RESUMEN
La Enfermedad Celíaca, es la intolerancia alimentaria de orden genético más frecuente de la especie humana. La celiaquía reconoce al menos 4 hitos que han cambiado su historia. Afecta más a mujeres que a varones, es común a todos las culturas. Se acepta universalmente a la gliadina del gluten del trigo como la causante inicial de este proceso. En la actualidad podemos reconocer cuatro formas de presentación. El laboratorio de absorción ha sido clásicamente la determinación de grasas en materia fecal. Los autoanticuerpos constituyen el cuarto hito de la historia de la celíaca. La evaluación de la muestra de biopsia debe ser realizada con procedimientos correctos. El tratamiento que tiene la celiaquía es una dieta estricta y permanente libre de gluten de trigo, avena, cebada y centeno.
ABSTRACT
Celiac disease, food intolerance is the most common genetic order of the human species. Celiac recognizes at least 4 "milestones " that have changed history. It affects more women than men, is common to all cultures. It is universally accepted to gliadin of wheat gluten as the initial cause of this process. Today we can identify four styles. The laboratory has been classically absorption determination of fat in feces. Autoantibodies are the fourth milestone in the history of celiac. The evaluation of the biopsy specimen should be done with proper procedures. The treatment has celiac disease is a strict lifelong diet free of gluten in wheat, oats, barley and rye.
