ABSTRACT

Berries are among the nutritionally richest fruits and the mixing of these fruits can originate products with peculiar characteristics and added value, since the fruit mixture allows adding nutritional and sensory value to the final product. Thus, in this study we aimed to optimize a mixed berry jelly formulation of red fruit (blackberry, blueberry, and strawberry), through the mixture design, desirability function, and response surface methodology. The fruit mixture influenced the physical-chemical, sensory, and nutritional characteristics of mixed jelly, and it was observed that the mixture of two or more fruits may increase the acceptance of the product and even its nutritional value. According to the contour curve graph for the sensory and nutritional desirability function, the ideal mixed berry jelly should contain 55% to 100% blackberry, 0% to 20% blueberry, and 0% to 40% strawberry. The exact proportion of fruit may depend on seasonality or the commercial value of the fruit. PRACTICAL APPLICATION: In Brazil, there are many blackberry, blueberry, and strawberry cultivars grown in subtropical regions and high perishability hinders the fruit consumption in fresh form. In this context, through this study it was possible to verify which fruits are more suitable for processing in the form of jelly, as well as to optimize, based on sensory and nutritional characteristics, a mixed berry jelly formulation with greater attractiveness to consumers.

ABSTRACT

Due to the importance of studying alternatives to reduce pepper post-harvest loss and verify the processing potential of the several cultivars/varieties available, the objective of this study was to characterize common peppers in Brazil, and to evaluate their potential for further processing into jelly form. More specifically, the most-consumed species and varieties in Brazil were investigated, that is: Habanero, Cheiro do Norte, Biquinho, Malagueta, Cayenne, Paprika and Dedo de Moça. Additionally, the drivers of liking for pepper jelly were sought so as to understand the desirable characteristics of this product. The different peppers were initially assessed by the following physical and physicochemical analyses: length, diameter, unit mass, total soluble solids, total titratable acidity, pH, color, total phenolic content, antioxidant activity, and vitamin C levels. Jellies made with different pepper types were also analyzed for total titratable acidity, pH, color, and texture profile, and a sensory study was conducted to elucidate the drivers of liking. As expected, different pepper types varied in physical and physicochemical properties, and the resulting jellies also differed in terms of physical, physicochemical, textural and sensory characteristics. In general, less pungent peppers (Biquinho, Paprika and Cheiro do Norte) were the most suitable for processing to produce jellies with more desirable attributes for consumers: reddish color, characteristic flavor and aroma of a pepper, sweet taste, and low pungency.

ABSTRACT

Abstract Faced with the need for greater knowledge of the different physalis species, the aim of this study was to characterize different Native American physalis species (Physalis peruviana L., Physalis pubescens L., Physalis angulata L., Physalis mínimos L. and Physalis ixocarpa Brot) as to their physicochemical characteristics, bioactive compounds and antioxidant activity. Besides that, in order to increase their use and add even more value to this fruit, we also evaluate the influence of these different species on the physicochemical, rheological and sensory characteristics of physalis jelly. In addition, this study evaluated the sensory acceptance of the combination of physalis jellies obtained from different species with brie-type cheese. The Peruviana, Pubences and Angulata, are highlighted for being the nutritionally richest species, with the highest levels of phenolic compounds, vitamin C and antioxidant. Moreover, they stand out for originating the most widely sensory accepted jellies, either in pure form or in combination with brie-type cheese.

ABSTRACT: Plum growing is widespread in temperate zones. In Brazil, the exploitation of this fruit tree is extended from the colder regions of the state of Rio Grande do Sul to the south of the state of Minas Gerais. However, cultivars exploited at subtropical regions are scarce due to competition. The present study aimed to select productive cultivars of plums adapted to Brazilian subtropical conditions. In this respect, the plum cultivars 'Fla 87-7', 'Gema de Ouro', 'Grancoure', 'Harry Pickstone', 'Januária', 'Santa Rosa' and 'Satsuma' were grafted on the 'Okinawa' rootstock 'and evaluated by two cycles in the municipality of Lavras, MG, Brazil. The phenological development, physical and chemical properties of fruits, average number of fruits per plant, average fruit mass and estimated yield were evaluated for each cultivar. It is concluded that plum cultivars 'Januária' and 'Grancoure' are the most promising for subtropical regions, mainly due to the volume of produced fruits and the quality of fruits.


