ABSTRACT

The objective of this research was to determine the quality of beef from cattle that were fed native warm-season grass (NWSG) in the stocker phase and forage finished on tall fescue. Seventy-two British crossbred steers were randomly allotted to 9 pasture plots with 3 different forage treatments that included Bermuda grass (BER), Indian grass monoculture (IND), and big bluestem, little bluestem, and Indian grass (MIX) and forage finished on tall fescue. Two steers were randomly selected from each pasture plot for meat quality analyses (n = 18). Carcasses graded 67% Select for IND and 17% for both BER and MIX treatments, respectively. All other carcasses received quality grades of Standard. Steaks from treatments did not differ (P > 0.05) in sensory attributes, average sensory acceptability, color, tenderness, pH, or bacterial counts at each storage time, with limited differences in aroma, flavor, and texture. The IND steaks had lower cooking loss (P < 0.05) than steaks from the MIX and BER treatments. Steaks from the BER treatment had higher thiobarbituric acid reactive substances values (P < 0.05) after 6 d of storage when compared with steaks from the MIX and IND treatments, which indicated a higher susceptibility to lipid oxidation. Cluster analysis was conducted to group consumers on the basis of their preference and liking of steak from the different forage treatments. On the basis of panelists' acceptability scores, consumers were grouped into 4 clusters. The largest group (60% of consumers) liked all treatments between moderately and very much. In addition, 17% of consumers preferred steaks from the IND treatment over the BER treatment, and 11% of consumers preferred steaks from the BER and IND treatments over steaks from the MIX treatment. Overall, results indicate that high-quality forage-fed beef can be produced when cattle are fed mixed NWSG, Indian grass, or Bermuda grass during the stocker phase and then finished on tall fescue.

ABSTRACT

Bermudagrass (Cynodon dactylon [L.] Pers.) is a major feed source for ruminants across the southeastern United States. In 4 consecutive yr, 3 different bermudagrass hybrids, Alicia, Jiggs, and Tifton-85, were evaluated under a low stocking rate as forage and hay sources. The nutritive value, in situ DM digestibility, and performance and grazing behavior of beef steers under similar management were evaluated. Sampling day had an effect (P < 0.05) on all forage variables. Percentages of CP and TDN decreased while concentration of ADF, NDF, lignin, and nonfiber carbohydrates (NFC) increased as grazing season advanced. Alicia had lower nutritive value, showing greater lignin (5.3%) and indigestible fraction (44.9%) compared to Jiggs (4.9 and 35.6%, respectively) and Tifton-85 (4.5 and 40.1%, respectively). Tifton-85 contained the lowest concentration of NFC (11.8%). Steers grazing Jiggs and Tifton-85 had greater ADG (0.51 and 0.55 kg, respectively) and BW gain per hectare (258 and 279 kg, respectively) than those on Alicia (0.36 kg and 184 kg/ha, respectively); results that are probably explained by the lower nutritive value characteristics of the latter. Most grazing behavior variables were affected (P < 0.05) by time of the day (TOD) and grazing period. Two major grazing events were observed at dawn and dusk. Grazing time (32 min) was lowest (P = 0.003) while standing (140 min) and lying (98 min) time were greater (P = 0.001 and 0.04, respectively) from 1100 to 1559 h, probably as an effect of temperature and humidity at that time of the day. During summer, the temperature humidity index (THI) is above 72 (mild heat load) for the entire season and above 79 (severe heat load) during most of the daylight hours from June to August. Heat load likely affected animal performance and grazing behavior; however, some characteristics associated with these bermudagrass hybrids, especially with Alicia, such as its percentages of lignin and indigestible fraction may also partially explain the poor animal performance. In the conditions of the study, environmental variables (temperature and humidity), as well as the type of bermudagrass hybrid, affected animal performance and grazing behavior of recently weaned beef steers.

ABSTRACT

Five tall fescue [Lolium arundinaceum (Schreb.)] pastures [wild-type 'Kentucky-31' with 78.0% of plants infected with ergot alkaloid-producing endophyte Neotyphodium coenophialum (KY31 E+), 'Jesup' AR542 endophyte-infected contaminated with 30.3% tall fescue containing ergot alkaloid producing-endophyte (Jesup AR542 E+); 'GA-186' AR584 endophyte-infected contaminated with 11.8% tall fescue containing ergot alkaloid producing-endophyte (AGRFA 140); 'PDF' AR584 endophyte-infected contaminated with 5.5% tall fescue containing ergot alkaloid producing-endophyte (AGRFA 144); and 'KYFA 9301' AR584 endophyte-infected contaminated with 10.0% tall fescue containing ergot alkaloid producing-endophyte (AGRFA 150)] were compared for steer growth performance, toxicity, feedlot performance, and carcass traits. Steers (mean initial BW=322 kg) grazed pastures for 84 d in spring and 56 d in autumn for 2 yr. Steers were shipped after grazing in Prairie, MS, to Macedonia, IA, for finishing. Mean herbage mass was not different (P=0.15) among pastures. Posttreatment (d 28+) serum prolactin concentrations were depressed (P=0.013) on KY31 E+. Steers grazing KY31 E+ had greater (P<0.01) posttreatment rectal temperatures during spring. Spring hair coat scores were greatest (P<0.01) on KY31 E+ at d 56 and 84. Steer ADG was least (P<0.01) on KY31 E+ in spring and depressed (P=0.014) on KY31 E+ and Jesup AR542 E+ in autumn. Spring grazing ADG was greater (P=0.049) on AGRFA 150 than Jesup AR542 E+ and AGRFA 140. No BW differences (P=0.09) among pastures were seen at reimplant during feedlot finishing. Pasture had no effect on ADG after reimplant (P=0.68), days on feed (P=0.56), or final BW (P=0.55). Exposure to fescue toxicosis did not affect (P≥0.19) carcass traits. Hair coat price discounts applied for spring-grazed steers on KY-31 E+ affected (P<0.01) initial steer monetary values. There were no pasture differences for finishing costs (P≥0.61) or final carcass value (P=0.59). Elite tall fescue cultivar and novel endophyte combinations improve growth performance of grazing calves over KY31 E+. Producers whose calves graze KY-31 E+ tall fescue should consider retaining ownership of these cattle through feedlot finishing to avoid market discounts and capture value from compensatory BW gains during finishing.
