aureus was more sensitive than E. coli for both chemically and plant-synthesized ZnO-NPS. Moreover, zinc oxide biodegradable coating extended the shelf-life of chilled Tilapia fillets by about 4 days.@*Conclusion, significance and impact of study@#The results of the current study demonstrated the incorporation of L. officinalis into ZnO-NPS biodegradable coating which may be promising in reducing microbial growth on food surfaces.

Diet is an important environmental factor in the development of inflammatory bowel disease (IBD), and it also represents one of the most promising treatment approaches for IBD. Daily diets usually contain food additives, which are found in many processed foods and even dietary supplements. In recent years, the effects of food additives on human health and intestinal flora have been highly concerned. Here we mainly aim to review the research progress on the potential role of food additives in the pathogenesis of IBD based on bibliometrics.

BACKGROUND: Biosurfactants are biomolecules that have the potential to be applied in food formulations due to their low toxicity and ability to improve sensory parameters. Considering the ability of yeasts to produce biosurfactants with food-friendly properties, the aim of the present study was to apply a biosurfactant produced by Candida utilis in the formulation of cookies. RESULTS: The biosurfactant was obtained with a yield of 24.22 ± 0.23 g/L. The characterization analysis revealed that the structure of a metabolized fatty acid with high oleic acid content (68.63 ± 0.61%), and the thermogravimetric analysis demonstrated good stability at temperatures lower than 200°C, potential for food applications. The biosurfactant also exhibited satisfactory antioxidant activity at concentrations evaluated, without cytotoxic potential for cell strains, L929 and RAW 264.7, according to the (3-(4,5-dimethylthiazol-2- yl)-2,5-diphenyltetrazolium bromide (MTT) assay. The incorporation of the surfactant into the dough of a standard cookie formulation to replace animal fat was carried out, achieving a softer, spongier product without significantly altering the physical and physicochemical properties or energy value. CONCLUSION: The thermal stability and antioxidant activity of the biosurfactant produced by C. utilis were verified, besides the positive contribution in the texture analysis of the cookies. Therefore, this biomolecule presents itself as a potential ingredient in flour-based sweet food formulations.

Background: Although legume protein extracts are useful in food preparation and processing as foam stabilizers and as viscosity, palatability and nutrition enhancers, many legume proteins from South America have not been characterized extensively. One such legume is the ñuña bean (Phaseolus vulgaris L.), which is cooked using dry heat until the cotyledons rapidly expand with a pop. The bean is widely cultivated in the Andes, but almost unknown elsewhere. Objective & Methods: In this study, we characterized ten functional properties of a ñuña protein extract using standard food analysis methods. Results: The extract was similar to other legume protein extracts for many properties (amino acid profile, proximate analysis, yield, water absorption, color, isoelectric point, and thermogravimetric analysis). The electrophoretic analysis revealed that the sample was nearly pure phaseolin. Additionally, the ability to form foam and increase solution viscosity were comparatively low when contrasted to other extracts. Conclusion: These properties make ñuña protein extract useful as a nearly pure phaseolin nutrition enhancer in beverages where foaming and high viscosity are undesirable, such as in fortified beverages, drinkable yogurts, or protein supplements. The extract may also have relevance as a weight-loss supplement. Therefore, we expect that incorporating ñuña protein in processed foods would be a straightforward process.
Antecedentes: Los extractos proteicos de leguminosas son muy utilizados en la preparación y procesamiento de alimentos como agentes estabilizadores de espuma y viscosidad, así como potenciadores de palatabilidad y nutrición. Sin embargo, muchas proteínas de leguminosas procedentes de Sudamérica no han sido caracterizadas extensamente. Una de ellas es el frijol ñuña (Phaseolus vulgaris L.), el cual se cocina utilizando calor seco hasta que los cotiledones se expanden rápidamente y explotan. La ñuña se cultiva ampliamente en los Andes, pero es mayormente desconocida en otras partes del mundo. Objetivo y Métodos: En el presente estudio, caracterizamos diez propiedades funcionales de un extracto proteico de ñuña, utilizando métodos estándares para análisis de alimentos. Resultados: Varias propiedades del extracto analizado fueron similares a las de los extractos proteicos de otras leguminosas (perfil de aminoácidos, análisis proximal, rendimiento, absorción de agua, color, punto isoeléctrico y análisis termogravimétrico). El análisis electroforético reveló que la muestra es mayormente faseolina. Además, el extracto analizado presentó baja capacidad para formar espuma e incrementar viscosidad de una solución a comparación de los otros extractos. Conclusión: Los resultados obtenidos indican que el extracto proteico de ñuña, que es casi faseolina pura, puede ser muy útil como potenciador nutricional de bebidas en las que la espuma y alta viscosidad son indeseadas, como es el caso de bebidas fortificadas, yogures bebibles o suplementos proteicos. El extracto podría tener relevancia como suplemento para pérdida de peso. Por lo tanto, esperamos que el uso de proteína de ñuña sea un proceso sencillo en la industria de alimentos procesados.

