ABSTRACT

The aim of the study was to determine the profile of bioactive compounds in cocoa residues (mucilage and bean shells), and to evaluate their antioxidant activity in two cocoa varieties, Nacional X Trinitario type (Fine Aroma) and the variety CCN-51. The extraction of phytonutrients from the residues was carried out selectively. The characterization and quantification of the total polyphenol content (TPC), and the total flavonoid content (TFC) were determined by UV-VIS spectrophotometry. High-performance liquid chromatography (HPLC) was used to determine the phenolic profile and methylxanthines. The antioxidant activity was evaluated by the methods of 2-azinobis (3-ethyl-benzothiazoline-6-sulfonic acid) cation bleaching (ABTS), ferric-reducing antioxidant power (FRAP) and oxygen radical absorbance capacity (ORAC). The exudate mucilage samples from Nacional X Trinitario-type cocoa presented the highest content of TPC 105.08 mg gallic acid equivalents (GAE)/100 mL, TFC 36.80 mg catechin equivalents (CE)/100 mL, catechin (CAT) 35.44 mg/g, procyanidins (PCB2: 35.10; PCB1: 25.68; PCC1: 16.83 mg/L), epicatechin (EPI) 13.71 mg/L, caffeine (CAF) 0.90% and theobromine (TBR) 2.65%. In the cocoa bean shell, the variety CCN-51 presented a higher content of TPC (42.17 mg GAE/100 g) and TFC (20.57 mg CE/100 g). However, CAT (16.16 mg/g), CAF (0.35%) and TBR (1.28%) were higher in the Nacional X Trinitario cocoa type. The EPI presented no significant differences between the two samples studied (0.83 and 0.84 mg/g). The antioxidant activity values (ABTS, FRAP and ORAC methods) were higher in the samples of CCN-51 than in the Nacional X Trinitario type. The bean shell samples presented antioxidant values of 171.32, 192.22 and 56.87 mg Trolox equivalents (TE)/g, respectively, and the bean shell samples presented antioxidant values of 167.06, 160.06 and 52.53 mg TE/g, respectively. The antioxidant activity (ABTS, FRAP and ORAC) of the residues was correlated with the bioactive compounds of the mucilage and bean shells, showing a strong positive correlation (<0.99) with the procyanidins (B1, B2 and C1), EPI and CAT and a positive/moderate correlation (0.94) with methylxanthines.

ABSTRACT

Avocado demand has increased in recent years due to the nutraceutical properties that this fruit has and its positive impacts on human health; however, avocado production also requires sustainable alternatives to improve its cultivation. The objective of this study was to carry out characterization of the mineral content and phytochemical compounds in avocado fruit of the Hass variety grown using sustainable agricultural practices in Ecuador. Our results show an increase in fruit quality traits, such as firmness, and in the content of soluble solids, protein, fiber, fat, carotenoids, Ca, Mg, Zn and stearic acid in the pulp of the avocado Hass variety, as well as an initial trend of yield increase with the application of sustainable practices. Moreover, antioxidant activity was associated with polyphenol content. There were positive correlations of Mg with K and Ca, and of flavonoids with linolelaidic, linoleic and linolenic acids. Overall, our results indicate that avocado can be used as a functional and nutritional food due to its phytochemical composition and the mineral content of its pulp, which contributes to the promotion of its consumption and encourages healthy eating. In addition, the use of sustainable practices, such as fertigation and the application of microorganisms, is also promoted for growing avocado.

ABSTRACT

There are several species of passion fruit grown in South America. However, there is a lack of information about the mineral content in their pulp. Thus, the objective of the present research was to determine the mineral content in the pulp of different germplasms of passion fruit [Passiflora edulis f. flavicarpa (INIAP 2009 and P10), P. alata (Sweet passion fruit), P. edulis f. edulis (Gulupa) and Passiflora sp. (Criollo POR1 and Criollo PICH1)] grown in Ecuador and to determine their relationship with relevant fruit quality traits. The results showed that high Mg content was associated with less peel thickness, soluble solids was negatively related to K and B content, and vitamin C was negatively related to S content. INIAP 2009 had high titratable acidity and fruit weight but low N and Na; P10 showed the highest contents of N, K, Na, Mn and fruit weight but less P, Mg, and Fe; sweet passion fruit showed high S, Zn, Cu, soluble solids, and peel thickness but low K, Ca, B, and titratable acidity; Gulupa had high Mg, B, and Zn but low S, Fe, and Mn; Criollo POR1 showed high N and Fe but low Zn; and Criollo PICH1 showed high P, Ca, Mg, and Cu but low soluble solids and peel thickness. These results provide additional information on passion fruit germplasm grown in Ecuador and constitutes a reference for further breeding programs.