RESUMO: O cultivo de ameixeira é amplamente difundido nas zonas temperadas. No Brasil, a exploração desta fruteira se estende desde as regiões mais frias do Rio Grande do Sul até o sul de Minas Gerais. No entanto, as cultivares exploradas nas regiões subtropicais são escassas devido a trabalhos de competição. O presente trabalho objetivou-se selecionar cultivares produtivas de ameixas e adaptadas às condições subtropicais brasileiras. Para isso, foram utilizadas as ameixeiras 'Fla 87-7', 'Gema de Ouro', 'Grancoure', 'Harry Pickstone', 'Januária', 'Santa Rosa' e 'Satsuma', enxertadas sobre o porta-enxerto 'Okinawa' e avaliadas por dois ciclos no município de Lavras, MG. Avaliou-se o desenvolvimento fenológico; atributos físico-químicos das frutas; número médio de frutas por planta; massa média das frutas e produtividade estimada em cada cultivar. Conclui-se que as ameixeiras 'Januária' e 'Grancoure' são as mais promissoras para regiões subtropicais, principalmente, pelo volume de frutas produzidas e qualidade das frutas.

ABSTRACT: In order to increase the availability to consumers and add even more value to peaches (Prunus persica (L.) Batsch) and to identify which cultivars grown in tropical regions are more suitable for jelly processing, the objective of this study was to characterize and evaluate the influence of different peach cultivars ('Aurora', 'Biuti', 'Bonão', 'Centenário', 'Diamante', 'Douradão', 'Libra', 'Régis' and 'Tropical') cultivated in tropical regions on the physicochemical characteristics, rheological properties and sensory acceptance of the resulting jelly. The evaluated cultivars presented great variability among themselves in relation to the physical and physicochemical characteristics. The jellies elaborated from these cultivars; although, presenting great variability in relation to the physicochemical and rheological parameters, presented similar, high acceptance. All cultivars studied are suitable for processing and can be used for industrialization.


RESUMO: Com o objetivo de aumentar a disponibilidade para os consumidores, agregar ainda mais valor aos pêssegos (Prunus persica (L.) Batsch) e identificar quais cultivares cultivadas em regiões tropicais são mais adequadas para o processamento de geleia, o objetivo deste estudo foi caracterizar e avaliar a influência de diferentes cultivares de pessegueiro ('Aurora', 'Biuti', 'Bonão', 'Centenário', 'Diamante', 'Douradão', 'Libra', 'Régis' e 'Tropical') cultivadas em regiões tropicais nas características físico-químicas, reológicas e sensoriais da geleia resultante. Verificou-se que as cultivares avaliadas apresentaram grande variabilidade entre si em relação às características físicas e físico-químicas. As geleias elaboradas a partir destas cultivares, embora apresentam grande variabilidade em relação aos parâmetros físico-químicos e reológicos, apresentaram alta aceitação. Conclui-se, que todas as cultivares estudadas são indicadas para processamento e podem ser destinadas à industrialização.

ABSTRACT: The aim of this study was to characterize five different hybrid cultivars pears ('Tenra', 'Centenária', 'Cascatence', 'Primorosa' and 'Seleta') deployed in subtropical regions of Brazil regarding its physicochemical characteristics, bioactive compounds and antioxidant activity, as well as to evaluate the influence of these cultivars on the characteristics physicochemical, rheological properties and sensory acceptance of the obtained jelly, for identifying varieties with higher potential for industrial use. Regardingthe bioactive compounds and antioxidant activity it was observed that 'Seleta' cultivar was characterized by a higher phenolic content (57.68mg GAEs 100g-1), higher antioxidant activity (13.56% of DPPH sequestration and 1.25µM of trolox g -1) and higher content of vitamin C (3.59mg 100g-1). As the acidity, it ranged from 4.09 to 5.81 g of malic acid 100g-1 ('Tenra' and 'Seleta', respectively). Regarding color, the color parameter L* varied from 32.14 to 36.83, a* ranged from 2.87 to 5.20, b* ranged from 16.57 to 20.42, Chroma ranged from 16.67 to 21.02 and °Hue ranged from 74.94 to 80.18. Regarding the texture, the jellies produced from 'Centenária' and 'Tenra' were characterized by having the highest values of hardness (1.21 and 1.23N, respectively), gumminess (0.42 and 0.45, respectively) and chewiness (0.40 and 0.45N, respectively). The jelly obtained from the 'Centenária' still showed the highest adhesiveness (2.27N s-1) and springiness (0.99). Already jellies prepared by 'Cascatence' showed the highest cohesiveness values (0.68). The jellies prepared with different pear cultivars showed good sensory acceptance for all measured properties, with average scores ranging between the hedonic terms "liked slightly" to "liked very much". Cultivars of subtropical pear trees present different physicochemical characteristics, resulting in jellies with different physicochemical characteristics and rheological properties. Processing in the form of jelly is extremely viable due to the good acceptance by consumers of all formulations elaborated.


