Diacerein (Diacetylrhein, DCN) is anthraquinone derivatives used in the curing of osteoarthritis, but its usage isrestricted due to its very poor solubility and wettability which result in bioavailability variation. The objective ofthis work was to design fast dissolving tablets (FDTs) of DCN solid dispersion. Solid dispersions (SDs) and physicalmixtures (PMs) were prepared with PEG4000, Polyvinylpyrolidone K25 (PVPK25), and Sorbitol. SD formationincreased the dissolution rate of DCN compared to PM; this demonstrates that the improvement of dissolution ratewith SD can be due to physical change in drug crystal which was confirmed by thermal analysis. SD with Sorbitol wasselected for the preparations of FDTs. Seven formulations were prepared by direct compression method using differentconcentrations of crospovidone (CP) as superdisintegrant and camphor as subliming agent. Pre- and post-compressionevaluation were carried for powder blend and the prepared FDTs, respectively. F7 (composed of 120 mg CP, 45 mgcamphor, 200 mg SD containing 50 mg DCN, 7.5 mg aspartame, 2.5 mg menthol, 2.5 mg Magnesium stearate, and22.5 mg lactose) showed the shortest disintegration time and the highest dissolution rate and it was selected for furtherinvestigation. Kinetic studies of the in vitro release results showed that F7 followed first-order kinetics. Stabilitystudies conducted for formula F7 showed good stability upon storage at 30oC/75% RH and 40oC/75% RH for 12 weeks.

Aim: The aim of the study was to find out the effect of sugar-free chewing gums (xylitol and sorbitol) on plaque and gingivitis among 14–15-year-old school children. Materials and Methods: A single center, double-blind, randomized controlled trial was conducted on 14–15-year-old children. Sample size was determined to be 48. Participants were randomly allocated to test group (xylitol [n = 12], sorbitol [n = 12]) and control group (no gum, n = 24). Duration of the study was 14 days. Baseline assessment of plaque, gingival, and bleeding score, followed by oral prophylaxis. Selected children received daily two chewing gum (1.1 g each) to chew for 20 min postbreakfast and postlunch. Follow-up was done on 15th day. Analysis was done using independent t-test, ANOVA, and post hoc test. Significance level was kept at P < 0.05. Results: There was a significant reduction in plaque, gingival, and bleeding score in test group (P < 0.05) compared to control group. Conclusion: Sugar-free gum (xylitol and sorbitol) significantly reduced the plaque, gingival, and bleeding score.

In view of the fact that the antimalarial effects of artemisinins are significant but the mechanism has not yet been clarified and there are many different opinions, it is possible that artemisinins can produce high anti-malarial efficacy through various mechanisms and multiple pathways. In addition, the researches on the pathogenesis of malaria "erythrocyte membrane plasmodial surface anion channel (PSAC)" in the past few years have provided more positive findings, which may confirm and discover the new antimalarial mechanism of artemisinins. This paper was as to study the effect of dihydroartemisinin (DHA) in vitro on erythrocyte membrane permeability of HB3 plasmodium infection, with using the mechanism of 5% sorbitol can be used to kill the Plasmodium falciparum in red blood cell membrane selectively, the effectual difference of sorbitol on the killing of P. falciparum with adding DHA or not was detected, so as to investigate whether DHA can affect the permeability of the erythrocyte membrane. Result showed that, Pre-stimulation with 10 nmol·L⁻¹ DHA (the final concentration of plasmodium in vitro culture system) for 30 min could significantly decrease the killing effect of sorbitol on the HB3 plasmodium in the P. falciparum erythrocytic cycle, and DHA may inhibit the permeability of the erythrocyte membrane for preventing sorbitol through the red blood cell membrane, thereby reducing the killing effect of sorbitol on the P. falciparum.

