A temperatura dos alimentos durante sua distribuição é um dos principais fatores envolvidos no crescimento de micro-organismos e, consequentemente, no desenvolvimento de Doenças Transmitidas por Alimentos (DTA). Assim, temperaturas adequadas durante os processos de armazenamento, cocção e distribuição dos alimentos são fundamentais para a prevenção de DTA. O presente estudo objetivou avaliar as temperaturas e o tempo de exposição das preparações do Buffet em um restaurante comercial do tipo self service. Estudo descritivo transversal, realizado em uma Unidade de Alimentação e Nutrição da cidade de Guarapuava-PR, durante o período de outubro a dezembro de 2017. As temperaturas e tempo de exposição das preparações servidas foram avaliados durante 30 dias, utilizando-se termômetro digital de penetração, no início e ao término da distribuição, e, posteriormente, comparado aos valores preconizados pela legislação vigente. As temperaturas foram avaliadas entre as 1100 e as 1400. A temperatura média das saladas foi de 22,6ºC, das carnes, 64,2ºC; dos pratos base, 73,5ºC; dos acompanhamentos, 57,4ºC e das sobremesas, 15,5ºC, onde apenas as carnes e os pratos base apresentaram temperaturas adequadas. Além disso, observou-se inadequado tempo de exposição dos alimentos na distribuição, sendo superior ao preconizado pela legislação. Assim, faz-se cada vez mais necessária a investigação do binômio tempo-temperatura em serviços de alimentação, visto que esse é um fator primordial à segurança higienicossanitária dos alimentos e à saúde dos comensais.
ABSTRACT
The temperature of the food during its distribution is one of the main factors involved in the growth of microorganisms and consequently in the development of foodborne diseases. Thus, adequate temperatures during the food storage, cooking and distribution processes are fundamental for the prevention of foodborne diseases. The present study aimed to evaluate the temperatures and the time of exposure of the Buffet preparations of a commercial self-service restaurant. A cross-sectional descriptive study, carried out at a Food and Nutrition Unit of the city of Guarapuava-PR, during the period from October to December 2017. The temperatures and time of exposure of the preparations were evaluated during 30 days, using a digital penetration thermometer at the beginning and at the end of the distribution, and, later, compared to the values recommended by the current legislation. Temperatures were evaluated between 1100 and 1400. The average temperature of the salads was 22,6°C, the meats, 64,2°C, the base dishes, 73,5°C, the accompaniments, 57,4°C and the desserts, 15,5°C, where only themeats and the base dishes presented appropriate temperatures. In addition, it was observed an inadequate time of food exposure in the distribution, being higher than the recommended by the legislation. Thus, it is becoming increasingly necessary to investigate the time-temperature binomial in food services, since this is a primary factor in hygienic-sanitary safety of foods and the health of the diners.