RESUMO: O objetivo deste estudo foi caracterizar cinco diferentes cultivares híbridas de peras ('Tenra', 'Centenária', 'Cascatence', 'Primorosa' e 'Seleta') implantadas em regiões subtropicais do Brasil quanto as caracteristicas físico-química, compostos bioativos e atividade antioxidante, bem como avaliar a influência destas cultivares sobre as características físico-químicas, propriedades reológicas e aceitação sensorial da geleia obtida, para identificação de cultivares com maior potentcial para a utilização industrial. Com relação aos compostos bioativos e atividade antioxidante, pode-se observar que a cultivar 'Seleta' caracterizou-se pelo maior teor de fenólicos (57,68mg GAEs 100 g-1), maior atividade antioxidante (13,56% de sequestro de DPPH e 1,25μM de trolox g-1) e se destaca devido ao seu maior teor de vitamina C (3,59mg 100g-1). A acidez, variou de 4,09 a 5,81g de ácido málico 100 g-1 ('Tenra' e 'Seleta', respectivamente). Em relação à cor, o parâmetro de cor L* variou de 32,14 a 36,83, a* variou de 2,87 a 5,20, b* variou de 16,67 a 20,42, Chroma variou de 16,57 a 21,02 e °Hue variou de 74,94 a 80,18. Em relação à textura, as geleias produzidas a partir de 'Centenária' e 'Tenra' caracterizam-se por apresentar os maiores valores de dureza (1,21 e 1,23N, respectivamente), gomosidade (0,42 e 0,45N, respectivamente) e mastigabilidade (0,40 e 0,45, respectivamente). A geleia obtida da 'Centenária' ainda apresentava a maior adesividade (2,27N s-1) e a elasticidade (0,99). Já as geleias preparadas com a 'Cascatence' apresentaram os maiores valores de coesividade (0,68). As geleias preparadas com diferentes cultivares de pera mostraram boa aceitação sensorial para todas as propriedades avaliadas, com notas médias variando entre os termos hedônicos "gostei ligeiramente" e "gostei muito". As cultivares de pereiras subtropicais apresentam características físico-químicas diferentes, resultando em geleias com características físico-químicas e propriedades reológicas distintas. O processamento sob a forma de geleia é extremamente viável devido à boa aceitação por parte dos consumidores de todas as formulações elaboradas.

ABSTRACT: Aiming the selection of rootstocks to produce seedlings, the objective of this study was to quantify the seminiferous propagation in chestnut seeds, with or without incisions. Nine cultivars were used ('Ibuki', 'Isumo', 'Kinshu', 'Moriwase', 'Okuni', 'Senri', 'Taishowase', 'Tamatsukuri' and 'Tiodowase') and two selections ('KM-1' and 'KM-2') of hybrid chestnut trees (Castanea crenata x Castanea sp.). An incision was held in half of chestnuts and the other half remained intact. Percentage of germination, emergence and root length were quantified. The germinated nuts were transplanted and were quantified the diameter and height of seedlings. Then, the chestnut selections 'KM-2' and 'Jacutinga' were grafted by the cleft grafting method, and were quantified the percentage of sprouting, besides the diameter and height of grafts. Incisions increase the germination and seedling emergence in most cultivars and selections. 'Taishowase' and 'Tamatsukuri' stood out over the others to germination, growth of the rootstocks.


