ABSTRACT

Multistate dairy management research project NC-2042, which is part of the National Institute of Food and Agriculture, has devoted an ongoing objective to calf and heifer nutrition and management. Within this objective, colostrum research has been a priority due to continued opportunities to improve this area on US dairy farms. Research has focused on heating colostrum to reduce bacterial populations and pathogens while increasing IgG absorption. Research also identified other proteins that are reduced when heating colostrum. Studies indicated an apparent upper limit to IgG absorption from colostrum fed to calves. Additional studies have shed light on absorption of IgG from colostrum replacers and evaluated the use of lactoferrin and sodium bicarbonate in both maternal colostrum and colostrum replacers. Milk replacer formulation, feeding strategies, and the effect of calfhood nutrition on future performance have also been researched. Finally, water quality and its effect on calves and heifers have been studied. This review focuses on research done by multistate research project NC-2042 member states in the area of colostrum and calf nutrition and management.

ABSTRACT

The objective was to determine relationships between protein and energy consumed from milk replacer and starter and calf growth and first-lactation production of Holstein heifer calves. Milk replacer and starter protein intake and metabolizable energy (ME) intake data were collected from 4,534 Holstein heifer calves for growth and 3,627 Holstein cows for production from birth year of 2004 through 2014. Calves from 3 commercial dairy farms were assigned to 45 different calf research trials at the University of Minnesota Southern Research and Outreach Center, Waseca, Minnesota, from 3 to 195 d of life. Calves were moved to heifer growers at 6 mo of age, and calves were returned to their farm of birth a few weeks before calving. Most calves (85%) were fed a 20% crude protein and 20% fat milk replacer at a rate of 0.57 kg/calf daily. Metabolizable energy and protein consumed from milk replacer and starter were calculated for each individual calf for 6 and 8 wk of age. Mixed model analyses were conducted to determine the effect of protein and energy consumed from both milk replacer and starter on calf growth and first-lactation 305-d production of milk, fat, and protein, adjusting for herd, season of birth, year, average daily gain (ADG), and calf trial. Calves with ADG >0.80 kg/d consumed more combined protein and ME than calves with lower ADG. Protein and ME intake from calf starter affected growth more than protein and ME intake from milk replacer because most calves were fed the same fixed amount of milk replacer. Calves born during the fall and winter had greater combined protein and ME intake than calves born during the spring and summer. Milk replacer protein and ME intake did not have a relationship with first-lactation 305-d milk, fat, and protein production. However, starter protein and ME intake during the first 6 and 8 wk of age had a significant positive relationship with first-lactation 305-d milk, fat, and protein production. Consequently, combined protein and combined ME intake had a positive effect on 305-d milk, fat, and protein production. Variance in protein and ME intake was high, suggesting that additional factors affect calf growth during the first 8 wk of life and milk production in first lactation.

ABSTRACT

Automated milk feeders are used by dairy producers to manage preweaned calves in group housing, but little is known about how these feeding systems are being used in the United States. To better understand how US dairy producers are operating these systems, this study investigated characteristics of barn design, environment, and management practices on 38 farms in the Upper Midwest of the United States via a questionnaire and on-farm measurements. Farms using automated feeders ranged in size from 7 to 300 calves on site. Natural ventilation was used on 50% of the farms, followed by barns with mechanical ventilation (39.5%), tunnel ventilation (7.9%), or outdoor facilities (sheltered plastic domes; 2.6%). Calves were kept in groups of 17.6 ± 9.8 animals (range: 5.9 to 60.5) with an average space allowance of 4.6 ± 2.0 m2/animal (range: 1.6 to 11.9). Calves on these farms received 3.7 ± 0.75 L (range: 2 to 6) of colostrum, but 22% of the tested calves had serum total protein values lower than 5.0 g/dL. Calves had an initial daily allowance of 5.4 ± 2.1 L (range: 3 to 15 L) of milk or milk replacer, rising to a peak amount of 8.3 ± 2.0 L (range: 5 to 15 L) over 18 ± 11.4 d (range: 0 to 44 d). Milk replacer was fed to calves on 68.4% of the farms compared with whole milk supplemented with nutrient balancer on 23.7% and whole milk alone on 7.9% of the farms. Calves were completely weaned at 56.8 ± 9.0 d of age (range: 40 to 85.5) and 52.1 ± 7.5 d (range: 40 to 79) since introduction into the group pen with the feeder. Notably, bacterial contamination of milk was common; the median coliform count was 10,430 cfu/mL (interquartile range: 233,111; range: 45 to 28,517,000) and standard plate count was 2,566,867 cfu/mL (interquartile range: 15,860,194; range 6,668 to 82,825,000) for samples collected from the feeder tube end (or feeder hose). Some areas of deficiency might be of concern as they might be influencing the success of using automated calf feeding systems. In particular, a better understanding of the dynamics of pathogen load is needed in both the group pen area and in the automated feeder unit itself, as these reservoirs represent significant risk to calf health and welfare.

