Diversas evidências científicas demonstram que o consumo de ácidos graxos trans está associado com mortes por doenças cardiovasculares. A OMS, em 2018, considerando a presença de ácidos graxos trans nos alimentos recomendou a sua total eliminação até o ano de 2023. Sendo assim, no Brasil, em 2019, a RDC 332 aborda que a partir de 01 de janeiro de 2023 estarão proibidas a produção e a importação de ácidos graxos trans em alimentos destinados ao consumo humano. Atualmente, a legislação que está em vigor sobre ácidos graxos trans é a RDC 54, da ANVISA, que estabelece que, somente os alimentos que apresentarem teores de ácidos graxos trans ≤ 0,1 g por porção e somatória de ácidos graxos saturados e ácidos graxos trans até 1,5 g por porção podem alegar zero trans na rotulagem nutricional. As bolachas recheadas e bolachas wafers são importantes representantes de alimentos ultraprocessados, sendo muito consumidas por adultos e principalmente por crianças pelo seu baixo custo e acessibilidade. A partir destas considerações, o objetivo desse estudo foi o de avaliar os teores de ácidos graxos trans e ácidos graxos saturados por cromatografia gasosa em bolachas recheadas e bolachas wafers, comercializadas no Estado de São Paulo, analisando os teores dos ácidos graxos e comparando com a RDC 54. Em 2018 e 2019, foram analisadas 65 bolachas recheadas, e 40 bolachas wafers, as bolachas foram divididas entre as que possuíam ácidos graxos trans nos rótulos, e as que possuíam a ausência dessa gordura. Os teores de ácidos graxos trans encontrados nas bolachas com a presença de ácidos graxos trans na rotulagem, variaram de 0,34 a 5,21 g por 100 g e 0,19 e 8,54 g por 100 g nas bolachas recheadas e nas bolachas wafers, respectivamente. Diante disso, constatou-se que algumas marcas de bolachas recheadas e bolachas wafers apresentaram grandes quantidades de gordura trans em sua composição. Em relação às bolachas recheadas e wafers com a ausência de gordura trans nos rótulos, todas as bolachas estavam em acordo com a legislação vigente em relação aos valores menores ou iguais a 0,1 g de gordura trans por porção, porém, em relação à somatória de ácidos graxos trans e ácidos graxos saturados de até 1,5 g por porção, todas estavam com valores superiores, dessa maneira, os fabricantes dessas bolachas não poderiam alegar zero trans na rotulagem nutricional, e por isto, estavam em desacordo com a legislação vigente. Em 2022, foram reanalisadas seis amostras de bolachas recheadas e quatro amostras de bolachas wafers, que em 2018 apresentaram altos teores de ácidos graxos trans. Também foram analisadas três bolachas wafers que em 2022 ainda apresentavam altos teores de gorduras trans nos rótulos. Os resultados dessas amostras demonstraram que em 2022 ainda há em supermercados brasileiros, bolachas com altos teores de ácidos graxos trans e ácidos graxos saturados em sua composição. Diante disso, ratifica-se a necessidade do cumprimento da legislação vigente e da RDC 332 em 2023 e de fiscalizações mais frequentes pelos órgãos competentes, devido aos malefícios do consumo dos ácidos graxos trans para a saúde da população


There is a lot of scientific evidence showing that consumption of trans fatty acids is associated with deaths from cardiovascular diseases. The WHO in 2018, considering the presence of trans fatty acids in foods, recommended their total elimination by the year 2023. Therefore, in Brazil in 2019, RDC 332 addresses that from January 1, 2023, the production and the importation of trans fatty acids in foods intended for human consumption are prohibited. Currently, the legislation in force on trans fatty acids is ANVISA's RDC 54, this RDC establishes that only foods that have trans fatty acids contents ≤ 0.1 g per serving and the sum of saturated fatty acids and trans fatty acids up to 1.5 g per serving can claim zero trans on nutrition labels. Stuffed cookies and wafer cookies are important representatives of ultra-processed foods, being widely consumed by adults and especially children due to their low cost and accessibility. Based on these considerations, the objective of this study was to evaluate the contents of trans fatty acids and saturated fatty acids by gas chromatography (AOAC method 996.06) in stuffed cookies and wafers cookies, commercialized in the State of São Paulo, analyzing the contents of the fatty acids and comparing with RDC 54. In 2018 and 2019, 65 stuffed cookies and 40 wafers cookies were analyzed, the cookies were divided between those that had trans fatty acids on the labels, and those that had the absence of this fat. The levels of trans fatty acids found in the cookies with the presence of trans fatty acids on the label ranged from 0.34 to 5.21 g per 100 g and 0.19 and 8.54 g per 100 g in the stuffed cookies and wafers cookies, respectively. Therefore, it was found that some brands of stuffed cookies and wafers cookies had large amounts of trans fat in their composition. Regarding the stuffed cookies and wafers cookies with the absence of trans fat on the labels, all cookies were in accordance with current legislation in relation to values less than or equal to 0.1 g of trans fat per serving, but in relation to the sum of acids trans fatty acids and saturated fatty acids up to 1.5 g per serving, all had higher values, thus, the manufacturers of these cookies could not claim zero trans on the nutrition label, and therefore, they were in disagreement with the current legislation. In 2022, six samples of stuffed cookies and four samples of wafers were reanalyzed, which in 2018 had high levels of trans fatty acids. Three wafers were also analyzed, which in 2022 still had high levels of trans fats on the labels. The results of these samples showed that in 2022 there are still cookies in brazilian supermarkets with high levels of trans fatty acids and saturated fatty acids in their composition. In view of this, the need to comply with current legislation and RDC 332 in 2023 and more frequent inspections by competent institutions are ratified, due to the harmful effects of the consumption of trans fatty acids on the health of the population

