The evaluation of indices such as debris-intake and waste are used to assess and evaluate the waste of the Unit Food and Nutrition (UAN). The aim of this study was to evaluate the remains clean and rest-three intake UAN in Caxias do Sul, RS. Data from were collected in January 2011 in three UAN's. For the verification of weights was used a digital scale Urano U.S. Pop Ligth, with capacity for 15Kg To obtain the weight of food distributed was made by weighing a tub of each preparation, the finished, being the discounted value of the container. The weight of leftovers was obtained by weighing the tanks even with food taken from the balcony of distribution and, therefore, could not be salvaged, and the discounted value of the container. Weight was obtained by weighing the rest of the food collected in the dishes in the area of returning the trays, discounting the weight of the basket. The results show high rates of surplus clean on both units. The average intake from the rest of the units was 10.57%. Thus it follows training and awareness of diners to combat waste, so there is a decrease of these indices. (AU)
