RESUMEN

Aims@#Molecular identification of yeast has been conducted on various fermentation products. However, the identification of yeast in fermented Sumbawa mare’s milk based on the genotyping method has not been carried out. This study was aimed to determine the diversity profile of yeasts in fermented Sumbawa mare’s milk using phenetic characters and PCR-RFLP analysis technique based on the ITS region.@*Methodology and results@#Yeast isolates were phenotypically characterized and visualized in a dendrogram using CLAD97 software. Then, the yeast DNA was extracted using heat treatment and amplified using ITS1 and ITS4 primers. The amplicons were analyzed by RFLP using HindIII and HaeIII enzymes. The phylogenetic tree was constructed using MEGA 7.0. Based on the result of grouping by phenetic analysis and PCR-RFLP, the 12 isolates were divided into four groups with different members. The results of the phenetic analysis were divided into group I (all isolates of Dompu), group II (isolate B3, B4, S3), group III (isolate B5) and group IV (isolate S1). The types of yeast that were identified molecularly and represented each group of PCR-RFLP results included in group I were Kluyveromyces marxianus D1A and K. marxianus D1B, group II: K. marxianus D7, group III: Kazachstania humilis D4, while milk from Bima and Sumbawa has one yeast species as a member of group IV, namely Pichia kudriavzevii B3. Kluyveromyces marxianus was the yeast frequently found in Sumbawa fermented mare’s milk.@*Conclusion, significance and impact of study@#Various yeast species as a consortium of the milk samples can contribute to the increasing quality of fermented Sumbawa mare’s milk.

@#Introduction: People with lactose intolerance are suggested to consume dietary items containing less lactose, such as goat’s milk. This study aimed to investigate the effects of goat’s milk powder on the health of lactose intolerant middle-aged adults. Methods: A total of 60 subjects were recruited into this randomised controlled trial. They were divided into four groups and received different dietary interventions (goat’s milk, goat’s milk with curcumin, goat’s milk with coffee, lactose-free milk) for five weeks. Health effects were compared between pre- and post-intervention. Anthropometric and biochemical parameters (blood glucose, insulin, lipid profile, C-reactive protein, and lactoferrin) were evaluated. Dietary intake was recorded using a food record. Results: Fifty-one lactose intolerant subjects completed the study. After ingestion of goat’s milk, there were significant reductions in body fat (p=0.033) and a significant increase in the percentage of muscle (p=0.021). Waist circumference (WC) decreased in both the goat’s milk with curcumin and goat’s milk with coffee groups (p<0.05 for all). Unfortunately, high-density lipoprotein cholesterol (HDL-C) dropped after the five-week intervention in the goat’s milk group (p=0.002). Lactoferrin level of the goat’s milk group was higher than other groups at post-intervention (p<0.001). Besides, the goat’s milk with coffee group seemed to consume more carbohydrates after completing the intervention (p=0.034). Conclusion: A five-week intake of goat’s milk reduced the risk of abdominal obesity among middle-aged adults. In addition, it resulted in improved lactoferrin levels.

Aims@#The aim of this study was to screen lactic acid bacteria (LAB) isolates from fermented Sumbawa mare‘s milk that meet the requirements as starter cultures, and to evaluate the effect of the selected starter culture in improving the organoleptic quality of mare‘s milk fermentation. @*Methodology and results@#The LAB isolates (13 isolates) derived from naturally fermented Sumbawa mare‘s milk were firstly screened for acidification activity. Afterwards, the selected isolates were evaluated for the starter culture criteria such as technological properties (proteolytic test, lipolytic test, and exopolysaccharide production), food safety test (hemolytic test and antibiotic sensitivity test), antimicrobial activity test. The selected culture (SC) together with yogurt starter cultures (YC) and combination between the selected isolate and a mixture of both (MC) were used to ferment fresh mare’s milk. Six LAB isolates (DB7, BC10, DC4, BC9, DC10, and BC7) were obtained from the acidification screening. Isolate BC10 was the most potential isolate as starter culture due to its ability in terms of acidification and proteolytic activity, lack of lipolytic activity, no indication of pathogenic potency, as well as able to inhibit the growth of Escherichia coli ATCC 25922. However, this isolate was resistant to antibiotics kanamycin, trimethoprim, and cinoxacin. The isolate BC10 presented 99.99% sequence similarity with respect to Lactobacillus plantarum.@*Conclusion, significance and impact of study@#The selected starter culture (isolate BC10) was able to improve the organoleptic quality of fermented mare‘s milk especially aroma compared to the other starter cultures. Therefore, L. plantarum BC10 is a potential isolate to be used as starter culture for mare’s milk fermentation.

