ABSTRACT

A simple method to determine potential danger of nitrates by ascorbic acid containing in plant products is designed. The ascorbatic index (content of ascorbic acid/content of nitrates) is calculated for some products. The higher is the value of the index, the more potent is the action of the ascorbic acid and the less harmful is the effect of nitrates in the plant to human body.

ABSTRACT

320 persons were tested on the nitrate content in saliva. In experiments were accounted the profession, age, sex, particularities of nourishment, drinking water, habits, diseases, taking medicines, vitamins, contact with toxic substances and so on (29 parameters). The average level of nitrates in saliva of estonians is 4.9 +/- 0.3 mg/l. The purity of teeth has the most significant influence on the nitrate content in saliva.

ABSTRACT

The study assessed excretion of nitrates in urine and saliva and that of nitrites with saliva of patients suffering gastric and duodenal ulcer. In both study groups, a positive correlation was established between nitrate concentration in saliva, on the one hand, and that in urine, and nitrite level in urine, on the other. The groups failed to show a difference in nitrate concentrations in either urine or saliva. Since retention of nitrates in the body of chronic gastritis patients held as precancer of the stomach proved no higher than that in patients with duodenal ulcer, the authors cast doubt on endogenous nitroso compounds as a cause of gastric cancer in cases of chronic gastritis.

ABSTRACT

Comparison of the evidence on the content of nitrates and ascorbic acid in vegetables and fruits shows that the content of ascorbic acid in fruits exceeds that of nitrates whereas in a number of vegetables the nitrate content is greater than that of ascorbic acid. With increase in the amount of nitrogen fertilizers introduced, the content of nitrates in vegetables grows more intensively as compared to ascorbic acid. The range of these variations is relative to the type and grade of vegetables. During the storage of beet and cabbage the decreased content of ascorbic acid correlated well with the amount of nitrogen-containing mineral fertilizers introduced. It is recommended that fruits and berries be used first of all as a source of ascorbic acid, while rhubarb, fall radish and salad be restricted in the diet.
