ABSTRACT

Charolais-sired heifers and steers from Angus, Angus × Holstein-Friesian, Angus × Holstein-Friesian-Jersey and Angus × Jersey cows were measured for growth, carcass, and meat quality characteristics. Despite differences in weaning weight and growth rate, the progeny of different breed-crosses did not differ in final live weight or carcass weight (P > 0.05). Carcass and meat quality characteristics did not differ among breed-crosses (P > 0.05), except for fat that was more yellow in progeny from Angus and Angus-cross-Jersey dams. Steers were slaughtered older and had heavier carcasses with greater fat depth and intramuscular fat than heifers. Meat quality differed between the sex classes, with steers having greater pH and shear force, redder meat, and yellower fat than heifers. Angus-cross-dairy cows when crossed with a beef breed sire such as the Charolais will provide progeny for meat production which are competitive to beef breeds for beef finishing and meat production and therefore, a useful mechanism to utilize surplus animals from the dairy industry.

ABSTRACT

This study estimated genetic parameters and identified candidate genes associated with live weight, and the occurrence of pregnancy in 1327 Romney ewe lambs using genome-wide association studies. Phenotypic traits considered were the occurrence of pregnancy in ewe lambs and live weight at eight months of age. Genetic parameters were estimated, and genomic variation was assessed using 13,500 single-nucleotide polymorphic markers (SNPs). Ewe lamb live weight had medium genomic heritability and was positively genetically correlated with occurrence of pregnancy. This suggests that selection for heavier ewe lambs is possible and would likely improve the occurrence of pregnancy in ewe lambs. No SNPs were associated with the occurrence of pregnancy; however, three candidate genes were associated with ewe lamb live weight. Tenascin C (TNC), TNF superfamily member 8 (TNFSF8) and Collagen type XXVIII alpha 1 chain (COL28A1) are involved in extracellular matrix organization and regulation of cell fate in the immune system. TNC may be involved in ewe lamb growth, and therefore, could be of interest for selection of ewe lamb replacements. The association between ewe lamb live weight and TNFSF8 and COL28A1 is unclear. Further research is needed using a larger population to determine whether the genes identified can be used for genomic selection of replacement ewe lambs.

ABSTRACT

The objective of this study was to identify genomic regions and genes that are associated with the milk composition and fertility traits of spring-calved dairy cows in New Zealand. Phenotypic data from the 2014-2015 and 2021-2022 calving seasons in two Massey University dairy herds were used. We identified 73 SNPs that were significantly associated with 58 potential candidate genes for milk composition and fertility traits. Four SNPs on chromosome 14 were highly significant for both fat and protein percentages, and the associated genes were DGAT1, SLC52A2, CPSF1, and MROH1. For fertility traits, significant associations were detected for intervals from the start of mating to first service, the start of mating to conception, first service to conception, calving to first service, and 6-wk submission, 6-wk in-calf, conception to first service in the first 3 weeks of the breeding season, and not in calf and 6-wk calving rates. Gene Ontology revealed 10 candidate genes (KCNH5, HS6ST3, GLS, ENSBTAG00000051479, STAT1, STAT4, GPD2, SH3PXD2A, EVA1C, and ARMH3) that were significantly associated with fertility traits. The biological functions of these genes are related to reducing the metabolic stress of cows and increasing insulin secretion during the mating period, early embryonic development, foetal growth, and maternal lipid metabolism during the pregnancy period.

ABSTRACT

Meat quality of beef-cross-dairy cattle born in the dairy industry and finished on hill-country pastures is not well characterised. This experiment aimed to objectively evaluate meat quality traits of 15 Angus and 18 Hereford sires via progeny testing of their 326 beef-cross-dairy offspring, and to compare the intramuscular fat (IMF) percentage with the AUS-MEAT marble scores. Beef-breed sires had similar and overall good objective meat quality characteristics. Ultimate pH was not affected by sire (P > 0.05). The differences among sires in meat quality (fat yellowness b*, meat redness a*, yellowness b* and chroma C*, cook loss and shear force, P < 0.05) were small and all values were within the normal range for beef. Marble scores could capture the variation of IMF at marbling score 1-3, but was not effective to distinguish between 0 and 1. In conclusion, the effect of sire on the meat quality of the beef-cross-dairy progeny in this study was of minor importance.