RESUMO: Visando a seleção de porta-enxertos para a produção de mudas, o objetivo do trabalho foi quantificar a propagação seminífera em castanhas com ou sem a realização de incisões. Foram utilizadas nove cultivares ('Ibuki', 'Isumo', 'Kinshu', 'Moriwase', 'Okuni', 'Senri', 'Taishowase', 'Tamatsukuri' e 'Tiodowase') e duas seleções ('KM-1' e 'KM-2') de castanheira híbridas (Castanea crenata x Castanea sp.). Em metade das castanhas, realizou-se uma incisão e a outra metade das castanhas permaneceu intacta. Foram quantificadas a porcentagem de germinação, emergência e o comprimento das raízes. As castanhas germinadas foram transplantadas onde se quantificou o diâmetro e a altura das mudas e ao final, a massa seca da parte aérea. Em seguida foram enxertadas pelo método de garfagem as seleções de castanheira 'KM-2' e 'Jacutinga', se quantificando a porcentagem de brotação, além do diâmetro e altura dos enxertos. Concluiu-se que as incisões aumentam a germinação e a emergência das plântulas, na maioria das cultivares e seleções. 'Taishowase' e 'Tamatsukuri' se destacam em relação as demais quanto a germinação e crescimento dos porta-enxertos.

Based on sensory acceptance and productivity/adaptability of persimmon crop in Brazil, the most suitable persimmon cultivars for processing are Rama Forte and Guiombo. In this study it was found that the consumer prefers a more acidic persimmon juice and a less firm or softer, less sweet, clearer and more intense yellow color persimmon jelly.

Abstract To increase the availability to consumers and add more value to loquat (Eriobotrya japonica Lindl.), which is a very perishable and seasonal fruit, and in order to identify which cultivars grown in subtropical regions are more suitable for jelly processing, the objective of this study was to evaluate the influence of different loquat cultivars (Fukuhara, Kurisaki, Mizumo, Mizuho and Mizauto) grown in subtropical regions of Brazil on the physicochemical characteristics, rheological properties and sensory acceptance of the resulting jelly. Based on sensory acceptance the most suitable loquat cultivars for jelly processing are Kurisaki and Mizuho. In this study it was found that the consumer prefers a more acidic, less sweet, less firm or softer loquat jelly, clearer with a more intense red color.

ABSTRACT: The cultivation of mulberry ( Rubus sp.) is highly disseminated in cold climates, but some cultivars adapt to warm weather environments. The objective of the present study was to evaluate the production of blackberry and redberry in season and off season in Pouso Alegre, south of Minas Gerais. The experimental design was a randomized block, with twelve cultivars ('Arapaho', 'Xavante', 'Brazos', 'Tupy' 'Comanche', 'Choctaw', 'Guarani', 'Caingangue', 'Cherokee', 'Chicasaw' and 'Clone' and a redberry, three blocks and an experimental unit of four plants with a spacing of 0.5x3.0m and a total density of 6,666 plants per hectare. Conventional pruning was performed to produce the crop (October-December) and for off-season production (April-July). In 'Brazos' there was increased production in the two seasons evaluated against other mulberry trees, conversely, in the off season, there was a positive effect of pruning carried out in January only in 'Tupy', 'Choctaw', 'Comanche' and 'Clone', with 'Tupy' presenting the highest productivity off season. In 'Brazos' and 'Tupy' there was the best balance between soluble solids and acidity in the crop and red berry in season. 'Brazos' and 'Cherokee' had the highest average content of total sugars. Due to the lack of supply of fruit, pruning mulberry trees in January is an alternative to increase the income of family-based farms.


RESUMO: O cultivo da amoreira ( Rubus sp.) está amplamente expandido em regiões de clima frio, entretanto algumas cultivares se adaptam em ambientes de clima ameno. Objetivou-se com o presente trabalho avaliar a produção de amoreira-preta e amoreira-vermelha na safra e entressafra em Pouso Alegre, sul de Minas Gerais. O delineamento experimental utilizado foi em blocos casualizados, com doze cultivares ('Arapaho', 'Xavante', 'Brazos', 'Tupy' 'Comanche', 'Choctaw', 'Guarani', 'Caingangue', 'Cherokee', 'Chicasaw', 'Clone' e uma amoreira-vermelha), três blocos e unidade experimental de quatro plantas, espaçadas a 0,5x3,0m, totalizando uma densidade de 6.666 plantas por hectare. Visando à produção na safra (outubro a dezembro) e entressafra (abril a julho), foram realizadas, nos meses de janeiro e julho, as podas convencionais. Em 'Brazos', verificou-se maior produção nas duas safras avaliadas em comparação com as demais amoreiras, já na entressafra, apenas em 'Tupy', 'Choctaw', 'Comanche' e 'Clone' verificou-se efeito positivo da poda realizada em janeiro e produziram frutos "fora de época", sendo em 'Tupy' a maior produtividade na entressafra. Na 'Brazos' e 'Tupy', verificou-se o melhor equilíbrio entre os sólidos solúveis e a acidez na safra e amora-vermelha na entressafra. 'Brazos' e 'Cherokee' obtiveram teor médio de açúcares totais superiores. Devido à inexistência da oferta de frutos de amoreira, a poda realizada em janeiro se torna alternativa para o aumento da renda dos agricultores de base familiar.