ABSTRACT

The aim of this study was to evaluate the effects of feeding pasteurized waste milk (pWM) to calves on antimicrobial resistance of fecal Escherichia coli at both phenotypic and genotypic levels. Fifty-two Holstein female calves (3 ± 1.3 d of age) were fed 1 of the 2 different types of milk: milk replacer (MR) without antimicrobials or pWM with ß-lactam residues until weaning at 49 d of age. Fecal swabs of all calves were obtained on d 0, 35, and 56 of the study and 3 E. coli isolates per sample were studied. Phenotypic resistance was tested by the disk diffusion method against a panel of 12 antimicrobials. A total of 13 resistance genes consisting of ß-lactam, sulfonamide, tetracycline, and aminoglycoside families were examined by PCR. Feeding pWM to calves increased the presence of phenotypic resistance to ampicillin, cephalotin, ceftiofur, and florfenicol in fecal E. coli compared with MR-fed calves. However, the presence of resistance to sulfonamides, tetracyclines, and aminoglycosides was common in dairy calves independent of their milk-feeding source, suggesting other factors apart from the feeding source are involved in the emergence of antimicrobial resistance.

ABSTRACT

Automated calf feeding systems are becoming more common on US dairy farms. The objective of this study was to evaluate calf health in these systems and to identify risk factors associated with adverse health outcomes on farms in the Upper Midwest United States. Over an 18-mo period on bimonthly farm visits to 38 farms, calves (n = 10,179) were scored for attitude, ear, eye, and nasal health, as well as evidence of diarrhea (hide dirtiness score of perianal region, underside of the tail, and tailhead). For all health score categories, a score of 0 represented an apparently healthy animal. Rectal temperatures were taken in calves scoring a ≥2 in any category, and those with a temperature >39.4°C were categorized as having a fever (n = 550). Associations were determined between farm-level variables and health scores to identify risk factors for higher (worse) scores. All health outcomes were associated with season of measurement, with fall and winter seasons increasing the odds of a high health score or detected fever. High bacterial counts measured in the milk or milk replacer were associated with increased odds for higher attitude and ear scores, and higher odds for calves having a detected fever. Higher peak milk allowance (L/d) was associated with lower hide dirtiness score, whereas a longer period of time (d) to reach peak milk allowance was associated with increased odds of higher scores for attitude, ear, eye, and hide dirtiness, as well as fever. Higher fat content in milk was associated with increased odds of high eye score. Less space per calf (m2/calf) was associated with higher ear and eye scores, whereas larger group sizes were associated with increased odds of higher nasal score and decreased odds of higher hide dirtiness score. Rectangular pen shape was associated with decreased odds of higher eye score. Absence of a positive pressure ventilation tube was associated with increased odds of having a calf detected with a fever. Based on these results, we hypothesize that these factors could be managed to improve health outcomes for dairy calves on automated feeding systems.

ABSTRACT

The objective was to determine the relationships between early-life parameters [including average daily gain (ADG), body weight (BW), milk replacer intake, starter intake, and birth season] and the first-lactation performance of Holstein cows. We collected data from birth years 2004 to 2012 for 2,880 Holstein animals. Calves were received from 3 commercial dairy farms and enrolled in 37 different calf research trials at the University of Minnesota Southern Research and Outreach Center from 3 to 195 d. Upon trial completion, calves were returned to their respective farms. Milk replacer options included varying protein levels and amounts fed, but in the majority of studies, calves were fed a milk replacer containing 20% crude protein and 20% fat at 0.57 kg/calf daily. Most calves (93%) were weaned at 6 wk. Milk replacer dry matter intake, starter intake, ADG, and BW at 6 wk were 21.5 ± 2.2 kg, 17.3 ± 7.3 kg, 0.53 ± 0.13 kg/d, and 62.4 ± 6.8 kg, respectively. Average age at first calving and first-lactation 305-d milk yield were 715 ± 46.5 d and 10,959 ± 1,527 kg, respectively. We conducted separate mixed-model analyses using the REML model-fitting protocol of JMP (SAS Institute Inc., Cary, NC) to determine the effect of early-life BW or ADG, milk replacer and starter intake, and birth season on first-lactation 305-d milk, fat, and true protein yield. Greater BW and ADG at 6 wk resulted in increased first-lactation milk and milk component yields. Intake of calf starter at 8 wk had a significant positive relationship with first-lactation 305-d yield of milk and milk components. Milk replacer intake, which varied very little in this data set, had no effect on first-lactation 305-d yield of milk and milk components. Calves born in the fall and winter had greater starter intake, BW, and ADG at 8 wk. However, calves born in the summer had a higher 305-d milk yield during their first lactation than those born in the fall and winter. Improvements were modest, and variation was high, suggesting that additional factors not accounted for in these analyses affected first-lactation performance.

