ABSTRACT

There is much interest in cultured (cultivated) meat as a potential solution to concerns over the ecological and environmental footprint of food production, especially from animal-derived food products. The aim of this critical review is to undertake a structured analysis of existing literature to (i) identify the range of materials that could be used within the cultured meat process; (ii) explore the potential biological and chemical food safety issues that arise; (iii) identify the known and also novel aspects of the food safety hazard portfolio that will inform hazard analysis and risk assessment approaches, and (iv) position a responsible innovation framework that can be utilized to mitigate food safety concerns with specific emphasis on cultured meat. Although a number of potential food safety hazards are identified that need to be considered within a food safety plan, further research is required to validate and verify that these food safety hazards have been suitably controlled and, where possible, eliminated. The responsible innovation framework developed herein, which extends beyond hazard analysis and traditional risk assessment approaches, can be applied in multiple contexts, including this use case of cultured meat production.

ABSTRACT

The key elements, or pillars, of food security are stated as food availability, food access, food utilization, and stability. These food security pillars are often linked to food security interventions at the national, community or household level. However, if the urban 'household' is the unit of interest for any food security intervention, this research asks if a more holistic element, or pillar, is needed. The aim of this research has been to explore the socio-economic aspects of food security/insecurity that we have termed as a result of the research "food acquirability". Through the use of structured questionnaires (n = 120), and analysis of the data derived from local market and supermarket settings in the city of Awka, Nigeria, the concept of food acquirability has emerged and been conceptualized and critiqued. The contribution of this paper is to frame the concept of acquirability with regard to food security in Nigeria in order to develop a better understanding of the factors that impact household urban food security/insecurity and how they can be effectively mitigated. Factors of acquirability that emerged were culture, time poverty, resource availability and cooking skills, and household food preference and meal choice.

ABSTRACT

Effective food safety (FS) management relies on the understanding of the factors that contribute to FS incidents (FSIs) and the means for their mitigation and control. This review aims to explore the application of systematic accident analysis tools to both design FS management systems (FSMSs) as well as to investigate FSI to identify contributive and causative factors associated with FSI and the means for their elimination or control. The study has compared and contrasted the diverse characteristics of linear, epidemiological, and systematic accident analysis tools and hazard analysis critical control point (HACCP) and the types and depth of qualitative and quantitative analysis they promote. Systematic accident analysis tools, such as the Accident Map Model, the Functional Resonance Accident Model, or the Systems Theoretical Accident Model and Processes, are flexible systematic approaches to analyzing FSI within a socio-technical food system which is complex and continually evolving. They can be applied at organizational, supply chain, or wider food system levels. As with the application of HACCP principles, the process is time-consuming and requires skilled users to achieve the level of systematic analysis required to ensure effective validation and verification of FSMS and revalidation and reverification following an FSI. Effective revalidation and reverification are essential to prevent recurrent FSI and to inform new practices and processes for emergent FS concerns and the means for their control.

ABSTRACT

In the wake of the COVID-19 pandemic, and Ukraine-Russian conflict, both significant geo-political and socio-economic shocks to the global food system and food insecurity has risen across the world. One potential remedy to reduce the level of food insecurity is to move from a lean just-in-time food system to one where there is more resilience through greater agility both in routine supply operations and also in the event of an emergency situation. The aim of this critical perspectives paper was to firstly reflect on the concepts of lean, agility, and 'leagility'. Then, this study considered the ability of individual organisations and the whole food system to be resilient, adaptive, enable the elimination of waste, reduce inefficiency, and assure the consistent delivery to market requirements in terms of both volume, safety, and quality. Promoting the concept of leagility together with advocating resilient, sustainable practices that embed buffer and adaptive capacity, this paper positions that increasing digitalisation and improving business continuity planning can ensure effective operationalisation of supply chains under both normal and crisis situations, ultimately reducing the risk of food insecurity at personal, household, and community levels.

