ABSTRACT

Sweetpotato storage roots, peeled and unpeeled, of varying flesh colours (white, cream, yellow, pale orange, deep orange, and purple) were spectrophotometrically evaluated for their bioactive compounds and antioxidant activities. Roots were boiled, steamed, baked, fried, or microwaved. The unpeeled roots had relatively higher (p < 0.001) bioactive compounds and antioxidant activities than the peeled ones. All cooking methods increased phenolic compounds, flavonoids, and tannins in all genotypes. Significant losses of total carotenoids occurred with all cooking methods (ranging from 24.18 to 172.76 µg/g in raw sweetpotatoes vs. 10.06 to 118.17 µg/g in cooked ones; p < 0.001), except the deep-orange-fleshed genotype, in which frying slightly increased carotenoids from 269.81 to 304.74 µg/g. Microwaving retained 69% vitamin C in the cream-fleshed one, the highest among the cooking methods. Anthocyanins decreased with baking and frying in the purple-fleshed one but increased with other methods; microwaving being highest at 13.9% (17.43 mg/g). While the 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid antioxidant activity decreased with all cooking techniques in some genotypes, ferricyanide-reducing antioxidant potential increased. The retention of bioactive compounds in sweetpotato storage roots depends on the processing method. Thus, to obtain the most health benefits, consumers should use different cooking methods but retain the peels.

ABSTRACT

The oxidative stability of pretreated full-fat soybean flour (FFSF) was evaluated under commercial (Experiment I) and accelerated conditions (Experiment II). In Experiment I, soybeans were pretreated using germination, soaking (24 h), or roasting (110-120 °C), and the dried, milled FFSF was stored for 120 days under commercial storage conditions in two cities in Ghana. Acid value (AV) and peroxide value (PV) were determined. The proximate and sensory quality of Tuo Zaafi, a maize-only dish in northern Ghana enriched with 10-30% of the pretreated FFSF, was assessed. Before storage, all samples had similar PV (1.907-4.305 mEq/kg oil); however, the AV of the germinated sample was higher than that of the unprocessed samples (10.83 vs. 3.13 mgKOH/g oil; p < 0.001). After storage, although AV fluctuated, the PV was similar (2.39-3.74 mEq/kg oil; p = 1.00). Storage location showed no significant differences in terms of AV (4.96-4.97 mgKOH/g oil; p = 0.994), unlike PV (2.07-3.55 mEq/kg oil; p < 0.001). Increasing the levels of the pretreated FFSF in Tuo Zaafi resulted in lower consumer preference scores for all sensory attributes. In Experiment II, FFSF samples (dehulled and nondehulled) prepared from germination, soaking (18 h and 24 h) and roasting were evaluated under accelerated conditions (AC) of controlled temperature (45 ± 0.1 °C) and relative humidity (81 ± 1%) for AV, PV, p-anisidine value (pAV), lipoxygenase activity (LOX), color, and moisture. Pretreatment, condition, time, and their interaction affected the oxidative stability of all FFSF samples (p < 0.001). Roasted samples showed the highest increase in AV and pAV in both storage conditions (p < 0.05). Under room temperature conditions (RTC), the roasted and germinated samples had lower LOX activity (p < 0.05) at the end of storage time compared to that of the controls. In conclusion, germination and soaking reduced oxidation of FFSF, while roasting promotes it, despite its common use.

ABSTRACT

Increasing urbanization in developing countries has resulted in busier lifestyles, accompanied by consumption of fast foods. The consequence is an increased prevalence in noncommunicable diseases (NCDs). Food-based approaches would be cheaper and more sustainable in reducing these NCDs compared to drugs, which may have side effects. Studies have suggested that consuming functional foods could potentially lower NCD risks. Sweetpotato is regarded as a functional food because it contains bioactive compounds. Recently, sweetpotato has gained attention in sub-Saharan Africa (SSA), but research has focused on its use in alleviating micronutrient deficiencies such as vitamin A deficiency, particularly the orange-fleshed variety of sweetpotato. Some studies conducted in other parts of the world have investigated sweetpotato as a functional food. There is a need to characterize the sweetpotato varieties in SSA and determine how processing affects their bioactive components. This review highlights some of the studies conducted in various parts of the world on the functionality of sweetpotato, its bioactive compounds, and how these are influenced by processing. In addition, the potential health benefits imparted by sweetpotato are expounded. The knowledge gaps that remain in these studies are also addressed, focusing on how they can direct sweetpotato research in SSA.

ABSTRACT

Improved formulations of complementary foods (CFs) with animal-source foods (ASFs) is an important strategy to improve infant and young child feeding (IYCF). However, ASFs are expensive in many food-insecure settings where edible insects abound. CFs were developed from flours of orange-fleshed sweet potato (OFSP) and cricket (OFSCri) or palm weevil larvae (OFSPal) or soybean (OFSSoy) in the ratio 7:3. Nutritional and microbial quality of the novel CFs were determined and compared with Weanimix (recommended maize-peanut-soybean blend). Sensory evaluation of porridges was rated on a five-point hedonic scale among 170 Ghanaian mothers. OFSCri (20.33 ± 0.58 g/100 g) and Weanimix (16.08 ± 0.13 g/100 g) met the protein requirement of 15 g/100 g from CFs. Although Fe content was significantly higher for OFSCri (1.17 ± 0.03 mg/100 g), none of the CFs met the recommended levels for Fe. All the CFs were free from Salmonella, and aerobic plate count was significantly below permissible levels. All the CFs were ranked above the minimum threshold (hedonic scale = 3; neither like nor dislike) of likeness for the sensory attributes. Crickets and palm weevil larvae can be blended with OFSP and could be sustainable, culturally appropriate alternative ASFs for IYCF, but long-term studies are needed to evaluate their efficacy.

