ABSTRACT Objective Analyze the association between screen use at night, food consumption at dinner, and evening snack in schoolchildren with and without overweight. Methods Cross-sectional study with a probabilistic sample of 1396 schoolchildren from 7 to 14 years of age from public and private schools of Florianópolis, Santa Catarina, Brazil. Dietary intake and frequency of screen use of the previous day were obtained through the questionnaire Consumo Alimentar e Atividades Físicas de Escolares (Food Consumption and Physical Activities of Schoolchildren). The association between screen use at night (exposure) and consumption of food groups (outcome) according to weight status was assessed using multivariate logistic regression. Results At dinner, schoolchildren without overweight who used screens once had a lower chance of consuming fruits and vegetables (OR: 0.62, p=0.017) compared to those who did not use screens. In addition, those who used screens twice were more likely to consume sweets (OR: 2.01, p=0.002), and screen use three times or more was inversely associated with beans (OR: 0.24, p=0.003) and meat, eggs, and seafood (OR: 0.35, p=0.011) consumption. Overweight schoolchildren who used screens three times or more were more likely to consume ultra-processed foods and pizza/hamburger/hot dogs (OR: 2.51, p=0.009). For the evening snack, it was observed that schoolchildren without overweight who used screens three times or more had a greater chance of consuming ultra-processed foods and pizza/hamburger/hot dogs (OR: 8.26; p=0.016). Conclusion Overweight and non-overweight schoolchildren who used screens were more likely to consume ultra-processed foods. Schoolchildren without overweight and who use screens more often at night are less likely to consume healthy foods.
RESUMO Objetivo Analisar a associação entre o uso de dispositivo de tela no período noturno, o consumo alimentar no jantar e lanche da noite em escolares com e sem sobrepeso. Métodos Estudo transversal com uma amostra probabilística de 1.396 escolares de 7 a 14 anos de idade de escolas públicas e privadas de Florianópolis, Santa Catarina, Brasil. O consumo alimentar e a frequência de uso de dispositivos de telas do dia anterior foram obtidas por meio do questionário Consumo Alimentar e Atividades Físicas de Escolares. A associação entre o uso de dispositivo de tela no período noturno (exposição) e o consumo alimentar (desfecho) foi verificada por meio de regressão logística. Resultados No jantar, os escolares sem sobrepeso que utilizaram dispositivo de tela uma vez tiveram menor chance de consumir frutas, verduras e legumes (OR: 0,62, p=0,017) comparado com aqueles que não usaram dispositivos de telas. Além disso, aqueles que usaram dispositivo de tela duas vezes, tiveram maior chance de consumir doces (OR: 2,01, p=0,002) e a utilização de dispositivo de tela três vezes ou mais foi inversamente associado ao consumo de feijão (OR: 0,24, p=0.003), carnes, ovos e peixes (OR: 0,35, p=0,011). Os escolares com sobrepeso que utilizaram dispositivo de tela três vezes ou mais tiveram maior chance de consumirem ultraprocessados e lanches tipo pizza/hambúrguer/cachorro-quente (OR: 2,51, p=0,009). No lanche da noite, observou-se que os escolares sem sobrepeso que utilizaram dispositivo de tela três vezes ou mais, tiveram maior chance de consumir ultraprocessados e lanches (OR: 8,26; p=0,016). Conclusão Os escolares com e sem sobrepeso que utilizaram dispositivo de tela tiveram mais chances de consumir alimentos ultraprocessados. Os escolares sem sobrepeso que utilizam dispositivo de tela mais vezes a noite possuem menor chance de consumir alimentos saudáveis.

