ABSTRACT
As during the Covid pandemic, food technologists have important roles to play in ensuring food security, including investigating alternative foodstuffs and extending storage of foods. The protein fractions and protein isolate were rich in amino acids, which can be comparable to soy protein. In general, protein fractions and jackfruit protein isolate exhibited good foaming and emulsification properties.
