ABSTRACT

The product quality is a competitive advantage that plays a differential role among companies. In the food industry, which is based on the Quality Management System, such as Good Manufacturing Practices (GMP), which cover the hygiene procedure, aiming at food safety. In view of the above, the aim of this study was to evaluate the hygienic-sanitary conditions of a selected dairy from the São Luís Island - MA. An application of the checklist was performed, swab collection from the hands of the manipulators and equipment and the collection of water and yogurt for microbiological analysis. After this step, a training was performed for food handlers and finally, new collections and microbiological analysis were performed. All the microbiological analysis performed were satisfactory, except for the water sample, one before and again for training. It can be verified that the hygienic-sanitary condition of the dairy was good. However, after a lecture and new microbiological analyzes, improvements were observed in the results.(AU)


A qualidade dos produtos é uma vantagem competitiva que desempenha um papel diferencial entre empresas. Na indústria alimentar, faz-se necessária a adoção do Sistema de Gestão de Qualidade, como as Boas Práticas de Fabricação (BPF), que abrangem os procedimentos essenciais de higiene, visando à segurança alimentar. Diante do exposto, objetivou-se avaliar as condições higiênico-sanitárias de um laticínio selecionado da ilha de São Luís, Maranhão. Foi realizado um checklist, coleta por swabs das mãos dos manipuladores e de equipamentos e coleta de água e iogurte para análises microbiológicas. Após essa etapa, foi executado um treinamento para os manipuladores de alimentos e, por fim, novas coletas e análises microbiológicas foram realizadas. Todas as análises microbiológicas realizadas mostraram-se satisfatórias, com exceção da amostra de água, uma antes e outra após o treinamento. Pode-se constatar que a condição higiênico-sanitária do laticínio era boa. Contudo, após uma palestra e a realização de novas análises microbiológicas, foram observadas melhorias nos resultados.(AU)

ABSTRACT

Visceral leishmaniasis is a zoonotic disease caused by Leishmania infantum for which dogs are the main reservoir. In South America, presence of this disease is expanding along with increasing dispersion of its principal vector, the sand-fly Lutzomyia longipalpis. Feline leishmaniasis is an emerging disease in domestic cats, but epidemiological studies in endemic areas of the Amazon region of Brazil are scarce and the role of cats as reservoirs of L. infantum has been debated. The aim of this study was to investigate L. infantum infection in cats living in the Amazon biome region, using serological and molecular methods. A total of 105 cats were subjected to clinical examination and blood samples were taken for immunofluorescent-antibody (IFAT) serological evaluation, to determine anti-Leishmania antibody titers. Conventional PCR and Sanger's sequencing targeting L. infantum chitinase and Leishmania species ribosomal internal transcribed spacer (ITS-1) encoding genes were performed on conjunctival swabs from these cats. Seropositivity was detected in 32 animals (30.48%), thus confirming that contact between these cats and the parasite was occurring. PCR followed by amplicon sequencing showed that three samples (2.86%) were positive for a chitinase gene and six (5.71%) were positive for the ITS-1 gene. Parasite-positive diagnoses presented a statistically significant association with free access to the streets (p = 0.0111), cohabitation with dogs affected previously by VL (p = 0.0006) and absence of backyard cleaning and garbage collection (p = 0.00003). These results emphasize that cats should be included in epidemiological surveys of leishmaniasis, especially in endemic areas, if not as the reservoir host (unproven), at least as a "sentinel host" that is useful for revealing situations of endemic circulation of L. infantum. Moreover, in these areas, feline leishmaniasis needs to be considered in the differential diagnosis among domestic cats presenting alopecia, rarefied hair, lacerations and ulcerative dermatitis.