Introducción. En los refrigerios escolares se ha incrementado el consumo de los productos industrializados y se ha observado una disminución en la ingesta de alimentos frescos. Objetivo. Determinar la prevalencia y tendencia de sobrepeso, obesidad y consumo de alimentos no recomendables en escolares del norte de México. Materiales y métodos. Estudio descriptivo y transversal, realizado del año 2015 a 2022 en una muestra de 468 niños de ambos sexos de 9 a 12 años de escuelas públicas, se les realizó mediciones antropométricas de peso, estatura y circunferencia de cintura. Para diagnosticar el estado nutricional se utilizó el puntaje Z del índice de masa corporal (IMC) por medio del software Anthro Plus. El consumo alimentario de los escolares se evaluó por medio de una lista de cotejo durante cinco días consecutivos por observación directa los alimentos y bebidas que los escolares llevaron de casa para consumir durante el horario escolar. Resultados. Se encontró que el sobrepeso (SBP) y la obesidad (OB) aumentó durante la pandemia, siendo mayor el SBP en las niñas (17,0%) y mayor la OB en los niños (46,8%). En cuanto a la ingesta alimentaria se observó que durante la pandemia aumentó el consumo de alimentos no recomendables asociándose con el IMC. Conclusiones. El sobrepeso y la obesidad aumentó durante la pandemia, siendo mayor el sobrepeso en las niñas y mayor la obesidad en los niños. En cuanto a la ingesta alimentaria se observó que durante la pandemia el consumo de alimentos no recomendables específicamente en las bebidas azucaradas aumentó y se asoció con el IMC(AU)
Introduction. School snacks have increased consumption of industrialized products and a decrease in the intake of fresh food has been observed. Objective. Determine the prevalence and trend of overweight, obesity and consumption of undesirable foods in schoolchildren in northern Mexico. Materials and methods. A descriptive and cross-sectional study was conducted in a sample of 468 children of both sexes aged 9 to 12 in public schools and anthropometric measurements of weight, height and waist circumference were made. The body mass index (BMI) Z score was used to diagnose nutritional status using the Anthro Plus software. Food consumption of schoolchildren was evaluated by means of a checklist for five consecutive days by direct observation of the food and beverages that schoolchildren took from home to consume during school hours. Results. Overweight (PBS) and obesity (OB) were found to increase during the pandemic, with higher PBS in girls (17.0%) and higher OB in boys (46.8%). About food intake, it was observed that during the pandemic consumption of undesirable foods increased in association with the BMI. Conclusions. Overweight and obesity increased during the pandemic, being more overweight in girls and obesity in boys. As for food intake it was noted that during the pandemic consumption of foods not specifically recommended in sugary drinks increased and was associated with BMI(AU)

@#Introduction: The prevalence of hypertension in Indonesia has continued to increase over the last few years. An unhealthy diet and lack of physical activity can elevate blood pressure, particularly if an unhealthy lifestyle has been followed since adolescence. This study aimed to analyze the correlation between snack consumption and physical activity with blood pressure in adolescent girls. Methods: A cross-sectional study was conducted with 349 adolescent girls from seven Islamic boarding schools in West Java, Indonesia. Data on daily food and snack consumption were obtained by the 24-hour recall for 3 non-consecutive days. Blood pressure was measured using a digital blood pressure instrument, and the results were categorized by age, gender, and height. Linear regression analyses were performed to investigate determinants of blood pressure. Results: A total of 120 (34.4%) of the adolescent girls in the study had hypertension. A majority of girls had inadequate daily intake (energy, fat, carbohydrates, and sodium; only total protein intake met Indonesia’s recommended dietary allowance). Snacks were found to be high in protein, fat, and carbohydrates, with consumption levels above 15%. More than half (61.9%) of the subjects’ daily sodium intake came from snacks. Low-fat intake from snacks was associated with an increase in blood pressure in this study. Daily nutritional intake affecting blood pressure included sodium and total fat intake. Lack of physical activity in adolescent girls was not a risk factor for elevated blood pressure. Conclusion: Fat and sodium intake was associated with elevated blood pressure in adolescent girls.

ABSTRACT Objective To assess the effect of an educational intervention program focused on health risk conditions, based on an assessment of the hygiene and quality of food sold in school cafeterias. Methods This is a controlled, parallel, randomized, two-arm, community study. Public and private schools with cafeterias were invited to participate. This study was conducted in 27 school cafeterias in northern and northwestern Rio Grande do Sul, a state in southern Brazil. Representatives of the school communities in the intervention group received an educational program consisting of 160-hour distance training. The most relevant outcomes were the assessment of the hygienic conditions and composition of the menus sold in school cafeterias. All outcomes were analyzed as intention-to-treat and per-protocol. For the analysis of continuous data with normal distribution, an analysis of covariance and the Generalized Linear Model were used. The level of statistical significance considered was p<0.05 for a 95% CI. Results No statistically significant difference was observed between the intervention group and the control group in the studied outcomes. There was a reduction of 76.2 points in the score for hygienic handling conditions (95% CI: -205 to 357; p=0.581). Regarding menu composition, the difference between groups was 0.48% (95% CI: -2.69 to 3.64; p=0.760) for ultra-processed foods, 0.23% (95% CI: -1.13 to 1.60; p=0.740) for processed foods, and 1.02% (95% CI: -2.59 to 4.64; p=0.581) for fresh foods. Conclusion There is not enough evidence to conclude that the intervention had a positive impact on any of the outcomes studied.
RESUMO Objetivo Avaliar o efeito de um programa de intervenção educacional nas condições de risco à saúde com base na avaliação das condições higiênicas e na qualidade dos alimentos comercializados em cantinas escolares. Métodos Este é um estudo comunitário, controlado, paralelo, randomizado, dois braços. As escolas de Ensino Fundamental e Médio, públicas e privadas, que possuíam cantinas, foram convidadas a participar. Este estudo foi realizado em 27 cantinas escolares do norte e noroeste do Rio Grande do Sul, sul do Brasil. Representantes da comunidade escolar das cantinas do grupo intervenção receberam um programa educacional composto por um treinamento a distância de 160 horas. Os principais desfechos avaliados foram avaliação das condições higiênicas e composição dos alimentos vendidos nas cantinas escolares. Todos os resultados foram analisados como intenção de tratar e per protocolo. Para análise dos dados contínuos, com distribuição normal, utilizou-se a análise de covariância e o Modelo Linear Generalizado. O nível de significância estatística considerado foi p<0,05 para um intervalo de confiança de 95%. Resultados Não foi observada diferença estatisticamente significativa entre o grupo intervenção e o grupo controle nos desfechos estudados. Houve redução de 76,2 pontos no escore das condições higiênicas de manipulação (IC 95%: -205 a 357; p=0,581). Em relação à composição dos cardápios, a diferença entre os grupos foi de 0,48% (IC 95%: -2,69 a 3,64; p=0,760) para os alimentos ultraprocessados, 0,23% (IC 95%: -1,13 a 1,60; p=0,740) para os alimentos processados e 1,02% (IC 95%: -2,59 a 4,64; p=0,581) para os alimentos in natura. Conclusão Não há evidências suficientes para concluir que a intervenção teve impacto positivo em nenhum dos desfechos estudados.