ABSTRACT

Heifer calves (n = 102) were used to evaluate the effect of once- or twice-daily feeding on growth, behavior, and economics of calves in an organic group management system. Calves were assigned to replicate feeding groups of 10 in superhutches by birth order, during 2 seasons from September to December 2013 and March to May 2014 at the University of Minnesota West Central Research and Outreach Center, Morris. Calves in groups were the experimental unit. Breed groups of calves were Holsteins (n = 26), crossbreds (n = 45) including combinations Holsteins, Montbéliarde, and Viking Red (selected for high production), and crossbreds (n = 31) including combinations of Holsteins, Jersey, Normande, and Viking Red (selected for robustness). Treatment groups were once-daily feeding (1×) or twice-daily feeding (2×). Calves in both groups were fed 6 L per calf/daily of organic milk with 13% total solids and then weaned at 60 d when the group consumption averaged 0.91 kg/d of starter per calf. Body weight and hip height were recorded at birth, once a week, at weaning, and at 90 and 120 d of age. Hobo Pendant G loggers (Onset Computer Corp., Bourne, MA) were applied to the right rear leg of calves to measure total lying and standing time. Data were analyzed using PROC MIXED of SAS (SAS Institute Inc., Cary, NC). Independent variables for analyses were the fixed effects of birth weight (co-variable), season of birth, and treatment group, along with replicate as a random effect. No significant differences were found between feeding groups for body weight, weight gain, average daily gain, hip height, or heart girth. For calves in 1× and 2× groups, respectively, weaning group performance was as follows: gain per day was 0.79 and 0.81 kg, weaning weight was 92.7 and 93.3 kg, and weaning hip height was 95.2 and 95.3 cm. Daily gain to 90 d was 0.85 and 0.85 kg, and daily gain to 120 d was 0.85 and 0.83 kg for 1× and 2× calves, respectively. For lying time, calves in groups 1× (988 min/d) and 2× (995 min/d) did not differ. During the evening hours, 2× calves had lesser lying times (34 min/h for 1×; 28 min/h for 2×) because they were fed at 1800 h every evening. The average cost per kilogram of gain for the 2× ($4.03/kg) calves was greater than that for the 1× ($3.56/kg) calves. In summary, group-fed calves fed once a day in an organic production system had similar average daily gains and body dimensions compared with calves fed twice a day. Our results indicated that there is no need for twice-daily milk feeding under the conditions of the present study.

ABSTRACT

The objective of this 70-d study was to determine the effects of the essential oil cinnamaldehyde compared with the ionophore monensin on performance of weaned Holstein dairy heifers. Eighty-four Holstein dairy heifers (91 ± 3.33 d of age; 109 ± 7.55 kg) were housed in a naturally ventilated curtain sidewall, straw-bedded barn in 12 pens with 7 heifers/pen (3.98 m2/head). Heifers were randomly assigned to 1 of 4 treatments in a completely randomized design: (1) control (CON; carrier, 908 g of ground corn), (2) monensin sodium [MON; 1 mg/kg of body weight (BW) + carrier], (3) cinnamaldehyde (CIN1; 1 mg/kg of BW + carrier), or (4) cinnamaldehyde (CIN2; 2 mg/kg of BW + carrier). The treatments were hand-mixed into a 20% crude protein (CP) whole shelled corn and protein pellet mix fed at 2.21 kg/heifer daily. Heifers had access to free-choice hay and water daily. Initial BW and hip heights were taken at the start of the study and every other week thereafter until calves reached 23 wk of age. Blood samples were also taken on each weigh day to determine plasma urea nitrogen, glucose, and insulin-like growth factor-1 concentrations. Fecal samples were taken from the same 3 heifers/pen initially and then at d 28, 56, and 70 of the study for coccidia counts. Cinnamaldehyde had no performance effects on growth, hay intake, hip height, or blood metabolites compared with MON or CON. Average daily gains were 0.98, 0.99, 1.01, and 1.03 kg/d, and average hay intakes per pen were 17.08, 16.34, 18.11, and 17.60 kg/d for CON, MON, CIN1, and CIN2, respectively. Fecal samples by pens indicated the presence of viable coccidia, but the counts were low and not consistent across heifers within each pen. No benefits were associated with supplementing cinnamaldehyde or monensin into grain mixes for weaned heifers.

