RESUMO

A total of 100 random samples of poultry meat products [25 each of chicken luncheon, nuggets, frankfurter, and fillets] were collected from supermarkets and groceries at El-Boheira province. The samples were examined chemically and microbiologically to estimate their sanitary condition. The mean PH values of examined samples of frank furter, nuggets, luncheon and fillets were 6.07 +/- 0.01, 6.03 +/- 0.15, 6.08 +/- 0.01 and 6.05 +/- 0.03 respectively. The mean protein values of examined samples of frankfurter, nuggets, luncheon and fillets were 12.29 +/- 0.14, 11.78 +/- 0.15, 12.04 +/- 0.18 and 11.78 +/- 0.19 respectively. The mean total Aaerobic count values of examined samples of frankfurter, nuggets, luncheon and fillets were 8.04 x 10[5] +/- 2.9 x 10[4], 7.1 x 10[5] +/- 1.6 x 10[4], 7.5 x 10[5] +/- 2.6 x 10 [4], and 7.8 x 10[5] +/- 3 x 10[4] respectively. the mean of total Enterbacteriaceae count values of examined samples frankfurter, nuggets, luncheon and fillets were 2.7 x 1-[5] +/- 0.6 x 10[4], 2.6 x 10[5] +/- 0.4 x 10[4], 2.6 x 10[5] +/- 0.3 x 10[4] and 2.5 x 10[5] +/- 0.6 x 10[4] cfu/g respectively. The mean values of total colifrom count examined samples frankfurter, nuggets, luncheon and fillets were 3.9 x 10[4] +/- 0.3 x 10[3], 3.7 +/- 10[4] +/- 0.4 x 10[3], 3.4 x 10[4] +/- 0.4 x 10[3] and 3.8 x 10 [4] +/- 0.6 x 10[3] cfu/g respectively. The mean values total Staph. aureus count of examined samples frankfurter, nuggets, luncheon and fillets were 1.09 x 10[5] + 0.3 x 10[4], 7.2 x 10[4] + 0.2 x 10[4], 7.8 x 10[4] +0.3 x 10[4] and 8.6 x 10[4] + 0.3 X 10[4] cfu/g respectively. The mean values of total mould count of examined samples frankfurter, nuggets, luncheon and fillets were 8.1 x 10[3] + 2x 10[2], 7.5 x 10[3] + 2.4 x 10 [3], 7.8 x 10[3] + 0.3 x 10[3] and 7.8 x 10[3] + 0.2 x 10[3] respectively. The mean values of total yeast count of examined samples of frankfurter, nuggets, luncheon and fillets were 1.75 x 10 [5] + 0.3 x 10[4], 1.74 x 10[5] + 0.3 x 10[4], 1.71 x 10[5] +0.6 x 10[4], 1.7 x 10[5] + 0.2 x 10[4] cfu/g respectively
