RESUMO
Considerando que no Brasil, o consumo de suco de laranja vem aumentando muito nos últimos anos e, que muitas vezes, eles são produzidos artesanalmente, o presente trabalho objetiva avaliar a qualidade microbiológica destes sucos. Foram alisadas trinta amostras de sucos de laranja, sendo quinze de sucos naturais e quinze de industrializados não pasteurizados. As análises microbiológicas demonstraram que 86,66% (13/15) dos sucos in natura e 40,00% (6/15) dos sucos industrializados não pasteurizados estavam em desacordo com os padrões estabelecidos para bolores e leveduras quando os resultados foram comparados aos preconizados pela legislação brasileira. Coliformes totais e fecais foram encontrados apenas nos sucos in natura. Das amostras de sucos in natura analisadas, 6,67% (1/15) apresentaram contagens acima das permitidas para coliformes fecais. Os microrganismos analisados e as contagens obtidas indicam que os sucos embora não sejam um risco direto à saúde pública como agentes de toxinfecções alimentares, demonstram que boas práticas devem ser implantadas e monitoradas durante a produção e manipulação desses alimentos.
ABSTRACT
Considering that in Brazil the comsume of orange juice is incresing in last years, and most of the times these juices are handmade, this study is focused on the estimation of the microbiology quality in this products. Thirty samples were analysed, fifteen natural juices and fifteen artificial juices. The microbiology analyses showed that 86,66% (13/15) of the natural juice and 40,00% (6/15) of the artificial juice werent in accordance with the model established for the mold and yeadt when the results were compared with the current legislation. Total and Coliforms fecal were only in the natural juice. From those samples of natural juice abalysed, 6,67% (1/15) showed more numbers for the total califorms. Althought the results indicate that the juice analysde do not offer danger to the consumers health, they show that it is necessary attention during the production and dealing of the aliments.