ABSTRACT Objective: To evaluate associations between snacking and energy, nutrients and food source, and to identify the contribution of snacking across age, sex, weight status and lifestyle behaviors among adolescents and young adults. Methods: A sub-sample was calculated from the population-based cross-sectional study 2015-Health Survey of São Paulo (ISA-Capital). The survey "ISA-Nutrição" used a sample of non-institutionalized individuals aged >15 years. For this study, only adolescents (12-18 years old; n=418) and young adults (19-29 years old; n=218) were included. Snacks were identified, and their contribution to energy, nutrients, and food sources were calculated. Descriptive statistics and logistic regressions were used. Results: Participants experienced an average of 2.9±0.6 snacking occasions per day. Young adults consumed more energy from morning and night snacks, and adolescents, from afternoon snacks. The top three food sources on snacking contributed to 30.5% of energy: cookies (11.8%), sugar sweetened beverages (9.4%), sweets and other desserts (9.3%). Although results were non-significant, being a female (Odds Ratio [OR] 0.93; 95% confidence interval [95%CI] 0.36-1.49), meeting the physical activity recommendations (OR 0.75; 95%CI 0.25-1.25), and scoring higher for the healthy eating index (OR 0.88; 95%C 0.24-1.52) were all factors related to increased intake of snacks. Alternatively, overweight individuals (OR -0.54; 95%CI -1.00 to -0.08) consumed less snacks. Conclusions: Improving the quality of snacks should be considered in behavior-change strategies.
RESUMO Objetivo: Avaliar associações entre lanches e consumo de energia, nutrientes e fontes alimentares e identificar seus contribuintes por idade, sexo, status de peso e comportamentos de estilo de vida entre adolescentes e jovens adultos. Métodos: Subamostra calculada a partir do estudo de base-populacional transversal Inquéritos de Saúde de São Paulo (ISA-Capital, 2015). O ISA-Nutrição utilizou amostra de indivíduos não-institucionalizados com idade >15 anos. Para este estudo, apenas adolescentes (12-18 anos; n=418) e jovens adultos (19-29 anos; n=218) foram incluídos. Os "lanches" foram definidos, bem como foram calculadas a contribuição de energia e nutrientes, e as fontes alimentares. Estatística descritiva e regressões logísticas foram utilizadas. Resultados: Em média foram realizados 2,9±0,6 lanches por dia pelos participantes. Jovens adultos consumiram mais energia nos lanches da manhã e noite, enquanto adolescentes, à tarde. As três principais fontes de alimentos nos lanches contribuíram em 30,5% para o total de energia: biscoitos (11,8%), bebidas açucaradas (9,4%), e doces e outras sobremesas (9,3%). Apesar de os resultados não serem significantes, ser do sexo feminino (Odds Ratio [OR] 0,93, intervalo de confiança de 95% [IC95%] 0,36-1,49), atingir as recomendações de atividade física (OR 0,75, IC95% 0,25-1,25), e ter alta pontuação no índice do total da qualidade dieta (OR 0,88, IC95% 0,24-1,52) resultou em aumento na ingestão de lanches. Justificativa e Objetivos: A praticidade de fazer refeições fora de casa representa um risco à saúde do consumidor, especialmente pela exposição a possíveis agentes causadores de doenças presentes nos alimentos. Isto ocorre devido às condições higiênico-sanitárias, geralmente precárias, o que aumenta a probabilidade de contaminação microbiana desses alimentos. Assim, o presente estudo possui como objetivo verificar a presença de coliformes totais e termotolerantes e de Staphylococcus spp. em amostras das mãos de manipuladores de lanches de rua. Métodos: A investigação de microrganismos foi realizada de duas formas: a) coleta dos microrganismos presentes nas mãos de vendedores ambulantes, o que está diretamente associado a doenças transmitidas por alimentos, e b) aplicação de um questionário com a finalidade de verificar informações sobre as condições de higiene dos manipuladores. Resultados: Através das análises microbiológicas, foram identificadas a presença de coliformes totais e de Escherichia coli, bem como a presença de Staphylococcus coagulase positiva (S. aureus) e coagulase negativa. Conclusão: As condições de higiene dos manipuladores se mostraram insatisfatórias conforme os resultados apresentados na análise e no questionário aplicado para esses indivíduos.(AU)
Background and Objectives: The convenience of eating meals outside home poses a risk to consumers' health, especially due to the exposure to possible disease-causing agents present in food. This is a result of generally poor hygienic-sanitary conditions, which increases the likelihood of microbial contamination of these foods. Thus, the aim of this study is to investigate the presence of total and thermotolerant coliforms and Staphylococcus spp. in samples taken from the hands of street food handlers. Methods: Two approaches were used in this investigation: a) the collection of microorganisms present in the hands of street vendors, which is directly associated with foodborne diseases, and b) the conduction of a questionnaire to gather information on the hygiene conditions of the handlers. Results: The microbiological analyses identified the presence of total coliforms and Escherichia coli, as well as Staphylococcus coagulase-positive (S. aureus) and coagulase-negative. Conclusion: The hygiene conditions of the handlers were considered unsatisfactory according to the results presented in the analysis and the questionnaire applied to the subjects.(AU)
Justificación y Objetivos: La practicidad de comer fuera de casa presenta un riesgo para la salud del consumidor, especialmente por la exposición a posibles agentes causantes de enfermedades alimentarias. Esto se debe a las condiciones higiénico-sanitarias, generalmente precarias, que aumenta la probabilidad de contaminación microbiana de esos alimentos. El presente estudio tuvo como objetivo verificar la presencia de coliformes totales y termotolerantes de Staphylococcus spp. en muestras de las manos de manipuladores de alimentos en la calle. Métodos: Se realizó el análisis de microorganismos de dos maneras: a) se recolectó la presencia del microorganismo presente en las manos de los vendedores ambulantes, lo que está directamente asociado a las enfermedades transmitidas por alimentos; y b) se aplicó un cuestionario con el fin de recoger informaciones sobre las enfermedades y condiciones de higiene de los manipuladores. Resultados: Se identificó la presencia de coliformes totales y de Escherichia coli, así como la presencia de Staphylococcus coagulase positivo (S. aureus) y coagulase negativo. Conclusión: Las condiciones de higiene de los manipuladores se mostraron insatisfactorias conforme los resultados presentados en el análisis y en el cuestionario aplicado a esos individuos.(AU)

