ABSTRACT

This study aimed, for the first time, to determine the nutritional composition, beta-glucan and ergosterol contents, phenolic compound composition, and biological and functional activities of a novel mycoprotein produced through a bioconversion process of Durvillaea spp., a brown seaweed. An untargeted metabolomics approach was employed to screen metabolites and annotate molecules with nutraceutical properties. Two products, each representing a distinct consortia of co-cultured fungi, named Myco 1 and Myco 2, were analysed in this study. These consortia demonstrated superior properties compared to those of Durvillaea spp., showing significant increases in total protein (~238%), amino acids (~219%), and ß-D-glucans (~112%). The protein contains all essential amino acids, a low fatty acid content, and exhibits high antioxidant activity (21.5-25.5 µmol TE/g). Additionally, Myco 2 exhibited the highest anti-alpha-glucosidase activity (IC50 = 16.5 mg/mL), and Myco 1 exhibited notable anti-lipase activity (IC50 = 10.5 mg/mL). Among the 69 top differentially abundant metabolites screened, 8 nutraceutical compounds were present in relatively high concentrations among the identified mycoproteins. The proteins and polysaccharides in the mycoprotein may play a crucial role in the formation and stabilization of emulsions, identifying it as a potent bioemulsifier. In conclusion, the bioconversion of Durvillaea spp. results in a mycoprotein with high-quality protein, significant nutritional and functional value, and prebiotic and nutraceutical potential due to the production of unique bioactive compounds.

ABSTRACT

The literature on organizational resilience explores various viewpoints, ranging from strategies to recover after disruptions to proactive anticipation of threats. Formal models primarily focus on the ability to recover from shocks, analyzing factors like deviation from performance targets, recovery time, and potential adaptation in function and structure. However, incorporating anticipation into such models remains scarce. Additionally, existing anticipatory systems models often neglect key aspects of organizational behavior. This work addresses these gaps by introducing an agent-based modeling approach that integrates anticipation into organizational decision-making. Our computational model features agents embedded in different organizational structures who make decisions based on projected market states (levels and trends). These decisions are subject to delays in perceiving market conditions and vary depending on the organization's adaptive capacity to update its offering. We analyze different organizational structures and market behaviors (trend direction and volatility). Our results indicate that full connectivity among agents can be detrimental to organizational resilience, as it may reduce the diversity of anticipation strategies for forecasting the market. Conversely, either sparse or highly clustered networks demonstrate a greater ability, on average, to keep up with changing market levels and trends.

ABSTRACT

Spray-drying is a commonly used method for producing powdered flavors, but the high temperatures involved often result in the loss of volatile molecules. To address this issue, our study focused on a novel approach: developing O/W Pickering emulsions with agri-food byproducts to encapsulate and protect D-limonene during spray-drying and storage. Emulsions formulated with lupin hull, lupin-byproduct (a water-insoluble protein-fiber byproduct derived from the production of lupin protein isolate), and camelina press-cake were subjected to spray-drying at 160 °C. The results revealed that these emulsions exhibited good stability against creaming. The characteristics of the dry emulsions (powders) were influenced by the concentration of byproducts. Quantitative analysis revealed that Pickering emulsions enhanced the retention of D-limonene during spray-drying, with the highest retention achieved using 3% lupin hull and 1% camelina press-cake. Notably, lupin-stabilized emulsions yielded powders with enhanced oxidative stability compared to those stabilized with camelina press-cake. Our findings highlight the potential of food-grade Pickering emulsions to improve the stability of volatile flavors during both processing and storage.

ABSTRACT

El melanoma mucoso (MM) es un subtipo raro de malignidad que surge de la transformación maligna de los melanocitos. EL MM representa el 1% de todos los casos de melanoma, siendo un subtipo agresivo y con mal pronóstico, con supervivencia global a 5 años de 10-20%. El Melanoma mucoso de la cavidad oral corresponde al 0.5% de todos los tumores malignos en la cavidad oral y al 25% de los melanomas mucosos ubicados en cabeza y cuello. Tiene una distribución anatómica de predominio en el tracto sinunasal 70%, cavidad oral 20% y otras ubicaciones como larige y faringe. Algunos probables factores de riesgo descritos son: trauma mecánico crónico, etilismo, tabaquismo, formaldehído, Sin embargo su etiología permanece incierta. Presentamos el caso de una paciente Femenina de 77 años tratada exitosamente mediante maxilectomía inferior y disección selectiva cervical izquierda. (provisto por Infomedic International)


