ABSTRACT

This survey consisted of data collected from 23 beef harvest plants to document transportation procedures, management practices, and health assessments of market beef and dairy cows and bulls (about n ≅ 7,000 animals). Gooseneck/bumper-pulled trailers were used more often to transport dairy cattle than beef cattle to market whereas tractor-trailers were used more often to transport beef cattle than dairy cattle. All loads (n = 103) met the American Meat Institute Foundation guidelines for spacing. Loads where more than 3% of the cattle slipped during unloading were observed in 27.3% of beef loads and 29.0% of the dairy loads. Beef loads had numerically greater usage of electrical prods (32.4%) versus dairy loads (15.4%) during unloading and were more likely to have a variety of driving aids used more aggressively on them. Fewer cattle had horns, brands, and mud/manure contamination on hides than in the previous survey in 1999. The predominant hide color for beef cows was black (44.2%) whereas the predominant color for dairy cows was the Holstein pattern (92.9%). Fewer cattle displayed evidence of bovine ocular neoplasia (2.9%) than in previous surveys in 1994 (8.5%) and 1999 (4.3%). Knots on live cattle were found less in the round (0.5%) and more in the shoulder region (4.6%) than in 1999 (1.4% and 0.4%, respectively). Dairy cows were more frequently lame in 2007 (48.7%) than 1999 (39.2%) whereas beef cows had numerically less lameness (16.3% vs. 26.6%, respectively). Most beef cows (62.3%) and dairy cows (68.9%) received midpoint body condition scores (3, 4, and 5 for beef; 2 and 3 for dairy). Beef cows had higher numerical percentages of no defects present (72.0%) versus dairy cows (63.0%) when evaluated for a variety of reproductive, health, or management conditions. Continued improvements in several key factors related to transportation, management, and health were observed in this survey, which could result in increased value in market beef and dairy cows and bulls.

ABSTRACT

Preblending A- and C-maturity muscles with MgCl(2) and/or CaCl(2) was investigated in low-fat, low-sodium restructured beef. Products were formulated to contain: 1) 80% chunks, preblended 12h with 0.05% MgCl(2), 0.05% CaCl(2), or a combination of each (0.1%) and 0.4% sodium tripolyphosphate (STPP) and 2) 20% mince preblended 12h with 0.05% of each dicationic salt or the combination of dicationic salts (0.1%), 0.4% STPP, and 1.0% NaCl. This formulation achieved a raw product NaCl content of 0.2%. Additionally, a control was formulated with chunks and mince that contained no dicationic salt. CaCl(2) decreased raw and cooked pH and cook yield, and increased cohesiveness; whereas, MgCl(2) increased cook yield and myosin solubility. Total protein solubility was not affected by muscle maturity or dicationic treatment. Myosin solubility of the combination treatment was greater for C-maturity muscle (57 months) compared to A-maturity muscle (20 months) formulations. Control, C-maturity muscle treatments contained more insoluble and total collagen (p < 0.05), and these treatments were more cohesive (p < 0.05) than control, A-maturity treatments. The combination of CaCl(2) and MgCl(2) increased hardness of A-maturity products, but it decreased hardness of C-maturity products. In addition to increasing hardness of A-maturity products, the combination treatment lowered (p < 0.05) cook yield for these products.

ABSTRACT

A market basket survey for beef retail cut composition at the retail level (four stores each from two chains in each city) was conducted in 11 US cities from January to March 2006. Beef cuts (n=17,495) were measured for external fat thickness with cuts from the chuck (0.05cm), round (0.05cm), and miscellaneous (0.04cm) having less (P<0.05) fat than cuts from the loin (0.11cm) and rib (0.11cm). Beef cuts (n=1327) were separated physically into separable components with round cuts having more (P<0.05) separable lean (96.63%) than chuck cuts (86.81%) and miscellaneous cuts (86.18%), which had more (P<0.05) separable lean than loin cuts (84.53%) with rib cuts (69.34%) having the lowest (P<0.05) separable lean. Chemical fat from the separable lean differed (P<0.05) between each cut category: round cuts (3.71%), miscellaneous cuts (4.99%), loin cuts (5.60%), chuck cuts (6.90%), and rib cuts (8.61%). Ground beef samples (n=235), with declared lean/fat percentages ranging from 73/27 to 96/4, had overall chemical fat values of 13.41% and moisture values of 67.42%. This survey documents the current beef retail cut and ground beef composition, which is helpful to those who need this information for various dietary and marketing purposes.