ABSTRACT Recent data from meta-analyses of randomized clinical trials (RCTs) suggest that dietary intake of coconut oil, rich in saturated fatty acids, does not result in cardiometabolic benefits, nor in improvements in anthropometric, lipid, glycemic, and subclinical inflammation parameters. Nevertheless, its consumption has surged in recent years all over the world, a phenomenon which can possibly be explained by an increasing belief among health professionals that this oil is as healthy as, or perhaps even healthier than, other oils, in addition to social network misinformation spread. The objective of this review is to present nutritional and epidemiological aspects related to coconut oil, its relationship with metabolic and cardiovascular health, as well as possible hypotheses to explain its high rate of consumption, in spite of the most recent data regarding its actual effects.

Introducción: La alimentación en la primera infancia influencia la instauración del tejido adiposo y el desarrollo de diversas patologías en la edad adulta. Objetivo: Evaluar la influencia del consumo de tres fuentes de ácidos grasos sobre parámetros sanguíneos y tejido adiposo en pollos recién eclosionados. Materiales y métodos: Se utilizaron 76 pollitos Cobb 500 distribuidos aleatoriamente en cuatro tratamientos, que fueron alimentados durante siete días con una de las cuatro dietas (T1: 97% Dieta basal (DB); T2: DB +3% de manteca vegetal parcialmente hidrogenada; T3: DB +3% de aceite de quinua y T4: DB +3% de aceite de pescado). Al finalizar, se evaluó en sangre glucosa, colesterol, triglicéridos y tamaño de adipocitos del tejido adiposo subcutáneo y visceral. Se aplicó ANOVA considerando 0,05 de significancia y en el caso de variables no distribuidas normalmente, se aplicó el test no paramétrico de Kruskal-Wallis mediante el programa R-Studio. Resultados: Se obtuvieron diferencias significativas con disminución de los niveles de glucosa y colesterol en animales suplementados con elevada proporción de aceites insaturados (T3 y T4) en comparación a T2. Los tratamientos T3 y T4 promovieron una formación hiperplásica de adipocitos, diferenciándose significativamente de T2, que promovió la hipertrofia en dichas células, esta respuesta fue similar en ambos depósitos subcutáneos. Conclusiones: El consumo de aceite de quinua y aceite de pescado promueve la formación de tejido adiposo saludable, y reducen los niveles de glucosa y colesterol. Contrariamente el consumo de manteca vegetal propicia la hipertrofia de adipocitos de gran tamaño e incrementa los parámetros bioquímicos evaluados(AU)


Introduction: Feeding in early childhood influences the establishment of adipose tissue, and therefore also in the development of various pathologies in adulthood. Objective: To evaluate the influence of the consumption of three sources of fatty acids on blood parameters and adipose tissue at an early age. Materials and methods: 76 Cobb 500 chicks randomly distributed in four treatments were used, who were fed for seven days with one of the four diets (T1: Basal diet; T2: DB +1.0% vegetable shortening partially hydrogenated; T3: DB +1.0% quinoa oil and DB +1.0% fish oil) until the seventh day of life. At the end, glucose, cholesterol, triglycerides and adipocyte size of the subcutaneous and visceral adipose tissue were evaluated. A completely randomized design with ANOVA considering 0.05 significance was applied and in the case of non-normally distributed variables, the non-parametric Kruskal-Wallis test was applied using the R-Studio program. Results: Significant differences were obtained with a decrease in glucose and cholesterol levels in animals supplemented with unsaturated oils (T3 and T4) compared to T2. Regarding the size of adipocytes, treatments T3 and T4 promoted a hyperplastic formation of adipocytes, differing significantly from T2, which promoted hypertrophy in these cells, this response was similar in both subcutaneous deposits. Conclusions: The consumption of quinoa oil and fish oil promote the formation of healthy adipose tissue, in addition to reducing glucose and cholesterol levels. In contrast, the consumption of vegetable shortening favors the hypertrophy of large adipocytes and increases the biochemical parameters evaluated(AU)