ABSTRACT

Tree tomato (Solanum betaceum Cav.) is an Andean fruit crop that is grown in Ecuador. It is an exceptional source of minerals and vitamins, thus has nutraceutical properties. The objective of this research was to carry out a phytochemical characterization of a breeding population composed of 90 segregants. Pulp (including mesocarp, mucilage, seeds and placenta) was ground and sieved in order to obtain the liquid pulp to be lyophilized for the chemical analyzes. Antioxidants compounds were determined by spectrophotometry and vitamin C by reflectometry. Data were analyzed by principal components, grouping, and variance analyses; in addition, Z Score estimation was carried out to select elite individuals. There was a broad variability in the data obtained for the breeding population, polyphenol content varied from 5.11 to 16.59 mg GAE g-1, flavonoids from 1.24 to 6.70 mg cat g-1, carotenoids from 50.39 to 460.72 µg ß-carotene g-1, anthocyanins from 1.06 to 240.49 mg cy-3-glu 100 g-1, antioxidant capacity from 49.51 to 312.30 µm Trolox g-1, and vitamin C from 78.29 to 420.16 mg 100 g-1. It can be concluded that tree tomato is a good source of beneficial biocompounds and has a high antioxidant capacity.

ABSTRACT

Tropical fruits are in high demand for their flavor and for their functional composition because these compounds are considered nutraceuticals. Passion fruit production is of economic importance to Ecuador; however, several Passiflora species are grown and each has to be analyzed to identify their phytochemical composition. In this study, the polyphenol, flavonoid, carotenoid, vitamin C, sugar and organic acid contents were determined. Six different Passiflora spp. germplasms were analyzed, coming from Passiflora edulis f. flavicarpa, Passiflora alata, Passiflora edulis f. edulis and unidentified Passiflora species (local germplasm). Measurement techniques included reflectometry for vitamin C, spectrophotometry for antioxidant compounds and HPLC for sugars and organic acids. Data were analyzed by principal component analysis, correlation and analysis of variance. Results showed that INIAP 2009 and P10 showed a high amount of polyphenols, antioxidant activity and citric content. Sweet passion fruit had the lowest vitamin C content while Gulupa showed the highest content. In terms of the local germplasm, POR1 showed the lowest content of flavonoids while PICH1 had high flavonoid and carotenoid content. Polyphenols were the main compounds that influenced antioxidant activity. This phytochemical information adds value to passion fruit as a nutraceutical source.

ABSTRACT

Cocoa presents a high fat content and a unique fatty acid profile defining its technological and nutritional properties. This study evaluated the fat content and fatty acid composition of Nacional cocoas, a worldwide recognised "fine" variety, collected in 85 Ecuadorian farms while taking into account 3 geographical levels (region, province, and canton). The total fat content varied from 45.61 ± 1.27 to 52.13 ± 0.58 g/100 g DW and was higher in the provinces and cantons from the Amazonian region than in those from the Pacific Coast region. A remarkable effect of the region and the province was shown on the content of individual fatty acids of Nacional cocoa beans. Total amounts of saturated and unsaturated fatty acids also depended on the growing area. Multivariate analysis provided a comprehensive assessment of the cocoa fat composition according to the origin, which may be useful for the selection of cocoas with specific technological and nutritional characteristics.

ABSTRACT

Andean blackberries (Rubus glaucus Benth) are fruits rich in phytocomponents with high antioxidant activity. In this work, the changes in the total polyphenol content (TPC), the total flavonoid content (TFC), and the total anthocyanin content (TAC) of four blackberry varieties at three maturity stages (E1-25%, E2-50%, and E3-100%) were measured. The antioxidant activity (AA) was evaluated using the 2,2'azinobis-(3-ethylbenzthiazolin 6-sulphonic acid (ABTS) and ferric reducing antioxidant power (FRAP) methods. TPC and TFC content decreased with the increase in the maturity stage. The blackberry Brazos cultivar presented TPC values of 51.26, 38.16, and 31.59 mg of gallic acid equivalents (GAE)/g dry weight (DW) at E1, E2, and E3, respectively. The TAC and soluble solids increased with the increase in the maturity stage of the fruits. The Andimora variety at E3 presented a high TPC content, and the Colombiana variety presented a high TFC content. The blackberry Colombiana cultivar presented TAC values of 1.40, 2.95, and 12.26 mg cy-3-glu/100g DW at E1, E2, and E3, respectively. The blackberry Colombiana cultivar presented a high AA value at 1278.63 µmol TE/g DW according to the ABTS method and 1284.55 µmol TE/g DW according to the FRAP method. The TPC and TFC showed a high correlation with the AA according to the ABTS and the FRAP methods. The Pearson correlation between the TFC and AA/ABTS has a value of r = 0.92. The TFC and AA/FRAP present a value of r = 0.94.

