The objective of this research was to evaluate the degradation/persistence of the pyrethroid insecticide deltamethrin in wheat grains and their processed products bran, white flour, whole meal flour and bread. The grains were treated to reach the theoretical concentration of 0.35 mg kg-1 of the insecticide. Samples were taken at zero, 15, 30, 60 and 90 days after application. A higher pyrethroid concentration was observed in wheat bran and a lower accumulation in flour; insecticide loss was detected after bread baking.