O objetivo da pesquisa foi comparar os efeitos de edulcorantes naturais utilizados como substrato por Streptococcus mutans e Lactobacillus acidophilus, verificando a capacidade desses microrganismos em metabolizar os edulcorantes, favorecendo o crescimento e a produção de ácidos. Para tal estudo, realizou-se um total de 180 leituras para as variáveis crescimento e produção de ácido, e para o processamento dos dados usou-se o pacote estatístico SPSS. Dadas às condições da metodologia, foi possível concluir que a Stevia Rebaudiana Bertoni ofereceu melhores resultados na redução do crescimento bacteriano e na produção de ácidos do que o Sorbitol.
This paper aimed at comparing the effects of natural sweeteners used as a substrate for Streptococcus mutans and Lactobacillus acidophilus, in order to verify the ability of these microorganisms to metabolize sweeteners, promoting the growth and the production of acids. For this study, the variables "growth" and "acid production" were analyzed and the processing data was based on the SPSS statistical package. It was concluded that Stevia rebaudiana Bertoni offered better results in reducing bacterial growth and production of the Sorbitol acids.

Objective To investigate the related mechanism of ligamentum flavum (LF) hypertrophy in diabetic pa-tients with lumbar spinal canal stenosis ( LSCS ) .Methods Twenty-four diabetes mellitus patients [ DM (+) ] and twenty normoglycemic patients [ DM (-) ] with LSCS were enrolled in this study .Sorbitol in LF was analyzed using D-Sorbitol/Xylitol test kit .The thickness of LF was measured by CT .The structure of LF was observed after HE and Masson's trichrome staining .The cell cycle and proliferation of fibroblastic cell NIH 3T3 line cultured in high glucose were analyzed .Sorbitol of NIH3T3 was detected under different backgrounds in vitro, normal glucose , high glucose and high glucose burdened with aldose reductase inhibitor ( ARI) , Epalrestat .The expression of inflammatory factors was detected by qPCR and Western blot under above different backgrounds .Results LF of diabetic patients exhibi-ted significantly higher level of sorbitol and pro-inflammatory cytokines , TGF-βand of CD68-positive staining than that of the normoglycemic subjects ( P<0.01 ) .The diabetic LF was significantly thicker than that of the controls , and showed evidence of degeneration .The high glucose-cultured fibroblasts exhibited significantly higher levels of sorbitol , pro-inflammatory factors , and TGF-βcompared to the low glucose-cultured cells , and these levels were dose-dependently reduced by treatment with the aldose reductase inhibitor (P<0.05).Conclusions Sorbitol level of the LF is significantly increased in the DM patients with LSCS .Increased sorbitol recruites inflammatory factors and fibrogenic-related factor TGF-βin LF of DM patients with LSCS which may contributes to the LF hypertrophy .

Healing process in scarring inevitably produces a considerable amount of non-organized dense collagen-rich matrix called scar thus impairing the native structure of skin. Connective tissue growth factor (CTGF) overexpression within healing tissues is known to play an imperative role in collagen production stimulated by transforming growth factor-beta in cutaneous wound healing. Undoubtedly, the knockdown of CTGF expression through siRNA-mediated gene silencing could simply impede the scarring process. However, the less stability and low transfection of siRNAs themselves urge a safe carrier to protect and transfect them into cells at a high rate avoiding toxicities. Here, we developed a degradable poly(sorbitol-co-PEI) (PSPEI), prepared by polymerization of sorbitol diacrylate with low molecular weight polyethylenimine, which has high transfection efficiency but low cytotoxicity, and utilized it in siCTGF delivery to silence the expression of CTGF in an animal model of cutaneous wound healing. Unlike contracted scar in normal healing, there was no or less contraction in the healed skin of mice treated with siCTGF using PSPEI. Histologically, the healed tissues also had distinct papillary structures and dense irregular connective tissues that were lacking in the control scar tissues. This study exemplifies a successful treatment of cutaneous wound healing using a polymer system coupled with RNA interference. Hence, the approach holds a great promise for developing new treatments with novel targets in regenerative medicines.