Approximately two thirds of the annual beef kill in New Zealand originates from the dairy industry. The recent increase in Jersey genetics in the dairy herd will inevitably result in an increase in Jersey genetics entering the beef herd from retention of dairy-origin calves for finishing. Limited literature is available on the effect of dam breed on the performance of beef-cross-dairy-breed progeny. The aim of this study was to investigate the effect of dam breed from dams with varying proportions of Friesian and Jersey genetics on growth traits and carcass characteristics of their 24-month-old beef-cross-dairy-breed heifer and steer progeny. Liveweights of 142 heifers and 203 steers from Friesian (F), Friesian-cross (FX), Friesian-Jersey (FJ) and Jersey-cross (JX) dams were recorded at birth, weaning, as yearlings and at slaughter. Carcass characteristics were also recorded. At each point measured, liveweight was greatest for calves born to F dams. Calves born to F dams took 93 days to reach a weaning weight of 100 kg, whereas those from FX, FJ and JX dams took 99, 101 and 102 days, respectively. Carcass weight was greatest for progeny of F dams (286 kg, compared with 279, 275 and 276 for progeny of FX, FJ and JX dams, respectively). The progeny of JX dams had yellower fat than all other dam breed groups and a greater incidence of excessively yellow fat (fat score ≥ 5).

This experiment examined the effect of breeding heavier ewe lambs on lamb production and their efficiency over their first three breeding seasons. Two groups of ewe lambs were bred at seven months of age at an average pre-breeding live weight of either 47.9 ± 0.36 kg (heavy; n = 135) or 44.9 ± 0.49 kg (control; n = 135). Ewe live weight, number of lambs born and weaned, and lamb live weight were recorded until 39 months of age, and efficiency was calculated for each ewe. Although the number and lamb weaning weight did not differ between treatments over three years, when data were pooled, heavier ewe lambs at breeding weaned a greater number of lambs over the three-year period. The total lamb weaning weight over the three-year period increased by 2% for each additional kilogram at ewe lamb breeding. Breeding heavier ewe lambs had no effect on efficiency. These results suggest that although breeding heavier ewe lambs had a positive effect on lamb production over the three-year period, it had no effect on efficiency. Before final recommendations can be made, lifetime performance and longevity to five years of age of heavier ewe lambs at breeding are required.

ABSTRACT

On average, half of the animal's estimated breeding value (EBV) is passed on to their progeny. However, it is not known how the performance of beef-cross-dairy cattle relates to the EBV of their beef sire. Such information is required to determine the genetic potential of beef sires selected based on existing EBV to be used on dairy cows in New Zealand. This study evaluated the relationship between the EBV of 30 Angus and 34 Hereford sires and the performance of their progeny for birth, growth, and carcass traits, via progeny testing of 975 beef-cross-dairy offspring born to dairy cows and grown on hill country pasture. Overall, BREEDPLAN EBV did predict progeny performance of the beef-cross-dairy cattle from this study. Gestation length and birthweight increased with increasing sire EBV (mean 0.37-0.62days and 0.52-0.64kg, respectively, p<0.05). Age at weaning decreased with increasing sire EBV for liveweight at 200days (0.17-0.21days per extra kilo of sire EBV, p<0.05) but sire EBV for liveweight at 200days had no effect on the liveweight of the progeny at 200days for either breed (p>0.05). Liveweight increased with sire EBV for liveweight at 400, 600, and 800days, by a similar amount for both breeds (between 0.23 and 0.42kg increase in progeny liveweight per extra kilo of sire EBV, p<0.05). The relationships were more inconsistent for carcass traits. For Hereford, carcass weight and eye muscle area increased with increasing sire EBV (0.27kg and 0.70cm2, respectively, p<0.05). For Angus, marble score increased by 0.10 with 1% extra in sire EBV for intramuscular fat (p<0.05). Rib fat depth tended to increase with sire EBV for both breeds (p<0.1). EBV derived from beef-breed data work in dairy-beef systems but maybe slightly less than the expected 0.5units of performance per unit of EBV. New Zealand farmers should consider BREEDPLAN EBV when selecting sires to mate dairy cows or when buying beef-cross-dairy calves for beef production, to ensure the resulting calves are born safely and on time and then grow well to produce carcasses of suitable meat and fat composition.