BACKGROUND: Chia seeds are gaining increasing interest among food producers and consumers because of their prohealth properties. RESULTS: The aim of this work was to evaluate the potential of chia seeds to act as acetylcholinesterase (AChE) and butyrylcholinesterase (BChE) inhibitors. The highest inhibitory activity against AChE and BChE was observed for colored seed ethanol extracts. A positive correlation was found between the presence of quercetin and isoquercetin as well as protocatechuic, hydroxybenzoic, and coumaric acids and the activity of extracts as AChE and BChE inhibitors. It has also been shown that grain fragmentation affects the increase in the activity of seeds against cholinesterases (ChE). Furthermore, seeds have been shown to be a source of substances that inhibit microbial growth. CONCLUSIONS: It was found that the chia seed extracts are rich in polyphenols and inhibit the activity of ChEs; therefore, their use can be considered in further research in the field of treatment and prevention of neurodegenerative diseases.

RESUMEN Objetivo. Evaluar el efecto de dosis crecientes del glucósido cianogénico Linamarina, en la reducción de metano ruminal in vitro. Materiales y Métodos. Se empleó líquido ruminal de dos ovejas fistuladas de la raza Merino Precoz, con el que se inoculó un sustrato fermentativo constituido por heno de alfalfa (Medicago sativa) y grano de avena molido (Avena sativa L.), se adicionó solución buffer y Linamarina (pureza de ≥98%) en dosis crecientes, lo que se llevó a incubación por ocho horas in vitro. El metano se midió cada hora, con un monitor de gases infrarrojo. Resultados. De acuerdo con el incremento de las dosis de Linamarina (0, 6, 13, 20 y 26 mg/L), la concentración de metano disminuyó de forma lineal (p≤0.05) en (9.7, 9.2, 18.1 y 29.4%) respectivamente. Se observó una reducción significativa de metano con la dosis más alta de Linamarina. Conclusión. La Linamarina, en su estado puro, fue eficaz en la reducción de metano durante la fermentación ruminal in vitro. Por lo tanto, este estudio constituye una base para futuros experimentos que incluyan fuentes vegetales de Linamarina y otras variables ruminales, lo que puede conducir a encontrar estrategias para reducir los gases de efecto invernadero.
ABSTRACT Objective. To assess the effect of rising doses of the cyanogenic glucoside Linamarin on the reduction of in vitro rumen methane. Materials and methods. Rumen fluid from two fistulated Merino Precoz sheep, inoculated with a fermentation substrate comprising alfalfa hay (Medicago sativa) and ground oat grain (Avena sativa L.), and added with buffer solution and Linamarin (purity ≥98%) in rising doses, was incubated for eight hours in vitro. Methane was measured each hour with an infrared gas monitor. Results. According Linamarin doses were increased (0, 6, 13, 20 and 26 mg/L), the methane concentration fell in a linear manner (p≤0.05) by (9.7, 9.2, 18.1 and 29.4%), respectively. A significant reduction of methane was seen whit the highest dose of Linamarin. Conclusions. Linamarin, in pure state, was effective to reduce methane during in vitro ruminal fermentation. Therefore, this study constitutes a basis for future experiments including vegetable sources of Linamarin as well as other rumen variables, leading to find a strategy for reducing greenhouse gases.