ABSTRACT

The objectives of this study were to describe on-farm mortality and to investigate cow- and herd-level risk factors associated with on-farm mortality in Midwest US dairy herds using lactation survival analysis. We analyzed a total of approximately 5.9 million DHIA lactation records from 10 Midwest US states from January 2006 to December 2010. The cow-level independent variables used in the models were first test-day milk yield, milk fat percent, milk protein percent, fat-to-protein ratio, milk urea nitrogen, somatic cell score, previous dry period, previous calving interval, stillbirth, calf sex, twinning, calving difficulty, season of calving, parity, and breed. The herd-level variables included herd size, calving interval, somatic cell score, 305-d mature-equivalent milk yield, and herd stillbirth percentage. Descriptive analysis showed that overall cow-level mortality rate was 6.4 per 100 cow-years and it increased from 5.9 in 2006 to 6.8 in 2010. Mortality was the primary reason of leaving the herd (19.4% of total culls) followed by reproduction (14.6%), injuries and other (14.0%), low production (12.3%), and mastitis (10.5%). Risk factor analysis showed that increased hazard for mortality was associated with higher fat-to-protein ratio (>1.6 vs. 1 to 1.6), higher milk fat percent, lower milk protein percent, cows with male calves, cows carrying multiple calves, higher milk urea nitrogen, increasing parity, longer previous calving interval, higher first test-day somatic cell score, increased calving difficulty score, and breed (Holstein vs. others). Decreased hazard for mortality was associated with higher first test-day milk yield, higher milk protein, and shorter dry period. For herd-level factors, increased hazard for mortality was associated with increased herd size, increased percentage of stillbirths, higher somatic cell score, and increased herd calving interval. Cows in herds with higher milk yield had lower mortality hazard. Results of the study indicated that first test-day records, especially those indicative of negative energy balance in cows, could be helpful to identify animals at high risk for mortality. Higher milk yield per cow did not have a negative association with mortality. In addition, the association between herd-level factors and mortality indicated that management quality could be an important factor in lowering on-farm mortality, thereby improving cow welfare.

ABSTRACT

Bull calves (n=49), born at the University of Minnesota West Central Research and Outreach Center (Morris) between March and May 2011, were used to compare growth measurements and profitability of conventional and organic dairy steers. Calves were assigned to 1 of 3 replicated groups at birth: conventional (CONV; n=16), organic (pasture and concentrate; ORG; n=16), or organic grass only (GRS; n=17), and analysis of variables was on a pen basis. Breed groups of calves were Holstein (HO; n=9); Holsteins (n=11) maintained at 1964 breed average level; crossbreds (n=19) including combinations of HO, Montbéliarde, and Swedish Red; and crossbreds (n=10) including combinations of HO, Jersey, Swedish Red, and Normande. The CONV steers were fed a diet of 80% concentrate and 20% forage. The ORG steers were fed a diet of organic corn, organic corn silage, and at least 30% of their diet consisted of organic pasture during the grazing season. The GRS steers grazed pasture during the grazing season and were fed high-quality hay or hay silage during the nongrazing season. Intakes of a total mixed ration were recorded daily with herd management software. A profit function was defined to include revenues and expenses for beef value, feed intake, pasture intake, health cost, and yardage. The GRS (358.6 kg) steers had lesser total gains from birth to slaughter than ORG (429.6 kg) and CONV (534.5 kg) steers. Furthermore, the GRS (0.61 kg/d) steers had lesser average daily gain from birth compared with ORG (0.81 kg/d) and CONV (1.1 kg/d) steers. The GRS and ORG steers had smaller rib eye area (49.5 and 65.8 cm(2), respectively) compared with CONV (75.4 cm(2)) steers. For profitability, GRS steers had 43% greater profit than CONV steers due to organic beef price premiums and lower feed costs. On the other hand, ORG steers had substantially less profit than CONV steers. The higher cost of production for the ORG steers is due to the extreme high value of organic corn. The results of the current study illustrate the economic potential of alternative strategies for growing and marketing male offspring of organic dairy cattle in the Midwest.