Objective @# To investigate the oral health behavior of urban and rural students in the 12~15 year age group in Guangdong Province, aiming to provide informational support for adolescent oral health care.@*Methods @#A multistage stratified sampling method with equal capacity and simple random sampling was applied to obtain representative samples. A total of 7 680 students aged 12 to 15 were selected from Guangdong Province, with 1 920 in each age group of 12, 13, 14 and 15 years; half were male and half were female, and half were from urban areas and half were from rural areas. According to the Fourth National Oral Health Epidemiology Questionnaire Survey Program, a standard questionnaire was designed to conduct on-the-spot investigations on sugar intake, brushing, dental floss usage, fluoride toothpaste usage.@*Results @#① Eating before a meal and before bed: the proportion of sweet snacks, sweet drinks and sugary drinks consumed ≥2 times/day was higher in the rural group than in the urban group (P < 0.001), with only sugary drinks consumed significantly differently by age (P < 0.001). ② The rural group had a significantly lower proportion of brushing ≥ 2 times/day, flossing habits and fluoride toothpaste habits than the urban @*Conclusions@#Among the students aged 12 to 15 in Guangdong Province, the rural group had a higher proportion of consuming desserts, sweet drinks and sweetened drinks. The proportion of brushing ≥ 2 times/day was lower, and the usage rate of floss and fluoride toothpaste was lower.