ABSTRACT

Strategically unlearning specific knowledge, behaviors, and practices facilitates product and process innovation, business model evolution, and new market opportunities and is essential to meet emergent supply chain and customer requirements. Indeed, addressing societal concerns such as climate change and net zero means elements of contemporary practice in food supply chains need to be unlearned to ensure new practices are adopted. However, unlearning is a risky process if crucial knowledge is lost, for example, if knowledge is situated in the supply base not the organization itself, or there is insufficient organizational food safety knowledge generation, curation, and management when new practices/processes are designed and implemented. An exploratory, critical review of management and food safety academic and gray literature is undertaken that aims to consider the cycle of unlearning, learning, and relearning in food organizations and supply chains with particular emphasis on organizational innovation, inertia, and the impact on food safety management systems and food safety performance. Findings demonstrate it is critical with food safety practices, such as duration date coding or refrigeration practices, that organizations "unlearn" in a way that does not increase organizational, food safety, or public health risk. This paper contributes to extant literature by highlighting the organizational vulnerabilities that can arise when strategically unlearning to promote sustainability in a food supply context. Mitigating such organizational, food safety, and public health risk means organizations must simultaneously drive unlearning, learning, and relearning as a dynamic integrated knowledge acquisition and management approach. The research implications are of value to academics, business managers, and wider industry.

ABSTRACT

The concept of positive welfare is an expansion of the traditional understanding that animal welfare is defined by minimizing stress, pain, suffering, and disease. Positive welfare shifts the animal welfare narrative from a focus on reducing negative experiences to proactively providing animals with opportunities to have positive experiences and feelings. The concept, although around for several decades, is in its infancy in terms of developing ways of assessing positive welfare on farms, especially in extensive systems, and there are challenges in the adoption of positive welfare practices and the monitoring of continuous improvement at the farm level. Using an iterative approach, this critical review aims to explore the extent to which positive welfare interventions and indicators are positioned and have been developed within the animal welfare literature for sheep. This paper critiques existing positive welfare indicators, such as choices in food and the physical environment, conspecific social synchronization, maternal bonds, intergenerational knowledge transfer, positive human-animal relationships, etc., as currently assessed by the 'good life framework'. It also reviews the characteristics of scientific measures for (positive) affective states in the current sheep literature and their potential contribution to understanding positive welfare states in sheep. In conclusion, this paper provides recommendations for future research regarding sheep welfare.

ABSTRACT

Stakeholders can hold conflicting values and viewpoints, on what animal welfare is and how a good life is achieved and can signal different problems, or problematize specific aspects of farm animal welfare, and propose different actions or interventions within food supply chains. The aim of the study is to explore the contribution of narrative and argumentative discourse to the social construction and framing of animal welfare and its implications. The methodological approach in this research is composed of two phases with phase 1 being the foundational structured literature search in both academic and grey literature. Phase 2 was the analysis of the secondary data from the literature review to develop a synthesized iterative paper and in doing so develop a typology of five narratives: the 'farming as a business' narrative, the 'religion-based' narrative, the 'research, legislative and political based narrative', the 'higher welfare' narrative, and the "animal rights/power-based" narrative. Our findings demonstrate the contestation within the stakeholder discourse of the articulation of why farm animals should have a good life. Performance-related perspectives are rooted in the value-laden language and narratives that shape the arguments regarding notions of good and bad welfare; the emergent positioning of positive welfare for farm animals as well as how to achieve a good life in practice. The novel contribution of this review is the application of an explanatory word-language-discourse-person-situation-environment framework in this specific context to inform future research on animal welfare discourse analysis.

ABSTRACT

The main objective of the study was to compare young consumer purchasing behaviour towards organic food in Poland (PL) and the United Kingdom (UK), countries with different levels of organic market maturity. The study was conducted by means of an online survey questionnaire during the COVID-19 pandemic between December 2020 and February 2021. The sample consisted of 862 PL and 161 UK consumers. 31% of PL respondents and 58.4% of UK respondents indicated they purchase organic products. Descriptive statistics, the Mann-Whitney U test and the two proportion Z test were used for statistical analyses. The results indicate that young consumers pay particular attention to the freshness and quality of consumed products. Concern for their own health and that of their loved ones, as well as the desire to eat better-quality products were the main motivations for the respondents to purchase organic products. Organic vegetables and fruits, eggs, dairy products, and meat and meat products, were among the most frequently purchased products in the studied cohorts. Experts (e.g., a dietitian, physician) were declared to be the first source of information concerning food products for young consumers. Next, family members were indicated. Social media content (PL respondents) and information from websites managed by institutions (UK respondents) were mentioned as the third source. UK consumers preferred short supply chains. The present study can be used by government bodies and companies to select the most effective communication channels for education and advertising and to develop effective commercial strategies aimed at young consumers.