Background: Nutritional iron deficiency anaemia is prevalent. It responds promptly to iron therapy. Parenteral iron therapy is considered to be better for rapid correction of anaemia, than oral form. Methodology: The haematological response, of 47 severely iron deficient patients, to orally administered iron was compared to that of 40 patients given parenteral iron sorbitol. The haematological response was assessed with the help of Coulter indices. Results: No significant difference in the rate of change of haematological parameters was observed in oral & parenteral form of iron therapy. Conclusion: Earliest response & completion of therapy both can be judged by Red cell Distribution Width (RDW) levels in either form of iron replacement. Red Blood Cells histogram best reflects an evolution of response and overt attainment of normal contours & placement reflects the adequacy of treatment.

To enhance the production of glucose oxidase by recombinant Pichia pastoris, two strategies were developed, which were namely co-feeding of methanol and sorbitol and co-expressing of the protein disulfide isomerase (PDI) and Vitreoscialla hemoglobin (VHb). The volumetric activity reached 456 U/mL by using the strain X33/pPIC9k-GOD, in 5 liter fermentator, with the co-feeding of methanol and sorbitol, it was 0.2 fold higher than that only feeding by methanol. The improved strain was obtained by co-expressing PDI-VHb with GOD. While fermented in a 5 liter fermentator by feeding methanol and sorbitol, the activity of the improved strain reached 716 U/mL with a yield of 7 400 mg/L total soluble protein concentration. These results indicated that heterologous protein expression level can be enhanced by optimizing fermentation condition and co-expression molecular chaperon in Pichia pastoris.

El ñame Criollo (Dioscorea alata) y el ñame Espino (Dioscorea rotundata) se constituyen como las dos especies mayormente cultivadas en el departamento de Sucre, Colombia. Por esta razón en la Universidad de Sucre se han implementado técnicas para lograr su conservación mediante la propagación in vitro, sin embargo esta metodología conserva las accesiones por un periodo no mayor a los 4 meses, provocando continuos subcultivos, aumento de costos y mano de obra. Por ello la presente investigación tuvo como objetivo establecer medios de cultivo óptimos para la conservación in vitro por crecimiento mínimo de diferentes accesiones (D. alata y D. rotundata) pertenecientes al banco de germoplasma de la Universidad de Sucre, durante un periodo de 8 meses. Esto mediante la modificación del medio de cultivo base MS; con los siguientes osmolitos: sacarosa, manitol y sorbitol. Se avaluaron 8 tratamientos (T) en los siguientes porcentajes T1 (control) (3:0:0), T2 (0:1,5:0), T3 (0:0:2), T4 (0:1,5:2), T5 (0:0:1) y T6 (0:0:3), T7 (0:1,5:1) y T8 (0:1,5:3). Cada 30 días se evaluó: supervivencia (%), hojas expandidas (%), longitud del tallo y raíz, número de nudos y raíces, oxidación (%), senescencia foliar (%) y callo (%). Los resultados mostraron que las especies D. alata y D. rotundata, se conservan de forma óptima, en la combinación T4 (0:1,5:2), donde se evidencia un alto porcentaje de supervivencia, un mínimo porcentaje de senescencia foliar y un desarrollo restringido en el resto de variables. Garantizando así la disponibilidad y el desarrollo normal de las accesiones en un periodo superior a 4 meses.
Dioscorea alata cv. "Criollo" and Dioscorea rotundata cv. "Espino" are constituted as the two cultivars mostly cultivated in the department of Sucre, Colombia. For this reason the University of Sucre has been implementing tissue culture techniques for their multiplication throughout in vitro propagation. However, this methodology support accessions for a period about 4 months, causing continuous subcultures, increased costs and labor. Therefore the objective of the present investigation was to establish an optimal culture media for in vitro minimal growth conservation of different accessions (D. alata and D. rotundata) from the University of Sucre yam´s genebank , for a period of 8 months by modifying the basic MS culture medium. The following osmolytes were used: sucrose, mannitol and sorbitol in different percentages (S:M:S). Eight treatments (T) in the following percentages were evaluated: T1 (control) (3:0:0), T2 (0:1,5:0), T3(0:0:2), T4 (0:1,5:2), T5 (0:0:1) y T6 (0:0:3), T7 (0:1,5:1) y T8 (0:1,5:3). Every 30 days data was recorded for: survival (%), expanded leaves (%), length of stem and roots, number of leaves and roots, phenolization (%), leaf senescence (%) and callus presence (%). The best results for D. alata and D. rotundata, were observed in treatment T4 (0:1,5:2), where a high percentage of survival evidence, a minimum percentage of leaf senescence and a limited response for the other variables. Therefore, these results indicate the potential of this media, to increase 100% in vitro growth conservation over the conventional media, and ensuring the viability and normal development of the accessions for more than four months period.

