O discurso sobre a alimentação saudável como estratégia de biopoder / The discourse on healthy eating as a strategy of biopower

O artigo traz reflexões sobre a noção de alimentação saudável, produzida no imaginário social na sociedade ocidental contemporânea, orientada por uma concepção de saúde reduzida à busca de cura ou prevenção da doença. Subsídios teóricos das Ciências Sociais e Humanas propiciaram melhores condições para compreender a alimentação como temática intersticial de articulação entre o biológico e o psicossocial. Destacamos a alimentação saudável derivada da racionalidade científica moderna e de normatividade geral e problematizamos a discursividade da promoção da alimentação saudável a partir do conceito de biopoder de Foucault. Não negamos o valor das evidências epidemiológicas sobre a relação direta entre alimentação e adoecimento e reconhecemos que conhecer é melhor do que ignorar quando é preciso agir. No entanto, por entendermos que para o (re)estabelecimento da saúde, em nutrição, é necessário mais do que prescrever nutrientes e alimentos, acreditamos que não devemos normatizar a alimentação e olhar para a informação científica como algo absoluto. Instrumentos conceituais e fundamentos teóricos que não estão no "verdadeiro" do discurso biológico fazem-se necessários nas proposições sobre a alimentação saudável, uma vez que interesses políticos e econômicos dos setores hegemônicos ligados à dimensão biomédica não deixam muito espaço para a discussão das questões psíquicas e sociais...

The article approaches some thoughts about the notion of healthy eating produced in the social imaginary in contemporary Western society oriented for health as a search for cure or disease prevention. Theoretical basis of Sciences and Humanities provided better conditions to understand feeding as an interstitial thematic articulation between the biological and psychosocial. First, we emphasize healthy eating derived from modern scientific rationality and general normativity. Then we problematize the discursivity of health promotion from the Foucault's concept of biopower. We do not deny the value of the epidemiological evidence about the direct relationship between food and illness and we recognize that knowing is better than ignoring when action is needed. However, we believe that we should not normalize feeding and look at scientific information as something absolute, because we believe that for the (re)establishment of health more than prescribing nutrients and food is required. The economic and the political interests of hegemonic sectors related to the biomedical dimension does not allow much space for the discussion of psychological and / or social matters. So, new conceptual tools and theoretical foundations that are not in the "true" of the biological discourse are needed in propositions on healthy eating...

Alimentação e nutrição como campo científico autônomo no Brasil: conceitos, domínios e projetos políticos / Food and nutrition as scientific field in Brazil: concepts, domains and political projects

O artigo problematiza conceitos, domínios e alguns interesses presentes na constituição da Alimentação e Nutrição como campo científico no Brasil. Partindo da teoria dos campos sociais, transversal ao pensamento de Bourdieu e conjugada a reflexões de Stengers acerca de campos científicos, busca-se estabelecer distinções entre os domínios que tratam dos alimentos, e aqueles voltados aos nutrientes e à comida. Reconhecendo dis-tinções entre tais domínios, postula-se que comer, nutrir e alimentar são fenômenos humanos inter-relacionados; assim, a pluralidade epistemológica é exigência primeira para sua compreensão, haja vista as interfaces entre as dimensões biológica e social. Portanto, reconhecer a necessidade da aproximação entre campos científicos é fundamental, ainda que tal aproximação só se estabeleça em processos que envolvem interesses em disputa. Nesse sentido, a despeito dos desafios, defende-se que a articulação entre Alimentação e Nutrição corresponde a projeto político promissor e necessário do ponto de vista da interdisciplinaridade que a natureza desse binômio exige, para sua compreensão como campo de produção de conhecimentos e saberes relativos aos processos socioculturais e biológicos que percorrem várias esferas da vida humana.

This paper discusses concepts, domains, and some interests in constituting Food and Nutrition as a scientific field in Brazil. The theory of social fields crosscutting Bourdieu's thought, combined with Stengers's thoughts about scientific fields, were used to distinguish between food-related domains and those concerned with nutrients and eating. Once the differences among them are recognized, one realizes that eating, nourishing and feeding are inter-related human phenomena; so epistemological plurality is the first requirement for its understanding, considering the interfaces between biological and social dimensions. Consequently, it is essential to recognize the need for closer relations among scientific fields, although this approach is only established in processes involving disputed interests. In this sense, despite the challenges, the link between Food and Nutrition corresponds to a promising and necessary political project from the viewpoint of the interdisciplinarity that the nature of this binomial requires for its understanding as a field of knowledge production and knowledge related to the sociocultural and biological processes that run throughout human life.

Alimentação e cultura como campo científico no Brasil / Food and culture as a scientific field in Brazil

Este estudo tem por objeto a constituição do campo científico da Alimentação e Cultura no Brasil, tomando por norte as concepções de Bourdieu. Descrevemos o parque científico a que esse campo corresponde, sua distribuição geográfica e institucional, sua inserção nas áreas do conhecimento, as questões investigadas, a qualificação dos pesquisadores, sua produção acadêmica e seus vínculos com programas de pós-graduação stricto sensu; suas sociedades e organizações científicas são objetivos mais específicos deste artigo. Três espaços sociais do mundo da ciência estão em jogo: "Sociologia e Antropologia", "Saúde Coletiva" e "Alimentação e Nutrição", que tem incorporado no habitus de seu agente principal, o pesquisador das Ciências da Saúde, as reflexões, potencialidades e recursos metodológicos oriundos das Ciências Sociais e Humanas. A teia de significados tecida nesse lugar de encontro entre distintos saberes se encontra marcada pela visão hegemônica biomédica, se ressente e demanda um domínio mais sólido de conceitos e métodos capazes de enfrentar a complexidade da realidade e dos problemas além das bancadas dos laboratórios, na vida em sociedade.

This study focuses on the establishment of the scientific field of Food and Culture in Brazil, guided by Bourdieu's concepts. We describe the science park corresponding to this field, its geographical and institutional distribution, its insertion in the fields of knowledge, the issues investigated, the qualifications of the researchers, their academic programs and its links with post-graduate studies, their societies and scientific organizations are more specific objectives of this paper. Three areas of social science world are analyzed: "Sociology and Anthropology," "Health" and "Food and Nutrition" which is incorporated into the habitus of its main agent, the researcher of the Health Sciences, reflections, potential and methodological resources from the Social Sciences and Humanities. A woven web of meanings in this meeting place of different knowledge is marked by hegemonic biomedical viewpoint, resents and demands a stronger field of concepts and methods capable of dealing with the complexity of reality and the problems beyond laboratory benchs in life in society.