The study aimed to associate the consumption of trans and saturated fats with dyslipidemia in overweight and obese adolescents who participated in the Study of Cardiovascular Risks in Adolescents (ERICA) from February 2013 to November 2014. Anthropometry, food consumption data, and the lipidogram of 9,538 overweight Brazilian adolescents from macro-regions and Teresina were used in the study. We found an association between saturated fats and HDL-c in Teresina and in the Northeastern macro-region (p-value= 0.002 and p-value= 0.033, respectively), showing that adolescents in Teresina who consumed less than 10% of saturated fats were 2.04-fold more likely to have desirable HDL-c (OR= 2.04), while northeastern adolescents were 0.625 less likely to have desirable HDL-c (OR= 0.625). In Teresina, there was an association between saturated fat consumption and total cholesterol (p-value= 0.045), showing that adolescents consuming less than 10% of saturated fats had a 0.543- fold lower odds of having desirable total cholesterol levels (OR= 0.543). Lipid profile was not associated with consumption of trans fats, but with the consumption of saturated fats. It is important to monitor the lipid profile of adolescents, especially in the presence of overweight.


El objective fue asociar el consumo de grasas trans y saturadas y dislipidemia en adolescentes con sobrepeso y obesidad que participaron en el Estudio de Riesgos Cardiovasculares en Adolescentes (ERICA), en el período de febrero de 2013 a noviembre de 2014. Se utilizaron datos antropométricos, consumo alimentario y lipidograma de 9.538 adolescentes, residentes en Brasil, macrorregiones y Teresina. En Teresina y Macroregión Nordeste, hubo asociación entre el consumo de grasa saturada y HDL-c (p-valor= 0,002 y p-valor= 0,033), respectivamente, mostrando que, adolescentes teresinenses con consumo menor que 10% la grasa saturada tiene 2,04 veces más probabilidades de tener HDL-c deseables (OR= 2,04); mientras que los nordestinos que consumen menos del 10% de grasa saturada tienen 0,625 veces la probabilidad de tener HDL-c deseables (OR= 0,625). En Teresina, hubo asociación entre el consumo de grasa saturada y colesterol total (p-valor= 0,045), mostrando que adolescentes con consumo menor que 10% de grasa saturada tienen 0,543 veces la probabilidad de tener colesterol total deseable (OR= 0,543). El perfil lipídico no se asoció al consumo de grasa trans, sino al consumo de grasa saturada. Es importante realizar monitorización del perfil lipídico de adolescentes, especialmente en presencia del sobrepeso.

We previously reported that both the high-carbohydrate diet (HCD) and high-fat diet (HFD) given for two months promote lipid deposition and inflammation in the liver and brain of mice. The results obtained indicate a tissue-specific response to both diets. Herein, we compared the effects of HCD and HFD on fatty acid (FA) composition and inflammation in the gastrocnemius muscle. Male Swiss mice were fed with HCD or HFD for 1 or 2 months. Saturated FA (SFA), monounsaturated FA (MUFA), n-3 polyunsaturated FA (n-3 PUFA), and n-6 PUFA were quantified. The activities of stearoyl-CoA desaturase 1 (SCD-1), Δ-6 desaturase (D6D), elongase 6, and de novo lipogenesis (DNL) were estimated. As for indicators of the inflammatory tissue state, we measured myeloperoxidase (MPO) activity and gene expression of F4/80, tumor necrosis factor-α (TNF-α), interleukin (IL)-4, IL-6, and IL-10. The HCD led to a lower deposition of SFA, MUFA, n-3 PUFA, and n-6 PUFA compared to HFD. However, the HCD increased arachidonic acid levels, SFA/n-3 PUFA ratio, DNL, SCD-1, D6D, and MPO activities, and expression of IL-6, contrasting with the general idea that increased lipid deposition is associated with more intense inflammation. The HCD was more potent to induce skeletal muscle inflammation than the HFD, regardless of the lower lipid accumulation.

