ANTECEDENTES: Se desconoce el contenido de grasas saturada (GS) y trans (Gtrans) en panes sin etiqueta y sin vigilancia por entidad regulatoria de Colombia. PROPÓSITO: Comparar el contenido de GS y Gtrans en panes de algunas panaderías de Medellín con lo reglamentado: 0,5 g/50 g de pan, para ambos tipos de grasa según resolución 2508 de 2012 del Ministerio de Salud. MATERIALES Y MÉTODOS: Se muestrearon 45 panes de tres tipos (aliñado, leche y croissant) en tres niveles socioeconómicos (NSE) según ubicación de la panadería. Se cuantificó grasa total gravimétricamente y GS y Gtrans por cromatografía de gases. RESULTADOS: El porcentaje de GS y Gtrans con respecto a la grasa total extraíble fue 43,8% y 0,6% en pan aliñado, 37,4% y 0,6% en pan leche y 32,2% y 0,9% en pan croissant, sin diferencia significativa entre ellos (p= 0,155 y 0,184, respectivamente). CONCLUSIONES: Comparado con la resolución 2508, el contenido de GS fue mayor al límite establecido en resolución y el contenido de Gtrans fue menor en pan aliñado, leche o croissant. Los panes evaluados en las panaderías del NSE bajo contenían mayor Gtrans que los otros.


BACKGROUND: The content of saturated (GS) and trans (Gtrans) fats in unlabeled and breads that are not regulated by the Colombian government is unknown. PURPOSE: To compare the content of GS and Gtrans in breads of bakeries in Medellín with the following regulation: 0.5 g/50 g of bread, for both types of fat according to the 2012 Ministry of Health resolution #2508. MATERIALS AND METHODS: 45 breads of three types (seasoned, milk and croissant) were sampled at bakeries from three socioeconomic levels (NSE) according to the location. Total fat was quantified gravimetrically and GS and Gtrans by gas chromatography. RESULTS: The percentage of GS and Gtrans with respect to the total extractable fat was 43.8% and 0.6% in seasoned bread, 37.4% and 0.6% in milk bread and 32.2% and 0.9% in croissant bread, with no significant difference by bread type (p= 0.155 and 0.184, respectively). CONCLUSIONS: GS content of sampled breadswas greater than the limit established in the resolution. Gtrans content was lower in seasoned bread andmilk bread compared to croissant. The breads evaluated in the bakeries of lower NSE contained higher Gtrans than the others.

RESUMO

The objective of this paper is to identify the stakeholders and their contributions to the public consultation carried out with regard to the mandatory trans fat acids food labeling proposal in Brazil. Methodology thematic analysis of the documents. Results 25 stakeholders made suggestions regarding the proposed law, and the majority belonged to the food industry sector. The following issues were raised: lack of knowledge among the consumers about trans fat acids; lack of information about trans fat acids in food composition tables and infrastructure to analyse the trans fat content of foods; voluntary trans fat labelling. Conclusions The stakeholders addressed important issues, such as improving nutritional knowledge among the population. However, few stakeholders linked to consumers took part in the public consultation, which might lead to disproportionate influence of the food industry on the development of future food policies.


Objetivo identificar os atores sociais e as suas contribuições na consulta pública realizada sobre a proposta obrigatória de rotulagem de alimentos no Brasil com gordura trans. Metodologia análise temática dos documentos. Resultados 25 atores apresentaram sugestões para a proposta da lei, e a maioria pertencia ao setor da indústria de alimentos. Temas encontrados: falta de conhecimento entre os consumidores sobre a gordura trans; falta de informação sobre gorduras trans em tabelas de composição de alimentos e de infraestrutura para analisar o teor de gordura trans nos alimentos; rotulagem voluntária da gordura trans. Conclusões Os participantes abordaram questões importantes, como a necessidade de aumentar o conhecimento dos consumidores sobre gordura trans. Entretanto, houve poucos atores sociais ligados aos interesses dos consumidores que participaram na consulta pública, e isso pode levar a um desequiibrio de poderes nas discussões sobre nutrição no Brasil.

Metodología Análisis temático de documentos. Resultados 25 actores presentaron sugerencias para la propuesta de ley, y la mayoría pertenecía al sector de la industria de alimentos. Temas encontrados Falta de conocimiento entre consumidores sobre grasas transgénicas; falta de información sobre grasas transgénicas en tablas de composición de alimentos e infraestructura para analizar grado de grasas transgénicas en alimentos; rotulación voluntaria de grasas transgénicas. Conclusiones Los participantes abordaron cuestiones importantes, como la necesidad de aumentar el conocimiento de los consumidores sobre grasas transgénicas. No obstante, hubo pocos actores sociales ligados a los intereses de los consumidores que participaron en la consulta y eso puede llevar a un desequilibrio de poderes en discusiones sobre nutrición en Brasil.

