ABSTRACT

The analysis on the role of major nutrients (proteins, fats and carbohydrates), micronutrients (vitamins and minerals) in a diet of sportsmen is adduced. Requirements for nutrients depend on the volume and intensity of physical exertion during training and competition, not only on the qualifications of sportsmen.

ABSTRACT

Daily inclusion in the diet of Pskov GRES workers the drinks or kissels containing 2 g pectin per daily serving (cup) during 6 months was accompanied by a statistically significant decline of their supply with vitamins C, B2, A and beta-carotene. This is reflected both in reducing the average vitamin concentration in blood serum and in the increase of the quota of people with deficiency of several vitamins. Additional inclusion of 13 vitamins in these drinks and kissels, in a dose about 80% of the RDA, has prevented the deterioration of vitamin status.

ABSTRACT

In the review the analysis of the existing in world practice normative documents that regulate the addition of vitamins and minerals to foods and the substantiation of their level in fortified foodstuffs have been presented. The degree of foodstuffs enrichment with micronutrients (mass or volume of foods containing from 15 to 50 per cent from daily recommended allowance) has been proposed.

ABSTRACT

Influence of different iron compounds at combined vitamin fortification on hygienic and biochemical properties of freshly grounded first-class wheat flour under storage was studied. It proved, that more intensive oxidative and hydrolytic processes take place in the lipid complex of the flour, fortified with ferrous sulfate heptahydrate.

ABSTRACT

The estimation of the contribution of foodstuff in security of the population of the Russian Federation by vitamin C in view of volumes of their consumption is lead. It is shown, that the basic sources of vitamin, borrowing in the general structure of consumption of foodstuff about 30%, do not provide sufficient volume its receipt. The real maintenance of vitamin C certain by standard analytical methods in some fruit-and-vegetable cultures, shows significant variability and difference from the given official tables of a chemical compound. The lack of the micronutrient is expedient to compensate by inclusion of biologically active additives to food or enriched foodstuff in a diet.

ABSTRACT

One of the effective ways of normalization of micronutrients deficiency (vitamins, mineral substances etc.) for children and adult population--use of the specialized foodstuffs enriched with essential food substances in a daily diet is considered in the paper. On the basis of the analysis of foreign experience and the data accumulated as a result of performance of some state scientific and technical programs and the major projects of the Ministry of Science, Industry and Technologies of the Russian Federation, the basic scientific principles of enrichment of foodstuffs with vitamins and mineral substances are considered. In view of these principles the wide range of products of preventive purpose is developed: bakery, confectionery products, grain concentrates, dry mixes for preparation of the beverages, enriched with vitamins and some mineral substances (iron, calcium, magnesium). Large-scale clinical approbation of the developed products on various groups of the population (children of preschool and school age, pregnant women, workers of hard trades, patients with hypertonic disease, diabetes), has shown their efficiency both in the improvement of the vitamin status of surveyed and some therapeutic parameters. Circulars, instruction on application, methodical recommendations are developed and authorized.

Safety of beta-carotene in sterilized dairy products under different methods of sterilization, keeping conditions, packing and food form of carotene has been investigated. The standard documentation on sterilized milk "Provita" with different level of fat and content of beta-carotene (0.25 mg/100 g) has been developed.

ABSTRACT

Concentrations of vitamins C, A, E, B2, B6 and carotinoids were measured in patients with non-insulin-dependent diabetes mellitus (NIDDM). Most of the examinees had deficiency of both group B vitamins and carotinoids, some of the patients were vitamin C deficient. Vitamin-enriched drink Zolotoi shar (Golden Ball) and beta-carotene in oil were included in regular diet of NIDDM and taken for 4 weeks. As a result, supply of the vitamins C and beta-carotene has improved significantly. There was a positive trend in the levels of vitamin B6, while vitamins A and E reached optimal values.

ABSTRACT

Usage of special prophylactic products, such as low caloric vitamins and b-carotene enriched soft drink "Gold Ball", b-carotene oileous solution and salt with low sodium content in patients with insulin independent diabetus resulted in better vitamins and b-carotene provision, decrease of the incidence of hypovitaminosis, improvement of antioxidant status, and was accompanied by the decrease of arterial blood pressure. These data allowed us to recommend wide usage of these products in the diet of patients.

ABSTRACT

The results of clinical trials of efficiency of foods enriched by vitamins and beta-carotene in people suffered from Chernobyl's accident are presented. The level of beta-carotene in clinical diets was the same during trial. Daily consumption of enriched food supplying ingestion of 4-5 mg of beta-carotene increased the level of beta-carotene in serum by 2-4 times. The concentration of total carotenoides in serum was increased by 1.6 times practically at the expense of beta-carotene.

ABSTRACT

Therapeutic action of garlic and garlic's preparations at diseases of vessels and heart, organs of digestion, breachs of lipid exchange and system mycosis was connected with presence of complex of sulfur contain compounds:thiosulfinates, dialkilsulfides, dithiins, adgoens, thioglycosidepeptides. These compounds were picked out from garlic or synthesired rendered corresponding action to blood's properties, metabolism and infection processes in organism. Garlic preparations in composition of products of nutrition can be effective for different system of prophylactice nutrition and dietotherapy. Scientific and technical dataes were essential for preparation of technology of new products from garlic.

ABSTRACT

Norms of inclusion of vitamins (B1; B2; PP) and mineral substances (Ca and Fe) in high and first-rate wheat's flour were defined. Vitamin's contents were verified and composed balance of vitamins and mineral substances contents in different stages of technology process. It was established efficacy of enrichment of wheat's flour with vitamin-mineral mixture to production as fast as possible, particularly in regions of Chernobil's accident and also in regions with ferrum deficiency.