OBJECTIVES: This study evaluated dietary intakes of total fat and fatty acids among the Korean adult population. METHODS: This cross-sectional study used the 2016–2017 Korea National Health and Nutrition Examination Survey data. A total of 10,772 subjects aged ≥19 y for which dietary data were available were selected. Data pertaining to energy and nutrient intakes were obtained by a 24-h recall method. Total fat and fatty acids intakes were evaluated based on the Acceptable Macronutrient Distribution Ranges (AMDR) of 2015 Dietary Reference Intakes for Koreans by sex and age groups. All statistical analyses accounted for the complex sampling design effect and sampling weights. RESULTS: The mean intakes of energy and total fat were 1,952 kcal (95% CI: 1928–1977) and 46.1 g (45.2–47.1), respectively, and about 21% of the energy was obtained from fat in this study population (21.7% in men and 20.2% in women). The mean percentages of energy from saturated, monounsaturated, and polyunsaturated fatty acids were 6.4%, 6.7%, and 5.2%, respectively. About 18% of adults exceeded the AMDR for fat (30% of energy), whereas 37.6% exceeded the AMDR for saturated fatty acids (7% of energy). The proportions of subjects who consumed more than the AMDR for fat and saturated fatty acids decreased across age groups in both sexes. Among young adults (19–29 y), about 63% of the subjects obtained ≥7% of their energy from saturated fatty acids. About 61% of older adults obtained less than 15% of their energy from total fat. CONCLUSIONS: Increased intake of fat energy was prominent in saturated fatty acids. Our findings suggest current information on total fat and fatty acids intakes in Korean adults and can be used to provide dietary guidelines for the improvement of public health.

Obesity is often associated with changes in cardiac function; however, the mechanisms responsible for functional abnormalities have not yet been fully clarified. Considering the lack of information regarding high-saturated-fat diet-induced obesity, heart function, and the proteins involved in myocardial calcium (Ca2+) handling, the aim of this study was to test the hypothesis that this dietary model of obesity leads to cardiac dysfunction resulting from alterations in the regulatory proteins of intracellular Ca2+ homeostasis. Male Wistar rats were distributed into two groups: control (C, n=18; standard diet) and obese (Ob, n=19; high-saturated-fat diet), which were fed for 33 weeks. Cardiac structure and function were evaluated using echocardiographic and isolated papillary muscle analyses. Myocardial protein expressions of sarcoplasmic reticulum Ca2+-ATPase, phospholamban (PLB), PLB serine-16 phosphorylation, PLB threonine-17 phosphorylation, ryanodine receptor, calsequestrin, Na+/Ca2+ exchanger, and L-type Ca2+ channel were assessed by western blot. Obese rats presented 104% increase in the adiposity index (C: 4.5±1.4 vs Ob: 9.2±1.5%) and obesity-related comorbidities compared to control rats. The left atrium diameter (C: 5.0±0.4 vs Ob: 5.5±0.5 mm) and posterior wall shortening velocity (C: 36.7±3.4 vs Ob: 41.8±3.8 mm/s) were higher in the obese group than in the control. The papillary muscle function was similar between the groups at baseline and after inotropic and lusitropic maneuvers. Obesity did not lead to changes in myocardial Ca2+ handling proteins expression. In conclusion, the hypothesis was not confirmed, since the high-saturated-fat diet-induced obese rats did not present cardiac dysfunction or impaired intracellular Ca2+ handling proteins.

ABSTRACT: The aim of this study was to evaluate the carcass characteristics and the physicochemical parameters, centesimal composition, and fatty acid profile of the longissimus lumborum muscle of crossbred steers on a Brachiaria (Syn. Uruchloa) brizantha cv. Marandu pasture during the growing and finishing phases. Twenty-two uncastrated steers ½ Holstein/Zebu, with an average initial weight of 210 kg ± 8.2 kg and eight months of age, were distributed in a completely randomized design, in which the experimental period was fractionated in to three seasons associated with two nutritional plans (NP1 and NP2) and 11 animals by treatment: NP1- mineral mixture ad libitum in rainy seasons + nitrogen/energy supplement at 1 g.kg-1 body weight (BW) in the dry season; and NP2 - nitrogen/energy supplement at 2 g.kg-1 BW in rainy season 1 and in the dry season + nitrogen/energy supplement at 1 g.kg-1 BW in rainy season 2, provided daily at 1000 h. Of the carcass measurements, differences were only observed (p>0.05) between the nutritional plans for loin-eye area corrected for 100 kg of hot carcass weight. Among the physicochemical parameters, only shear force was influenced (p>0.05) by the treatments, with higher values obtained in Nutritional Plan 1. The centesimal composition and fatty acid profile were not influenced (P<0.05) by supplementation. Nutritional plans used in the growing and finishing phases involving low levels of protein-energy supplementation do not lead to changes significant in carcass characteristics and meat. Nutritional Plan 1 is the most appropriate because it presents a lower cost.