Background: In India, fast foods are becoming part of our daily lifestyle. Foods prepared in restaurants are very high in trans fats (TFs). Also, alarmingly about 400,000 tonnes of snacks, which are largely prepared in TFs are consumed every year. According to recent studies, TFs levels are 5 to 12 times higher in the oils consumed in India as compared to the world standard. The WHO recommends that TFs intake be less than 1 percent of total caloric intake. The objective of the study was to assess the consumption of TFs and fats in foods by the population in urban and rural areas.Methods: This was a community-based cross-sectional study. All adult females above 18 years of age who took an active part in kitchen were interviewed. Their dietary patterns were assessed. The sampling was done using a systematic random sampling technique and 200 participants each in rural and urban areas were selected.Results: 12 percent participants in the urban area and 9 percent participants in the rural area were exceeding WHO limit of less than 1 percent TFs consumption. The median value of TFs consumption was higher in urban area (0.575 grams/day) than in rural area (0.427 grams/day).Conclusions: The study concludes that 12 percent participants in the urban area and 9 percent participants in the rural area were exceeding TFs consumption. Therefore, a proactive approach to ensure that these WHO regulations have the full intended effect needs to be taken.

The present study was conducted to develop chicken meat powder (CMP) incorporated ready-to-eat shelf stable fried chicken snacks and evaluate the effect of rosemary leaves extract (RE) incorporation on physico-chemical, microbiological and sensory properties in developed product during ambient storage up to 60 days. Two different groups were made; control (without RE) and second group with RE treated (3% level). In physico-chemical properties, results showed that RE incorporation had highly significant (p<0.01) effect on thiobarbituric acid reactive substances (TBARs), free fatty acid (FFA) and tyrosine value. Similarly in microbiological parameter RE treated product had significantly (p<0.05) lower total plate count (TPC), Staphylococcus count (SC) and significantly (p<0.01) lower yeast and mold count than control. RE incorporation had highly significant effect (p<0.01) on sensory score (texture, flavour and overall acceptability except appearance) of the product during storage period. Therefore, it is concluded that RE incorporation into fried chicken snacks improved physico-chemical (TBARs, free fatty acid content and Tyrosine value), microbiological (Total plate count, Staphylococcus count and yeast and mold count) and sensory parameter (flavor, texture and overall acceptability) of the chicken snacks during 60 days storag

Aims: To determine the snack consumption pattern of adults and the effect of consumption of certain snacks on the health status of adults in the University of Calabar. Study design: Cross-sectional survey. Place and Duration of Study: University of Calabar, Calabar - Nigeria. June to July, 2017. Methodology: After a multi-staged random sampling technique, a cross-sectional survey was carried out on 400 adult respondents using a well-structured questionnaire. Food frequency questionnaire (FFQ) and 24hour dietary recall were also administered to the respondents. The data obtained from the survey instruments were analysed with the aid of Microsoft excel. For the dietary intake assessment, Food and Agricultural Organisation’s (FAO) ‘Guidelines for Measuring Household and Individual Dietary Diversity’ was used to calculate individual’s dietary diversity score (DDS) before recording. Results: It was observed that 84% of the respondents skipped meals and breakfast was the most skipped meal followed by lunch. Most people (46%) skipped breakfast because they left early for work while majority who skipped lunch did so because they had no time for food at work (53%). Only 8.6% of the respondents did not eat snacks, and most of those who consumed snacks did so because they preferred snacks to food (32%). The most commonly consumed snacks among the respondents was pastries (36.5%), followed by biscuits (25.7%) while the least consumed snacks were vegetables (1%) followed by sweets and gums (1.1%). Consequently, pastries contributed the most snack calories to the study population. Conclusion: Most people skip meals; and snacks serve as a substitute for such skipped meals. Only few people frequently consume healthy snacks such as fruits and vegetables. Most people were discovered to eat pastries as snacks and these pastries (such as cakes and pies) are highly processed foods which could increase the risk of non-communicable diseases (NCDs) in their consumers.

Resumo O objetivo deste artigo é verificar a associação entre fatores maternos e antropométricos e o consumo de alimentos ultraprocessados em crianças de 4 a 24 meses de idade. Métodos: Estudo transversal, com 300 crianças internadas em um hospital terciário e suas mães. A entrevista deu-se nas primeiras 72 horas de internação para evitar interferência nas respostas sobre a alimentação da criança. Os fatores maternos investigados foram: idade, escolaridade, renda, paridade, IMC e orientação sobre alimentação complementar. As variáveis referentes às crianças investigadas foram: idade, aleitamento materno, escola infantil, IMC/idade, estatura/idade, peso/idade e introdução de alimentos ultraprocessados. A associação entre os fatores estudados e a introdução de alimentos ultraprocessados foi testada por regressão linear. O nível de significância considerado foi de 0.05. Verificou-se que apenas 21% das crianças ainda não haviam recebido nenhum tipo de alimento ultraprocessado, sendo que 56.5% recebeu algum destes alimentos antes dos seis meses. Na análise multivariada, escolaridade materna, renda familiar, idade materna e paridade foram associadas à oferta de alimentos ultraprocessados. As práticas alimentares de crianças entre 4 e 24 meses estão inadequadas frente às recomendações para a faixa etária.
Abstract Objective To verify the association of maternal and anthropometric factors with consumption of ultra-processed foods in children between 4 to 24 months. Methods cross-sectional study with 300 children hospitalized in a tertiary hospital and their mothers. The interview took place during the first 72 hours of hospitalization to avoid interference in the responses about the child's diet. Maternal factors investigated: age, schooling, income, parity, BMI and guidance on complementary feeding. Variables related to the child investigated: age, breastfeeding, infant school, BMI/age, height/age, weight/age and introduction of ultra-processed food. The association between the factors studied and introduction of ultra-processed food was tested by linear regression. The significance level considered was 0.05. Results . It was verified that only 21% of the children had not yet received any type of ultra-processed food, and 56.5% received any of these foods before 6 months. In the multivariate analysis, maternal schooling, family income, maternal age and parity were associated with ultra-processed food supply. Conclusions The feeding practices of children between 4 and 24 months are inadequate when compared to the recommendations for the age group.