Abstract:In the recent years, The pharmaceutical manufacturers interest to natural medicines and biological active preparations from animal, plant and mineral raw materials. According to some sources, Plantago majus contains polysaccharides and aucubin. Some researchers investigated aucubin that is anti inflammation and antimicrobial activity. Many anti cough formulations that are contains Plantago majus sold in pharmaceutical market. For example: Herbion, Pectoral manufactured by KRKA, Naturwaen and Mepha, respectively.The aim of this study determination of aucubin and biological active substances in Plantago majus that is growth commonly in Mongolia.The result of this study, Plantago majus leaves are estabilished polysaccharide 4.66%. Leaves of Plantago majus has been extracted by water(1:5), water (1:10), 30 % sorbitol and 20% ethanol, then determination aucubin and polysaccharide. The results, polysaccharide was 4.12%, 3.46%, 0.336% and 2.65%, respectively. Aucubin was 2.88%, 3.44%, not determined 30% sorbitol extract and 1.88%, respectively.

Biofilm formation depends on several factors. The influence of different osmolarities on bacterial biofilm formation was studied. Two strains (Enterobacter sp. and Stenotrophomonas sp.) exhibited the most remarkable alterations. Biofilm formation is an important trait and its use has been associated to the protection of organisms against environmental stresses.

A gene encoding NAD+-dependent sorbitol dehydrogenase (SDH) in peach fruit was cloned and expressed in Escherichia coli. Recombinant SDH protein with 6×His-tagged was localized exclusively in the cytoplasmic soluble fraction of E. coli when the strains were grown for 4-5 h at 37 ºC. Highly pure protein was isolated by Ni2+-resin chromatography with 150 mM imidazole in 50 mM Tris, pH 8.0, by elution. In order to ensure that the recombinant SDH could be used for further study, the fluorescence and ultraviolet spectrum of the recombinant SDH were detected. Recombinant SDH was confirmed to be capable of oxidizing sorbitol by enzymatic activity assay. The activity of the recombinant SDH was 2.73 U mg-1min-1, which was similar with that directly extracted from peach fruits. The activities of SDH extracted from the fruits in different periods (30, 60, 90 days after flowing) were 7.75, 5.95, 3.26 U mg-1min-1, respectively.

BACKGROUND: 2.7% sorbitol-0.54% mannitol has been selected as an alternative irrigating fluid during endoscopic surgery for its theoretical advantages. We compared the influence of 2.7% sorbitol-0.54% mannitol (Urosol(TM), CJ Pharma, Seoul, Korea) and 5% glucose as an irrigating solution for hysteroscopic myomectomy & polypectomy in the occurrence of associated complications. METHODS: Thirty patients scheduled for a hysteroscopic operation were included in a prospective randomized trial comparing 2.7% sorbitol-0.54% mannitol solution (Group S, n = 15) and 5% glucose (Group G, n = 15) as an irrigating fluid. We recorded the amount of the irrigating fluids, the amount of fluid intake, and the duration of the procedure. Serum sodium, chloride, potassium, glucose values, and serum osmolality were measured before (just after the induction, T1), during (when 2 L of irrigation fluid was infused, T2), and after (1 h after the end of the operation, T3) the hysteroscopic procedure. RESULTS: The mean volume of absorbed irrigating fluid was 185.0 +/- 73.5 ml in Group G and 175.4 +/- 50.5 ml in Group S. Transient hyperglycemia occurred in one patient of Group G. No differences were found in the intraoperative and postoperative levels of serum sodium, potassium, chloride, glucose and osmolality in both groups. CONCLUSIONS: There was no clinical evidence of hyponatremic hypoosmolality in any of the patients. We found no difference between 2.7% sorbitol-0.54% mannitol and 5% glucose as an irrigating fluid for hysteroscopic procedures with mild to moderate irrigant absorption.