RESUMO

Apart from development of medical technology, how we prevent disease has been an important issue. <BR>Moreover, it has become clear that the diseases, such as cancer, diabetes, myocardial infarction, cerebral infarction and cerebral hemorrhage, which lead to the cause of death for a great portion of Japanese, are often caused by lifestyle factors and the outbreak of such diseases could possibly be prevented by changing lifestyle. <BR>At this seminar, the lecturers discuss developments in lifestyle especially paying attention to food. <BR>First a lecture was given from a viewpoint of caloric restriction and balance in relevance to healthy eating habits, next the effects of acupuncture and moxibustion on nutrition absorption, and finally oriental holistic foods concepts and the relationship between diet and disease. <BR>We held a discussion based on this lecture. and we reviewed the relation between diet and disease, the affect of acupuncture and moxibustion on nutrition absorption, and the view of the holistic meal as part of oriental medicine. Finally a useful possibility for combining diet with acupuncture and moxibustion therapy was suggested.

Los ácidos grasos con configuración trans poco se encuentran en los alimentos de manera natural, sino que se incorporan a éstos como consecuencia de modificaciones principalmente debidas a los procesos industriales de hidrogenación a que se someten los aceites para convertirlos en grasas sólidas. Aún cuando su estructura incluye dobles enlaces, el tipo de configuración permite un comportamiento biológico similar al de los ácidos grasos saturados, con efectos negativos sobre múltiples funciones celulares. La evidencia demuestra que son perjudiciales para la salud, en especial a lo que se refiere a riesgo de enfermedad cardiovascular, razón por la cual es importante disminuir su consumo. Teniendo en consideración la evidencia obtenida de investigaciones sobre las alteraciones del metabolismo producidas por los ácidos grasos trans, es posible plantear una precaución lógica hacia el consumo de dietas ricas en dichos ácidos. Sus efectos deletéreos serían incluso peores en aquellas poblaciones que consumen bajas cantidades de ácidos grasos esenciales. De ahí surge la importancia de iniciar con prontitud políticas sanitarias orientadas a controlar la aterosclerosis en nuestro país. Las mismas deben estar necesariamente sustentadas sobre un conocimiento profundo de las características o condiciones particulares a las que nuestra población se encuentra sometida. Sólo así podrá darse inicio a una intervención efectiva sobre nuestros cuestionados hábitos alimentarios.


Trans fatty acids are scarcely found naturally in food; they are incorporated to it as a result of modifications mainly due to hydrogenation industrial processes to which oils are submitted in order to obtain solid fats. Even when its structure includes double bonds, the type of configuration allows a biological behavior similar to that of saturated fatty acids, with negative effects on multiple cellular functions. The evidence shows that they are harmful to health, especially in regard to risk of cardiovascular disease, which is why it is important to reduce its consumption. Given the evidence obtained from research on alterations of metabolism produced by trans fatty acids, it is possible to raise a logical precaution for the consumption of diets rich in these acids. Its deleterious effects would be even worse in those populations that consume low amounts of essential fatty acids. Hence the importance of prompt sanitary policies directed to the control of atherosclerosis in our country. They must be based necessarily on an in-depth knowledge of the characteristics or particular conditions to which our population is subjected. Only thus, can initiate an effective intervention questioned about our eating habits.

Fish oil and shortening have been suggested to have opposite effects on cardiovascular disease (CVD). This study investigated the effect of shortening and fish oil on CVD risk factors and aorta histopathology, and the association between risk factors and aorta histopathology. Male Wister rats (n=30) were fed an AIN-93G diet containing 20% fat in the form of fish oil, shortening, or soybean oil for 4 weeks. Total cholesterol (TC), triacylglyceride (TG), and C-reactive protein levels were significantly (P<0.001) lower in the fish oil than in soybean oil and shortening groups. HDL-cholesterol concentrations were significantly different (P<0.001) between groups. In addition, LDL-cholesterol levels were significantly (P<0.001) lower in the fish oil and shortening groups than in the soybean oil group. Insulin and glucose concentrations did not differ among groups. Effect of dietary fat on tissue fatty acid composition significantly differed in abdominal fat and brain compared with RBC, heart, kidney and liver. The aortic wall was significantly (P=0.02) thinner in the fish oil group than in the soybean oil and shortening groups. The aortic wall thickness was positively correlated with TG and TC, but negatively with EPA + DHA levels of all tissues. These results suggested that fish oil had protective effects on aorta histopathology by hypolipidemic action in this rat model.