ABSTRACT

Beef from retail and foodservice establishments in 11 US cities was evaluated using Warner-Bratzler shear (WBS) and consumer evaluation panels. Postmortem aging times ranged from 3 to 83d for retail and 7 to 136d for foodservice with mean aging times of 22.6d and 30.1d, respectively. For retail, the three cuts from the round - top round, bottom round, and eye of round - had the highest (P<0.05) WBS values compared to cuts from the chuck, rib, and loin. Top loin steaks had the lowest (P<0.05) WBS value compared to ribeye and top sirloin foodservice steaks. Retail bone-in top loin, top loin, ribeye, T-bone, and porterhouse received the highest (P<0.05) ratings by consumers for overall like and like tenderness. Quality grade had little or no effect on foodservice sensory evaluations. Improvements in round tenderness are needed to increase consumer acceptability.

ABSTRACT

Carcass traits have been successfully used to determine body composition of steers. Body composition, in turn, has been used to predict energy content of ADG to compute feed requirements of individual animals fed in groups. This information is used in the Cornell value discovery system (CVDS) to predict DM required (DMR) for the observed animal performance. In this experiment, the prediction of individual DMR for the observed performance of group-fed yearling bulls was evaluated using energy content of gain, which was based on ultrasound measurements to estimate carcass traits and energy content of ADG. One hundred eighteen spring-born purebred and crossbred bulls (BW = 288 +/- 4.3 kg) were sorted visually into 3 marketing groups based on estimated days to reach USDA low Choice quality grade. The bulls were fed a common high-concentrate diet in 12 slatted-floor pens (9 to 10 head/pen). Ultrasound measurements including back-fat (uBF), rump fat, LM area (uLMA), and intramuscular fat were taken at approximately 1 yr of age. Carcass measurements including HCW, backfat over the 12th to 13th rib (BF), marbling score (MRB), and LM area (LMA) were collected for comparison with ultrasound data for predicting carcass composition. The 9th to 11th-rib section was removed and dissected into soft tissue and bone for determination of chemical composition, which was used to predict carcass fat and empty body fat (EBF). The predicted EBF averaged 23.7 +/- 4.0%. Multiple regression analysis indicated that carcass traits explained 72% of the variation in predicted EBF (EBF = 16.0583 + 5.6352 x BF + 0.01781 x HCW + 1.0486 x MRB - 0.1239 x LMA). Because carcass traits are not available on bulls intended for use as herd sires, another equation using predicted HCW (pHCW) and ultrasound measurements was developed (EBF = 39.9535 x uBF - 0.1384 x uLMA + 0.0867 x pHCW - 0.0897 x uBF x pHCW - 1.3690). This equation accounted for 62% of the variation in EBF. The use of an equation to predict EBF developed with steer composition data overpredicted the EBF predicted in these experiments (28.7 vs. 23.7%, respectively). In a validation study with 37 individually fed bulls, the use of the ultrasound-based equation in the CVDS to predict energy content of gain accounted for 60% of the variation in the observed efficiency of gain, with 1.5% bias, and identified 3 of the 4 most efficient bulls.

ABSTRACT

Because veal lean color continues to be a primary factor that determines veal carcass value and is typically assessed by subjective means, it is important to explore objective methods for color assessment. Objective and subjective evaluations of veal flank and breast lean color were compared as predictors of longissimus lean color at 24 h postmortem. One hundred fifty special-fed Holstein veal calves were Kosher-slaughtered with blood samples collected upon exsanguination and analyzed for hematocrit and hemoglobin content. Lean color was evaluated in the flank and breast at 0, 6, 12, and 24 h postmortem. Color of the longissimus was evaluated at 6 h, when possible, and at 24 h. A panel of three trained individuals used a 5-point color standard developed in the Netherlands to visually evaluate lean color. A Minolta Chromameter CR-300 was used to obtain L*, a*, and b* values. A plant employee assigned packer grades at slaughter. Temperature and pH were also measured at each time period. Hemoglobin was more highly correlated than hematocrit with colorimeter values. Hemoglobin levels correlated well with a* values of the flank at 0 h postmortem (r = 0.52) although the correlation declined at 24 h (r = 0.30). The correlation between packer grades and 24-h visual loin color was r = 0.41. Visual loin color at 24 h postmortem was selected as the predicted variable for regression analysis. Temperature and pH did not contribute significantly to any prediction equations. The equation using breast L*, a*, and b* values at 24 h postmortem to predict 24-h loin color gave a higher prediction coefficient (R2 = 0.44) than the corresponding equation using 0-h breast values (R2 = 0.28). Objective measurement of lean color may be useful in veal carcass grading because it is more precise than subjective methods and would allow for uniformity among processing plants.