Antecedentes: el consumo de frituras en México es alto, aunque las grasas se asocian con enfermedades crónicas no transmisibles. Objetivo: evaluar la composición química y calidad de la grasa obtenida de churros fritos de maíz elaborados y consumidos en Navojoa, estado de Sonora, México. Materiales y métodos: a cuatro muestras obtenidas en establecimientos comerciales se les realizó análisis químico proximal y determinación de índices de calidad de la grasa (acidez, peróxidos, yodo y anisidina), según normas mexicanas. Resultados: el aporte nutricional de las muestras estuvo en los siguientes rangos expresados en g %: grasas (23,7±0,2 y 35,2±1,0 g %), proteínas (2,5±0,0 y 8,1±1,4 g %), carbohidratos (54,1±0,3 y 64,40±0,5 g %) y energía (485±3 y 531±1 kcal %) con diferencias entre ellas (p<0,05). El mayor contenido de grasa y energía lo presentó B2 y el mejor perfil nutricional B4. La muestra B1 superó los límites máximos permitidos de acidez (4,8) y de peroxidación (10,6) con diferencias respecto a las otras muestras (p<0,05). Conclusiones: la densidad energética de los churros de maíz analizados es alta (superior a 4 kcal/g) al igual que el aporte de grasas, especialmente en la muestra B2. B4 presenta el mejor perfil nutricional y B1 el mayor deterioro oxidativo.
Background: Consumption of fried foods in Mexico is high, even though fats in fried foods are associated with noncommunicable chronic diseases. Objective: Evaluate the chemical composition and fat quality obtained from fried corn churros prepared and consumed in Navojoa, state of Sonora, Mexico. Materials and Methods: Four samples obtained from commercial establishments were subjected to proximal chemical analysis and determination of fat quality indices (acidity, alkalinity, iodine and anisidine), according to Mexican standards. Results: The nutritional breakdown of the samples is shown in the following ranges, expressed as grams % (g %): fats (23.7 ± 0.2 and 35.2 ± 1.0 g %), proteins (2.5 ± 0.0 and 8.1 ± 1.4 g %), carbohydrates (54.1 ± 0.3 and 64.4 ± 0.5 g %), and energy (kcal) (485 ± 3 and 531 ± 1) with significant differences between samples (p<0.05). The highest fat and energy content was presented by sample B2 and the best nutritional profile by sample B4. Sample B1 exceeded the maximum limits of acidity (4.8) and alkalinity (10.6) with a significant inter-sample difference (p <0.05). Conclusion: The energy density of the sampled fried corn churros is high (above 4 kcal/gram), as well as the fat content, especially in sample B2. Sample B4 presents the best nutrition profile and sample B1 the greatest oxidative deterioration.

OBJECTIVES: Snacks contribute to the diet quality in youth, which is often poor. Although the US Department of Agriculture (USDA) has guidelines for healthy snacks, this is lost in translation when youth are choosing snacks. To develop a userfriendly app to help identify healthy snacks based on the US Department of Agriculture guidelines and evaluate the app's feasibility, usability, satisfaction, and acceptability. METHODS: The ‘Snackability’ app was developed following the ADDIE (analysis, design, development, implementation, and evaluation) model. The app was pilot tested for 2 weeks among college-age students (18–24 years) using questionnaires and focus groups. Based on the feedback received, the app was improved, and pilot-tested again. RESULTS: The app had a simple score (−1 to 11) and feedback (the higher the score, the healthier the snack is). The 1st pilot test among 12 students showed that the app's feasibility and usability were >50% (p 50% (p < 0.05). Additional suggestions were to include images for serving size, snack alternatives, and barcode scanning, which were incorporated into the 3rd version. CONCLUSIONS: Snackability app was feasible, usable, satisfactory, and acceptable, and several features were improved as suggested by participants.

