Factores asociados con la implementación de la estrategia educativa nutricional “El sabor del saber”: Perspectiva docente / Factors associated with implementation of the nutritional educative strategy “The taste of knowledge”: Educator’s perspective

RESUMEN

Introducción: Los problemas nutricionales en la población más joven son una prioridad de salud pública; se necesita de la educación nutricional para tener los conocimientos y la motivación, y así aprovechar las mejores opciones en materia de alimentos. En el desarrollo de aprendizajes en salud, las escuelas cumplen un rol significativo. Como parte del cumplimiento de lo establecido en el Plan Santandereano de Alimentación y Nutrición, en 2002 se diseñó la Estrategia Educativa Nutricional “El Sabor del Saber”, orientada a la formación de docentes para que realizaran actividades con sus escolares. El objetivo de este estudio fue identificar los factores asociados con la aplicación de esta Estrategia, reportados por los docentes que participaron en su implementación. Materiales y métodos: Estudio de tipo observacional analítico de corte transversal, que incluyó una muestra de 82 docentes de ambos géneros. La selección de estas personas se hizo mediante un muestreo aleatorio simple y se les aplicó un instrumento autoadministrado que incluyó además de la variable aplicación de la Estrategia, los factores potencialmente asociados con su ejecución. Resultados: La entidad asesora fue la variable significativamente asociada con la implementación de la Estrategia, ya que cuando fue el Instituto PROINAPSA -UIS alcanzó un RR 5,7 (IC95% 1,7; 19,3); y un RR 4,1 (IC95% 1,1; 15,3) cuando la entidad asesora fue la Secretaría de Salud de Santander-SSS. Conclusiones: La institución que realizó la formación y la asesoría técnica a los docentes para la aplicación de la Estrategia Educativa, fue un aspecto que incidió en forma estadísticamente significativa

ABSTRACT

Introduction: The nutritional problems in the youngest population are a priority of public health; one needs the nutritional education to have the knowledge and the motivation, and this way to take advantage of the best options for appropriated nourishment. In the development of learning in health, the schools fulfilled a significant role. As part of the established in the “Plan Santandereano de Alimentación y Nutrición”, in 2002 the Nutritional Educative Strategy “The Flavour of the Knowledge” was designed. This strategy was orientated to teachers' formation in order to that they realized activities with theirs students. The aim of this study was to identify the factors associated with the application of the Strategy “The Flavour of the Knowledge”, reported by the teachers who teachers who participated in its implementation. Materials and methods: An analytical cross section observational study was done, which included a sample of 82 teachers of both genders. The selection of these persons was done by a random sample and applied to them a self-complete questionnaire that it included besides the changeable application of the strategy, the factors potentially associated with its application. Results: The advisor organization was the variable significantly associated with the implementation of the Strategy, because when the INSTITUTO PROINAPSA-UIS was the advisor organization the RR reached 5.7 (IC95 % 1.7; 19.3), and when the SECRETARÍA DE SALUD DE SANTANDER was the advisor organization the RR was 4.1 (IC95 % 1.1; 15.3). Conclusions: The organization that realized the formation and the technical advising to the teachers for the application of the Educational Strategy, it was an aspect that affected in statistically significant form