RESUMO: Objetivou-se avaliar as características da carcaça, parâmetros físico-químicos, composição centesimal e perfil de ácidos graxos do músculo Longissimus lomborum de novilhos mestiços em pastagem de Brachiaria (Syn. Uruchloa) brizantha cv. Marandu, durante as fases de recria e terminação. Foram utilizados 22 novilhos (½ Holandês e ½ Zebu) não castrados, com peso inicial médio 210 kg ± 8,2 kg e oito meses de idade, distribuídos em delineamento inteiramente casualisado, com período experimental dividido em três estações, associada com 2 planos nutricionais (PN1 e PN2) e 11 animais por tratamento: PN1 (mistura mineral ad libitum nas estações chuvosas (EC) e suplemento nitrogenado/energético na quantidade de 1 g.kg-1 do peso corporal (PC) na estação seca) e PN2 (suplemento nitrogenado/energético de 2 g.kg-1 PC nas EC 1 e na seca, e suplemento nitrogenado/energético na quantidade de 1 g.kg-1 PC na EC 2) fornecidos diariamente às 10:00h. Para as características de carcaça foi observado diferença (p>0,05) entre os planos nutricionais, apenas para área de olho de lombo corrigida para 100 kg de peso de carcaça quente. Para os parâmetros físico-químicos apenas a força de cisalhamento foi influenciada pelos tratamentos (P>0,05) e foi maior para o plano nutricional 1. A composição centesimal e o perfil de ácidos graxos, não foram influenciados (p<0,05) pela suplementação. Planos nutricionais de recria e terminação com baixos níveis de suplementação proteico-energética não promove alterações significativas nas características da carcaça e da carne. O plano nutricional 1 é o mais indicado porque apresenta menor custo.

Resumen Antecedentes: estudios previos reportan la presencia de grasas saturadas y grasas trans en productos de panadería, relacionadas con enfermedades crónicas no transmisibles. Sin embargo, se desconoce la procedencia y calidad de las materias primas grasas utilizadas por los panaderos en Medellín. Objetivo: caracterizar las materias primas grasas utilizadas para la preparación de productos de panadería. Materiales y métodos: estudio descriptivo transversal, de tipo exploratorio, con 24 muestras. Por cada muestra se realizó una encuesta a los panaderos para evaluar la calidad de las grasas y un análisis por cromatografía de gases para cuantificar 17 grasas saturadas y grasas trans. Resultados: el promedio de grasas trans en las materias primas grasas fue de 0,46 g en 100 g, mientras la normatividad permite 5 g en 100 g (Resolución 2508 de 2012, del Ministerio de Salud y Protección Social); el 42,1 % del contenido graso proviene de grasas saturadas; y algunas materias primas grasas no cumplen con la normatividad vigente para el etiquetado de alimentos envasados, pues no tienen rotulado nutricional. Conclusiones: en ninguna de las 24 materias primas grasas evaluadas cromatográficamente se cuantificó un contenido de grasas trans superior a lo permitido por la Resolución 2508, lo cual evidencia el esfuerzo de la industria de alimentos. Es necesario mantener la vigilancia del etiquetado para asegurar su cumplimiento.


Abstract Background: Previous studies have reported the presence of saturated and trans fatty acids in bakery products, which are related with chronic non-communicable diseases. Currently, the origin and quality of the primary fat ingredients and products used by bakers in the city of Medellin is currently unknown. Objective: The aim of this paper is to characterize the primary fat ingredients used for the preparation of bakery products. Materials and Methods: An exploratory transversal descriptive study, with 24 bakery samples belonging to three groups according to socioeconomic level. For each sample, a survey was conducted to evaluate the quality of fat and an analysis by gas chromatography was done to quantify 17 saturated and trans fatty acids was. Results: The average trans fatty acid content in the margarines is 0.46 g per 100 g, however regulatory entities allow 5 g per 100 g (Resolución 2508 de 2012, del Ministerio de Salud y Protección Social); 42.1% of fat content comes from saturated fatty acids and some primary fat ingredients do not comply with current regulations for packaged foods. Conclusions: None of the 24 fat ingredient chromatographic evaluations was quantified with trans fatty acids content higher than that allowed by Resolution 2508. This proves the effort of the food industry, however it is necessary to maintain the surveillance of the labeling to ensure compliance.