Resumen Los edulcorantes no calóricos representan una buena alternativa para sustituir los sabores dulces sin la respuesta fisiológica que genera el consumo de azúcares. Por sí solos no son herramientas para el control de peso. Su consumo debe ir acompañado de una dieta correcta y un estilo de vida saludable que incluya actividad física. Su utilidad radica en proporcionar el agradable sabor dulce sin el aporte energético. La inocuidad de cada uno de los compuestos aprobados está comprobada y se reevalúa constantemente para tomar en cuenta los resultados de nuevos estudios. Debido a que no existe un edulcorante perfecto, la variedad ayuda a que se desarrollen productos cada vez más agradables para el consumidor. Este trabajo es fruto de una revisión exhaustiva de la bibliografía y de las discusiones de un panel de expertos de diversas especialidades: toxicología, ginecoobstetricia, pediatría, endocrinología, nutrición, medicina interna, salud pública y medicina preventiva, en el que se analizó extensamente la bibliografía se revisó una variedad de trabajos científicos que responden a las interrogantes que habitualmente se hacen los profesionales de la salud acerca de seguridad en diferentes grupos etáreos y con afecciones específicas, ingestión diaria admisible, etc.
Abstract Non-caloric sweeteners are a good alternative to replace the sweet flavors without the physiological response generated by the consumption of sugars. Alone they are not tools for weight control. Its intake must be accompanied by a proper diet and a healthy lifestyle that includes physical activity. Its usefulness lies in providing a pleasant sweet taste without the energy intake. The safety of each of the compounds is tested and approved and constantly reassessed to take into account the results of new studies. Since there is no perfect sweetener, variety helps that more and more pleasing to the consumer products are developed. This work is the result of a comprehensive review of the literature and discussions of a panel of experts from various specialties: toxicology, obstetrics and gynecology, pediatrics, endocrinology, nutrition, internal medicine, public health and preventive medicine, where literature was widely analyzed reviewing a variety of scientific papers that address the questions that usually are made by health professionals on safety in different age groups and with specific diseases, acceptable daily intake, etc.