Objetivo: Analisar experimentalmente o teor de sódio de sal-gadinhos industrializados disponíveis no comércio da Cidade de Maceió, Alagoas. Material e Métodos: Classificar o teor de sódio de acordo com a legislação vigente. Vinte amostras de salgadinho de milho, trigo e batata, de diferentes sabores foram avaliadas utilizando-se a metodologia de espectrofotometria de emissão com atomização em chama. Resultados: Verificou-se que todas as amostras apresentavam a classificação de "alto teor" de sódio, tendo por base a RDC n° 24 de 2010 da Anvisa e que 65% das amostras apresentaram valores reais do teor de sódio superiores aos que estavam declarados nos rótulos. Conclusão: Com relação ao teor de sódio encontrado nos salgadinhos analisados, verificou-se que todas as amostras apresentaram a classificação de "alto teor" de sódio. (AU)
Objective:The objective of the study was to analyze experi-mentally the sodium content of commercially available savory foods in the city of Maceió, Alagoas,. Method: to classify this content according to the current legislation. Twenty samples of corn flakes, wheat and potato snacks of random flavors were evaluated using the emission spectrophotometry with in-line flame atomization method. Results: It was verified that all The samples presented a sodium "high content" classification, based on Anvisa's RDC nº 24 of 2010 and that it was also observed that 65% of the samples had actual values of sodium content higher than those declared on the labels. Conclusion: Regarding the sodium content found in the analyzed snack foods, it was found that all samples had the classification of "high" sodium. (AU)

ABSTRACT: The aim of this research was to study the drying kinetics of apple and zucchini slices enriched with anthocyanins and to evaluate the influence of drying temperature on the anthocyanin content of apple and zucchini snacks. Apple (Granny Smith) and zucchini (Cucurbita pepo) slices were enriched with anthocyanins by vacuum impregnation with blueberry juice. Then, slices were dehydrated at 40, 50 and 60 ºC with 1.0 m/s air flow. Dehydrated samples were referred to as anthocyanin enriched snacks. Diffusion coefficient values improved by increasing the drying temperature, within the 2.81×10-10 to 5.78×10-10 m2/s range for apple slices and 2.02×10-10 to 3.99×10-10 m2/s for zucchini slices. The activation energy was 31.19 kJ/mol and 80.33 kJ/mol for apple and zucchini slices respectively. Page, Weibull, Logarithmic, Henderson-Pabis and Lewis models best fitted the experimental data. Snacks obtained at 60 °C retained a higher concentration of anthocyanins, reaching values of 592.81±52.55 and 464.62±48.44 mg of cyaniding-3-glucoside equivalent/kg dry matter in apple and zucchini snacks respectively. Combination of vacuum impregnation and hot air drying was a technological alternative for producing snacks with functional properties.
RESUMO: O objetivo deste trabalho foi estudar a cinética de secagem de fatias de maçã e abobrinha enriquecidas com antocianinas e avaliar a influência da temperatura de secagem no teor de antocianinas de discos de maçã e abobrinha. Fatias de maçã (Granny Smith) e abobrinha (Cucurbita pepo) foram enriquecidas com antocianinas por impregnação a vácuo com suco de mirtilo. Em seguida, as fatias foram desidratadas a 40, 50 e 60 ºC com fluxo de ar de 1,0 m / s. As amostras desidratadas foram referidas como snacks enriquecidos com antocianinas. @#Excess added sugar consumption is related to poor health outcomes in older adults. The sugar content of local food is limited. However, this information is imperative for understanding potential risks from overconsumption of sugars among older adults. This study was carried out to determine the type and total sugar contents in 70 types of local desserts, snacks and cooked foods, using high performance liquid chromatography. The type of food chosen was based on the highly consumed food by the older adults in Malaysia. The samples were collected in triplicates from local restaurants or stalls located in Selangor, Perak and Johor, stored at -20°C and freeze dried prior to analysis. Results showed that average sugar in each 100 g of local desserts, snacks and cooked foods were 13.69 ± 5.94 g, 8.41 ± 6.15 g and 2.1 ± 1.87 g respectively. The highest sugar content per 100 g samples was found to be in sweet potato donut (kuih keria), mashed banana fritter (cekodok pisang) and noodles with sweet potato gravy (mee rebus). The lowest sugar content per 100 g samples was found to be baked glutinous rice (pulut panggang), vadai and noodle soup (mee sup). Meanwhile, the highest sugar content per standard portion was found to be noodles with sweet potato gravy (mee rebus), peanut pancake (kuih apam balik) and banana savoury (pengat pisang). Percentage of recovery for the sugar analysis was 95.2 ± 6.8%. The main type of sugar found in this analysed food samples was sucrose followed by maltose, glucose, fructose and lactose. Sucrose was the most common added sugars in local desserts, snacks and cooked foods of this study. However, compliance with low added sugar recommendations may not be achievable for the general public. OBJECTIVES: Stress during adolescence is related to undesirable nutritional intake and negatively affects the growth and development. This study was performed to investigate the relationship among life stress, dietary behaviors and the intake of high-fat containing snacks in male and female high school students in Gyeonggi-do area. METHODS: The subjects were 700 high school students (350 males, 350 females) in Gyeonggi-do from July to September 2014 and the survey was performed by using questionnaire that included general characteristics, dietary behaviors, high-fat containing snacks intake, and daily life stress. RESULTS: There was a gender difference in health-related life style and dietary behaviors, and the life stress was significantly higher in female students than in male students. For health-related life style, exercise frequency, hours of sleep and conversation time with parents had significantly negative correlations with life stress, while smoking and perceived stress had significantly positive correlations with life stress. For dietary behaviors, the frequency of eating-out had a significantly negative correlation with life stress, while the changes in amount of meal intake under stress had a significantly positive correlation with life stress. The fat intake of ‘high-stress group’ was significantly higher and high-fat containing snacks consumed by this group consisted of cookies, honey bread and fried foods. CONCLUSIONS: It is necessary to develop appropriate programs for the emotional stability and stress relief of adolescents that provide continuous nutrition education focused on proper snack intake, desirable dietary behaviors and nutritional aspects.

