ABSTRACT
Flavour extracts from Tamarind, Karkade and Carob were prepared and then incorporated into developmental work for the creation of new carbonated beverages using natural instead of artificial flavours. Nine formulae were prepared on an industrial scale and assessed by an expert panel of fifteen. Three formulae, one of each flavour was settled upon as the most suitable for production due to consumers' preference
