ABSTRACT

Curcuma longa is a rhizome used for the extraction of curcumin, a yellow colorant that only represents 3 wt% of the dried rhizome. To increase the possibility of using the entire rhizome as a food colorant, in the present investigation, the effect of ultra-fine friction grinding (supermasscolloider) to obtain turmeric suspensions was evaluated. To achieve this goal, two distances between the grinding stones or Gap were evaluated (G of -1 and -1.5), and the obtained suspensions were characterized by infrared spectroscopy and through the determination of curcumin content, color, particle size, sedimentation index, serum cloudiness, and microstructure. The results establish that a lower G contributes to an increase in the release of curcumin in the suspension up to 21%, which is related to a greater tendency for yellow coloration, observed in the increase of the * b coordinate of color (from 61.588 to 66.497). Additionally, it was found that a lower G generates smaller particle sizes, which is related to a lower turbidity. PRACTICAL APPLICATION: This research shows that ultra-fine friction grinding (UFFG) has great potential for the development of turmeric suspensions. The results have applications in the food industry sector, because UFFG could be used to produce different types of vegetable suspensions.

ABSTRACT

A total of 44 eyes of 22 ferrets were examined by B-mode ultrasonography. Four dimensions were measured: the distance from the corneal surface to the anterior lens surface (M1), the axial lens thickness (M2), the distance from the posterior lens surface to the retina (M3) and the distance from the anterior cornea to the retina (M4). The values obtained were (mean, standard deviation, range): M1: 1.31 +/- 0.16 mm (1-1.7); M2: 3.42 +/- 0.15 mm (3.2-3.7); M3: 2.26 +/- 0.11 mm (2.1-2.5); M4: 7 +/- 0.24 mm (6.4-7.7). To our knowledge this is the first description of ocular biometric measurement in the ferret. These values show little variability of ocular dimensions in ferrets.

ABSTRACT

Children growing up in poverty are at risk for various health problems. For low-income, Mexican-American children, these risks include obesity, diabetes, and accidental injuries, 3 conditions that can largely be prevented by healthy life-styles. Despite the potential for prevention through education leading to health-promoting behaviors, very little is known about the development of health knowledge in this population. The present study examined low-income, Mexican-American children's understanding of the relation between health behavior and health status in 3 areas: nutrition, hygiene, and safety. 79 children (41 boys, 38 girls) ages 4 to 8 years participated. Children's knowledge was assessed in a structured play situation conducted in a laboratory setting. Results revealed that children knew the least about the relation between food consumption and their health, and knew the most about beneficial and harmful practices in the areas of safety and hygiene. Age and gender differences were also significant, with girls and older children more likely to provide elaborate and complex rationales for their responses. Implications of the findings for understanding the role of cognitive development and experience in the development of health knowledge are considered.