Mucosal melanoma (MM) is a rare subtype of malignancy arising from malignant transformation of melanocytes. MM accounts for 1% of all cases of melanoma, being an aggressive subtype with poor prognosis, with 5-year overall survival of 10-20%. Mucosal melanoma of the oral cavity corresponds to 0.5% of all malignant tumors in the oral cavity and 25% of mucosal melanomas located in the head and neck. It has an anatomical distribution of predominance in the sinonasal tract 70%, oral cavity 20% and other locations such as larynx and pharynx. Some probable risk factors described are chronic mechanical trauma, ethylism, smoking, formaldehyde, however its etiology remains uncertain. We present the case of a 77-year-old female patient successfully treated by inferior maxillectomy and selective left cervical dissection. (provided by Infomedic International)

ABSTRACT

Background: Recurrent genetic alterations contributing to leukemogenesis have been identified in pediatric B-cell Acute Lymphoblastic Leukemia (B-ALL), and some are useful for refining classification, prognosis, and treatment selection. IKZF1plus is a complex biomarker associated with a poor prognosis. It is characterized by IKZF1 deletion coexisting with PAX5, CDKN2A/2B, or PAR1 region deletions. The mutational spectrum and clinical impact of these alterations have scarcely been explored in Mexican pediatric patients with B-ALL. Here, we report the frequency of the IKZF1plus profile and the mutational spectrum of IKZF1, PAX5, CDKN2A/2B, and ERG genes and evaluate their impact on overall survival (OS) in a group of patients with B-ALL. Methods: A total of 206 pediatric patients with de novo B-ALL were included. DNA was obtained from bone marrow samples at diagnosis before treatment initiation. A custom-designed next-generation sequencing panel was used for mutational analysis. Kaplan-Meier analysis was used for OS estimation. Results: We identified the IKZF1plus profile in 21.8% of patients, which was higher than that previously reported in other studies. A significantly older age (p=0.04), a trend toward high-risk stratification (p=0.06), and a decrease in 5-year Overall Survival (OS) (p=0.009) were observed, although heterogeneous treatment protocols in our cohort would have impacted OS. A mutation frequency higher than that reported was found for IKZF1 (35.9%) and CDKN2A/2B (35.9%) but lower for PAX5 (26.6%). IKZF1MUT group was older at diagnosis (p=0.0002), and most of them were classified as high-risk (73.8%, p=0.02), while patients with CDKN2A/2BMUT had a higher leukocyte count (p=0.01) and a tendency toward a higher percentage of blasts (98.6%, >50% blasts, p=0.05) than the non-mutated patients. A decrease in OS was found in IKZF1MUT and CDKN2A/2BMUT patients, but the significance was lost after IKZF1plus was removed. Discussion: Our findings demonstrated that Mexican patients with B-ALL have a higher prevalence of genetic markers associated with poor outcomes. Incorporating genomic methodologies into the diagnostic process, a significant unmet need in low- and mid-income countries, will allow a comprehensive identification of relevant alterations, improving disease classification, treatment selection, and the general outcome.

Introduction: Acute leukemias (AL) are the main types of cancer in children worldwide. In Mexico, they represent one of the main causes of death in children under 20 years of age. Most of the studies on the incidence of AL in Mexico have been developed in the urban context of Greater Mexico City and no previous studies have been conducted in the central-south of the country through a population-based study. The aim of the present work was to identify the general and specific incidence rates of pediatric AL in three states of the south-central region of Mexico considered as some of the marginalized populations of Mexico (Puebla, Tlaxcala, and Oaxaca). Methods: A population-based study was conducted. Children aged less than 20 years, resident in these states, and newly diagnosed with AL in public/private hospitals during the period 2021-2022 were identified. Crude incidence rates (cIR), standardized incidence rates (ASIRw), and incidence rates by state subregions (ASIRsr) were calculated. Rates were calculated using the direct and indirect method and reported per million children under 20 years of age. In addition, specific rates were calculated by age group, sex, leukemia subtype, and immunophenotype. Results: A total of 388 cases with AL were registered. In the three states, the ASIRw for AL was 51.5 cases per million (0-14 years); in Puebla, it was 53.2, Tlaxcala 54.7, and Oaxaca de 47.7. In the age group between 0-19 years, the ASIRw were 44.3, 46.4, 48.2, and 49.6, in Puebla, Tlaxcala, and Oaxaca, respectively. B-cell acute lymphoblastic leukemia was the most common subtype across the three states. Conclusion: The incidence of childhood AL in the central-south region of Mexico is within the range of rates reported in other populations of Latin American origin. Two incidence peaks were identified for lymphoblastic and myeloid leukemias. In addition, differences in the incidence of the disease were observed among state subregions which could be attributed to social factors linked to the ethnic origin of the inhabitants. Nonetheless, this hypothesis requires further investigation.