Objective To understand the blood glucose level and snacking habits in both healthy pregnant women and those with abnormal glucose tolerance during their mid pregnancy,for the purpose of providing reference for implementing nutrition education and intervention programs.Methods A questionnaire interview on snack habits,physical activity,sleep quality was conducted among 166 pregnant women in Shanghai Sixth People's Hospital.Subjects were then divided into normal group (n=97) and abnormal group (n=69) according to the results of blood glucose screening.Results There were no differences in snack intake and the energy generated from the three major nutrients between the two groups of women.However comparing to the normal group,women in abnormal group were more likely to choose the glutinous rice (17.4% vs.4.1%),cake (37.7% vs.20.6%) and dried fruit (13.0% vs.4.1%),while comparing with women in abnormal group,women in normal group tend to choose vegetables (28.9% vs.11.6%) and nuts (64.5% vs.47.8%) as between-meal snacks.Conclusion The study suggested that pregnant women may continue the principle of frequent meal at reduced volume everyday,while starting to learn how to make good selection of high-nutrient-density snakes.

Aim: To assess the influence of social and behavioural factors on dental caries experience among adolescent school children in Bengaluru city, India. Study Design: Cross sectional study. Place and Duration of the Study: Primary schools of Bengaluru City, between November 2012 and March 2013. Methodology: A cross sectional study was conducted on 11 year old 814 adolescents attending upper primary schools of Bengaluru city and their parents. Separate interview for adolescent students and parents was conducted on behavioural and social factors respectively. Dental caries was recorded according to WHO criteria using mouth mirrors and CPI probes under natural light. Statistical analysis included descriptive analysis, bivariate analysis using chi-square tests and t-tests. Later the variables were subjected to logistic regression analysis. Results: Dental caries experience of the children studied was associated with social factors such as occupation of the mother (OR=1.9; 95% CI=1.3-2.3), presence of social support for mother during adulthood (OR=2.1; 95% CI=1.4-2.0), possession of television (TV)/computer at home (OR= 1.6; 95%=0.9-3.0); and behavioral factors such as adolescents who consume at least one serving of dairy/legumes/eggs/meat or poultry per day (OR=1.8; 95% CI=0.14-1.32), those who consume sweet snacks >1times in a day (OR=1.42; 95% CI=0.82-1.83). Influence of parents and TV on snacking, tooth brushing frequency and fluoridated dentifrice were also shown to be significantly associated with dental caries experience. Conclusion: Social factors such as occupation of the mother and social support play an important role in shaping the more proximal behavioural habits such as snacking among 11 year old children. These interactions ultimately influenced dental caries experience in this age group.

The purpose of this study was to find the attitude change for snack by military soldiers before and after entering military service. To investigate oral health status and improving activities, this survey was done for 318 soldiers at Gyeong-gi province Paju city and the results were as follows. After entering military service, the soldiers take more snacks than before and take snacks 2 or more times a day. Both smokers and non-smokers take more snacks after entering military service than before entering. The soldiers did not go dental clinic regularly. But they have lots of interests about oral health. As higher position and older, soldiers restrain themselves to taking sugar contained food, and the elder soldiers showed higher practical character for nutrition intake than younger soldiers. Private soldiers were least practical for brushing after meal and showed the highest level of fulfill for using fluoride contained toothpaste, regular scaling and checkup at dental clinic and flossing.