Abstract: Objective: To estimate the dietary contribution of taxed beverages and foods. Materials and methods: Using 24-hour diet recall data from the Ensanut 2012 (n=10 096), we estimated the contribution of the items which were taxed in 2014 to the total energy, added sugar, and saturated fat intakes in the entire sample and by sociodemographic characteristics. Results: The contributions for energy, added sugar, and saturated fat were found to be 5.5, 38.1, and 0.4%, respectively, for the taxed beverages, and 14.4, 23.8, and 21.4%, respectively, for the taxed foods. Children and adolescents (vs. adults), medium and high socioeconomic status (vs. low), urban area (vs. rural), and North and Center region (vs. South) had higher energy contribution of taxed beverages and foods. The energy contribution was similar between males and females. Conclusions: These taxes covered an important proportion of Mexicans' diet and therefore have the potential to improve it meaningfully.


Resumen: Objetivo: Estimar la contribución dietética de las bebidas y alimentos con impuesto. Material y métodos: Con el recordatorio de 24-horas de la Ensanut 2012 (n=10 096), estimamos la contribución de los productos con impuesto en 2014 al consumo total de energía, azúcar añadido y grasa saturada en toda la muestra y por sociodemográficos. Resultados: La contribución de energía, azúcar añadido y grasa saturada fue 5.5, 38.1 y 0.4%, respectivamente, para bebidas con impuesto y 14.4, 23.8 y 21.4%, respectivamente, para alimentos con impuesto. Los niños y adolescentes (vs. adultos), nivel socioeconómico medio y alto (vs. bajo), área urbana (vs. rural), y región Norte y Centro (vs. Sur) tuvieron una contribución de energía mayor de bebidas y alimentos con impuesto. La contribución fue similar entre hombres y mujeres. Conclusión: Estos impuestos cubren una proporción importante de la dieta mexicana y por lo tanto tienen el potencial de mejorarla de manera relevante.

The present study aimed to evaluate the correlation between the composition of fatty acids in the diet and Longissimus dorsi muscle of lambs diets containing different levels of soybean. The experiment was conducted at the campus UESB, Itapetinga-Ba, Brazil. In a randomized design, twenty five male uncastrated male sheep were used. The treatments consisted of different levels of substitution of corn by soybean hulls (0, 25, 50, 75 and 100% replacement) and elephant grass silage as roughage was supplied the experimental period of 110 days. After this period, the animals were slaughtered and samples of Longissimus dorsi were collected and vacuum-packed for later analysis of the profile of fatty acids. The Pearson correlation coefficient was used to calculate the relationship between the composition of fatty acids consumed and intramuscular fatty acid content. The results demonstrated the existence positive correlation of moderate to strong between the consumed and the contained fatty acids in meat by increasing the content of conjugated linoleic acid, the acids from the n-3 and n-6 family reducing n-3 regarding the meat of lambs fed soybean hulls.

Introdução: Mudanças na alimentação e atividade física das populações elevaram a incidência de doenças crônicas não-transmissíveis associadas à adiposidade corporal. Este quadro contribui para mortalidade cardiovascular, motivando iniciativas em saúde pública visando à prevenção. Há evidências de que populações que consomem a dieta mediterrânea apresentam menor mortalidade por todas as causas, inclusive cardiovasculares. Os benefícios desta dieta, rica em fibras, gorduras insaturadas e polifenóis, parecem decorrer da atenuação da inflamação, envolvida na gênese de doenças cardiometabólicas. Objetivo: Este estudo investigou os efeitos da modificação de uma refeição diária, o desjejum, de forma a incluir alimentos mediterrâneos, sobre o metabolismo lipídico, glicídico, inflamação subclínica e expressão de genes inflamatórios. Métodos: Foi um ensaio clínico cruzado com duração total de 10 semanas, incluindo 80 adultos com excesso de peso, não-diabéticos. Os participantes passaram por 2 intervenções de 4 semanas no desjejum, com wash-out de 2 semanas entre elas. Os desjejuns, brasileiro e modificado, foram isocalóricos, diferindo quanto ao conteúdo de fibras e tipos de ácidos graxos. Antes e após cada intervenção foi realizado teste de sobrecarga de gorduras (FTT) com refeição rica em gorduras (saturadas e insaturadas MUFA e PUFA, dependendo da intervenção) e coletas sanguíneas seriadas até 240 minutos para determinação de glicose, insulina, lípides e marcadores inflamatórios.


