ABSTRACT

The influence of potassium nitrate on the formation of nitrosamines in salami was studied. Samples of salami were prepared, with and without the addition of potassium nitrate. Under the conditions of the experiment, potassium nitrate did not represent a source of either nitrite or nitrosamines. Independently of the presence of potassium nitrate in the sample formulation, the growth of bacterial flora reached a maximum in the first 20 days of the ripening process.

ABSTRACT

Because of the known advantages of coupling high performance liquid chromatography with mass spectrometry (HPLC-MS) in biological fluids, studies on the reversed-phase HPLC-MS system for direct analysis of conjugated bile acids in human bile samples are described. Ten samples of gallbladder bile of apparently healthy subjects were examined. The amounts of each tauro- and glycoconjugated bile acid as trifluoracetate were determined by mass fragmentography. Quantitation of at least 1 ng of each bile acid was possible.

ABSTRACT

Biochemical investigations on the lipid and dioxin content of the cysts and comedo-like lesions of three children exposed to tetrachloro-2,3,7,8-p-dibenzodioxin (TCDD) have been performed. Gas chromatography and mass spectrometry failed to demonstrate the presence of dioxin despite the high sensitivity of the method. Further investigation by thin layer and gas chromatography-mass spectrometry showed that the lipids of the chloracne lesions in these children were exclusively epidermal in origin. These findings support the hypothesis that exposure to dioxin produces a hyperproliferative reaction of the cutaneous epithelium with squamous metaplasia of the cells lining the ducts of skin glands.

ABSTRACT

The definitive identification of many anaerobes requires the use of gas-liquid chromatography to detect alcohol and volatile acids end-products of their metabolism. In this study we have used the gas-liquid chromatography for the identification of 360 non sporing anaerobes isolated from faeces of healthy individuals. These analyses were performed on a Variant-Aerograph mod. 2700 gas chromatography fitted with a column without phosphoric acid. The results showed a good percentage of typing (83%).