ABSTRACT

O consumo de alimentos de rua é uma alternativa prática e acessível para a população. Entretanto, devido aos problemas como deficiências na infraestrutura e na higiene dos manipuladores, é preocupante a qualidade e segurança dos alimentos comercializados nas ruas. Com o objetivo de avaliar o conhecimento dos consumidores de comida de rua sobre segurança dos alimentos e analisar as condições higienicossanitárias da Feira da Cidade Operária e da Praça Deodoro em São Luís- MA, foram aplicados questionários com questões relacionadas ao perfil dos consumidores e questões sobre segurança dos alimentos e foi utilizado checklist para analisar as condições higienicossanitárias da comercialização dos alimentos. Os dados foram tabulados no programa Microsoft Office Excel 2010 e interpretados por meio da estatística descritiva. Com relação ao perfil dos consumidores, houve predominância do sexo feminino, com menos de 30 anos de idade e com ensino médio completo. No tocante à segurança dos alimentos observou-se que consumidores apresentam nível de conhecimento regular. As condições higienicossanitárias da feira da Cidade Operária e da Praça Deodoro apresentaram maiores percentuais de não conformidades, pois não obedeciam às exigências da resolução RDC n° 216/2004 da ANVISA. Diante disso, faz-se necessário programa de educação em saúde sobre higiene alimentar aos consumidores e intensificação na fiscalização do comércio ambulante de alimentos.


Street food consumption is a practical and affordable alternative for the population. However, due to problems such as deficiencies in the infrastructure and the hygiene of the food handlers, concerns have been observed regarding the quality and safety of food marketed in the streets. With the objective of evaluating street food consumers' knowledge about food safety and analyzing the sanitary and sanitary conditions of the Operário City Fair and Praça Deodoro in São Luís, MA, questionnaires were applied with questions related to consumer profile and safety issues food and a checklist was used to analyze the hygienic and sanitary conditions of the food commercialization. The data was tabulated in the Microsoft Office Excel 2010 program and interpreted through descriptive statistics. Regarding the profile of the consumers, there was a predominance of females, with less than 30 years of age and with complete secondary education. With regard to food safety, it was observed that consumers have a level of regular knowledge. The sanitary and sanitary conditions of the Fair of the City of Work and of Praça Deodoro presented higher percentages of nonconformities, since they did not comply with the requirements of Resolution RDC nº 216/2004 of ANVISA. In view of this, health education programs on food hygiene are needed for consumers, and intensification in the supervision of street food trade.

Alimentar-se fora de casa está se tomando cada vez mais comum e, com isso, os Food Trucks têm se tomado uma opção rápida e vantajosa para o público. Desta forma, o objetivo deste trabalho foi analisar as condições higienicossanitárias de Food Trucks e rebocáveis localizados em instituições particulares de Ensino Superior do Distrito Federal. A análise teve como base o checklist da legislação vigente e a Instrução Normativa Distrital (IN DVS N° 11 de 23 de março de 2016). Concomitantemente foi aplicado um questionário de informações pessoais a fim de verificar, principalmente, o nível de instrução dos manipuladores bem como se estes possuíam qualquer curso na área de manipulação e higiene de alimentos. Dez (10) estabelecimentos aceitaram participar da pesquisa. Nenhum dos proprietários e manipuladores possuíam qualquer certificação acerca de cursos de capacitação sobre Boas Práticas de Manipulação, Higiene Alimentar ou Gestão Ambiental. Desta forma, observa-se que os Food Trucks e rebocáveis estudados oferecem riscos à saúde dos comensais, uma vez que não apresentam condições higienicossanitárias adequadas para a prestação deste tipo de serviço.


Eating out is becoming more and more common, and with it, Food Trucks has become a fast and advantageous option for the public in this way, the objective of this work was to analyze the sanitary and hygienic conditions of Food Trucks and other food vehicles located in private institutions of Higher Education of the Distrito Federal. The analysis was based on the checklist of the current legislation and the Instrução Normativa Distrital (IN D VS N° I I de 23 de março, de 2016). Simultaneously, a personal information questionnaire was applied in arder to verify, mainly, the level of instruction of the manipulators, as well as if they had any course in the area of food hygiene and handling. Ten (10) establishments accepted to participate in the research. None of the owners and handlers had any certification of training courses on Good Handling Practices, Food Hygiene or Environmental Management. Thus, it is observed that the Food Trucks studied present risks to the health of the diners, since they do not present hygienic and sanitary conditions adequate for the provision of this type of service.