Maternal performance is a major driver of profitability in cow-calf beef cattle enterprises. The aim of this research was to evaluate the inheritance of maternal performance traits and examine the intercorrelation among reproduction, live weight, hip height, body condition and maternal contribution to calf weaning weight in 15-month-old heifers, 2-year-old cows and mature cows in New Zealand beef herds. Data were collected on a total of 14,241 cows and their progeny on five commercial New Zealand hill country farms. Heritabilities were low for reproductive traits in heifers and mature cows (0-0.06) but were greater in 2-year-old cows (0.12-0.21). Body condition scores were lowly (0.15-0.26) and live weights (0.42-0.48) and hip heights (0.47-0.65) highly heritable in heifers, 2-year-old cows and mature cows. Results indicate that 2-year-old cows with higher genetic potential for rebreeding ability may have greater genetic merit for live weight, hip height and body condition as heifers (rg = 0.19-0.54) but are unlikely to be larger cows at maturity (rg = -0.27--0.10). The maternal genetic effect on weaning weight had a heritability of 0.20 and was negatively genetically correlated with body condition score in lactating cows (rg = -0.55--0.40) but positively genetically correlated with rebreeding performance (rg = 0.48).

In cattle, limited data have been reported about the relationship between live weight, bone size, and strength and how this relationship can be altered by factors such as sex and age. The aim of this study was to describe the relationship of peripheral quantitative computed tomography (pQCT)-derived parameters of bone strength and morphology with live weight, age and sex in beef-cross-dairy cattle. All animals were weighed the day before slaughter. The metacarpus and humerus were collected at slaughter and scanned at the mid-diaphysis using pQCT. Live weight was the primary explanatory variable for bone size and strength in all cohorts. However, the effect of age was significant, such that magnitude of response to liveweight was less in the 24-month-old cohort. Sex was significant within cohorts in that bulls had a shorter metacarpus than steers and heifers had a shorter metacarpus than steers at age of slaughter.

Currently, 30-43% of New Zealand sheep farmers breed their ewe lambs, but few retain the offspring as replacements for their flock. No difference in lamb production as a yearling among singletons and twins born to ewe lambs and twins born to mature ewes has been reported, provided the ewe lambs had reached the 60-65% of their likely mature weight prior to breeding at seven to eight months of age. The aim of this experiment was to determine the lamb production from singletons and twins born to ewe lambs and twins born to mature ewes during their first two years of lambing. The experiment included 8-month-old ewes born as twins to mature ewes (M2, n = 135), singletons born to ewe lambs (L1, n = 135), and twins born to ewe lambs (L2, n = 88), bred during the same period to the same rams, over two years. The efficiency of lamb production (total litter weight at weaning divided by the pre-breeding weight of the ewe, for all ewes presented for breeding) after two years of production was not significantly different (p > 0.05) among the groups (0.40 ± 0.02, 0.39 ± 0.02, and 0.39 ± 0.03, for M2, L1, and L2, respectively).

There is interest in increasing the carcass value of surplus calves born in the dairy industry that are reared for beef production in New Zealand. This experiment evaluated the carcass of Angus and Hereford sires via progeny testing of beef-cross-dairy offspring grown on hill country pasture. Weight and carcass traits were analyzed from 1015 animals and 1000 carcasses of 73 sires. The mean of the progeny group means was 567 kg for live weight at slaughter, 277 kg for carcass weight, 48.9% for dressing-out, 240.3 cm for carcass length, 73.6 cm2 for eye muscle area, 7.4 mm for rib fat depth, 0.91 for marble score, 3.05 for fat color score, 3.01 for meat color score, and 5.62 for ultimate pH. Sire affected (p < 0.05) carcass size and fat traits, but not fat color, meat color, or ultimate pH (p > 0.05). There was a 46 kg increase in carcass weight between the best and worst sires tested. Carcass fat traits were the most variable among sires. The use of genetically superior beef-breed sires over dairy-breed cows has the potential to increase carcass weights from surplus calves born in the dairy industry, while maintaining adequate fat levels and carcass quality.

This paper aims to develop standards for a welfare assessment protocol by validating potential categorisation thresholds for assessing beef farms in various beef cow-calf production systems in Namibia. Forty measures, combined from a New Zealand-based protocol plus Namibia-specific measures, are applied to 55 beef farms (17 commercial farms, 20 semi-commercial and 18 communal village farms) during pregnancy testing, and a questionnaire guided interview. The categorised measures on a 3-point welfare score (0: good, 1: marginal, and 2: poor/unacceptable welfare) are subsequently compared with the derivation of thresholds based upon the poorest 15% and best 50% of herds for each measure. The overall combined thresholds of continuous measures across the three farm types show 10/22 measures that posed welfare compromise across Namibia, whereas commercial farms have 4/22 measures, and semi-commercial and communal village farms have 12/22 and 11/22, respectively, with high thresholds. Most measures-imposed thresholds are retained because of significant importance to the welfare of animals and preventiveness of the traits, while leniency was given to adjust good feeding and mortality measures to signify periods of drought. Handling measures (fearful, falling/lying) and abrasions thresholds are adjusted to reflect the temporary stress caused by infrequent cattle handling, and faulty yard designs/design and possible cattle breed influence on handling. Hence, Namibia needs prioritised investigation of underlying contributing factors and remediation to reduce the high thresholds.