ABSTRACT: The persimmon tree is propagated by grafting and the rootstocks are produced from seeds. Grafting is done in July, which coincides with the time when the persimmon trees are pruned. But, at this time, many rootstocks are not yet eligible to receive the grafts. In this case budsticks/cleft storage is an option. Thus, this study aimed to verify the feasibility of cold storage of budsticks/cleft and verify the grafting method to promote better graft development. Rootstock was sown in August 2012 and the branches were collected in July 2013. Part of the branches was used for grafting (budding and cleft graft methods) in one-year old rootstocks and the other part was stored at low temperature (cuttings wrapped in moistened paper and then wrapped in polyethylene bags placed in cold storage at 4°C), during the months of August to December. Every 30 days, a number of branches was removed from the cold storage to perform grafting by budding and cleft and to quantify total sugars and starch in the budsticks/cleft stored. One hundred and twenty days after the grafting was performed, the length and diameter of the bud, number of leaves, sprouting percentage, dry weight of aerial part and root from the grafts were measured. It was concluded that there is no difference in the budding graft for different periods, but in seedlings grafted by the cleft grafting method there is greater growth when the clefts have been in cold storage for 60 to 120 days.


RESUMO: O caquizeiro é propagado por enxertia e os porta-enxertos são produzidos por sementes. A enxertia é realizada em julho, que coincide com a época de poda dos caquizeiros. Porém, nessa época, muitos porta-enxertos ainda não estão aptos a receberem os enxertos. Nesse sentido, o armazenamento dos ramos porta-borbulhas/garfos seria uma opção. Assim, o presente trabalho teve por objetivo de verificar a viabilidade do armazenamento refrigerado dos ramos porta-borbulhas/garfos e diagnosticar o método de enxertia para promover melhor desenvolvimento do enxerto. A semeadura dos porta-enxertos foi realizada em agosto de 2012 e os ramos foram coletados em julho de 2013. Uma parte dos ramos foi utilizada para a realização da enxertia (métodos de borbulhia e garfagem) em porta-enxertos de um ano de idade e a outra parte foi armazenada sob baixa temperatura (estacas envoltas em papel umedecido, embrulhadas em sacos de polietileno colocadas em câmara fria a 4°C), pelos meses de agosto a dezembro. A cada 30 dias, uma quantidade de ramos foi removida da câmara fria para a realização das enxertias por borbulhia e garfagem e para a quantificação dos açúcares totais e amido dos ramos porta-borbulhas/garfos armazenados. Passados 120 dias da realização das enxertias, foram mensurados o comprimento e diâmetro do broto, número de folhas, porcentagem de brotação, massa seca da parte aérea e das raízes dos enxertos. Conclui-se que não há diferença na brotação dos enxertos para as diferentes épocas, porém, em mudas enxertadas pelo método de garfagem, há maior crescimento quando os garfos são armazenados a frio durante 60 a 120 dias.

ABSTRACT: In recent years "redness" has increasingly appeared in strawberry plants with leaves taking on a reddish color. No causal agent has been associated with plants. Since strawberries presented problems due to the incidence of nematodes, the purpose of this study was to look at the relationship between production, resistance to the Meloidogyne hapla nematode and the "redness" symptom in strawberry cultivars. Two experiments were performed, both with the 'Camino Real', 'Festival', 'Oso Grande', 'Albion' and 'Camarosa' cultivars. The first experiment was performed in the field, where the following were evaluated: strawberry production, fruit quality, macro and micronutrient contents in fruit and leaves, percentage of plant survival, incidence of nematodes, quantity of eggs in the roots and juveniles in the soil, and the incidence of Botrytis cinerea . In the second experiment, the strawberries were transplanted into pots and filled with pinus bark-based commercial substrate. Half the pots were inocculated with Meloidogyne hapla . Cultivars presented differences in fruit production and also in the incidence of "redness". Lowest performance in production was related to the high incidence of the nematode Meloidogyne hapla. 'Oso Grande' and 'Albion' presented nematode-resistant behavior. It was possible find a relationship between the incidence of the Meloidogyne hapla nematode, and the incidence of "redness" only 'Camino Real' cultivar.