Background Some aboard studies showed that polyatomic pathway play an important role in the microsvasculopathy of type 2 diabetes,and sorbitol dehydrogenase (SDH) gene is involved in the pathogenesis of diabetic retinopathy(DR).There is no relevant research at home up to now.Objective This study was to investigate the correlation of sorbitol dehydrogenase (SDH) G-888C gene polymorphism with diabetic retinopathy (DR) in type 2 diabetes mellitus.Methods The SDH genotypes were determined by polymerase chain reactionreaction fragment length polymorphism (PCR-RFLP) in 187 patients with diabetes and 123 normal contrels.Patients were divided into two groups depending on the presence or absence of DR(DR:n=118;NDR:n=69).The frequencies of SDH genotype and allele were assayed and compared among these groups.This study was approved by Ethic Committee of Guangdong General Hospital.Written informed consent was obtained from each individual prior to any relevant medical procedure.Results The disease course in the DR group was significantly longer than that in NDR group(t=2.070,P=0.042),and other clinical features in both groups were non-significant (all P>0.05).The genotype frequencies in the DR group,NDR group and normal control group were 24.6%,8.7% and 8.1%,respectively,and frequencies of the G allele were 42.4%,25.4% and 29.7%,showing statistically significant differences among these three groups.The GG genotype and G allele frequencies were significantly higher in the DR group than those in the NDR group and normal control group (GG:P=0.007,P=0.001;G:P=0.001,P=0.004).There were no significant differences in the frequencies of the GG genotype and G allele between the NDB group and normal control group ( P>0. 05) as well as the proliferative DR group and non-proliferative DR group (P>0.05).Conclusion SDH G-888C gene polymorphism is associated with the development of diabetic retinopathy in southern Chinese.

The objective of the present work was to study the variation on the sorbitol production in relation to the concentration of sugars, (metabolizable or not) and the cultivation time. A full factorial design was used considering the factors such as sucrose and maltose concentration and cultivation time. The addition of sugars caused increases on the sorbitol production up to the concentration of 300g/L however, decreases on the sorbitol production were observed when the concentration reached values above this. Increasing the time of fermentation was statistically significant to sorbitol production, however, little increase the production was noticed after 36h.

Sua formação é atribuída principalmente a sua função A produção de sorbitol foi avaliada através de um planejamento fatorial completo utilizando as variáveis concentração de sacarose, concentração de maltose e tempo de cultivo. A adição de açúcares causou um aumento na produção de sorbitol até a concentração de 300g/L, porém decréscimos na produção de sorbitol foram observados a concentrações superiores a esta. Aumento no tempo de fermentação foi estatisticamente significativo para aumentos da produção de sorbitol, porém pequeno aumento foi observado de 12 para 36 horas de cultivo.