Introducción: La evidencia obtenida en estudios previos señala que existe mayor ansiedad por el proceso de morir que, por la muerte misma, aunque falta mayor investigación. Objetivo: Analizar el miedo a la muerte y al proceso de morir propio y de otros en el servicio de Pediatría del Hospital Pablo Tobón Uribe. Metodología: Se realizó un estudio analítico transversal con la Escala de Miedo a la Muerte de Collett-Lester en 143 personas: 25,2 % pediatras generales y subespecialistas, 70,6 % profesionales de Enfermería y auxiliares, y 4,2 % terapeutas respiratorios. El análisis incluyó estadística descriptiva, pruebas de Chi2, U de Mann-Whitney, Fisher, T de Student, ANOVA y el Alfa de Cronbach. Resultados: los hallazgos del estudio sugieren que es menor el miedo a la propia muerte que el miedo a la muerte de otros, y no hay diferencia entre el miedo al proceso de morir propio y de otros. Es mayor el miedo a la muerte en enfermeras profesionales y menor en pediatras subespecialistas. Existe mayor miedo a la muerte en el servicio de UCI-UCE (media: 3,53 DS: 0,88) comparado con Urgencias (media: 2,66 DS: 0,59). Hay asociación entre el miedo a la muerte con: el sexo femenino (p = 0,000), tener una creencia religiosa (p = 0,048), y el cargo (p = 0,007). La escala tuvo muy alta fiabilidad (Alfa de Cronbach: 0,95). Discusión: es de aclarar que este estudio fue realizado durante el segundo año de la pandemia del COVID-19, cuando había menor temor, mayor conocimiento y vacunas, cuyos resultados se corresponden con otros estudios. Conclusión: en el presente estudio el mayor miedo a la muerte se asoció con ser mujer, tener creencia religiosa y laborar en UCI-UCE comparado con Urgencias.


Introduction: The evidence obtained from previous research suggests that there is more anxiety related to dying compared with death. Nevertheless, more research is needed. Objective: To analyze the fear of death and dying, oneself and others, in the pediatric service personnel at Pablo Tobón Uribe Hospital in Medellín. Methodology: This was a transversal analytic study to apply the Collett-Lester Fear of Death Scale on 143 people: 25,2 % were general pediatricians and subspecialists, 70,6 % were professional nurses and medical assistants, and 4,2 % were respiratory therapists. The analysis included descriptive statistics, Chi2 test, Mann-Whitney U test, Fisher, StudentsT, ANOVA and Cronbach's Alpha. Results: Here we report the mean of one's fear of death is lower than the fear of others' death. There is no difference when comparing the fear of one's process of dying mean, rather than when it's others. Fear of death is higher in professional nurses and lower in pediatric subspecialists. The study shows higher fear of death in the ICU-IMC services (mean: 3,53 SD: 0,88) compared with the emergency room (mean:2,66 SD: 0,59). There is a statistical association between fear of death and being a woman (p=0,000), having a religious belief (p=0,048) and job position (p=0,007). The scale has a high internal consistency (Cronbach's Alpha: 0,95). Discussion: It is important to mention that this research was conducted during the second year of the COVID-19 pandemic, when the fear had decreased, and with more knowledge and the vaccines were ready, the results are coherent with other papers. Conclusion: In this study the higher fear of death was associated with being a woman, having a religious belief and working in ICU-IMC compared to the emergency room.