Aims@#Milk is rich of nutrients that are necessary for the growth of various microorganisms. The aim of the present study was to evaluate the microbial quantity and quality of the raw cow’s milk sold through street trading in Meknes, Morocco, and to study the variation and seasonal relationship of microbial diversity during the four seasons of the year. @*Methodology and results@#Raw cow’s milk samples were collected randomly between May 2015 and April 2016 from 3 street trading sale points, two popular neighborhoods (station 1 and station 2) and one popular market, and they were analyzed microbiologically. The results showed that the contamination rates of Total Plate Count (TPC), total coliforms, fecal coliforms, lactobacilli, lactococci and yeasts and molds were 8.8×108 CFU/mL, 8.9×105 CFU/mL, 2×103 CFU/mL, 4.6×108 CFU/mL, 7.5×108 CFU/mL and 4.1×103 CFU/mL, respectively. Moreover, Escherichia coli, Staphylococcus aureus, Clostridium perfringens and Listeria monocytogenes were detected in 66.67% (24/36), 75% (27/36), 36.1% (13/36) and 19.44% (7/36), respectively, while Salmonella was not detected in this study. @*Conclusion, significance and impact of study@#The highest microbiological count in raw milk samples was found in summer, while the lowest was detected in winter (p˂0.005). Therefore, the quality of milk marketed in Meknes region of Morocco is deteriorated due to the lack of good hygienic conditions of raw cow’s milk sold through street trading.

Antecedentes: Las fórmulas a base de proteína de soya (FBPS) se han utilizado desde hace tiempo como una alternativa para lactantes con requerimientos nutricionales especiales. Sin embargo, las indicaciones médicas para su uso, su alergenicidad, seguridad y eficacia aún son controvertidas. Objetivo: Presentar recomendaciones del uso de FBPS basadas en la literatura existente. Métodos: Se realizó la consulta de revisiones sistemáticas y guías de práctica clínica, por medio de algoritmos de búsqueda validados, y sistemas como AGREE (Appraisal of Guidelines for REsearch and Evaluation) II y PRISMA (Preferred Reporting Items for Systematic Reviews and Meta-Analyses). Para la elaboración de las recomendaciones clínicas se analizaron y discutieron los tópicos de mayor importancia, por parte de los investigadores responsables y el grupo de expertos del desarrollo de un documento de posición. Se evaluó la calidad de la evidencia utilizando el sistema GRADE (Grading of Recommendations, Assessment, Development and Evaluation). Resultados: Se encontraron distintos reportes con calidad de evidencia variable que sustentan la eficacia de las FBPS en el manejo de la alergia a la proteína de la leche de vaca y en la tolerancia digestiva del lactante, así como su baja alergia cruzada en comparación a la leche de vaca y otras fórmulas. También se encontraron otros estudios que indican la seguridad de las FBPS sobre distintos parámetros nutricionales, inmunitarios y de desarrollo. Existe además evidencia que demuestra que las FBPS tienen ventajas importantes en cuestión de costo-beneficio, palatabilidad y efectos sobre la microbiota intestinal, en comparación con otras fórmulas. Conclusiones: Aunque existe evidencia limitada para recomendar su utilización en los trastornos digestivos funcionales, las FBPS tienen un perfil de seguridad adecuado y continúan siendo una opción válida para la alimentación del lactante.


Abstract Background: Soy infant formulas (SIF) have long been used as an alternative for infants with special nutritional requirements. However, the medical indications for their use, their allergenicity, safety and efficacy are still controversial. Objective: To present recommendations for the use of SIF based on the existing literature. Methods: We consulted systematic reviews and clinical practice guides, through validated search algorithms, and systems such as Appraisal of Guidelines for REsearch and Evaluation (AGREE)II and Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA). For the elaboration of the clinical recommendations, the most important topics were analyzed and discussed by the responsible researchers and the group of experts in the development of a position paper. The quality of the evidence was evaluated using the Grading of Recommendations, Assessment, Development and Evaluation (GRADE) system. Results: Several reports with variable quality of evidence were found. They support SIF’s efficacy in the management of cow’s milk allergy and infant’s digestive tolerance, as well as its low cross allergy compared to cow’s milk and other formulas. We also found other studies that indicate the safety of SIFs on different nutritional, immune and developmental parameters. There is also evidence that demonstrates that SIFs have important advantages in terms of cost-benefit, palatability and effects on the intestinal microbiota, compared to other formulas. Conclusions: Although evidence to recommend its use in functional digestive disorders is limited, SIFs have an adequate safety profile and are still a valid option for infant feeding.