ABSTRACT

A proposed animal welfare assessment protocol for semi-arid rangeland-based cow-calf systems in Namibia combined 40 measures from a protocol developed for beef cattle in New Zealand with additional Namibia-specific measures. Preliminary validation of the protocol had been undertaken with five herds in one semi-commercial village. The aim of the current study was to apply this protocol and compare animal welfare across three cow-calf production systems in Namibia. A total of 2529 beef cows were evaluated during pregnancy testing in the yards of 17 commercial, 20 semi-commercial, and 18 communal (total: 55) herds followed by an assessment of farm resources and a questionnaire-guided interview. Non-parametric tests were used to evaluate the difference in the welfare scores between the production systems. The results indicated a discrepancy of animal welfare between the three farm types, with a marked separation of commercial farms from semi-commercial, and communal village farms in the least. The differences in these production systems were mainly driven by economic gains through access to better beef export market for commercial farms and semi-commercial villages, as well as by the differences in the available grazing land, facility designs/quality, and traditional customs in the village systems. The results indicate an advantage of commercialization over communalization.

Research has shown that enhancing finishing performance in beef cows is feasible; however, any adverse impact of selection strategies for finishing performance on the performance of the maternal herd should be taken into account. The aim of this research was to examine the inheritance of growth, ultrasound and carcass traits in finishing beef cattle and to evaluate their correlations with maternal performance traits. Data were collected from a nationwide progeny test on commercial New Zealand hill country farms comprising a total of 4473 beef cows and their progeny. Most finishing traits were moderately to highly heritable (0.28-0.58) with the exception of meat or fat colour and ossification (0.00-0.12). Ultrasound scan traits had high genetic correlations with corresponding traits measured at slaughter (rg = 0.53-0.95) and may be used as a selection tool for improved genetic merit of the beef carcass. Fat content determined via ultrasound scanning in the live animal or at slaughter in finishing cattle is positively genetically correlated with rebreeding performance (rg = 0.22-0.39) in female herd replacements and negatively correlated with mature cow live weight (rg = -0.40 to -0.19). Low-magnitude associations were observed between the genetic merit for carcass fat traits with body condition in mature cows.

One key area where animal welfare may relate to productivity is through reproductive performance. This study assesses welfare on 25 extensively managed pastoral New Zealand beef farms, and explores the relationship between welfare and reproductive performance. Relationships between welfare measures and key reproductive performance indicators (pregnancy rate, weaning rate, mating period and bull: cow ratio) are investigated using an exploratory principal components analysis and linear regression model. Seven welfare measures (thinness, poor rumen fill, dirtiness, blindness, mortality, health checks of pregnant cows and yarding frequency/year) showed a potential influence on reproductive performance, and lameness was retained individually as a potential measure. Mean pregnancy rates, in both 2018 (PD18) and 2017 (PD17), were ~91% and mean weaning rate was 84%. Of the welfare measures, only lameness had a direct association with pregnancy rate, as well as a confounding effect on the association between mating period and pregnancy rate. The bull: cow ration (mean 1:31) and reproductive conditions (dystocia, abortion, vaginal prolapse) did not influence pregnancy and weaning rates. In the study population, there was no clear association between welfare and reproductive performance, except for the confounding effects of lameness.

Little is known about the growth performance of beef sires used over dairy cows in New Zealand. This experiment aimed to evaluate the growth of Angus and Hereford sires via progeny testing of beef-cross-dairy offspring born to dairy cows and grown on hill country pasture. Live weights at 131, 200, 400, 600 and 800 days were analysed from a dataset of 5208 records from 1101 progeny of 73 sires. The means of the progeny group means for live weight were 118.6 kg at 131 days, 159.1 kg at 200 days, 284.2 kg at 400 days, 427.0 kg at 600 days and 503.6 kg at 800 days, and the overall daily growth rate was 0.58 kg/day from 131 to 800 days. The sire affected (p < 0.05) the live weight of their progeny at all ages. Differences in live weights between the lightest and heaviest progeny group means increased from 19 kg at 131 days to 90 kg at 800 days. Even though growth of calves was likely restricted to 200 days, live weight at 200 days explained 51-56% of the variation in live weights at 400 and 600 days (p < 0.05). Thus, the use of beef sires selected for growth has the potential to increase the live weight of cattle born on dairy farms for meat production.

