RESUMO
Os problemas de gosto e odor em águas de abastecimento são de natureza complexa, de solução tecnológica difícil e onerosa, e a sua presença na água tratada pode causar transtornos consideráveis junto aos consumidores. Deste modo, este trabalho objetivou a avaliar a eficiência e confiabilidade do Painel Sensorial na identificação de gosto e odor em águas de abastecimento, bem como na prevenção de reclamações por parte dos consumidores, a partir da comparação entre a percepção do Painel Sensorial e da população. Com base nos resultados obtidos, pôde-se concluir que o Painel Sensorial apresentou-se ser extremamente eficiente para a previsão do aparecimento e presença de odores associados à terra e mofo devido a presença de MIB e Geosmina na água tratada sendo, portanto, recomendável a sua implementação em ETAs que utilizem mananciais que apresentem problemas de gosto e odor.
ABSTRACT
The taste and odor problems found in drinking water are complex, technologically difficult and expensive to be solved and their presence in drinking water may give rise to considerable troubles with water consumers. In this way, the purpose of this work was to assess the efficiency and reliability of the sensory panel in identifying the taste and odor in drinking water and in preventing water consumerÆs claims, based on the comparison between the sensory panel perception and that of population. Based on the results obtained, one may conclude that the sensory panel was found to be extremely efficient in foreseeing the appearance and presence of earthy and musty odors associated with the presence of MIB and Geosmina in treated water, and so it should be advisable to implement it in water treatment plants using water sources with taste and odor problems.