The effect of the variables pantothenic acid, yeast extract and sodium chloride, as well as the cell permeabilization technique, were investigated on the formation of levan, ethanol, sorbitol and biomass of Zymomonas mobilis, using a 24-1 fraction factorial design. Cell growth was determined by turbidimetry at 605 nm, relating it to a biomass with a dry weight calibration curve. Reducing sugars were quantified according to Somogyi and Nelson. Total sugars were quantified by the phenol-sulfuric acid method, sorbitol by HPLC and ethanol. The levan produced was precipitated by the addition of absolute ethanol and quantified in fructose units. In levan biosynthesis, the variable that had the largest contribution was cell condition. The results suggested that the factors that most affected biomass and ethanol formation were sodium chloride concentration and cell condition that affected negatively on production. For sorbitol, the variable that had a significant effect was permeabilization, which decreased its synthesis. Studies to amplify the range of established factors would be important.
A influência das variáveis: ácido pantotênico, extrato de levedura, cloreto de sódio, e a técnica de permeabilização celular foram investigadas na formação de levana, sorbitol, etanol e biomassa de Zymomonas mobilis utilizando um delineamento estatístico fatorial fracionado 24-1. A biomassa foi determinada por turbidimetria, Os açúcares redutores foram quantificados por Somogy e Nelson, açúcar total por Fenol Sulfúrico, sorbitol por HPLC e etanol por micro-destilação. A levana produzida foi precipitada com etanol absoluto e determinada como unidade de frutose. Na biossíntese de levana, a variável que mais contribuiu foi a condição celular. Os resultados sugerem que, para a formação da biomassa e etanol, os fatores que mais interferiram foram a concentração de cloreto de sódio e a condição celular que influencia negativamente a produção. Para o sorbitol, a variável que teve efeito significativo foi a permeabilização celular que atuou diminuindo a sua síntese. Estudos que ampliam a faixa de variação dos fatores estabelecidos são interessantes.

Objective p38 Mitogen-activated protein kinase (MAPK) is a crossing center of various pathways. In this study, protein transduction system based on human immunodeficiency virus (HIV)-1 transactivator of transcription (TAT), which is an efficient delivery peptide of the foreign proteins into cells, was employed to study p38 MAPK functions in eukaryotic cells. Methods p38 And its dominant negative form, p38AF, were constructed into pET-His-TAT vector correctly to verify that the recombinant plasmids were well-founded through restriction enzyme digestion and DNA sequencing. The two proteins, His-TAT-p38 and His-TAT-p38AF, were expressed and purified in Escherichia coli by SDS-PAGE. Then they were incubated with ECV304 cells respectively and readily transduced into cells in a time-dependent and dose-dependent manner. The cells were stimulated by sorbitol. Activating transcription factor (ATF) 2 phosphorylation level was checked using Western blot to assess the activity of endogenous p38. Results Compared with controls, it was found that His-TAT-p38 increased the level ofATF2 phosphorylation in sorbitol-stimulated ECV304 cells, while His-TAT-p38AF inhibited it, indicating p38 MAPK protein delivery system based on TAT was constructed successfully. TAT-p38 and its dominant negative form possessed high biological activity after transduction into ECV304 cells by TAT protein delivery system. The results showed that p38AF fused with TAT could inhibit the transduction of endogenous p38 signal pathway in part, and other pathway might regulate p38 phosphorylation. Conclusions Our study provides a novel pathway to inhibit p38 signal pathway and establish a new method to study p38 function.

Hysteroscopic procedure can be complicated by intravascular absorption of irrigating fluid. The clinical features of this complication are similar to transurethral resection of the prostate (TURP) syndrome. There have been few reports on hypocalcemia during endoscopoic surgery and clinical implications of hypocalcemia in TURP syndrome have been underestimated. We report a case of TURP syndrome association with a decreased ionized calcium concentration of 0.53 mM/L after the absorption of a large amount of sorbitol-mannitol solution during hysteroscopy. The hypotension which occurred in TURP syndrome did not respond to vasopressor and inotropic agent but responded to the administration of calcium. This case was also accompanied by hyponatremia, hyperglycemia and lactic acidosis through the metabolism of sorbitol.

