ABSTRACT

The oil extracted from baru (Dipteryx alata Vog.) seeds is in bioactive compounds and it presents potential to be used in food and cosmetic industries. Therefore, this study aims to provide insights into the stability of baru oil-in-water (O/W) nanoemulsions. For this purpose, the effects of the ionic strength (0, 100 and 200 mM), pH (6, 7 and 8), and storage time (28 days) on the kinetic stability of these colloidal dispersions were evaluated. The nanoemulsions were characterized in terms of interfacial properties, rheology, zeta potential (ζ), average droplet diameter, polydispersity index (PDI), microstructure, and creaming index. In general, for samples, the equilibrium interfacial tension ranged from 1.21 to 3.4 mN.m-1, and the interfacial layer presented an elastic behavior with low dilatational viscoelasticity. Results show that the nanoemulsions present a Newtonian flow behavior, with a viscosity ranging from 1.99 to 2.39 mPa.s. The nanoemulsions presented an average diameter of 237-315 nm with a low polydispersity index (<0.39), and a ζ-potential ranging from 39.4 to 50.3 mV after 28 days of storage at 25 °C. The results obtained for the ζ-potential suggest strong electrostatic repulsions between the droplets, which is an indicative of relative kinetic stability. In fact, macroscopically, all the nanoemulsions were relatively stable after 28 days of storage, except the nanoemulsions added with NaCl. Nanoemulsions produced with baru oil present a great potential to be used in the food, cosmetic, and pharmaceutical industries.

Esta pesquisa teve como objetivos verificar a eficiência dos processos de higienização de tanques de granelização de três propriedades rurais (A, B e C) no município de Rio Pomba - Minas Gerais e implantar procedimentos padrão de higiene operacional (PPHO) para higienização dos tanques. Para verificação das condições de higienização, foi coletada em triplicada amostras de três locais dos tanques pela da técnica de swab, delimitando uma área de 50 cm² e analisado o grau de contaminação por mesófilos aeróbios e coliformes totais e termotolerantes. Após análise, foi implantado PPHO para higiene dos tanques e mãos dos responsáveis pela higienização dos tanques nas propriedades. Após, fez-se novamente análise do tanque para verificar a eficiência do PPHO implantado. Verificou-se que após a implantação do PPHO, o tanque do produtor A obteve uma redução de até quatro ciclos logarítmicos para os grupos de micro-organismos mesofilos aeróbios e cerca de 3 e 2 ciclos para coliformes totais e termotolerantes, respectivamente. Os tanques dos produtores B e C apresentaram baixas contagens de mesófilos e coliformes antes e após a implantação do PPHO. Conclui-se que a implantação do PPHO foi satisfatória, contribuindo para uma menor contagem de micro-organismos aderidos ao tanque do produtor A.


This research had as objectives to verify the efficiency of the sanitation processes of expansion tanks of three rural properties (A, B and C) in the municipality of Rio Pomba - Minas Gerais and to implement standard procedures of operational hygiene (PPHO) to sanitize tanks. ln order to verify the hygienization conditions, samples of three tanks locations were collected in triplicate using the swab technique, delimiting an area of 50 cm² and analyzing the degree of contamination by total and thermotolerant aerobic and total coliforms. After analysis, PPHO was implanted for hygiene of the tanks and hands of those responsible for the hygiene of the tanks in the properties. Afterwards, the tank was again analyzed to verify the efficiency of the implanted PPHO. lt was verified that after the implantation of the PPHO, the tank of producer A obtained a reduction of up to four logarithmic cycles for the groups of aerobic mesophilic microorganisms and about 3 and 2 cycles for total and thermotolerant coliforms, respectively. The tanks of producers B and C showed low counts of mesophiles and coliforms before and after PPHO implantation. lt is concluded that the implantation of the PPHO was satisfactory, contributing to a lower count of microorganisms adhered to the tank of the producer A.