RESUMO: Nos últimos anos, vem aumentando o aparecimento do "vermelhão" nos morangueiros, que ficam com as folhas avermelhadas. Nenhum agente causal foi associado às plantas. Devido aos plantios de morangueiros apresentarem problemas pela incidência de nematoide, o objetivo do presente trabalho foi verificar a relação entre produção, resistência ao nematoide Meloidogyne hapla e o sintoma de "vermelhão" em cultivares de morangueiro. Foram realizados dois experimentos, ambos com as cultivares 'Camino Real', 'Festival', 'Oso Grande', 'Albion' e 'Camarosa'. O primeiro experimento foi realizado a campo, onde se avaliaram a produção de morangos, qualidade dos frutos, teores de macro e micronutrientes em frutos e folhas, porcentagem de sobrevivência das plantas, incidência de nematoides, quantidade de ovos nas raízes e juvenis no solo e a incidência de Botrytis cinerea. No segundo experimento, os morangueiros foram transplantados em vasos e preenchidos com substrato comercial a base de casca de pinus. Metade dos vasos foi inoculada com Meloidogyne hapla. As cultivares apresentaram diferenças na produção de frutos e também na incidência de "vermelhão". O menor desempenho produtivo relaciona-se com a alta incidência de nematoide Meloidogyne hapla. 'Oso Grande' e 'Albion' se comportaram como resistentes ao nematoide. Foi possível relacionar a incidência de nematoide Meloidogyne hapla com a de "vermelhão" apenas na cultivar 'Camino Real'.

ABSTRACT

At the end of the production period of strawberries grown in subtropical regions, postharvest durability is severely diminished due to rising temperatures which compromises the commercialization of fresh fruit. An ideal option would be to process strawberries in the form of preserves, jams, and jellies. Along this line it becomes extremely important to conduct a survey of which cultivars grown in subtropical regions are more suitable for processing in the form of jelly, as well as to understand what the consumer profile is for this product. The objective of this study was to evaluate the influence of different strawberry cultivars grown in subtropical regions of Brazil (Camarosa, Festival, San Andreas, Oso Grande, Camino Real, and Albion) on the physicochemical characteristics, rheological properties and sensory acceptance of the resulting jelly in order to identify cultivars with the greatest potential for industrial use. The strawberry cultivars presented different physicochemical characteristics which resulted in jellies with different physicochemical and rheological characteristics. In this study, however, we verified that all cultivars have potential to be processed in the form of jelly due to good acceptance of all formulations prepared. In general consumers prefer a lighter-colored strawberry jelly, with a less intense red color, more acidic, and less consistent/firm.

Framboesa é uma pequena fruta de grande importância econômica, que contém numerosos compostos fenólicos, com potenciais benéficos à saúde, porém, quando cultivada em regiões subtropicais possui baixa produtividade. Objetivou-se, neste trabalho, avaliar a produtividade de framboeseiras 'Batum', produzidas com ou sem cobertura plástica sobre o dossel das plantas, em duas densidades de plantio, sendo 0,25m e 0,5m entre plantas e 3,0m entre linhas e avaliadas por dois ciclos de produção (2012/13 e 2013/14), em região subtropical. O delineamento experimental adotado foi em blocos ao acaso, em esquema fatorial 2x2x2, com 6 blocos e 10 plantas por parcela. Foram avaliadas as características produtivas como número de frutos por planta, produção por planta e produtividade estimada. Além disso, foram demarcados os índices fenológicos, análises vegetativas e fisiológicas. O menor espaçamento de plantio entre as plantas (0,25m) e o plantio sem cobertura plástica sobre o dossel das plantas resultaram em maior produtividade das framboseiras 'Batum'.


