ABSTRACT

This study was conducted to investigate the influence of pumpkin cultivar as a fermented semi-product on the selected quality parameters of functional non-dairy frozen desserts, which were prepared using the potentially probiotic strain cultures L. rhamnosus Lock 0900 and L. casei O14. Microbiological status, pH, sugar and carotenoids content, antioxidant activity, color and sensory quality have been checked. Regardless of the pumpkin cultivar used, the lactic acid fermentation of pulps with selected bacterial strains decreased reducing sugar and total sugars content. Improvement in the antioxidant activity was also observed. The impact of the individual sensory attributes on the overall quality was determined. The overall quality of the investigated pumpkin sorbets was positively driven by the sweet taste, pumpkin flavor, smoothness of texture, and negatively driven by acidic flavor, pungent taste, and bitter taste, verified by PCA method. All of the final products achieved high survival of probiotics (higher than 8.4 log CFU/g) and revealed a good sensory quality (overall quality higher than 8 c.u). The treatments with the cultivar “Melon Yellow” of the Cucurbita maxima species, were characterized by significantly higher (p < 0.05) carotenoids content, total sugars and reducing sugars content and antioxidant activity, measured by two methods. It can be concluded that the pumpkin cultivar and strain culture used for the fermentation affect the count of potentially probiotic bacteria in the final products, the composition of bioactive compounds, antioxidant activity and sensory quality of the functional pumpkin frozen desserts.

ABSTRACT

Introduction: State of alarm was declared in Spain from March 14th to June 21st, 2020 due to COVID-19 pandemic, forcing population to home confinement. "Corona Cooking Survey" (CCS) is an international project led by the University of Antwerp involving 38 countries worldwide. Objectives: To know the variations in the frequency of consumption of some foods in Spanish adult population during the COVID-19 lockdown according to their family composition. Methods: A Cross-sectional study of 679 Spanish adults aged 18-83 years (75.9% women) completed the CCS from April 20th to June 16th, 2020. A survey designed by FOOMS research group of the University of Antwerp, Gent University and KU Leuven, was translated into Spanish and distributed electronically to a convenience sample. Only questions about food frequency consumption were considered for analysis. Data were adjusted by family composition, according to the presence (CH: n=259, 38.1%) or absence (NCH: n=420, 61.9%) of children at home. Statistical analysis was performed with SPSS Statistics software v. 25 (IBM Corp., Armonk, NY, USA). Results: Fruits, vegetables, dairy, and non-sugared beverages, were the most frequently consumed (≥ 5-6 times/week), followed by white bread, pasta and grains (≥ 2-4 times/week). Both groups increased legumes/pulses, sweet snacks (both p <0.001), and salty snacks (NCH p <0.05;CH p <0.01) intake, while consumption of processed foods (p <0.001) decreased during the lockdown. Consumption of vegetables and unprocessed vegetarian alternatives decreased in NCH (both p <0.05), while CH increased plantbased drinks (p <0.01), dairy products and alcoholic beverages (both p <0.05). Conclusion: During the COVID-19 lockdown, presence of children at home influenced the frequency of vegetables, dairy, vegetarian alternatives, plant-based and alcoholic drinks consumption, but not the general trend of increasing legumes and decreasing processed foods intake.

ABSTRACT

Purpose>This study explores and compares the reasons for or against including situational triggers on the adoption of food delivery apps (FDAs) across lesser-researched Asian countries like India and the Philippines.Design/methodology/approach>The study utilises a qualitative research methodology using focus group discussions and interviews across each country.Findings>Respondents from India highlighted the importance of convenience, aggressive discounts, app service quality, fulfilment and multiple payment options as the key reasons for adopting the FDAs. However, these factors require redressal in the Philippines context. Also, the study findings highlight some country-specific requirements: in the Philippines, food packaging, cheaper options provided by the local convenience stores and lack of variety of food options;in India, the impact of parental beliefs and segregated vegetarian food delivery.Practical implications>The study makes practical suggestions for consumer behaviour researchers, developers and marketers of FDAs who are confronted with challenges in app development for a multi-cultural audience and to ensure growth and the adoption of the FDAs across the two countries.Originality/value>This is one of the first studies to compare diverse national markets to uncover differences and similarities in the factors impacting the adoption of FDAs. The results highlight the impact of varying levels of evolution of FDAs and social, technological and cultural contextual differences on the adoption of the FDAs across India and the Philippines.

ABSTRACT

Multinational companies have greatly contributed and are contributing to the development of people's awareness of a healthy and active lifestyle by operating in the segment of nutrition and developing technological processes thanks to which the market is increasingly abundant with nutritionally richer food solutions. The paper consists of a theoretical and empirical part. The empirical part is based on the survey questionnaire whose aim is to determine the extent to which respondents are familiar with the healthy food trends. The results show that the majority of respondents follow the global trend related to health, convenience and satisfaction. Over 90% of respondents consider healthy food important. This is a big challenge for multinational companies to focus on the segment of healthy food production.