ABSTRACT

Two orange-fleshed sweet potato cultivars: Apomuden and "Nane" were grown on cow dung-, chicken manure-, compost-amended soils, and untreated soil. Apomuden is a variety, while "Nane" is being evaluated to be released in Ghana. The storage roots (SRs) were harvested at 3 months, cured by heaping the SRs and covering with the sweet potato foliage for 7 days in the field. The cured SRs were kept in an evaporative cool chamber to study the effect of soil amendment treatments on weight loss, rot, some nutrient composition, and sensory attributes. Boiled SRs were assessed by 70 untrained panelists after 7 weeks of storage based on the following: general appearance, sweetness, finger-feel firmness, and overall acceptability using a 5-point hedonic scale (1 = dislike extremely to 5 = like extremely). Percent rot for "Nane" showed a linear trend, while that of Apomuden was nonlinear. Both cultivars showed similar trends in terms of cumulative weight loss with "Nane" recording lower weight loss compared with Apomuden. A significant (p < 0.001; r = 0.71) strong positive correlation was observed between weight loss and rots. "Nane" had higher dry matter (37.15% vs. 30.19%; p < 0.001, respectively) and starch content (59.16% vs. 51.86%; p < 0.001, respectively) than Apomuden. Stored SRs grown on chicken manure-amended soil recorded the highest protein (6.41%; p < 0.001) and ß-carotene (16.64 mg/100 g; p < 0.001) content than the other treatments. There was a 35% decline in ß-carotene for Apomuden, while "Nane" increased by 24% at the end of the 7-week storage. "Nane," the cultivar with high dry matter content had good storage properties than Apomuden. Stored SRs cultivated on soils amended with chicken manure had higher ß-carotene and protein content. All sensory attributes ranged from 3.35 to 3.68 indicating a good consumer preference for both cultivars irrespective of the soil amendment treatment applied.

ABSTRACT

Addressing contemporary nutrition problems often requires application of knowledge from multiple disciplines. The scaling up nutrition (SUN) movement harnesses multiple sectors for effective global and in-country planning and implementation. Although the role of knowledge networks (academia and research institutions) is recognised, the how of engaging knowledge networks in the current SUN architecture is only now becoming apparent. For relevant sectors to play their roles effectively, observed capacity gaps, particularly in developing country settings, need to be addressed. The present paper presents the work being undertaken by the Ghana SUN Academic Platform (AP), a local knowledge network, towards strengthening nutrition capacity in Ghana. The AP presently provides technical support, evidence and capacity towards scaling up effective nutrition interventions in Ghana and beyond. The data presented draws heavily on the observations and collective experiences of the authors in practice, complemented by a review of relevant literature. The ultimate goal of the AP is to build capacity of professionals from nutrition and cognate sectors (including planning, agriculture, health, economics, research and academia). This is an essential ingredient for effective and durable SUN efforts. The paper recognises that both disciplinary and interdisciplinary capacity is required for effective SUN efforts in Africa, and offers an approach that utilises cross-sector/inter-professional, peer-learning and experiential learning initiatives.

ABSTRACT

Vitamin A deficiency (VAD) prevalence in Sub-Saharan Africa is high in spite of vitamin A supplementation programmes among children in most countries. Plant-based complementary foods remain the key source of nutrients in addition to breast milk for infants in lower income countries. Cereal-legume blends are superior in protein and energy densities compared with maize, millet or sorghum-only porridge. However, unfortified cereal-legume and cereal-only porridges are low in vitamin A. A household-level sweet potato-based infant food, rich in vitamin A, has been developed to complement vitamin A supplementation initiatives in Sub-Saharan Africa. A composite flour containing sweet potato, soybean, soybean oil and fishmeal was processed as complementary food by oven toasting (denoted oven-toasted ComFa). The oven-toasted ComFa and enriched Weanimix (processed from dehulled maize, dehulled soybean, groundnut and fishmeal) were assessed for suitability as complementary food based on the nutrient composition using specifications in the Codex Standard (CS) as a reference. The sweet potato-based formulation and enriched Weanimix met the energy, protein, fructose and fat specifications but barely met the amino acid score as indicated in the CS. However, only the oven-toasted ComFa met the calcium and almost half the vitamin A levels as specified in the CS. Oven-toasted ComFa was slightly lower in energy, protein and fat by a difference not greater than 4.0% but was higher by more than 100% in fructose and vitamin A levels. Therefore, the sweet potato-based complementary food is likely to support vitamin A supplementation initiatives in low-income countries better than the cereal-based formulation.