RESUMO Objetivo: Analisar as representações de pediatras sobre as alternativas alimentares adotadas quando o desmame se torna inevitável. Métodos: Estudo transversal qualiquantitativo, analítico e com amostragem probabilística. Foram sorteados 57 pediatras, que participaram de uma entrevista com o uso de um roteiro semiestruturado para a análise temática. Foi utilizada a técnica de evocações livres, e os termos foram processados pelos softwares EVOC 2005. Estabeleceram-se as categorias temáticas no software NVivo 10, e sua matriz de coocorrência foi exportada e analisada pela hierarquia de similaridade simples no software CHIC. Resultados: Nas representações dos pediatras, o leite integral foi evocado como um alimento com alto risco alergênico (35,1%) e nutricionalmente inadequado, e não se recomenda seu uso quando o desmame ocorre abaixo de 1 ano de idade. A fórmula infantil, referida por 98,3% dos pediatras como melhor opção no momento do desmame, foi evocada por 38,1%, em função de sua adequação de nutrientes. Os pontos desfavoráveis para o emprego da fórmula foram: o preço, a possibilidade de alergia e o risco da falta de critério na utilização de um produto altamente industrializado. Conclusões: As representações dos pediatras sugerem que eles estão sensíveis à importância do aleitamento materno e, ao mesmo tempo, às dificuldades socioculturais inerentes a essa prática. De modo geral, os pediatras entrevistados orientam o uso de fórmulas lácteas, e não o leite de vaca integral, se o desmame ocorre antes do fim do primeiro ano de vida.


ABSTRACT Objective: To analyze pediatricians’ representations on the nutritional alternatives that are adopted when weaning becomes inevitable. Methods: This is a mixed cross-sectional analytical study with probabilistic sampling. Fifty-seven randomly selected pediatricians were interviewed with the use of a semi-structured script for thematic analysis. The technique of free evocations was used, and the terms were processed using software EVOC 2005. The thematic categories were established on software NVivo10, and their co-occurrence matrix was exported and analyzed in terms of their simple similarity hierarchy on software CHIC. Results: In the pediatricians’ representations, whole milk was cited as a foodstuff with high allergenic risk (35.1%) and nutritionally inappropriate, and they did not recommend its use if weaning occurred before 1 year of age. The infant formula, referred by 98.3% of the pediatricians as the best alternative at the moment of weaning, was cited by 38.1% of them owing to its nutritional adequacy. The points quoted as unfavorable to the use of the formula were the price, the possibility of causing allergy and the risk of the inadequate use of such a highly industrialized product. Conclusions: The pediatricians’ representations show that they are sensitive to the importance of breast-feeding and at the same time, to the sociocultural difficulties inherent in the practice. Generally speaking, the interviewed pediatricians recommend the use of milk formulas, and not of whole cow’s milk, if weaning occurs before the end of the first year of life.

La proctocolitis alérgica del lactante es un trastorno caracterizado por la presencia de deposiciones mucosanguinolentas en los dos primeros meses de vida, pudiendo aparecer en los primeros días de vida. Anteriormente, relacionado con niños alimentados con lactancia artificial, en los últimos años se observa un aumento de la incidencia en niños alimentados con lactancia materna exclusiva debido al paso de proteínas de leche de vaca a la leche de la madre. Recién nacido a término, alimentado con lactancia materna exclusiva inicia a los dos días de vida deposiciones con hebras de sangre de forma intermitente. Todos los estudios realizados resultan normales. La clínica mejora progresivamente tras la eliminación de las proteínas de leche de vaca de la dieta de la madre, por lo que se diagnostica de proctocolitis alérgica. El diagnóstico se basa en la clínica, la desaparición de los síntomas al retirar las proteínas de leche de vaca de la dieta, y en la reaparición de éstos al reintroducirla. Los niños mantienen buen estado general en todo momento, siendo la gran mayoría tolerantes a la leche de vaca al año de vida, por lo que se considera una patología de buen pronóstico.


Allergic colitis is a pathology characterized by blood in faeces, appeared in first two months of life, but it can also appear during the first days of life. Previously it was related with children with non breastfeeding, however in the last years incidence is increasing in children with breastfeeding. This is explained with the presence of cow’s milk proteins in human’s milk. Newborn term, fed with exclusive breastfeeding, starts at second day of life blood in faeces, intermittently. The studies done are normal. The symptoms improve progressively after removing the cow’s milk proteins of the mother’s diet, so the child is diagnosed with allergic protocolitis. Diagnosis is based on the symptoms, the improvement with the removal of the cow’s milk protein of the diet, and the worsening when they are reintroduced. The children conserve good general condition every moment, almost all of them tolerate cow’s milk when they are one year old, and so it is considered pathology of well prognosis.

