The Good practices are procedures to be adopted by the food service in order to ensure the hygienic- -sanitary quality and conformity of production of foods with the health legislation in force. The aim of this study was to make possible the implementation of good practices in food services, through alternatives to the adequacy of nonconformities. The survey was conducted from October 2008 to June 2009 in Santa Maria (RS), through observation of the inadequacies of establishments, application of a questionnaire with nutrition professionals with the enable the implementation of good practices and provide alternatives of adequacy. Difficulties regarding detected handlers training and possibilities for different installations and materials technologies that involve different budgets. The suitability of accommodation at good practice is possible even when companies have limited financial resources. (AU)