ABSTRACT

An association has been suggested between acute myocardial infarction (AMI) and obstructive sleep apnea (OSA). Considering the role of adipose-tissue-derived inflammatory mediators (adipokines) and the shared risk factor of obesity in OSA and AMI, this study aimed to investigate the involvement of adipokines in AMI patients with and without OSA. Serum levels of adipokines and inflammatory mediators were quantified, and home respiratory polygraphy was conducted. A total of 30 AMI patients and 25 controls were included. Patients with AMI exhibited elevated levels of resistin (7.4 vs. 3.7 ng/mL), interleukin-6 (8.8 vs. 1.3 pg/mL), and endothelin-1 (3.31 vs. 1.8 pg/mL). Remarkably, AMI patients with concomitant OSA exhibited higher levels of resistin (7.1 vs. 3.7 ng/mL), interleukin-6 (8.9 vs. 1.3 pg/mL), endothelin-1 (3.2 vs. 1.8 pg/mL), creatin kinase (1430 vs. 377 U/L), creatine kinase-MB (64.6 vs. 9.7 ng/mL), and troponin T (2298 vs. 356 pg/mL) than their non-OSA counterparts. Leptin showed a correlation with OSA severity markers. OSA was associated with greater cardiac damage in AMI patients. Our findings underscore that adipokines alone are not sufficient to discriminate the risk of AMI in the presence of OSA. Further research is necessary to determine the potential mechanisms contributing to exacerbated cardiac damage in patients with both conditions.

Transformar la educación de enfermería con una visión intercultural en donde el centro para el cuidado sean las personas, las familias y las comunidades, mediante la cual se logren los propósitos de proveer cuidados eficaces, eficientes y efectivos acordes a sus propias necesidades. Es así como se entiende que el cuidado se puede aprender, mediante un proceso de enseñanza-aprendizaje en el que haya una continuidad entre la teoría y la práctica, entre lo que se enseña, se aprende y se práctica en escenarios muy próximos a la realidad, con la utilización de lecturas, escritos, reflexiones, vivencias, diálogos de saberes, experiencias de otros, historias de vida y narrativas.


Transform nursing education with an intercultural vision where the center of care is people, families and communities, through which the purposes of providing effective, efficient and effective care are achieved according to their own needs. This is how it is understood that care can be learned, through a teaching-learning process in which there is continuity between theory and practice, between what is taught, learned and practiced in scenarios very close to reality, with the use of readings, writings, reflections, experiences, dialogues of knowledge, experiences of others, life stories and narratives.

Introducción: los registros clínicos de enfermería conforman la evidencia escrita de los cuidados otorgados al paciente, son medio de comunicación y coordinación entre profesionales de la salud; los registros están orientados a documentar los cuidados en un marco ético legal, además de ser un indicador para la calidad del cuidado. Objetivo: evaluar el cumplimiento de los registros clínicos de enfermería. Metodología: estudio cuantitativo, de diseño transversal descriptivo. Se realizó en el Hospital General de Zona No. 2 del IMSS de Fresnillo, México. Se utilizó el total de los registros clínicos de enfermería del tablero de control, se capturaron en el instrumento de evaluación de los registros clínicos de enfermería, y se analizaron mediante estadística descriptiva, medidas de tendencia central. Resultados: el porcentaje de cumplimiento de los registros clínicos de enfermería es de 8.03%, el porcentaje de congruencia de indicaciones médicas con los registros clínicos de enfermería es de 84.48%, por lo que queda en el parámetro de 80% con base en lo estipulado en el indicador institucional clave 2660-021-002. Conclusiones: dentro del indicador de evaluación por rubro, 15 de 18 se encuentran en suficiente y tres en insuficiente; respecto al cumplimiento es suficiente, al igual que en el porcentaje de congruencia de indicaciones médicas con registros clínicos de enfermería.


Introduction: Clinical nursing records make up the written evidence of the care given to the patient, they are a means of communication and coordination between health professionals; the records are aimed at documenting care in a legal ethical framework, as well as being an indicator for the quality of care. Objective: To evaluate the compliance of the clinical nursing records. Methodology: Quantitative study, descriptive cross-sectional design. It was carried out at the General Hospital of Zone No. 2 of the Instituto Mexicano del Seguro Social in Fresnillo, Mexico. The total number of clinical nursing records from the control panel were used, they were captured in the evaluation instrument of clinical nursing records, and they were analyzed using descriptive statistics, measures of central tendency. Results: The percentage of compliance of the clinical nursing records is 8.03%, the percentage of congruence of medical indications with the clinical nursing records is 84.48%, so it remains within the parameter of 80% based on the stipulated in the key institutional indicator 2660-021-002. Conclusions: within the evaluation indicator by category, 15 of 18 are found to be sufficient and three are insufficient; Regarding compliance, it is sufficient, as is the percentage of congruence of medical indications with clinical nursing records.