Introduction: Changes in dietary pattern and physical activity of populations have elevated the incidence of chronic non-communicable diseases associated with increased adiposity. Evidence has shown that populations consuming Mediterranean diets have lower mortality from all causes, including cardiovascular diseases. The benefits of this diet rich in fiber and unsaturated fats, derived in part on the effects of these nutrients on inflammatory condition that triggers cardiometabolic diseases. Objective: This study investigated the effects of changing a meal of Brazilian menu, the breakfast, in order to approximate it to the Mediterranean pattern on lipid and glucose metabolism, subclinical inflammation and also on the expression of inflammatory genes. Methods: This study was a crossover trial lasting a total of 10 weeks, including 80 overweight adults, nondiabetic without drug treatment for dyslipidemia. Participants who met the inclusion criteria underwent two 4-week interventions in breakfast, with wash-out of two weeks between them. The breakfasts (Brazilian and modified) were isocaloric, differing according to fiber and types of fatty acids contents. Before and after each intervention, fat tolerance tests with meals rich in fat (saturated and unsaturated depending on the intervention) were perfomed, with blood sample collections for glucose, insulin, lipids and inflammatory markers up to 240 minutes. Also, expression of inflammatory genes before and after each intervention was analyzed.

O objetivo deste trabalho foi avaliar os teores de sódio e gordura saturada em pães de queijos produzidos em panificadoras de Goiânia-Goiás. Foram estudadas sete panificadoras escolhidas aleatoriamente, cada panificadora foram avaliadas três vezes em dias diferentes. Foi realizado o acompanhamento da preparação, desde o início do processamento até o produto final. A composição nutricional do pão de queijo foi calculada por meio de tabelas de composição de alimentos. Não foi encontrada diferença estatística na composição nutricional dos pães de queijo produzidos nos sete estabelecimentos, no entanto, os pães de queijo apresentam alto conteúdo energético e baixas concentrações de fibra alimentar total. O produto de 53% das panificadoras (n = 4), foi considerado com alto teor de sódio (> 600 mg) e 47% com médio teor (≤ 600 mg). Quanto aos resultados de gordura total e gordura saturada 100% das panificadoras excederam 20 g e 5 g respectivamente. Os resultados demonstraram que o pão de queijo é um alimento de alta densidade calórica, possui um alto teor de sódio, gordura saturada e baixas concentrações de fibra alimentar total. Torna-se essencial à implementação de Fichas Técnicas de Preparação e a adesão às Boas Práticas Nutricionais (BPN). Essas mudanças no processo produtivo, com a adoção do conceito de BPN, contribuirão para que a população brasileira tenha acesso a alimentos compatíveis com as práticas alimentares saudáveis.


The objective of this study was to evaluate the levels of sodium and saturated fat in cheese buns produced in bakeries in the city of Goiânia - Góias. Seven randomly-chosen bakeries were studied, each of them was evaluated three times on different days. The preparation was monitored from the start of the process to the final product. The nutritional composition of the cheese buns was calculated by means of food composition tables. There were no statistical differences in the nutritional composition of the cheese buns produced in the seven bakeries. However, the cheese buns have a high energy content and low total dietary fiber concentrations. The produce of 53% of the bakeries (n = 4) was considered as having a high sodium content (> 600 mg) and 47% as having an average content (≤ 600 mg). As for the total fat and saturated fat results, 100% of the bakeries exceeded in 20 g and 5 g, respectively. The results showed that the cheese bun is a highly caloric food with a high sodium content, high saturated fat and a low concentration of total dietary fiber. Thus, the implementation of Preparation Techniques Chart and the adherence to Good Nutrition Practices (BPN) are essential. These changes in the production process, with the adoption of the BPN concept, will help the Brazilian population to have access to food consistent with healthy eating habits.