Fifty-six retail stores representing 15 retail chains and 14 foodservice facilities in eight U.S. cities were sampled to determine the tenderness of beef steaks at retail and foodservice levels based on Warner-Bratzler shear (WBS) values and consumer evaluation panels. Retail consumer panels were conducted at five universities. Each retail and foodservice steak was evaluated using 10-point scales. Steaks were divided into the following quality groups for statistical analysis: Prime, Top Choice, Choice, Select, and Lean or No Roll. Quality group had no effect on WBS values of retail clod, chuck roll, top round, bottom round, eye of round, top loin, top sirloin, or ribeye steaks but did (P < .05) affect values for the T-bone/porterhouse. The percentages of retail top round, eye of round, and bottom round steaks with a WBS force > 3.9 kg were 39.6, 55.9, and 68.0, respectively. Foodservice ribeye, top loin, and top sirloin steaks had WBS values less than 3.4 kg for all quality groups, with Prime ribeye steaks having lower (P < .05) WBS values than ribeyes from the other quality groups. With the exception of the retail ribeye steak, quality group did not affect consumer sensory ratings of retail and foodservice steaks. Average postfabrication aging times were 32 d for foodservice subprimals and 19 d for retail cut subprimals. These data indicate that improvements in the tenderness of retail cuts from the round are needed. Finally, quality group had little or no effect on consumer sensory evaluations and WBS values of retail and foodservice steaks used in this study.

ABSTRACT

This study was undertaken to determine if association with collagen enables Escherichia coli O157:H7 to resist high-pH treatments and to determine the effects of high pH on the survival of E. coli O157:H7 within different layers of beef tissue. E. coli O157:H7 was inoculated onto purified bovine type I collagen on 12-mm2 circular glass coverslips, plain 12-mm2 circular glass coverslips (control), and 12-mm2 irradiated (cobalt-60) lean beef tissue. The rates of destruction of E. coli O157:H7 inoculated on coverslips in pH 10.5 NaHCO3-NaOH buffer at 35 degrees C were determined at various sampling times. E. coli O157:H7 cells associated with collagen and treated in the same manner were also examined using scanning electron microscopy to determine if association with collagen enabled the organism to resist high-pH treatments. The inoculated tissue was treated in pH 13.0 NaHCO3-NaOH buffer at 25 degrees C, and penetrating cells of E. coli O157:H7 were recovered using a cryostat technique. There was no significant difference (P < 0.05) between the rates of destruction of collagen-associated E. coli O157:H7 and non-collagen-associated E. coli O157:H7 following exposure to high-pH treatments. Scanning electron micrographs showed that collagen-associated E. coli O157:H7 cells appeared physically damaged by exposure to high-pH treatments, and association of E. coli O157:H7 to collagen did not increase the resistance of the organism to destruction by high-pH rinses. No significant differences were seen between 20 ml of NaHCO3-NaOH buffer at pH 13.0 (treatment) and 20 ml of distilled water at pH 7.0 (control) when E. coli O157:H7 cells were recovered in beef tissue at depths of up to 2,000 microm (P < 0.05). The ability of E. coli O157:H7 to penetrate beef tissue may be an important factor in reducing the effectiveness of high-pH treatments in killing this organism on beef tissue. This finding should be considered in the future when designing treatments to decontaminate beef carcasses.

ABSTRACT

Growth and carcass characteristics were measured on 975 Holstein bull calves raised on four commercial veal farms (nine feeding groups). Average values for blood hemoglobin (Hb), live weight and gain, dressing percentage (DP; hide-on and hide-off), visual muscle color score, rib-eye-area (REA), and carcass conformation score were 7.8 g/dl, 187.1 kg, 1.46 kg/d, 67.4%, 60.4%, 1.42, 42.0 sq cm, and 11.7, respectively. Carcass weights averaged 127.6 and 112.4 kg for hide-on and hide-off, respectively. There were few significant correlations of Hb with growth performance, carcass weight or DP. Pre-slaughter Hb was correlated 0.54 (P < 0.01) with flank muscle color score. Calves which were either heavier or which gained weight more rapidly tended to have slightly lower muscle color scores, larger REA and higher carcass conformation scores. Results from this study suggest that pre-slaughter Hb levels are higher than previously reported in specialfed veal, and there is no apparent relationship of Hb value, red blood cell count or mean corpuscular hemoglobin with growth performance traits. Although final Hb values were moderately predictive of muscle color score (accounting for 29% of the within-group variance), apparently there are other factors both within and between farms which influence muscle color in special-fed veal carcasses.