Abstract Despite their great importance for the food industry, flavorings, in general, raise a number of questions regarding their cytotoxicity, mutagenicity and carcinogenicity, since, in the literature, there are few studies found evaluating the toxicity on the systemic and cellular level, of these chemical compounds. The root meristems of Allium cepa (onion) are widely used for the assessment of toxicity of chemical compounds of interest. Thus, this study aimed to evaluate, in A. cepa meristematic cells, individually and in combination at the cellular level, the toxicity of synthetic Cheese and Cheddar Cheese food flavorings, identical to the natural, at doses of 1.0 and 2.0 mL, at exposure times of 24 and 48 hours. In combination we used 0.5 mL of Cheese flavor associated with 0.5 mL of Cheddar flavor; and 1.0 mL of Cheese flavor associated with 1.0 mL of Cheddar flavor, at exposure times of 24 and 48 hours. For these evaluations, we used groups of five onion bulbs, which were first embedded in distilled water and then transferred to their respective doses. The root tips were collected and fixed in acetic acid (3:1) for 24 hours. The slides were prepared by crushing and were stained with 2% acetic orcein. Cells were analyzed throughout the cell cycle, totaling 5,000 for each control and exposure time. The mitotic indices calculated and cellular aberrations observed were subjected to statistical analysis using the chi-square test (p <0.05). No chromosomal abnormalities nor those of mitotic spindle were observed for the treatments performed. The results, both individually and in combination, showed that the flavorings under study significantly reduced the cell division rate of the test system cells used. Therefore, under the conditions studied, the two flavorings were cytotoxic.
Resumo Apesar da grande importância para a indústria alimentícia, os aromatizantes, em geral, suscitam uma série de dúvidas quanto a sua citotoxicidade, mutagenicidade e carcinogenicidade, visto que, na literatura, poucos são os trabalhos encontrados avaliando a toxicidade, em nível sistêmico e celular, destes compostos químicos. Os meristemas de raízes de Allium cepa (cebola) são muito utilizados para a avaliação da toxicidade de compostos químicos de interesse. Desta forma, este trabalho teve por objetivo avaliar em células meristemáticas de A. cepa, de forma individual, a toxicidade em nível celular de aromatizantes alimentares sintéticos, idênticos aos naturais, de sabores Queijo e Queijo Cheddar, nas doses de 1,0 e 2,0 mL, nos tempos de exposição de 24 e 48 horas; e de forma associada, onde se utilizou 0,5 mL do aromatizante sabor Queijo associado a 0,5 mL do aromatizante sabor Queijo Cheddar; e 1,0 mL do aromatizante sabor Queijo associado a 1,0 mL do aromatizante sabor Queijo Cheddar, nos tempos de exposição de 24 e 48 horas. Para estas avaliações utilizou-se grupos de cinco bulbos de cebolas, que primeiramente foram enraizados em água destilada, e em seguida transferidos para as suas respectivas doses. As radículas foram coletadas e fixadas em ácido acético (3:1) por 24 horas. As lâminas foram preparadas pela técnica de esmagamento e coradas com orceína acética a 2%. Analisaram-se células em todo ciclo celular, totalizando 5.000 para cada controle e tempo de exposição. Os índices mitóticos calculados e as aberrações celulares observadas foram submetidos à análise estatística do Qui-quadrado (p<0,05). Não foram observadas alterações cromossômicas e anomalias de fuso mitótico para nenhum dos tratamentos realizados. Os resultados obtidos, tanto individualmente como de forma associada, mostraram que os aromatizantes em estudos reduziram de forma significativa os índices de divisões celulares das células do sistema teste utilizado. Portanto, nas condições analisadas, os dois aromatizantes foram citotóxicos.

Background: Monosodium glutamate (MSG) a sodium salt of naturally occurring (non-essential) L-form of glutamic acid is one of the main flavor enhancer used as an ingredient in various food products. It is widely used in restaurants, packaged food industries and household kitchens, in Nigeria, most communities and individuals often use MSG as a bleaching agent for the removal of stains from clothes. Materials and Methods: Twenty (20) female adult wistar rats were used for this experiment. The rats with average weight of 181g were randomly assigned into four groups of five each (Groups A, B, C and D). Group A, B and C served as treatments groups while group D as the control. Each rat in the treatment groups A, B and C received 0.1g/kg, 0.15g/kg and 0.20g/kg of monosodium glutamate respectively in 0.5ml of water orally three times daily for two weeks. Result: The histopathological evaluation of the tissues of the ovary showed Infiltration of inflammatory cells in and around the oocyte as well as in the zonal granulosa layer. There was distortion of tissue architecture. Conclusion: MSG alters the histology of the ovary, therefore its consumption should be stopped and to work out safe level of consumption further in depth studies are recommended.

