A incidência de micotoxinas foi verificada em amostras de amendoim e produtos derivados de amendoim (aflatoxinas), fubá, cereais em flocos e aveia em flocos (zearalenona), farinha de trigo, farelo de trigo e produtos de panificaçäo (desoxinivalenol). As amostras foram coletadas em supermercados de cidades de Minas Gerais, Brasil. O método de cromatografia em camada delgada foi utilizado para quantificar as aflatonoxinas e desoxinivaleno e a cromatografia líquida de alta eficiência para zearalenona. As aflatoxinas foram detectadas em 66 das 120 amostras analisadas. Do total de amostras analisadas, 56 apresentaram níveis de aflatoxina total (B1+B2+G1+G2) acima do limite estabelecido pela Legislaçäo do Ministério da Agricultura e 54 amostras apresentaram níveis de aflatoxina B1+G1 acima do limite estabelecido pela Legislaçäo do Ministério da Saúde. A faixa de contaminaçäo para aflatoxina total encontrada foi de 3 a 2714 ug/kg, com uma contaminaçäo média de 960 ug/kg. Desoxinivalenol (DON) foi detectado em 32 das 47 amostras analisadas, em uma faixa de concentraçäo de 40 a 1205 ug/kg. Sómente uma amostra de aveia em flocos estava contaminada com zearalenona (8,5 ug/kg), dentre as 34 amostras de produtos de cereais analisadas. (AU)
ABSTRACT
The presence of mycotoxins was verified in samples of peanut and peanut products (aflatoxins),corn meal, cereal flakes and oats flakes (zearalenone), wheat flour, bran and bakery products (deoxynivalenol).The samples were acquired in supermarkets, in the cities of state of Minas Gerais, Brazil. Thin layerchromatography methods were employed to quantify aflatoxins and deoxynivalenol, and a high performanceliquid chromatography method was used for zearalenone. Aflatoxins were detected in 66 of the 120 samplestested. Fifty six samples had total aflatoxins levels ( B1 + B2 + G1 + G2 ) above those established by Brazilianregulations (Ministry of Agriculture) and 54 samples showed aflatoxins levels (B1 + G1 ) above those establishedby Ministry of Health. The concentration of total aflatoxins ranged from 3 to 2714 µg/Kg and the meanconcentration was 960 µg/Kg. Deoxynivalenol (DON ) was detected in 32 out of 47 samples analysed. Theconcentration of DON ranged from 40 to 1205 µg/Kg. Only one sample of oat flakes was found to becontaminated with zearalenone ( 8.5 µg/Kg ) out of 34 samples of cereal products examined. (AU)