Crop productivity and food quality are affected by environmental conditions. The objective of this work was to evaluate the effect of the environment on the concentration of phytochemical components in several potato (Solanum tuberosum) cultivars. The content of vitamin C (ascorbic acid, AA), the total carotenoids content (TCC), the total polyphenols content (TPC), and the total anthocyanins content (TAC) of 11 potatoes varieties grown in Ecuador (Cutuglahua, Pujilí, and Pilahuín) was measured by the spectrophotometric method. The antioxidant capacity (AC) of potato cultivars was evaluated by the ABTS method. The AA concentration ranged between 12.67 to 39.49 mg/100g fresh weight (FW), the TCC ranged between 50.00 and 1043.50 µg/100g FW, the TPC ranged between 0.41 and 3.25 g of gallic acid equivalents (GAE)/kg dry weight (DW), the TAC ranged between 2.74 and 172.53 µg/g FW and finally the AC ranged between 36.80 and 789.19 µg of trolox equivalents (TE)/g FW. Genotypes (G), location (L), and interaction (G x L) were significant at p < 0.01. The genotype (G) showed a greater variation in the phytochemical contents. AA and TPC showed the highest correlation with the AC. A selection of genotypes with these characteristics can be used to develop germplasms with a high AC.

ABSTRACT

Anthocyanins, carotenoids and polyphenols are biomolecules that give the characteristic color to fruits. Carotenoids relate to yellow, orange and red colors whereas anthocyanins and polyphenols mainly relate to purple and red colors. Presently, standard determination of antioxidants is carried out using relatively complex methods and techniques. The aim of this study was to develop a mathematical prediction model to relate the internal color parameters of the Amazonic fruits araza (Eugenia stipitata Mc Vaugh), Andean fruit blackberry (Rubus glaucus Benth), Andean blueberry (Vaccinium floribundum Kunth), goldenberry (Physalis peruviana L.), naranjilla (Solanum quitoense Lam.), and tamarillo (Solanum betaceum Cav.) to their respective anthocyanins, carotenoids and polyphenols contents. The mathematical model was effective in predicting the total anthocyanins content (TAC), the total carotenoids content (TCC) and finally the total phenolic content (TPC) of fruits assayed. Andean blueberry presented a TPC with an experimental value of 7254.62 (mg GAE/100 g sample) with respect to a TPC prediction value of 7315.73 (mg GAE/100 g sample). Andean blackberry presented a TAC with an experimental value of 1416.69 (mg chloride cyanidin 3-glucoside/100 g) with respect to a prediction TAC value of 1413 (mg chloride cyanidin 3-glucoside/100 g).

ABSTRACT

Flavan-3-ols were successfully extracted from cocoa by the Fast-Prep device and analyzed by HPLC-DAD, and their identifications were confirmed by injection of authentic standards. (-)-Epicatechin was the most abundant component with an average of 9.4 mg/g dried cocoa powder. More than 700 cocoa samples were used to calibrate the NIRS. An efficient calibration model was developed to accurately determine any flavan-3-ol compound of ground dried cocoa beans (SEP = 2.33 mg/g in the case of total flavan-3-ols). This performance enabled NIRS to be used as an efficient and easy-to-use tool for estimating the level of targeted compounds. The analysis of the PLS loadings of the model and pure epicatechin spectra gave proof that NIRS was calibrated on an indirect strong correlation resulting in the changes in flavan-3-ols during fermentation and their interaction with some major components, such as proteins. Total flavan-3-ol concentration fell from an average of 33.3 mg/g for unfermented samples to an average of 6.2 mg/g at the end of fermentation. Changes in flavan-3-ol content were dependent upon the origin and highly correlated to the fermentation level expressed as the sum of temperatures (average R(2) = 0.74), a good marker of the fermentation process and of the heterogeneity of the batch.

ABSTRACT

Expone un estudio del estado nutricional de los infantes escolares de la ciudad de Sangolquí, perteneciente al Cantón Rumiñahui en la Provincia de Pichincha, en el lapso de oct. de 1996 a may. 1997, en 7 escuelas fiscales (estatales) y con los alumnos pertenecientes a los primeros y sextos grados, los mismos que correspondían a los grupos etáreos de 6 a 7 años y de 11 a 12 años, respectivamente. Como materiales se utilizaron una báscula con tallímetro, cinta métrica de acuerdo a las normas del INEN y como parámetros antropométricos susceptibles de medida, el peso y la talla, los mismos que se compararon con las tablas de crecimiento de la OMS. OPS. como patrones referenciales. En conclusión encontramoos que de 1806 escolares estudiados, 710 tenían algún grado de desnutrición, es decir el 65.38 por ciento del total, lo cual nos permite concluir la lamentable y preocupante situación nutricional de la población infantil de nuestro país, y nos permite realizar ciertas recomendaciones para mejorar dicha situación a mediano y/o largo plazo...

ABSTRACT

Esta breve revisión habla sobre el manejo del estatus epiléptico (EE) en la Sala de Emergencia. Se toma como tema central los aspectos farmacológicos en el tratamiento. Se define como EE como un episodio de continua actividad convulsiva que dura más de 30 minutos, aún cuando el estado de conciencia esté preservado. Se recomienda usar 2 mg/min de diazepam en 50 ml de dextrosa al 50 por ciento; luego feitoína 20 mg/kg.