The objective of this work was to evaluate the cytotoxic effect of the food dyes erythrosine, brilliant blue and red 40 on the cell cycle of Allium cepa L. Each dye was evaluated at doses of 0.4 and 4.0 ml, at exposure times of 24 and 48 hours, in onion root tip cells. Cells and the presence of chromosomal aberrations were analyzed throughout the whole cell cycle, totaling 5,000 cells for each group of bulbs. The mitotic index was calculated and the statistical analysis was conducted through the Chi-square test (p < 0.05). From the obtained results, it was verified that the food additives erythrosine and brilliant blue were not cytotoxic to the cells of the test system. However, the red 40 dye, at the two evaluated doses and the two exposure times used in this bioassay have promoted a significant reduction in cell division and induced the emergence of anaphasic and telophasic bridge aberrations and micronucleated cells. Additional cytotoxicity studies should be conducted to add information to these and other previously obtained results in order to evaluate, with property, the action of these three dyes on a cellular level.
Este trabalho teve por objetivo avaliar o efeito citotóxico dos corantes alimentares eritrosina, azul brilhante e vermelho 40 sobre o ciclo celular de Allium cepa L. Cada corante foi avaliado nas doses de 0,4 e 4,0mL, nos tempos de exposição de 24 e 48h, em células meristemáticas de raízes de cebolas. Foram analisadas células em todo o ciclo celular e a presença de aberrações cromossômicas, totalizando 5.000 células para cada grupo de bulbos. Calculou-se o índice mitótico e a análise estatística foi feita por meio do teste Qui-quadrado (p < 0,05). A partir dos resultados obtidos, verificou-se que os aditivos alimentares eritrosina e azul brilhante não foram citotóxicos às células do sistema-teste em questão. Já o corante vermelho 40, nas duas doses avaliadas e nos dois tempos de exposição estipulados para este bioensaio, promoveu redução significativa da divisão celular e induziu o aparecimento de aberrações dos tipos ponte anafásica, ponte telofásica e célula micronucleada. Estudos adicionais de citotoxicidade devem ser conduzidos para se somar a estes para assim avaliar, com propriedade, a ação destes três corantes em nível celular.

In this work, fifty yeast strains, isolated from the spontaneous alcoholic fermentation of Agave duranguensis to produce mezcal, were tested using the double coupling system. These yeasts were from the genera Pichia, Torulaspora, Saccharomyces, Kluyveromyces, Deckera, Hanseniaspora, and Candida. P. fermentans ITD00165 was the best isoamyl acetate producer, yielding 0.38 g/L of ester after incubation for 24 h, while K. marxianus ITD00211 produced 0.32 g/L of ester. Thus P. fermentans TD00165 could be considered as an excellent choice for use in optimization studies of the culture medium and bioreactor operating conditions to develop a process for biotechnological production of isoamyl acetate.

The prevalence of atopic dermatitis (AD) in school-age children has increased in industrialized countries. As diet is one of the main factors provoking AD, some studies have suggested that food additives in processed foods could function as pseudoallergens, which comprise the non-immunoglobulin E-mediated reaction. Eosinophil cationic protein (ECP) is an eosinophil granule protein released during allergic reactions to food allergens in patients with AD. Thus, serum ECP levels may be a useful indicator of ongoing inflammatory processes in patients with AD. The purpose of this study was to investigate the effect of consuming MSG in processed foods on serum ECP levels among children with AD. This study was performed with 13 patients with AD (age, 7-11 years) who had a normal range of total IgE levels (< 300 IU/ml). All participants ate normal diets during the first week. Then, six patients were allocated to a processed food-restricted group (PRDG) and seven patients were in a general diet group (GDG). During the second week, children in the PRDG and their parents were asked to avoid eating all processed foods. On the third week, children in the PRDG were allowed all foods, as were the children in the GDG throughout the 3-week period. The subjects were asked to complete a dietary record during the trial period. Children with AD who received the dietary restriction showed decreased consumption of MSG and decreased serum ECP levels and an improved SCORing score on the atopic dermatitis index (P < 0.05). No differences in serum ECP levels or MSG consumption were observed in the GDG. Serum total IgE levels were not changed in either group. In conclusion, a reduction in MSG intake by restricting processed food consumption may lead to a decrease in serum ECP levels in children with AD and improve AD symptoms.

