RESUMEN
Se inocularon in vitro diversos alimentos de origen animal, con la cepa de Staphylococcus aureus FRI-S6, productora de la enterotoxina estafilococica del serotipo B y de la nucleasa tersmoestable. Se comprobo la concentracion microbiana de los inoculos, mediante siembra en superficie en medio Baird Parker. Se hallo termonucleasa en alimentos que contenian concentraciones microbianas de 10(6) - 10(7) UFC/g