Mucho se comenta en los hospitales como dicho, tal vez sin sentido, que el peor enemigo de una enfermera es otra enfermera; sin embargo, es necesario hacer una reflexión, e incluso un análisis concienzudo, sobre estas palabras ya que descontextualizan el verdadero quehacer y objetivo de la enfermería. Personalmente, considero que no es así. En primera instancia porque una persona preparada en las ciencias de la enfermería no podría considerar válida esta creencia, ya que la esencia y los valores de la enfermera dista en demasía de la palabra enemigo. El peor enemigo de la enfermera es la falta de conocimiento, ya que, al permanecer con una actitud pasiva ante los avances científicos, no dimensionamos la importancia de estar en constante entrenamiento, para que el ejercicio de nuestra profesión se lleve a cabo con los más altos estándares de calidad, tanto académica como de cuidado enfermero, con el único objetivo de reestablecer la salud de las personas. El peor enemigo de la enfermera es la falta de conocimiento, pues no se debe ejercer la enfermería basada en ocurrencias, no se debe ejercer la enfermería basada en falsas eminencias, en negligencias, en complacencias y, sobre todo, la enfermería basada en el desconocimiento. El peor enemigo de la enfermera es la falta de conocimiento, dado que al desconocer de los procesos tanto fisiológicos como patológicos, no sabremos tomar decisiones basadas en la ciencia y, por consiguiente, esas decisiones repercuten en la salud y la vida de las personas.


Much is said in hospitals as a saying, perhaps without meaning, that the worst enemy of a nurse is another nurse; however, it is necessary to make a reflection, and even a conscientious analysis, on these words since they decontextualize the true task and objective of nursing. Personally, I consider that it is not so. In the first instance, because a person trained in nursing sciences could not consider this belief valid, since the essence and values of the nurse are too far from the word enemy. The worst enemy of the nurse is the lack of knowledge, since, by remaining passive in the face of scientific advances, we do not appreciate the importance of being in constant training, so that the exercise of our profession is carried out with the most high-quality standards, both academic and nursing care, with the sole objective of restoring people's health. The worst enemy of the nurse is the lack of knowledge because nursing based on occurrences should not be practiced, nursing based on false eminences, negligence, complacency and, above all, nursing based on ignorance should not be practiced. The worst enemy of the nurse is the lack of knowledge, given that by being unaware of both physiological and pathological processes, we will not know how to make decisions based on science and, consequently, these decisions have an impact on people's health and lives.

ABSTRACT

Leukemias are the most common type of pediatric cancer around the world. Prognosis has improved during the last decades, and many patients are cured with conventional treatment as chemotherapy; however, many patients still present with a refractory disease requiring additional treatments, including hematopoietic stem cell transplantation. Immunotherapy with monoclonal antibodies or cellular therapy is a promising strategy for treating refractory or relapsed hematological malignancies. Particularly, CAR-T cells have shown clinical efficacy in clinical trials, and different products are now commercially approved by regulatory agencies in the USA and Europe. Many challenges still need to be solved to improve and optimize the potential of these therapies worldwide. Global access to cell therapy is a significant concern, and different strategies are being explored in the middle- and low-income countries. In Mexico, leukemias represent around 50% of total cancer diagnosed in pediatric patients, and the rate of relapsed or refractory disease is higher than reported in other countries, a multi-factorial problem. Although significant progress has been made during the last decades in leukemia diagnosis and treatment, making new therapies available to Mexican patients is a priority, and cell and gene therapies are on the horizon. Efforts are ongoing to make CAR-T cell therapy accessible for patients in Mexico. This article summarizes a general landscape of childhood leukemias in Mexico, and we give a perspective about the current strategies, advances, and challenges ahead to make gene and cell therapies for leukemia clinically available.

ABSTRACT

Acute lymphoblastic leukemia (ALL) is the most common malignancy among Mexican and Hispanic children and the first cause of death by disease in Mexico. We propose a "triple-hit" explanation for the survival gap affecting this population. The first hit can be attributed to epidemiology and social, cultural, and economic burdens. The second hit refers to cancer biology, with a high incidence of unfavorable genetic characteristics associated with an unfavorable response to treatment and, subsequently, poor survival. Finally, the third hit relates to sub-optimal treatment and support. Society and culture, leukemia biology, and treatment approach limitations are key factors that should not be seen apart and must be considered comprehensively in any strategy to improve the prognosis of Mexican and Hispanic children with ALL.

