In recent years the meat and carcass characteristics, especially from sheep, have received attentions from the scientific society and consumers, as much in relation to the quantitative and qualitative aspects. In studies of meat and carcass evaluation, the knowledge of the methodological variables and the factors of influences are basic, since the complexity in the comprehension limits the accomplishment of research. The parameters, when well defined, they characterize the meat and carcass composition, which in turn, are responsible for the sizing of the productive chain. Thus, in the current days, it is launched to the industry and the scientific society the challenge to the understanding of these parameters, in order to place in the market carcasses prepared and meat of superior quality. Nos últimos anos, as características de carcaça e de carne, especialmente a ovina, têm despertado atenções da sociedade cientifica e do mercado consumidor, tanto em relação aos aspectos quantitativos como qualitativos. Em estudos de avaliação de carcaça e carne, o conhecimento das variáveis metodológicas e dos fatores de influencia é fundamental, visto que a complexidade no entendimento limita a realização de pesquisas. Use of additives for avian feeding / USO DE ADITIVOS NA ALIMENTAÇÃO DE AVES

One of the factors that contributed for the high productivity presented by the avian industry was, without doubts, the use to additives in diets. The additive term includes all the substances which, when added to animal food, are capable to improve the animal performance or the physical characteristics of foods. The use of additives is, nowadays, reason of discussion due to the increasing public consumers pressure influenced by sensationalist press and demand for natural products. They suggest new regulations on animal feeding, as the prohibition of the use of subproducts of the same species and domestic leftovers and the obrigatoriness of the use of label with the origin of the components of the food. Therefore, the countries that accomplish this variety of requirements, and have competitive price, will have better conditions to produce and export foods in an efficient and competitive way. Um dos fatores que contribuíram para a obtenção da alta produtividade apresentada pela indústria avícola foi sem duvida a utilização de aditivos nas dietas. O termo aditivo inclui todas as substâncias as quais, quando adicionadas ás rações, são capazes de melhorar o desempenho animal ou as características físicas dos alimentos. O uso de aditivos é, hoje, motivo de discussão acirrada devido à crescente pressão do público consumidor exacerbado por matérias sensacionalistas veiculados pela imprensa por demanda de produtos naturais. EXOGENOUS ENZYMES IN THE FEEDING OF BIRDS / ENZIMAS EXÓGENAS NA ALIMENTAÇÃO DE AVES

Currently the great quandary in the animal production is the reduction of the costs, without forgetting the maintenance them profits or until the increase of them. Other aspect sufficiently questioned in the present time is foods alternative that they are used in the substitution of the maize and soy, that I eat known for, suffers many influences of market and its price varies very. However the great majority of foods used in this substitution contains antinutricionais factors as inhibiting of proteases, fitatos among others that they get worse the quality of the food and makes it difficult the digestibilidade of the nutrients on the part of the birds. In search of this it is that if it has launched hand of the technology in vigor in the exogenous enzyme production for the animal feeding, having as benefits the maintenance of the quality of foods, improves in the digestibilidade of the nutrients, reduction of the humidity of excrements and elimination wants either in part or total of the antinutricionais factors of foods used in the feeding of birds. Being thus this revision it had as objective to elaborate a revision on the basis of the advances and too much uses of exogenous enzymes in the feeding of birds.

Atualmente o grande dilema na produção animal é a redução dos custos, sem esquecer-se da manutenção dos lucros ou até o aumento deles. Outro aspecto bastante questionado na atualidade são os alimentos alternativos que são utilizados na substituição do milho e soja, que como sabido por todos, sofrem muitas influencias de mercado e seu preço varia muito. Contudo a grande maioria dos alimentos utilizados nessa substituição contém fatores antinutricionais como inibidores de proteases, fitatos entre outros que pioram a qualidade do alimento e dificulta a digestibilidade dos nutrientes por parte das aves. Em busca disso é que se tem lançado mão da tecnologia em vigor na produção de enzimas exógenas para a alimentação animal, tendo como benefícios a manutenção da qualidade dos alimentos, melhora na digestibilidade dos nutrientes, redução da umidade das excretas e eliminação quer seja em parte ou total dos fatores antinutricionais dos alimentos utilizados na alimentação de aves. Sendo assim esta revisão teve como objetivo elaborar uma revisão com base nos avanços e demais utilizações das enzimas exógenas na alimentação de aves.