Objective To explore the basic ingredients of the tree shrew’ s( Tupaia belangeri) milk and compare with the dairy ingredients of other milks.Methods We select ten seed tree shrews after delivery ( 1 ~21 ) d with lactation mother tree shrews, and use artificial passive breastfeeding method let the young tree shrews suck breast milk,we took the milk from the young tree shrews in the stomach, directly using aseptic operation with a syringe immediately, once every two days, for consecutive three to five times, and a total of 18 mL milk was taken from each seed tree shrew.Then the milk was detected according to the national standard method for component testing.Results The total solid content of the tree shrew’ s milk was 43.63%, including 26.01%of fat, 10.41%of protein, 0.45% of lactose and 0.99%of ash content.Compared with cow's milk, the tree shrew’ s milk contained 3.36 times of total solid contents, 1.24 times of ash, 2.74 times of protein, 6.67 times of fat, and 0.09 times of lactose.Compare with baby formula milk, the tree shrew’ s milk contained 1.44 times of total solid contents, 0.20 times of ash, 0.58 times of protein, 1.53 times of fat, and 0.06 times of lactose.The trace mineral composition of the tree shrew’ s milk showed that the calcium, phosphorus, potassium, sodium, magnesium, and iron contents were 1.83 times, 2.73 times, 1.25 times, 1.93 times, 1.28 times, and 1.48 times higher than those in the cow's milk, and were 0.66 times, 0.85 times, 0.34 times, 0.26 times, 0.85 times, 0.24 times lower than those in baby formula milk.Conclusions The main nutrients of tree shrew’ s milk is of high fat, high protein and low sugar, and it can provide a basis for tree shrews artificial brood and breeding work.

A propósito de 2 casos clínicos de pacientes con antecedente de enterocolitis neonatal, se presenta el temade síndrome de enterocolitis inducido por proteínas de la dieta. Este es un tipo de alergia alimentaria no mediada por Ig E, de presentación severa, con incidencia y prevalencia desconocidas y cuya sospecha clínica, diagnóstico y manejo oportuno, se anteponen al desarrollo de complicaciones severas que incluso pueden llevar a la muerte.


Two case reports of patients with neonatal enterocolitis present the topic of Food Protein-Induced EnterocolitisSyndrome (FPIES). FPIES is a type of food allergy which is not mediated by IgE and which has a severe presentation.Its incidence and prevalence are unknown. Clinical suspicion, diagnosis, and timely management are important in light of likely development of severe complications which can even lead to death.

The author carried out an examination of brucellosis on the cattle of the State of Paraná (Brazil). In cow milk, an incidence of 7,90 percent was found, but a severe focus was located in Castro county (29,92 percent). In cattle, breaded extensively, the incidence was 16,49 percent. An higher percentage was located particular in the vicinity of the State of São Paulo, in which the livestock in general are kept on artificial pasturages. Sixty breeding farms were visited and 1716 samples of serum,sera from cattle were examined, as well as 797 sera from cow’s milk.


O rebanho bovino paranaense apresenta um índice de brucelose relativamente alto, particularmente no Norte e Leste do Estado. O gado leiteiro revelou um índice de 7,90%, com um foco grave no Município de Castro (29,92%). Bovinos criados em regime extensivo de pastagens naturais se apresentam com menor grau de infecção, pois a maior incidência foi encontrada no Norte do Estado, onde, regra geral, os campos são constituídos de pastos artificiais.

PURPOSE: The Large amounts of whole cow' s milk intake, just followed by prolonged breast milk feeding may induce a severe deficit of iron. We performed this study to investigate the severity of iron deficiency in these subjects. METHODS: Seventy-one subjects (12 to 48 months of age) were classified according to history of prolonged breast milk feeding and intake of large amounts of whole cow' s milk. Prolonged breast milk feeding and large amounts cow' s milk intake subjects were assigned as group A (n=15), the large amounts of cow's milk intake subjects as group B (n=15), the prolonged breast milk feeding subjects as group C (n=24) and the normal control subjects as Group D (n=17). The hematologic and iron status were evaluated and compared between each group. RESULTS: Although the mean of group A was lower than the mean of group B and C, the level of hemoglobin of group A was significantly lower than group D (P<0.01). The level of the ferritin of group A was significantly lower than group B, C (P<0.05, respectively) and group D (P<0.01). Of the 15 study subjects of group A, 14 (93.3%) had microcytic hypochromic anemia and 7 (46.7%) revealed that serum ferritin levels were at 1.0ng/dL, indicating severe deficit of storage iron. CONCLUSION: The intake of large amounts of whole cow' s milk, just followed by prolonged breast milk feeding induced iron deficiency anemia and a severe deficit of storage iron. It is necessary to inform parents to avoid irreversible recognition impairment and behavioral change.