Natural Pickering emulsions are gaining popularity in several industrial fields, especially in the food industry and plant-based alternative sector. Therefore, the objective of this study was to characterize and compare six agri-food wastes/byproducts (lupin hull, canola press-cake, lupin byproduct, camelina press-cake, linseed hull, and linseed press-cake) as potential sources of food-grade Pickering stabilizers. The results showed that all samples contained surface-active agents such as proteins (46.71-17.90 g/100 g) and dietary fiber (67.10-38.58 g/100 g). Canola press-cake, camelina press-cake, and linseed hull exhibited the highest concentrations of polyphenols: 2891, 2549, and 1672 mg GAE/100 g sample, respectively. Moreover, the agri-food byproduct particles presented a partial wettability with a water contact angle (WCA) between 77.5 and 42.2 degrees, and they were effective for stabilizing oil-in-water (O/W) emulsions. The emulsions stabilized by Camelina press-cake, lupin hull, and lupin by-product (≥3.5%, w/w) were highly stable against creaming during 45 days of storage. Furthermore, polarized and confocal microscopy revealed that the particles were anchored to the interfaces of oil droplets, which is a demonstration of the formation of a Pickering emulsion stabilized by solid particles. These results suggest that agri-food wastes/byproducts are good emulsifiers that can be applied to produce stable Pickering emulsions.

ABSTRACT

Since the discovery of antibiotics, humanity has been able to cope with the battle against bacterial infections. However, the inappropriate use of antibiotics, the lack of innovation in therapeutic agents, and other factors have allowed the emergence of new bacterial strains resistant to multiple antibiotic treatments, causing a crisis in the health sector. Furthermore, the World Health Organization has listed a series of pathogens (ESKAPE group) that have acquired new and varied resistance to different antibiotics families. Therefore, the scientific community has prioritized designing and developing novel treatments to combat these ESKAPE pathogens and other emergent multidrug-resistant bacteria. One of the solutions is the use of combinatorial therapies. Combinatorial therapies seek to enhance the effects of individual treatments at lower doses, bringing the advantage of being, in most cases, much less harmful to patients. Among the new developments in combinatorial therapies, nanomaterials have gained significant interest. Some of the most promising nanotherapeutics include polymers, inorganic nanoparticles, and antimicrobial peptides due to their bactericidal and nanocarrier properties. Therefore, this review focuses on discussing the state-of-the-art of the most significant advances and concludes with a perspective on the future developments of nanotherapeutic combinatorial treatments that target bacterial infections.

ABSTRACT

There is an increasing interest in consuming healthy foods motivated by the need of boosting the immune system naturally. In this sense, vegetables rich in bioactive compounds are a clear example of "superfoods" that promotes overall health and strengthen the immune response. Therefore, in this study eight traditional vegetables usually produced in southern Chile (pea, corn, carrot, leek, spinach, chard, coriander and parsley) were characterized in terms of their nutritional composition to evaluate their potential as lyophilized natural ingredients. Thus, chemical composition, amino acid profile, minerals, vitamins, carotenoids, polyphenols and pesticide residues were evaluated. Green leafy vegetables resulted to be an excellent source of proteins and dietary fibers as well as vitamins (ascorbic acid, choline, alpha-tocopherol and niacin), minerals (calcium, phosphorus and iron), carotenoids and polyphenols. Among the eight vegetables assessed spinach exhibited the more balanced nutritional profile. Moreover, 332 pesticide residues were analysed and only six were detected in a low concentration. Due to their nutritional properties, the present results suggest that vegetables produced in southern Chile could be considered as promising alternatives to develop natural food ingredients.

ABSTRACT

Change is ubiquitous in the study of organizations. Organizational change is characterized by multiple perspectives, both conceptually and methodologically. Computational modeling efforts are not the exception. In this work, we aim to provide an analysis of computational modeling approaches to organizational change. For that, we first review published works that directly connect to developing knowledge in organizational change from a computational lens. Second, we offer an account of unexplored topics in computational organizational change. Last, we highlight the potentialities of computer simulation models based on agent interactions in regard to how they could contribute to the understanding of central issues in this organizational research subfield.