ABSTRACT

Meat from Holstein and crossbred organic and conventional dairy steers were evaluated and compared for fatty acid profiles, meat quality, sensory attributes, and consumer acceptance. Bull calves (n=49) were randomly assigned to 1 of 3 replicated groups: conventional (CONV), organic (ORG, pasture + concentrate), or grass-fed organic (GRS) and were born at the University of Minnesota West Central Research and Outreach Center (Morris, MN) between March and May 2011. The CONV steers (n=16) were fed a diet that contained 80% concentrate and 20% forage, and ORG steers (n=16) were fed a diet of organic corn, organic corn silage, and organic protein supplement. Furthermore, ORG steers consumed at least 30% of diet dry matter of high-quality organic pasture during the grazing season. The GRS steers (n=17) consumed 100% forage from pasture during the grazing season and high-quality hay or hay silage during the nongrazing season. The ORG steers had fat that was greater in oleic acid (C18:1) than the GRS and CONV steers (47.1, 36.1, and 39.9%, respectively). The GRS steers (21.9%) were lower for monounsaturated fat than the ORG (42.1%) and CONV (40.4%) steers. Furthermore, the GRS steers tended to have greater n-3 fat and had lower n-6 fat than the ORG and CONV steers. Consequently, the GRS (1.4%) steers had a lower n-6-to-n-3 fat ratio than the ORG (12.9%) and CONV (10.0%) steers. The GRS (2.6 kg) steers had steaks that were not different for Warner-Bratzler shear force than ORG (2.3 kg) steaks; however, the GRS steaks tended to have greater shear force than the CONV (2.0 kg) steaks. The 3 steer group had steaks that were not different for color brightness (L*; 0 = black and 100 = white) and yellowness/blueness (b*; positive values = yellow and negative values = blue) values; however, the GRS (10.5) steaks had lower redness/greenness (a*; positive values = red and negative values = green) values than CONV (14.5) steaks. For sensory attributes (0- to 120-point scale), no differences were observed for ORG (71.3) and CONV (69.2) steers for overall consumer liking of the beef; however, the GRS (56.3) steers had the lowest overall liking among beef consumers. The ORG (73.3) steers had greater flavor liking than the GRS (56.8) and CONV (69.2) steers. Conversely, the GRS (6.3) steers had the highest scores for off-flavor (0- to 20-point scale) compared with the ORG (3.9) and CONV (4.1) steers. The results of the current study suggest that a potential market may exist for organic grass-fed dairy steers in the United States, but quality and consistency of the beef needs to be improved.

ABSTRACT

The objective of this study was to evaluate the effect of early-life feeding duration on growth and economics of group-fed organic dairy calves. Heifer calves born during the spring of 2011 (n = 67) and the spring of 2012 (n = 57) were used to evaluate the effect of weaning age, growth, and profitability of group-fed calves fed once per day in an organic dairy production system. Calves were assigned to replicate feeding groups of 10 in super hutches by birth order, and were born at the University of Minnesota West Central Research and Outreach Center, Morris organic dairy. Breed groups were Holsteins (n = 15) selected for high production, Holsteins (n = 23) maintained at 1964 breed-average level, crossbreds (n = 54) including combinations of Holstein, Montbéliarde, and Swedish Red, and crossbreds (n = 32) including combinations of Holstein, New Zealand Friesian, Jersey, and Swedish Red. Groups of calves were weaned at 30 (EW, early weaning), 60 (MW, mid weaning), or 90 (LW, late weaning) d of age, and groups were fed 1.5% of birth weight of 13% total solids organic whole milk once daily and weaned when the group of 10 calves consumed an average of 0.91 kg of organic calf starter per calf per day for 4 consecutive days. Body measurements were recorded at birth, weekly during the preweaning period, at weaning, and monthly thereafter. Profitability was estimated as a function of the total cost for organic milk and organic calf starter for weaning groups to weaning and to the first 90 d of age. Preweaning group performance was weaning age, EW: 47.6d, MW: 64.5d, LW: 93.7d; weaning weight, EW: 61.8 kg, MW: 79.2 kg, LW: 108.1 kg; and gain per day, EW: 0.51 kg/d, MW: 0.63 kg/d, LW: 0.75 kg/d. Body weight (BW) did not differ among weaning groups at 90 d of age; however, MW calves had lower 120-d BW than did LW calves. The EW calves did not differ from either MW or LW calves for 120-d BW. Total feed costs to weaning for groups were $1,092.97 for EW calves, $1,871.24 for MW calves, and $2,956.64 for LW calves. The cost per kilogram of gain was higher for the EW ($5.54) group of calves than for the MW ($4.60) or LW ($4.14) groups during the preweaning period. Total costs and cost per kilogram of gain for the first 90 d of age were lowest for EW ($1,595.59, $3.02) calves and highest for LW ($2,956.64, $4.13) calves, respectively.