Raspberry is an economically important berry crop, its fruit contains numerous phenolic compounds with potential health benefits, however ver, in subtropical areas has been low production. The objective of this study was to evaluate the productivity of raspberry 'Batum' produced with or without plastic cover over the plant canopy and two planting densities, being 0.25m and 0.5m between plants and 3.0m between rows and cycles (2012/13 and 2013/14), in subtropical area. The experimental design was randomized blocks, factorial 2x2x2 with 6 blocks and 10 plants per plot. It was evaluated the productive plant characteristics such as number of fruits per plant, production per plant and productivity estimated. Moreover,phenological data, vegetative and physiologic analysis. The planting densities at 0.25m between plants and without plastic cover over the plant canopy result in increased productivity of raspberry 'Batum'.

ABSTRACT

The objective of this research was to verify the potential rhizogenic stem cuttings and root of raspberry (Rubus idaeus L.). Cuttings of 'Batum' cultivar was stored cold (4°C) for 10, 20 and 30 days, and a control without storage. Subsequently, the cuttings were treated with indolebutyric acid (IBA) at 0, 1000, 2000, 3000 and 4000mg L-1 and root cuttings with benzylaminopurine (BAP) at 0, 300, 600, 900, 1200 and 1500mg L-1 by 10 seconds. The cuttings were buried in 2/3 of its length in the vertical position, and root was completely buried in the horizontal position at three inches deep. It was used vermiculite medium as substrate, and these experiments were conducted in a greenhouse with 50% shading. Evaluations were made ​​75 days after planting the cuttings. It was concluded that the use of cuttings is not feasible and that the root cuttings need not be stimulated by cold storage or treatment with BAP.


O objetivo deste trabalho foi verificar o potencial rizogênico de estacas caulinares e radiculares da framboeseira (Rubus idaeus L.). Estacas da cultivar 'Batum' foram armazenadas a frio (4ºC) por 10, 20 e 30 dias, além do controle sem armazenamento. Posteriormente, as estacas caulinares foram tratadas com ácido indolilbutírico (AIB) a 0, 1000, 2000, 3000 e 4000mg L-1 e as estacas radiculares com benzilaminopurina (BAP) a 0, 300, 600, 900, 1200 e 1500mg L-1 por 10s. As estacas caulinares foram enterradas em 2/3 de seu comprimento, na posição vertical e as radiculares foram totalmente enterradas na posição horizontal, a três centímetros de profundidade. Utilizou-se vermiculita de grânulos médios como substrato, e estes experimentos foram conduzidos sob telado com sombreamento de 50%. As avaliações foram feitas após 75 dias do plantio das estacas. Concluiu-se que o uso de estacas caulinares não é viável e que as estacas radiculares não necessitam ser estimuladas pelo armazenamento a frio ou do tratamento com BAP.

O cultivo de amoras está amplamente difundido em zonas temperadas, porém, algumas cultivares são de baixa necessidade em frio e podem ser exploradas em locais com temperaturas mais elevadas. Assim, objetivou-se, com o presente trabalho, avaliar a produção de amoras-pretas e amora-vermelha na região de Lavras-MG (clima Cwb). O delineamento experimental foi em blocos ao acaso, com quatro blocos e onze tratamentos (cultivares de amoreiras-pretas 'Arapaho', 'Xavante', 'Ébano', 'Comanche', 'Caingangue', 'Choctaw', 'Tupy', 'Guarani', 'Brazos', 'Cherokee' e a amoreira-vermelha, espécie nativa do Brasil). Em cada parcela, foram coletados dados fenológicos e produtivos no ciclo de produção 2010/11 e 2011/12, além da caracterização físico-química dos frutos. As cultivares de amoreira-preta apresentaram ciclo produtivo entre 66 e 133 dias, com colheitas se iniciando em setembro e se estendendo até janeiro; e a amoreira-vermelha com ciclo produtivo de 283 dias. 'Brazos' apresentou a maior produtividade estimada. As cultivares Brazos e Guarani possibilitaram a produção de frutos de maior massa, enquanto que 'Caingangue', 'Tupy' e 'Choctaw' apresentaram bom equilíbrio entre os sólidos solúveis e acidez. A amoreira-vermelha apresentou elevada produção de frutos (527g por planta no 1o ciclo e 344g por planta no 2o ciclo) e demonstrou-se uma excelente opção para o processamento.


