RESUMEN

Present study was conducted in 240 day-old broiler chicks to assess the effect of condensed tannins (CT) containing guava leaf meal (GLM) supplemented diet on nutrient composition, litter metabolites viz. pH, moisture and ammonia concentration) and microbial counts after completion of feeding trial of 42 days. Chicks were randomly allocated into 4 dietary treatments, with 4 replicates of 15 chicks in each pen in a completely randomized block design (CRD). Chicks were fed basal diets supplemented with GLM @ 1.5, 2.5 and 3.5 percent, in T1, T2 and T3 groups, respectively, while, T0 group fed only basal diet. Litter materials of chicks showed good nutrient profiles and properly sterilized litter material act as alternative feed ingredient for ruminants feed. Supplementation of GLM in the diets of chicks significantly (P<0.05) reduced moisture, pH, NH3 concentration, harmful Eschericia coli and Clostridia spp. counts in the litter materials and reduced environmental pollution. The litter material of GLM supplemented (T1, T2 and T3) chicken showed significantly higher (P<0.05) CP contents as compared to un-supplemented control. It can be concluded that properly sterilized litter material of GLM supplemented chicks act as cheaper alternative feedstuffs for ruminant’s ration and reduce environmental pollution by lowering NH3 concentration, harmful E. coli and Clostridia counts in broiler litter material

The high dependence on maize as a staple food in Tropical Africa, coupled with its low nutritive value necessitate investigation on how to improve the nutritional value of maize based foods. The present study was aimed at assessing the effect of supplementing nixtamalized maize flour with sprouted soy bean flour on the proximate composition, mineral content, amino acid profile and anti-nutritional factors in the blends. Nixtamalized maize flour was prepared by cooking maize grains in 1% unripe plantain peel ash solution (pH 10.2), steeped in the cooked solution for 15 h, washed, dried and milled into flour. The flour was supplemented with 0, 10, 20, 30 and 40% sprouted soy flour and analyzed for the aforementioned parameters. The results showed that protein, fat, ash, crude fibre and caloric value increased with increase in soy flour supplementation ranging from 9.26–22.57%, 4.51–10.53%, 1.38–2.06%, 2.14–2.39% and 408.47–434.85 kcal/100 g respectively while carbohydrate decreased from 82.71 – 62.45%. Potassium, calcium, magnesium and zinc contents increased from 267.58 – 286.35mg/100g, 126.93 – 161.03 mg/100 g, 135.71 – 163.81 mg/100 g and 4.52 – 4.85 mg/100 g respectively with soy flour addition. The total amino acids and total essential amino acids increased from 70.55 g/100 g protein and 30.54 g/100 g protein for the control to 87.97 g/100 g protein and 38.98 g/100 g protein for the 40% soy flour supplemented blends respectively. Limiting essential amino acids in both flours were significantly (P = 0.5) improved as a result of soy flour supplementation. Majority of essential amino acid chemical scores were above 100% except for lysine (51.03–66.38%), tryptophan (67.27–95.46%) and threonine (80.88 – 99.12%). Soy flour supplemented blends had higher phytate, trypsin inhibitor and tannin contents than the control sample but their values were low and may not have serious effect on nutrient bioavailability. The study clearly shows that nutritional value of nixtamalized maize flour can be improved by supplementing it with sprouted soy flour.

Aim:The quantitative nutrient composition of leaves of Brillantaisia guianensis P. beuv was investigated. Source and Identification of Sample:The leaves of B. guianensisused in this study were harvested fresh from Ude plantation in Okon Aku, Ohafia Local Government Area of Abia State, Nigeria. They were identified by a Taxonomist (Dr Edwin Wosu) in the Herbarium Unit of the Department of Plant Science and Biotechnology, University of Port Harcourt. Study Design:The study was designed, using standard methods, to determine the proximate, amino acids, minerals and vitamins composition of the leaves. Results:The wet leaves were high in moisture (88.4%) while the dried sample had practically no moisture, indicating that the wet leaves could easily be prone to microbial spoilage due to high water activity. Drying increased protein level from 3.50 to 28.0% and ash from 2.36 to 27.7% among other parameters. The low calorific values for wet sample (16.1 kcal/100 g) and dry sample (152.3 kcal/100 g sample) showed that the leaves are poor energy-giving foods. However, the leaves contain good amino acid profile especially the essential amino acids (valine, threonine, isoleucine, leucine, lysine, methionine, phenylalanine and tryptophan).The nutrient mineral (Na Ca, Mg, K, Se, P, Fe) levels were high to supply the World Health Organization recommended daily allowance for adults and children.The sample contains appreciable amount of fats and water -soluble vitamins required for growth. Conclusion:The results show that the leaves are good sources of essential and non-essential amino acids, minerals and vitamins adequate to meet the required daily allowance for nourishment of the body

Introduction: The study aimed to analyse the nutritional quality, antioxidant components and activity of three varieties of corn based ready-to- eat (RTE) breakfast cereals (BFC) enriched with strawberry, banana and mango. Methods: Fruit-enriched corn based breakfast cereals manufactured in India were purchased and ground to obtain homogeneous samples for analysis. The contents of moisture, protein, total fat, dietary fibre, iron, phosphorous, calcium, vitamin C, total carotene, thiamine, riboflavin, in vitro digestible protein, bioaccessible calcium and iron, and digestible starch fractions were determined. The antioxidant components namely, polyphenols, flavonoids and antioxidant activity in different extracts were also determined using total antioxidant, free radical scavenging(2,2-diphenyl-1-picrylhydrazyl) and reducing power assays. Results: The protein and dietary fibre contents in all samples ranged between 4.0-4.6 and 6.4-7.6 g/100g respectively. Total iron and vitamin C ranged between 10.7-13.3 mg and 33.2-43.6 mg/100g respectively. Cereals with mango had high total carotene in comparison with other samples. In vitro digestible protein of the processed cereals was low, while bioaccessible calcium (50.2-59.5%) and iron (8.5-15.1%) levels were high due to low oxalates and phytic acid contents. The starch profiles of the breakfast cereals showed high rapidly available glucose and starch digestibility index. Fruit-enriched breakfast cereals showed high polyphenol content in methanol extract (48.6-71.3 mg/100g) and high total antioxidant activity in aqueous extracts. Free radical scavenging and reducing power assay showed high activity in 80% methanol extract. Conclusion: Fruit-enriched breakfast cereals have the potential to be a good source of iron, dietary fibre, vitamin C and total carotene. The fruit-enriched cereals also had high bioaccessible iron and antioxidant activity.

RESUMEN

Objective To analyze the nutrient constituents of the gonad from Hemicentrotus pulcherrimus.The results could provide a theoretical basis for the development of the H. pulcherrimus.Methods The contents of the water,ash and protein were determined by the national standard methods,total sugar by phenol-sulfuric acid method,rude fat by soxhlet's method,fatty acids by gas chromatography-mass chromatography,and inorganic elements by atomic absorption spectroscopy method.Results The contents of water,ash,rude fat, protein and total sugar were 64.20%,12.70%,2.34%,12.25%and 5.59%,respectively. The contents of arachidonic acid and EPA were higher in fatty acids.Inorganic elements, such as Ca,Mg,Fe were also in higher level.Conclusion The gonad of H.pulcherrimus was useful in the exploitation of nutrient food.