ABSTRACT

Chitin is one of the most abundant natural polysaccharides in the world and it is mainly used to produce chitosan by a deacetylation process. In the present study, the extraction of chitin and chitosan from the Parastacus pugnax (P. pugnax) crayfish exoskeleton was studied for the first time. Thus, the P. pugnax crayfish exoskeleton was converted to chitosan following the steps of depigmentation, deproteinization, and deacetylation. The produced chitosan (Chitosan-CGNA) was characterized in terms of the protein content, solubility, degree of deacetylation, viscosity, molecular weight, FTIR, SEM, XRD, antimicrobial, and antioxidant activity. The results showed that the obtained chitosan had a high degree of deacetylation (91.55%) and a medium molecular weight (589.43 kDa). The antibacterial activity of the chitosan was tested against bacterial strains relevant for the food industry and the lowest minimum inhibitory concentration (MIC) values were evidenced with Salmonella tiphymurium (S. typhimurium), Staphylococcus aureus (S. aureus), Enterococcus faecalis (E. faecalis) and Listeria. Monocytogenes (L. monocytogenes). Moreover, the Chitosan-CGNA showed an effect on DPPH radical scavenging activity, and its antioxidant activity was dependent on concentration and deacetylation degree. These results suggest that P. pugnax exoskeleton could be an excellent natural source for the production of chitosan with potential applications in the health system, and to prevent infections associated with pathogens strains.

ABSTRACT

The utilization of astaxanthin in food processing is considered to be narrow because of its substandard solubility in aqueous matrices and the instability of chemical compounds during the processing of food and the instability of chemical compounds during the processing of food. The investigation sought to evaluate multilayer emulsions stabilized by ionic interfacial layers of lupin protein isolate (LPI), ι-carrageenan (CA), and chitosan (CHI) on the physical stability of the emulsion as well as the retention of astaxanthin during the spray drying process. Primary emulsion (Pr-E) was prepared by adding LPI on oil droplet surfaces containing astaxanthin. The homogenization pressure and cycles to obtain the Pr-E were investigated. The secondary emulsion (Se-E) and tertiary emulsion (Te-E) were elaborated by mixing CA/Pr-E and CHI/Se-E, respectively. Emulsion stability was assessed under different environmental stresses (pH and NaCl). Astaxanthin retention of emulsions was determined immediately after finishing the spray-drying process. The results showed that Pr-E was stabilized with 1.0% (w/v) of LPI at 50 MPa and three cycles. Se-E and Te-E were obtained with CA/Pr-E and Se-E/CHI of 70/30 and 50/50% (w/w), respectively. The Se-E was the most stable compared to the Pr-E and Te-E when subjected to different pHs; nevertheless, once the NaCl concentration rose, no variations in the ζ-potential of all emulsions studied or destabilization were observed. The Se-E and Te-E derived provided higher astaxanthin retention (>95%) during the spray-drying process compared to Pr-E (around 88%). The results indicated that these astaxanthin multilayer emulsions show considerable potential as a functional ingredient in food products.

A four yearlong air monitoring data (since 2015 to 2018) was collected to assess the impact of meteorological parameters such as temperature, relative humidity, wind speed and wind direction on the spatial and temporal variability of CO (carbon monoxide), NO2 (nitrogen oxide), O3 (ozone), SO2 (sulfur dioxide), PM10 and PM2.5 (particulate matter with diameter aerodynamic less than 2.5 µm and 10 µm respectively) in Lima Metropolitan Area (LMA). Data from eight air quality monitoring stations, currently under the supervision of the National Meteorological and Hydrological Service (SENAMHI), was used to capture traffic - related pollutants concentrations under various local traffic conditions. Effects on meteorological events on seasonal traffic-related pollutants concentration variability were identified. Using average data from the eight stations, it was found that the monthly mean traffic-related pollutants since 2015 to 2018 were higher in spring and winter and lower in autumn and summer. Low-wind speed was associated with events that contribute to elevated seasonal PM2.5 levels. Correlation coefficients between PM2.5 concentrations and meteorological variables fluctuated significaly across different seasons. High PM2.5 concentrations were associated with low relative humidity and high wind conditions in spring. Results suggest that there exist a seasonal variation of PM2.5 concentration, and set the need of future work on the understanding of the air pollution effects on human health.