Background: Cardiovascular disease (CVD) is the leading cause of premature death globally (WHO, 2010).For over 50 years saturated fatty acids (SFA) have been implicated as a main dietary risk factor for CVD. Therefore national guidelines recommend limiting SFA to <10% of total daily energy intake COMA, [1]. However, recent literature has begun to question this advice due to contra evidence showing SFA not to be a risk factor for CVD, Hoenselaar [2]. This study’s aim was to investigate the relationship between SFA and CVD to assess whether or not recommendations should be made to review national guidelines. Method: A systematic review and meta-analysis were conducted. Electronic research databases were searched using variations of the keywords “saturated fatty acids” and “cardiovascular disease”. Articles were only included if they had a randomised control trial (RCT) or prospective cohort (PC) study design. Additionally participants had to meet the following criteria: Caucasian, non-smokers, normal BMI, classed as healthy, no preexisting CVD related conditions, not taking cholesterol altering drugs and no inborn errors of lipid metabolism. Articles were also only included if they were conducted in western populations in an attempt to standardise environmental factors. In the PCs, only data which was adjusted for these factors was included. Articles were assessed for quality using the Jadad et al. [3] scoring/CASP tool and for confounding variables, risk of bias and homogeneity. Results: A total of 411 articles were identified. Eight articles were included after exclusion for duplication, study design, not meeting full inclusion criteria, low quality, confounding variables, high risk of bias and heterogeneity. Of these, 4 were RCTs and 4 were PCs including 193,409 participants (192,686 female, 723 male). RCT and PC data were analysed separately. For the RCTs, LDL-cholesterol concentration post high/low SFA intervention was used as a functional biomarker for CVD risk. For the PCs the number of CVD related events in the low/high SFA diet groups was used as the marker for CVD risk. In the RCT meta-analysis there was a standard mean difference (95%CI) of -0.94 (-1.17, - 0.71) (p<0.00001) favouring the low SFA diet to decrease the risk of CVD. In the PC metaanalysis a risk ratio (95%CI) of 1.00 (0.64, 1.58) (p=1.00) showed there to be no statistically significant relationship between SFA and CVD. Sensitivity analyses conducted predominantly showed no change in outcome. Discussion: RCT outcomes favoured a low SFA diet for lowering CVD risk whereas the PC outcome showed no relationship. Although these differed they indicate that SFA does not increase CVD risk in western Caucasian adults. However further research is needed before requesting recommendations for the review of national guidelines. These findings correlate with other systematic reviews/meta-analyses e.g. Skeaff and Miller, [4]. Conclusion: From the studies included SFA does not increase CVD risk in affluent Caucasian adults.

Twenty healthy subjects in each of 3 groups were fed with monounsaturated fatty-acid diet,polyunsaturated fatty-acid diet, or saturated fatty-acid diet separately for 3 days. It suggested that monounsaturated fatty-acids may ameliorate the oxidative stress and improve insulin sensitivity.

O experimento teve como objetivo avaliar se a raça e/ou o sistema de criação afetam o perfil de ácidos graxos da carne de ovelhas de descarte. Foram utilizadas 20 ovelhas, sendo 10 da raça Ideal e 10 da raça Texel, aleatoriamente distribuídas por grupo genético, em dois sistemas de manejo: confinadas e recebendo dieta à base de silagem de sorgo e concentrado ou mantidas em uma pastagem cultivada de clima temperado. Os principais ácidos graxos presentes no músculo Longissimus das ovelhas em todos os tratamentos foram o oléico (C18:1), o palmítico (C16:0) e o esteárico (C18:0). O grupo genético não afetou o perfil de ácidos graxos encontrados nesse músculo. No entanto, os teores de ácidos graxos do tipo ù3 foram mais altos e a relação ù6/ù3 foi mais baixa nas ovelhas mantidas a pasto. Com base no perfil de ácidos graxos, as ovelhas terminadas em pastagem cultivada proporcionaram uma carne mais saudável para o consumo humano que as ovelhas terminadas em confinamento.


The objective of this experiment was to evaluate if the fatty acids profile in meat is affected by sheep breed or managing system. Twenty sheep, being 10 of the Ideal and 10 of the Texel breed, were randomly distributed according to its genetic group in two managing systems: feedlot and receiving sorghum silage and concentrate-based diet or grazing on a temperate pasture. The major fatty acids present in Longissimus muscle of sheep in all treatments were the oleic (C18:1), palmitoleic (C16:0) and stearic (C18:0). The genetic group did not affect the fatty acids profile of this muscle. However, the content of ù3 fatty acids was higher (P<.05) and the ù6/ù3 ratio was lower (P<.05) in meat of sheep grazing the temperate pasture. Based on fatty acids profile, the sheep finished on temperate pasture provided a healthier meat for the human consumption than sheep managed in feedlot.

Objective To investigate the effects of conjugated linoleic acid(CLA)on survival rate of vascular endothelial cells(VEC).Methods The survival rate of VEC was assessed using MTT method after treating with CLA.Apoptosis and necrosis of the cells were determined using annexin V-propidium iodine double staining.Results CLA significantly increased the cell survival rate to 126.3% after treating for 72h at a dose of 2?mol?L-1,survival in a time-and dose-dependent manner when the concentration was less than 5?mol?L-1.CLA could partly prevent the death of VEC induced by PA and SA.Conclusion CLA can partly prevent the death of VEC induced by PA and SA.The results suggest that CLA are important for the survival of vascular endothelial cells.