ABSTRACT

The objectives were to evaluate the impact of conventional or intensive milk replacer (MR) feeding programs on heifer calf performance through 6 mo of age, age at first calving, and first lactation performance. At 3 (+/-1 d) d of age, 133 Holstein heifer calves from 3 commercial dairy farms were randomly assigned, within calf source, to a conventional [20% crude protein (CP), 20% fat] or intensive MR (28% CP, 18% fat). Milk replacer treatments and percent solids were 1) conventional nonacidified (CNA), 13.9%; 2) conventional acidified (CA), 13.9%; 3) modified intensive high solids (IHS), 16.7%; 4) modified intensive low solids (ILS), 12.5%; and 5) intensive high solids, high feeding (IHSHF), 16.7%. Calves were individually housed and remained on trial for 56 d. At 2 mo of age, heifers were grouped in pens by treatment with 6 heifers per pen (4 pens per treatment). An 18.1% CP grower concentrate mix (dry matter basis) was fed to heifers that received a conventional MR and a 21.2% CP grower concentrate mix was fed to heifers that received the intensive MR preweaning. Heifers were offered 2.45 kg/d (dry matter basis) of their respective grower concentrate mix for 112 d plus free access to hay and water. At approximately 24 wk of age, heifers were transported to a second-stage grower before returning to their respective farms approximately 1 mo before calving. First-lactation performance was determined using Dairy Herd Improvement Association records. The IHSHF treatment resulted in increased calf body weight and hip height during the preweaning and early postweaning (PEP) period and the postweaning heifer grower (PHG) period as compared with the conventional (CNA and CA) or modified intensive MR treatments (IHS and ILS). Calves receiving the IHS treatment were heavier at d 56 of the PEP period compared with the conventional or ILS treatments; however, this growth advantage was not maintained in the PHG period. Feed cost per kilogram of gain during the PEP period was lowest for CNA and CA, intermediate for IHS and ILS, and highest for the IHSHF treatment. There was no effect of MR feeding program on first-lactation performance; however, heifers that received the IHSHF MR preweaning calved 27.5 d earlier than those fed a conventional MR.

ABSTRACT

It is believed that milk production is determined by the number and activity of mammary secretory cells. Secretory activity, as assessed by milk volume, depends on secretion of the major osmole in milk, lactose, which is produced by lactose synthase. The amount of either of the two proteins in lactose synthase may regulate milk production. The objective of this study was to determine whether the concentrations in milk of the two components of lactose synthase, alpha-lactalbumin (alpha-LA) and beta1,4-galactosyltransferase (B4GALT), were related to genetic background, stage of lactation, breed or parity of dairy cows. alpha-Lactalbumin and B4GALT concentrations were measured by ELISA and by enzyme assays, respectively, from single milk samples. Two herds with a total of 279 cows were used in the analysis. One herd contained Ayrshire, Brown Swiss, Holstein and Jersey cows; the second herd contained two groups of cows; Holsteins selected for high milk production and Holsteins with 1960s genetics. The alpha-LA concentration in milk was greater in Jerseys and Ayrshires than in Holsteins and Brown Swiss. However, no difference in alpha-LA concentration was observed in milk from high and low genetic merit cows in the Minnesota herd or among different genetic backgrounds in the Illinois herd. beta1,4-Galactosyltransferase concentrations were similar for all groups that were analyzed. alpha-Lactalbumin concentrations were positively correlated with milk protein concentration, milk fat concentration and lactose concentration. beta1,4-Galactosyltransferase concentration in milk exhibited a strong positive correlation with number of days in milk. Although the concentration of B4GALT increased as lactation progressed, the values did not show any correlation with persistency of lactation or late lactation milk production. In conclusion, this survey shows that the two components of lactose synthase are each correlated to protein concentration and individually correlated to the concentration of other milk components and stage of lactation.