ABSTRACT

Sesame seeds within the European Union (EU) are classified as foods not of animal origin. Two food safety issues associated with sesame seeds have emerged in recent years, i.e., Salmonella contamination and the presence of ethylene oxide. Fumigation with ethylene oxide to reduce Salmonella in seeds and spices is not approved in the EU, so its presence in sesame seeds from India was a sentinel incident sparking multiple trans-European product recalls between 2020-2021. Following an interpretivist approach, this study utilises academic and grey sources including data from the EU Rapid Alert System for Food and Feed (RASFF) database to inform a critical appraisal of current EU foods not of animal origin legislation and associated governance structures and surveillance programs. This is of particular importance as consumers are encouraged towards plant-based diets. This study shows the importance of collaborative governance utilizing data from company testing and audits as well as official regulatory controls to define the depth and breadth of a given incident in Europe. The development of reflexive governance supported by the newest technology (e.g., blockchain) might be of value in public-private models of food safety governance. This study contributes to the literature on the adoption of risk-based food safety regulation and the associated hybrid public-private models of food safety governance where both regulators and private organizations play a vital role in assuring public health.

ABSTRACT

Crustacean waste, consisting of shells and other inedible fractions, represents an underutilized source of chitin. Here, we explore developments in the field of crustacean-waste-derived chitin and chitosan extraction and utilization, evaluating emerging food systems and biotechnological applications associated with this globally abundant waste stream. We consider how improving the efficiency and selectivity of chitin separation from wastes, redesigning its chemical structure to improve biotechnology-derived chitosan, converting it into value-added chemicals, and developing new applications for chitin (such as the fabrication of advanced nanomaterials used in fully biobased electric devices) can contribute towards the United Nations Sustainable Development Goals. Finally, we consider how gaps in the research could be filled and future opportunities could be developed to make optimal use of this important waste stream for food systems and beyond.

ABSTRACT

The Internet of Food Things Network+ (IoFT) and the Artificial Intelligence and Augmented Intelligence for Automated Investigation for Scientific Discovery Network+ (AI3SD) brought together an interdisciplinary multi-institution working group to create an ethical framework for digital collaboration in the food industry. This will enable the exploration of implications and consequences (both intentional and unintentional) of using cutting-edge technologies to support the implementation of data trusts and other forms of digital collaboration in the food sector. This article describes how we identified areas for ethical consideration with respect to digital collaboration and the use of Industry 4.0 technologies in the food sector and describes the different interdisciplinary methodologies being used to produce this framework. The research questions and objectives that are being addressed by the working group are laid out, with a report on our ongoing work. The article concludes with recommendations about working on projects in this area.

ABSTRACT

Using a systems analysis approach, the authors analyse forced child labour incidents in Indian cottonseed farms in the years 2003/04 and 2014/15, and explore the role played by human factors in contributing to the illegal use of child labour in the Indian agri-food sector. National policies on labour welfare and rights are reviewed through the case studies used as a lens to explore wider issues associated with forced child labour in supply chains. The study highlights the evolution of organised crime in India with regards to the reliance on forced child labour, using the four conceptual dimensions of modern slavery established by the UK Home Office in 2017. The study does identify limitations and flaws associated with designing policies based on a "work-as-imagined" philosophy and demonstrates how the use of maturity modelling can explore how exploitation, corruption and organised crime is framed and can become more formalised over time.

ABSTRACT

Illicit (unrecorded) alcohol is a critical global public health issue because it is produced without regulatory and market oversight with increased risk of safety, quality and adulteration issues. Undertaking iterative research to draw together academic, contemporary and historic evidence, this paper reviews one specific toxicological issue, methanol, in order to identify the policy mitigation strategies of interest. A typology of illicit alcohol products, including legal products, illegal products and surrogate products, is created. A policy landscape matrix is produced that synthesizes the drivers of illicit alcohol production, distribution, sale and consumption, policy measures and activity related signals in order to inform policy development. The matrix illustrates the interaction between capabilities, motivations and opportunities and factors such as access, culture, community norms and behavior, economic drivers and knowledge and information and gives insight into mitigation strategies against illicit alcohol sale and consumption, which may prove of value for policymakers in various parts of the world.