No Brasil os dados sobre a utilização dos sulfitos pela indústria de alimentos e pesquisas sobre o seu consumo são escassos. Sendo assim, o objetivo desta pesquisa foi avaliar o nível de sulfitos em sucos de frutas e estimar seu consumo por escolares de 5ª. a 8ª. séries de escolas públicas, do ensino fundamental, do município de São Caetano do Sul-SP, Brasil. Foi aplicado questionário de freqüência de consumo de alimentos (QFCA) em 313 escolares, sendo 56,9 % do sexo feminino e 43,1 % do sexo masculino, com média de idade de 14,7 anos. Os alimentos sulfitados mais consumidos foram os néctares ou sucos de frutas, o açúcar refinado, as batatas fritas congeladas, o coco ralado, o suco de caju e as frutas secas e cristalizadas. Considerando os limites máximos permitidos (LMP) pela legislação brasileira, o consumo de SO2, em mg SO2/kg pc/dia, foi de 0,12 mg SO2/kg pc/dia, sendo que este valor médio corresponde a 17% da IDA (0,7 mg SO2/kg pc/dia). Já os resultados das análises dos sucos de frutas demonstram que a análise por injeção em fluxo (Flow injection analysis - FIA) modificada obteve resultados de sulfitos nas amostras analisadas com menor variação do que aqueles obtidos pelo método Monier-Williams (M-W) otimizado, e que nenhuma amostra ultrapassou os LMP.
In Brazil there are no data on use of sulphites by the food industry and research on their consumption by population. Thus, the objective of this research was to evaluate sulphites in fruits juices and estimate intake sulphites in a group of 5th 8th schoolchildren of public schools in São Caetano do Sul-SP, Brazil. It was applied a food frequency questionnaire (FFQ) at 313 schoolchildrens (56.9% female, 43.1% male and average age 14.7 years). Sulphited products identified were fruits juices, sugar, frozen chips, grated coconut, cashew juice and dried fruits. Considering maximum permitted levels (MPL) stabilished by Brazilian legislation, none of the students exceeded the ADI of 0.70 mg SO2/kg bw/day, with average of consumption of 0.12 mg SO2/kg bw/day (17 % of the ADI). The results of the fruits juices analysis demonstrated flow injection analysis (FIA) modified obtained better results than optimized Monier-Williams method (M-W) and no sample exceeded the MPL.

Objective and METHOD: In order to identify the aggravating agents for intrinsic asthma, we performed ASA- and food additive-challenge tests on 182 subjects diagnosed as having intrinsic asthma. The following tests were performed: Lysine-aspirin bronchoprovocation test to confirm aspirin-sensitivity, sodium bi-sulfite (40-200mg) oral provocation test for sulfite sensitivity, tartrazine oral provocation test (50mg) for tartrazine sensitivity, and sodium benzoate (400mg) oral provocation test for sodium benzoate sensitivity. Positive reaction was defined as decrease in FEV, by more than 20% from the baseline value after the provocation. RESULT: Seventy-five (41.2%) of 182 subjects showed positive responses to more than one agent among the aspirin and three food additives challenged. The prevalence of aspirin-sensitivity was the highest (22.5%), followed by sulfite-sensitivity (8.8%), and then concurrent sensitivity to both aspirin and sulfite (6.0% ), to both aspirin and tartrazine (1.6% ), to aspirin, sulfite and tartrazine (1.1%) and to aspirin, sulfite and sodium benzoate (0.5%). Rhino-sinusitis was noted in 62.5% of aspirin-sensitive asthmatic subjects, 60% of sulfite-sensitive ones, and 80% of tartrazine-sensitive ones. Urticaria was noted in 21.4% of aspirin-sensitive asthmatic subjects, 16.6% of sulfite-sensitive ones and 6.3% of tartrazine-sensitive ones. Thirty-seven to 83% of positive responders had no adverse reaction history. CONCLUSION: These findings suggest that ASA and food additive challenge tests should be considered as a screening test to evaluate any aggravating factors in subjects with intrinsic asthma, even though they may not have experienced any adverse reactions.