ABSTRACT

The objective of this study was to describe passive transfer of IgG and preweaning health in newborn calves fed a commercially available plasma-derived colostrum replacement (CR) product or maternal colostrum (MC). Twelve commercial Holstein dairy farms enrolled singleton newborn heifer calves to be fed fresh MC (n = 239 calves) or one dose of CR containing 125 g of Ig (n = 218 calves) as the first colostrum feeding. For 7 of these farms that routinely provided a second feeding of 1.9 L of MC to their calves 8 to 12 h after the first colostrum feeding, calves assigned to the CR treatment group were offered a second feeding consisting of 1.9 L of commercial milk replacer supplemented with one dose of a commercially available plasma-derived colostrum supplement, containing 45 g of Ig per dose, 8 to 12 h after the first colostrum feeding. A blood sample was collected from all calves between 1 to 8 d of age for serum IgG and total protein (TP) determination, and records of all treatment and mortality events were collected until weaning. Serum IgG and TP concentrations were significantly higher in calves fed MC (IgG = 14.8 +/- 7.0 mg/mL; TP = 5.5 +/- 0.7 g/dL) compared with calves fed CR (IgG = 5.8 +/- 3.2 mg/mL; TP = 4.6 +/- 0.5 g/dL). The proportion of calves with failure of passive transfer (serum IgG <10.0 mg/mL) was 28.0 and 93.1% in the MC and CR treatment groups, respectively. Though a trend was present, the proportion of calves treated for illness was not statistically different for calves fed MC (51.9%) vs. CR (59.6%). Total number of days treated per calf (MC = 1.7; CR = 2.0), treatment costs per calf (MC = $10.84; CR = $11.88), and proportion of calves dying (MC = 10.0%; CR = 12.4%) was not different between the 2 colostrum treatment groups. The mean serum total protein concentration predictive of successful passive transfer (serum IgG = 10 mg/mL) was 5.0 g/dL in calves fed MC or CR. Long-term follow-up of these calves (to maturity) is ongoing to describe the effects of feeding CR on longevity, productivity, risk for Johne's disease, and economics.

ABSTRACT

Cows from static, low-merit control (CL) and contemporary, high-merit select (SL) lines that differed in milk yield by more than 4,000 kg/305-d lactation (SL > CL) were used to determine effects of selection for milk yield on blood serum concentrations of somatotropin (ST), insulin-like growth factor (IGF-I), and placental lactogen (PL). Cows were exposed to the same environment and management conditions and fed the same diets. Serum and milk samples were collected from primiparous (18 CL, 18 SL) and multiparous (12 CL, 18 SL) cows relative to day of lactation (from -28 to 280 d for nonpregnant cows and to subsequent calving for cows that conceived). Data were analyzed as repeated measures using mixed model procedures. Serum ST increased at calving, remained elevated for a longer interval in SL than in CL cows, and was greater in SL than in CL cows. Serum IGF-I decreased at calving, remained low through 14 DIM, and gradually returned to precalving concentrations as lactation progressed. Postpartum concentrations of IGF-I were less in SL than CL through 84 DIM and were similar through the remainder of lactation, resulting in a line by day interaction. Serum IGF-I and PL were not affected by merit during gestation. There was an interaction of merit and postconception interval on IGF-I, with the difference in IGF-I concentration between lines decreasing as gestation progressed. Change in serum IGF-I and PL appeared to be synchronous. Results indicate that selection for milk yield increased serum ST, prolonged the postpartum reduction in serum IGF-I, and did not alter serum PL. Results also indicate a positive relationship between PL and IGF-I and support the concept that PL plays a role in the regulation of serum IGF-I during gestation.