ABSTRACT

The growing development of biological products highlights the social and environmental responsibility that several industrial companies are facing in recent years. In this context, the advancement of bioprocessing as an alternative for exploring the potential of ecologically based products, especially in biofuels, food, and agro-industrial business, exposes the rational efficiency of the application of renewable sources in different industrial segments. Industries strongly associated with food production concentrate large amounts of wastes rich in bioactive compounds. A range of highly effective technologies has been highly explored to recover large concentrations of prominent compounds present in these materials. The advances in this scenario assurance value addition to these by-products, in addition to highlighting their various technological applications, considering the biorefinery and ecologically based production concepts. Accordingly, this review article described a detailed and systematic approach to the importance of using bioactive compounds and exploring the main sources of these elements. Also, some recent and innovative research that has achieved encouraging results was highlighted. Furthermore, the study included the main extraction technologies that have been investigated as a strategy of prospecting the application of bioactive compounds and optimizing the processes for obtaining natural compounds from plant sources. Finally, future outlooks were presented to contribute to the innovative opportunities and applicability of highly promising technologies and manipulations of bioactive compounds from a range of perspectives.

ABSTRACT

Future trends in sustainable food consumption include the emergence of short food supply chains and growing interest in local food products. Among the drivers are the more urgent sustainability expectations, the emphasis on environmental and social responsibility, and the changing consumer needs, of which the desire for healthy and quality products, curiosity, uniqueness, and experience are the most prominent drivers. Today’s customers are becoming more aware and open to culinary discoveries and exotic delights. In this study, we investigated the importance of product attributes related to local products, and the motivational factors that determine purchase intentions. The significance of our work lies in the fact that we have studied young consumers’ intrinsic and extrinsic motivational factors. A quantitative consumer survey was conducted using a hybrid data collection method on a sample of 1756 respondents aged between 18 and 45 years. The questionnaire focused on product features, intrinsic and extrinsic motivational elements, and demographic characteristics. The results of our study provide strong evidence that the features associated with local products include but are not limited to the following: freshness, high quality, nutritional value, reliability, safety, evoking domestic flavours, naturalness, being healthy, environmentally friendly, etc. The motivational elements were grouped into four factors: hedonism, curiosity, nutritional value, and tradition. The main reasons for young respondents purchasing local food were taste and curiosity. Based on the results of the cluster analysis, we formed three groups having different features and different motivations for purchasing local products. Moreover, we had the opportunity to understand the attitudes and perceptions of young people towards buying local products. A key result of our study is that the “value-creators” segment considers local products to be healthy and nutritious.

ABSTRACT

Within the theoretical framework of psychological reactance and impression management, this study conducted in Sydney, Australia, in 2020–2021, explores the acceptance by men of alternatives to animal-based foods. Qualitative in-depth interviews were conducted with 36 men who have visited a vegan restaurant and have eaten a plant-based burger. The findings from the study show that, despite the increasing popularity of these novel food options, men are unlikely to include the plant-based alternatives as a permanent feature of their diets as explained by the theory of psychological reactance. However, the study’s male participants acknowledged the importance of women for their visit to the vegan restaurant which can be explained by impression management theory. Using excerpts from the interviews, men’s experience is highlighted, particularly as it relates to concerns linked to masculinity, dietary identity and social perception by others. The analysis reveals the complexity of transitioning to more sustainable food choices within a gender-constructed social environment. Whether the new plant-based alternatives to meat are going to be a short-lived trend or a more lasting option in the men’s diets is also discussed. Practical implications for social marketing as a tool to influence collective behaviour are drawn. They emphasise the role of women, changing social perceptions and transparency about the new plant-based products.

ABSTRACT

Anthropogenic pressure has significantly increased in the last decades, often enhancing conflicts at the human–wildlife interface. Therefore, understanding peoples’ value orientations, attitudes and behavioural intentions towards wildlife is a crucial endeavour to reduce the occurrence of conflicts between humans and wildlife. Previous research in the USA has shown a consistent link between modernization and increased anthropomorphism (i.e., the tendency to attribute human mental or physical characteristics to other entities), leading to positive changes in value orientations, attitudes, and behavioural intentions towards wildlife. In this paper, we aimed to address whether this link is also present in other cultures, by testing participants (N = 741) in five different countries (Brazil, Indonesia, Malaysia, Mexico, and Spain). Our study shows that while the positive link between anthropomorphism, positive attitudes and behavioural intentions towards wildlife is universal, the link between modernization and anthropomorphism is culturally mediated. In some countries (Indonesia, Malaysia, Spain), modernization increased anthropomorphism, while in others modernization predicted no differences (Brazil) or even a decrease in anthropomorphism (Mexico), ultimately deteriorating individuals’ attitude and behavioural intentions towards wildlife. These results call for caution when generalizing findings from western industrialized countries to inform conservation policies worldwide.