ABSTRACT

Effects of different doses of zeranol on ADG, hemoglobin (Hb), feed efficiency (FE), and carcass traits were evaluated in special-fed veal calves in two trials. On d 0, calves were implanted subcutaneously in the middle third of the ear with either 0 (control, placebo pellet), 12, 24, 36, or 48 mg of zeranol. Trial 1 was conducted from February through May 1990 with 120 Holstein bull calves (17 to 21 d of age on d 0) and Trial 2 was conducted from May through August 1991 with 100 Holstein bull calves (24 to 28 d of age d 0). Calves were fed on an individual calf basis. Calves in Trial 1 that were implanted with 48 mg of zeranol had improved FE (P < .05) and ADG (P < .05) during Period 1 (0 to 43 d). No significant differences in ADG or FE were observed among treatments in Trial 2. Hemoglobin levels at slaughter averaged 7.88 +/- .096 and 8.19 +/- .149 g/dL over all treatments for Trials 1 and 2, respectively. The only postslaughter trait affected by zeranol dose was testicular weight. In both trials, testicular weight at slaughter decreased (P < .05) with increasing doses of zeranol. Dressing percentage tended to be higher for 48-mg implants than for controls but the difference was not significant. There were no significant zeranol dose effects on longissimus muscle area, flank color, carcass conformation, or percentage of fore- vs hind-quarter weight. These results indicated that higher doses of zeranol improved ADG and FE during the first 6 wk after the trial period (to 8 wk of age), decreased testicular weight, and increased hide-on carcass dressing percentage for calves implanted with 48 mg of zeranol compared with those that received 0 mg of zeranol.

ABSTRACT

This experiment determined meat composition and palatability changes resulting from feeding Holstein (HOL) and crossbred beef (XB) steers diets containing corn silage (CS) or alfalfa haylage (AH) (forage type) and soybean meal (SM) or fish meal (FM) (protein source). Fifty-nine steers (30 HOL and 29 XB) were randomly assigned to diet combinations for a 2 x 2 x 2 (breed x forage x protein) factorial arrangement. Steers were fed to a fat-constant end point (fat depth over the longissimus muscle measured by ultrasound: 1.0 cm XB, .6 cm HOL). Proximate and fatty acid analysis and sensory evaluation were conducted on a rib eye roast and steaks, respectively, removed from the left side of each carcass at ribs 9 to 12. Proximate analysis of the longissimus muscle showed no significant difference (P greater than .05) in moisture, protein, or fat content due to breed, forage, or protein treatment. Forage type had no significant effect (P greater than .05) on amount of individual fatty acids found in longissimus muscle. However, total polyunsaturated fatty acids were higher (P greater than .05) for AH than for CS-fed animals. Longissimus muscle from steers fed FM had higher palmitoleic and lower stearic acid contents (both P less than .05) than longissimus muscle from animals fed SM. Muscle from HOL had higher palmitoleic and lower stearic acid contents than that from XB steers (both P less than .05). There was no significant interaction (P greater than .05) of breed with either diet treatment for individual fatty acid contents.(ABSTRACT TRUNCATED AT 250 WORDS)

ABSTRACT

Fifty-eight Holstein and 58 crossbred beef steers were individually fed one of four isonitrogenous diets to evaluate the effects of forage source (corn silage and alfalfa haylage) and protein source (soybean meal and fish meal) on feedlot performance. Phase 1 diets (up to 354 kg of BW) were 40% forage and 60% concentrates and were fed for 70 to 136 d (depending on diet and breed group). Phase 2 diets (354 kg of BW until slaughter) were 20% forage and 80% concentrates and were fed for 127 to 150 d (depending on diet and breed group). Slaughter end points were .6 cm of 12th rib fat for Holsteins and 1.0 cm of rib fat for crossbreds using real-time ultrasonic estimates. The steers were fed for a maximum of 330 d each year. Forage source was a significant component of variation for most growth, efficiency, and carcass traits. Holstein and crossbred steers fed alfalfa haylage had significantly lower average daily gain, feed efficiency, dressing percentage, and empty body fat and required more days on feed to reach slaughter end points, but had higher total feed energy intake available for production. Steers fed corn silage diets had significantly greater energetic efficiency (P less than .05) than those fed alfalfa haylage, due to increased use of ME to produce fat in the carcass. Protein type did not influence gain, feed or energetic efficiency, energy intake, or most carcass traits. A significant protein system x forage source interaction among the four diets was detected for crossbred steers fed corn silage and fish meal, for which there was significantly greater feed conversion with lower energy intake above maintenance, possibly due to better fiber digestion and(or) amino acid flow to the lower tract. Alfalfa haylage plus soybean meal diets decreased (P less than .05) the percentage of Holsteins grading USDA Choice or higher. These results indicate that corn silage, because of greater energy concentration, was a more desirable forage in feedlot diets composed of less than or equal to 40% forage and that protein type (soybean meal and fish meal) in growing diets is not an important factor in feedlot performance or carcass traits of Holstein or crossbred steers that are fed these diets.