Organic foods carry a premium price. They are credence-based foods, i.e., it is difficult for consumers to evaluate the premium aspects of organic food under normal use. In global supply chains, organic food is purchased on institutional trust (certification, logos, standards) rather than on relational trust. Relying on institutional trust makes consumers vulnerable to criminals who intentionally label conventional product as organic or develop sophisticated organized crime networks to defraud businesses and consumers. The aim of this research is to explore cases of organic fraud that are emergent from academic and gray literature searches to identify ways to strengthen future capabilities to counter illicit activities in a globalized food environment. Each case is considered in terms of perpetrator motivations (differentiated as economic, cultural, and behaviorally orientated drivers), the mode of operation (simple or organized), the guardians involved/absent, and the business and supply chain level vulnerabilities the cases highlight. The study finds that institutional trust is particularly vulnerable to fraud. Supply chain guardians need to recognize this vulnerability and implement effective controls to reduce the likelihood of occurrence. However, in some cases considered in the study, the guardians themselves were complicit in the illicit behavior, further increasing consumer vulnerability. Future research needs to consider how additional controls can be implemented, without increasing supply chain friction that will impact on food trade and supply, that can ensure consumers are purchasing what they believe they are paying for.

ABSTRACT

The Rapid Alert System for Food and Feed (RASFF), where competent authorities in each Member State (MS) submit notifications on the withdrawal of unsafe or illegal products from the market, makes a significant contribution to food safety control in the European Union. The aim of this paper is to frame the potential challenges of interpreting and then acting upon the dataset contained within the RASFF system. As it is largest cause of RASFF notifications, the lens of enquiry used is mycotoxin contamination. The methodological approach is to firstly iteratively review existing literature to frame the problem, and then to interrogate the RASFF system and analyze the data available. Findings are that caution should be exercised in using the RASFF database both as a predictive tool and for trend analysis, because iterative changes in food law impact on the frequency of regulatory sampling associated with border and inland regulatory checks. The study highlights the variability of engagement by MSs with the RASFF database, influencing generalisability of the trends noted. As importing countries raise market standards, there are wider food safety implications for the exporting countries themselves. As this is one of the first studies articulating the complexities and opportunities of using the RASFF database, this research makes a strong contribution to literature.

ABSTRACT

This article critically evaluates the development and impact of a new online 'dance practice' service in a rural creative hub Remote. The research asks: 'How does entrepreneurial placemaking contribute to the evolution of rural creative hubs during the COVID-19 pandemic?' To answer this question, the article critically evaluates the business activities of one artisan entrepreneur, applying placemaking and resilience. Using a case study strategy, this research employs online qualitative research. Creative hub development is explained as a result of 'entrepreneurial placemaking', forming the main contribution of this article. This term subsumes multi-layered exchanges. 'Entrepreneurial placemaking' is conceptualised as continuous becoming, and illustrated by Remote's adaption processes to lockdown phases. Remote is turned into a stage for digital placemaking during the COVID-19 lockdown via the 'open dance practice' service provided by a performance dance artist. Findings highlight that to enact entrepreneurial placemaking, creative professionals need to draw upon adaptive capacity, which includes the ability to develop exchange relationships and business-related digital skills. Peer-learning is a recommended solution for developing such digital skills across artist entrepreneurial communities. This article contributes to the ongoing conversation on the role of creative hubs for socio-economic development foregrounding the activities of hub users.

ABSTRACT

Compliance is the act or status of complying with an imperative regulatory or normative requirement, that is, compliance means working within boundaries defined by contractual, social, or cultural standards. The aim of this narrative review is to use the food supply chain as a lens of enquiry to distinguish between compliance-based and integrity-based organizational climates and frame and rationalize why deviant behavior arises and how it can be identified. Contemporary theory is explored and critiqued using case studies to contextualize the challenge of organizations promoting supply chain compliance and at the same time recognizing the need for deviant behavior to occur in order to drive innovation and continuous improvement within food supply chains. Deviant behavior can be perceived as either positive in terms of driving continuous improvement or destructive where this behavior has a negative impact on the organization. Although multiple cultural maturity models seek to characterize positive food safety culture and climate, there is minimal research that focuses on the characterization of deviant negative behavior or the development of early warning systems designed to pinpoint signals, traits, or characteristics of this behavior such as low staff morale, theft, property destruction, or absenteeism. The use of cultural maturity models and assessment tools is of value in assisting organizations to translate from a rule, instrumental, or compliance-based organizational climate to an ethically strong organizational climate that focuses on integrity, building trust, and values and a new cultural maturity model is proposed and explored.