O Diabetes Mellitus (DM) é uma síndrome de etiologia múltipla, decorrente da falta de insulina e/ou da incapacidade de a insulina exercer adequadamente seus efeitos. Caracteriza-se por hiperglicemia crônica, com distúrbios do metabolismo dos carboidratos, lipídios e proteínas. Constitui-se um importante problema de saúde pública, devido à sua elevada prevalência, ao desenvolvimento decomplicações crônicas incapacitantes e ao alto custo econômico gerado pelo seu tratamento. A hiperglicemia é um dos fatores mais importantes para o aparecimento e progressão das complicações vasculares do DM. A elevação persistente nas concentrações da glicose provoca mudanças na estrutura e na função de proteínas plasmáticas e tissulares, com efeitos indesejáveis sobre a saúde do portador de diabetes. O aumento da via dos polióis, glicosilação não-enzimática, com a produção dos produtos finais da glicação avançada (AGEs); estresseoxidativo, gerando o aumento de radicais livres e alteração da proteína kinase C, levando à disfunção endotelial e à aterogênese, são alguns dos mecanismos que tentam explicar o dano vascular induzido pela hiperglicemia. O objetivo desta revisão bibliográfica é discutir os mecanismos pelos quais a hiperglicemia pode desencadear as disfunções vasculares associadas com o DM.
Diabetes Mellitus (DM) is a variable aetiology syndrome due to the lack of insulin and/or its incapacity to achieve its actions. DM is characterized by chronic hyperglycemia, disturbances of carbohydrate, protein and fat metabolism. The disease is an importantpublic health matter because of its high prevalence, development of chronic disabling complications and high economical cost generated by its treatment. Hyperglycemia is one of the most important factors for the emergence and progression of the vascular complications of DM. The persistent elevation of the glucose concentrations provokes changes in the structure and function of plasma and tissue proteins with undesirable effects on the diabetics health. The increase of the polyol pathway, non-enzymatic glycosilation with the production ofadvanced glycation end products (AGEs), oxidative stress causing the increase in free radicals and alteration of protein kinase C leading to atherogenesis and endothelial dysfunction are some of the mechanisms trying to explain the vascular damage induced by hyperglycemia. The purpose of this bibliographic review is to discuss the mechanisms through which hyperglycemia may trigger the vascular dysfunctions linked to DM.

A desidratação osmótica é usada para a remoção da água, de frutas imersas em solução aquosa. A qualidade da desidratação osmótica depende de diferentes fatores como: concentração, agente desidratante, temperatura, tempo de imersão, natureza das frutas e a área de superfície exposta à troca osmótica. A parede celular e o tipo de açúcar utilizado como agente osmótico podem influenciar no fenômeno de transferência de massa. A eficiência do processo de desidratação osmótica pode ser quantificada pelos valores de perda de peso e incorporação de sólidos. As mangas foram cortadas em cubos de 1cm de lado e levadas para os tratamentos com 50 por cento sacarose (SAC), 50 por cento sorbitol (SOR) e 50 por cento estévia comercial (STV) acrescido de 1 por cento de cloreto de cálcio e o pH corrigido em 4,0 com o uso de ácido cítrico, por duas horas a 50ºC. A proporção fruta:solução desidratante utilizada em todos os tratamentos foi de 1:3 em massa. O tratamento utilizando solução composta com estévia não se mostrou eficiente por causa do baixo ganho de sólidos e reduzida perda de água. A maior perda de água e uma maior perda de peso da manga durante a desidratação osmótica foram observadas para o tratamento com sorbitol, enquanto o maior ganho de sólidos foi obtido no tratamento com sacarose.
The osmotic dehydration is used for water removal from immersed fruits in watery solution. The quality of the osmotic dehydration depends on different factors as concentration, dehydrating agent, temperature, time of immersion, nature of fruits and the surface displayed to the osmotic exchange. The cellular wall and the type of used sugar as osmotic agent can influence in the phenomenon of mass transference. The efficiency of the process of osmotic dehydration can be quantified by the values of loss of weight and solid incorporation. The mangoes had been cut in cubes of 1cm of side and taken for the treatments with 50 percent sucrose (SAC), 50 percent sorbitol (SOR) and 50 percent commercial estévia (STV) increased of 1 percent of calcium chloride and pH corrected in 4,0 with the acid use of citric, for two hours in 50ºC. The ratio fruit:solution used in all the treatments was of 1:3. The treatment using composed solution with estévia did not show to be efficient due to the low solid profit and reduced loss of water A bigger loss of water and a bigger loss of weight of the mango during the osmotic dehydration had been observed for the treatment with sorbitol, while the biggest solid profit was gotten in the treatment with sucrose.