Potential measures suitable for assessing welfare in pasture-based beef cow-calf systems in New Zealand were identified from Welfare Quality and UC Davis Cow-Calf protocols. These were trialled on a single farm and a potential protocol of 50 measures created. The aim of this study was to assess the feasibility of the measures included in this protocol on multiple farms in order, to develop a credible animal welfare assessment protocol for pasture-based cow-calf farms systems in New Zealand. The assessment protocol was trialled on 25 farms over two visits and took a total of 2.5 h over both visits for a 100-cow herd. The first visit in autumn included an animal welfare assessment of 3366 cows during pregnancy scanning, while the second visit in winter included a questionnaire-guided interview to assess cattle management and health, and a farm resource evaluation. Through a process of eliminating unsuitable measures, adjustments of modifiable measures and retaining feasible measures, a protocol with 32 measures was created. The application of the protocol on the farms showed that not all measures are feasible for on-farm assessment, and categorisation of identified animal welfare measures into scores that indicate a threshold of acceptable and non-acceptable welfare standards is necessary.

The intention of this study was to develop standards for a welfare assessment protocol by validating potential categorisation thresholds for the assessment of beef farms in New Zealand. Thirty-two measures, based on the Welfare Quality and the University of California (UC) Davis Cow-Calf protocols, plus some indicators specific to New Zealand, that were assessed during routine yardings of 3366 cattle on 25 cow-calf beef farms in the Waikato region were categorised on a three-point welfare score, where 0 denotes good welfare, 1 marginal welfare, and 2 poor/unacceptable welfare. Initial categorisation of welfare thresholds was based upon the authors' perception of acceptable welfare standards and the consensus of the literature, with subsequent derived thresholds being based upon the poorest 15% and best 50% of farms for each measure. Imposed thresholds for lameness, dystocia, and mortality rate were retained in view of the significance of these conditions for the welfare of affected cattle, while higher derived thresholds appeared more appropriate for dirtiness and faecal staining which were thought to have less significant welfare implications for cattle on pasture. Fearful/agitated and running behaviours were above expectations, probably due to the infrequent yarding of cows, and thus the derived thresholds were thought to be more appropriate. These thresholds provide indicators to farmers and farm advisors regarding the levels at which intervention and remediation is required for a range of welfare measures.

Calf growth rate in relation to future milk production has been thoroughly studied; however, the observation of growth arrest lines in bones from heifers with humeral fractures has highlighted the need to understand bone growth in relation to calf growth. The aim of this study was to describe the relationship of peripheral quantitative computed tomography (pQCT)-derived measures of bone strength and morphology with gross measurements of size and growth in pre-weaning dairy calves. Liveweight, height, body length, girth and leg length were measured at one, six and twelve weeks of age. At these intervals, the mid-diaphysis of the metacarpus was also scanned in the live animal using pQCT. At six and twelve weeks old, a subset of calves were euthanised and the humerus was collected and scanned at the mid-diaphysis using pQCT. Differences in growth patterns were observed between the metacarpus and humerus over time. Weight was the best predictor for measures of periosteal circumference and stress strain index (R2 = 0.49-0.58) in the metacarpus, and also the best predictor for measures of stress strain index at all ages in the humerus (R2 = 0.94). The strong relationship with weight and bone measures emphasises the need for adequate preweaning nutrition for future bone growth.

Carotenoids, powerful anti-oxidants, play a significant role in protecting the skin from oxidation and help in balancing the redox status of skin. This study was aimed at investigating cattle skin to identify carotenoids in the lower epidermis (grain) and dermis (corium) layers for classification using Raman spectroscopy which is a powerful technique for the detection of carotenoids in cattle skin due to the strong resonance enhancement with 532 nm laser excitation. The spectral differences identified between these two layers were quantified by the univariate analysis of Raman peak heights and partial least squares (PLS) analysis. We compared the performance of the Raman spectroscopy method with the standard method, high performance liquid chromatography. The univariate analysis results demonstrated that the lower epidermis of the skin has a higher concentration of carotenoid than dermis using the carotenoid Raman peaks at 1151 cm-1 and 1518 cm-1. The carotenoid Raman intensity was linearly correlated with the total carotenoid concentration determined by standard HPLC methods. Partial Least Squares Regression analysis gives excellent results with R 2 = 0.99. Our results indicate that Raman spectroscopy is a potential tool to determine carotenoids in cattle skin with high precision.