Berries are widespread in temperate zones, but some cultivars have low requirements in cold weather and can be exploited in areas with high temperatures. The goal of this study was to evaluate the production of blackberries and redberry in Lavras (climate Cwb). The experimental design was in randomized blocks with four replications and eleven treatments ('Arapaho', 'Xavante', 'Ébano', 'Comanche', 'Caingangue', 'Choctaw', 'Tupy', 'Guarani', 'Brazos' and 'Cherokee' blackberry cultivars and the redberry, native from Brazil). In each experimental plot it was evaluated phonological data, production data during 2010/11 and 2011/12 and physicochemical fruit characteristics. The blackberry cultivars have production cycle between 66 and 133 days, harvest period starting in September until January, and redberry production cycle has 283 days. 'Brazos' presented the highest estimated yield (kg ha-1). Brazos and Guarani cultivars enabled the production of higher fruit mass, while 'Caingangue', 'Tupy' and 'Choctaw' presented a good balance between soluble solids content and titratable acidity. The redberry had a high fruit production (527g per plant on 1st cycle and 344g per plant on 2nd cycle) and showed to be an excellent choice for processing.

Objetivou-se avaliar o desempenho produtivo e a qualidade pós-colheita de cultivares de pereira nas condições subtropicais da região leste paulista. Para tanto, um ensaio de competição de cultivares foi implantado no município de Jundiaí-SP, com cinco cultivares ('Centenária', 'Triunfo', 'Primorosa', 'Seleta' e 'Tenra'). O experimento foi implantado em 2007, no espaçamento de 3,0mx4,0m, com mudas enxertadas no porta-enxerto Pyrus calleryana. As avaliações foram realizadas em três ciclos vegetativos (2009/10, 2010/11 e 2011/12), analisando-se os aspectos fenológicos, produtivos e a qualidade pós-colheita das frutas. A pereira 'Tenra' apresentou a maior produção, com 6kg de frutos por planta. As cultivares estudadas produziram frutas com coloração típica e firmeza aceitável, porém pouco doces.


This research aimed to evaluate the production and postharvest quality of pear tree cultivars in subtropical conditions at eastern of São Paulo state. For such, an assay of competition among cultivars was implanted in the Jundiaí city-SP, with five cultivars ('Centenária', 'Triunfo', 'Primorosa', 'Seleta' and 'Tenra'). The experiment was implanted in 2007, the spacing was of 3.0mx4.0m, and the plants were grafting in Pyrus calleryana. The evaluations had been carried through in three vegetative cycle (2009/10, 2010/11 and 2011/12), the phenological stage, productive aspects and fruit postharvest quality were evaluated. The pear 'Tenra' presented highest production, with 6kg of fruits per plant. The cultivars produced fruits with typical coloring firmness and acceptable, but slightly sweet.

ABSTRACT

In Brazil, there are numerous blackberry cultivars under cultivation, however, only a few cultivars, such as the Guarani, are displayed/used for processing. In this context the aim of this work was to study the effects of different Brazilian blackberry cultivars (Guarani, Brazos, Comanche, Tupy, Cherokee, Caingangue, and Choctaw) on the physicochemical characteristics, texture profiles and the consumer acceptance of the resulting jelly to identify the potential use of these cultivars in the jelly industry. It is feasible to produce blackberry jellies with the Tupy, Comanche, Brazos, Guarani, and Choctaw cultivars because these jellies demonstrated good acceptability combined with good productivity. Consumers were shown to have a preference for a less adhesive, more acidic jelly. This study provides a useful insight about the Brazilian blackberry cultivar potential in jelly processing.

ABSTRACT

This study aimed to evaluate the chemical composition, identify the bioactive compounds and measure the antioxidant activity present in blackberry, red raspberry, strawberry, sweet cherry and blueberry fruits produced in the subtropical areas of Brazil and to verify that the chemical properties of these fruit are similar when compared to the temperate production zones. Compared with berries and cherries grown in temperate climates, the centesimal composition and physical chemical characteristics found in the Brazilian berries and cherries are in agreement with data from the literature. For the mineral composition, the analyzed fruits presented lower concentrations of P, K, Ca, Mg and Zn and higher levels of Fe. The values found for the bioactive compounds generally fit the ranges reported in the literature with minor differences. The greatest difference was found in relation to ascorbic acid, as all fruits analyzed showed levels well above those found in the literature.