Batches (30-L) of first-milking bovine colostrum, inoculated with Mycoplasma bovis (10(8) cfu/mL), Listeria monocytogenes (10(6) cfu/mL), Escherichia coli O157:H7 (10(6) cfu/mL), Salmonella enteritidis (10(6) cfu/mL), and Mycobacterium avium subsp. paratuberculosis (Map; 10(3) cfu/mL), were heat-treated at 60 degrees C for 120 min in a commercial on-farm batch pasteurizer system. Duplicate 50-mL subsamples of colostrum were collected at 15-min intervals throughout the heat-treatment process for the purpose of bacterial culture and for measurement of IgG concentration (mg/mL) and antibody activity [log2(bovine viral diarrhea virus type 1 serum neutralization titer)]. Four replicate batches of colostrum were run for each of the 5 pathogens studied. There was no effect of heating moderate- to high-quality colostrum at 60 degrees C for at least 120 min on mean IgG concentration (pre = 60.5 mg/mL; post = 59.1 mg/mL). Similarly, there was no effect of heat-treatment on the mean log2 bovine viral diarrhea virus type 1 serum neutralization titer (pre = 12.3; post = 12.0). Viable M. bovis, L. monocytogenes, E. coli O157:H7, and S. enteritidis added to colostrum could not be detected after the colostrum was heat-treated at 60 degrees C for 30 min. Average bacteria counts showed that Map was not detected when batches were heated at 60 degrees C for 60 min. Although the authors believe that heat-treating colostrum at 60 degrees C for 60 min should be sufficient to eliminate Map from colostrum in most situations, further research is needed to determine whether these findings may be replicated, given that variability was observed in Map culture results.

ABSTRACT

The objective of this study was to identify the critical temperature, at or below which heat-treatment of bovine colostrum would produce no significant changes in viscosity, IgG concentration, or Ig activity. Results of preliminary work, using a Rapid Visco Analyzer (RVA) to heat 50-mL aliquots from 6 unique batches of bovine colostrum at 59, 60, 61, 62, and 63 degrees C, suggested that colostrum could be heated to 60 degrees C for up to 120 min without changing viscosity or IgG concentration. This finding was confirmed by heating 50-mL aliquots from 30 unique batches of colostrum in an RVA for 120 min at 60 and 63 degrees C. Heating colostrum to 63 degrees C resulted in an estimated 34% decrease in IgG concentration and 33% increase in viscosity. However, there was no difference in IgG concentration between preheat-treated (73.4 +/- 26.5 mg/mL) and post-heat-treated (74.5 +/- 24.3 mg/mL) samples after heating colostrum to 60 degrees C in an RVA for 120 min. Similarly, viscosity was unaffected after heating colostrum to 60 degrees C in an RVA for 120 min. High quality colostrum (> or =73.0 mg/mL) suffered greater losses of IgG and greater viscosity changes when heated to 63 degrees C than did moderate quality colostrum (<73.0 mg/mL). However, the effects of colostrum quality were minor if high quality colostrum was only heated to 60 degrees C. The results of a bovine viral diarrhea serum neutralization assay suggested that antibody activity was unchanged after heating colostrum to either 60 or 63 degrees C. However, these results were interpreted as being inconclusive due to a high proportion of missing results because of the congealing of many samples after heat treatment. The results of this study indicate that 50-mL volumes of bovine colostrum can be heat treated at 60 degrees C for up to 120 min in an RVA without affecting IgG concentration or viscosity.

Control (CL) and select line (SL) dairy cows (n = 22) managed identically but differing in milk yield (>4100 kg/305 d) were used to determine differences in milk fatty acid profile as lactation progressed. Milk yield was recorded daily and milk samples were collected during wk 1, 4, 8, 12, and 16 postpartum for milk composition analysis. Milk samples from wk 1, 8, and 16 were also analyzed for fatty acid composition. Select-line cows produced more milk (44.4 vs. 31.2 kg/d) and milk components than CL cows during the 16-wk period. There was no difference in rate of milk yield increase, but peak milk yield for SL cows was greater and occurred later in lactation. There were no differences in milk SCC or milk fat, protein, or lactose content. Selection for milk yield did not affect the content of most individual milk fatty acids; however, compared with CL, SL cows had a reduced Delta(9)-desaturase system and tended to produce milk with lower monounsaturated fatty acid content. Selection for milk yield did not affect milk fatty acid origin but the percentage of de novo fatty acids increased and preformed fatty acids decreased as lactation progressed. Milk fat trans-11 18:1 and cis-9,trans-11 conjugated linoleic acid increased with progressing lactation (10.7 vs. 14.1 and 3.1 vs. 5.4 mg/g, or 31 and 76%, respectively) and were correlated strongly among wk 1, 8, and 16 of lactation. Temporal changes in the Delta(9)-desaturase system occurred during lactation but these changes were not correlated with milk fat cis-9,trans-11 conjugated linoleic acid content. Results indicate prolonged genetic selection for milk yield had little effect on milk fatty acid composition, but milk fatty acid profiles varied markedly by week of lactation.
