ABSTRACT

The Amazon rainforest encompasses one of the largest biodiversities of the world and is home to a wide variety of food and therapeutic plants. Due to the diversity of components, the fruits of the Amazon biome possess essential physicochemical, nutritional, and pharmacological properties, strengthening the idea that fruit consumption may provide benefits to human health. Thus, the objective of this study was to investigate the current scenario of the use of Amazonian fruits on the development of food, pharmaceutical, nutraceutical, or cosmetic products through the study of filed patents. A prospecting strategy conducted focusing on patents was used to investigate the application of the following fruits: Euterpe oleracea, Oenocarpus bacaba, Caryocar brasiliense, Garcinia gardneriana, Nephelium lappaceum, and Astrocaryum vulgare. A total of 264 patent documents were found. In 2016, a peak of 33 applications was reached, followed by a peak in 2019 with 32 applications. The study is distributed in three main application areas: cosmetics, pharmaceuticals, and food. The Asian continent was the region with the world leadership in this theme, followed by Brazil. Thus, technological prospection studies can foster investments in translational research to elucidate the effects and properties of Amazonian fruits, which can generate sustainable development of new products with industrial potential.

ABSTRACT

Abstract Maroleiro (Annona crassiflora Mart), belonging to the family of Annonaceae is a typical specie of the Cerrado and has occurred in most states. For fruit characteristics "sui generis", with significant nutritional value. This study aimed to characterize the marolo (Anonna crasiflora Mart) during fruit development, through the evaluation of its proximal and mineral composition. The fruits 2012/2013 season, were picked to 12Km from the city of Itumirim, southern Minas Gerais, in intervals of 20 days from anthesis to maturity, and the first fruits were harvested 60 days after anthesis. The flowering marolo began in late September 2012, with fruiting initially observed at the end of October, with peak production at the end of February and beginning of March 2013 The fruits were harvested in the morning and carried to the laboratory, where followed up the moisture, ether extract, protein, ash, fiber and high sugar fraction beyond mineral quantification of them. During development reductions in moisture content and protein increments of ether extract, crude fiber and high sugar fraction and an oscillation in the mineral along the developmental stages was observed.

ABSTRACT

It was evaluated the physiological aspects of the cagaita (Eugenia dysenterica) development, from anthesis to ripening. The fruits have been subjected to physical and chemical analysis during the fruit life cycle. The total fruit development comprised 37days. There was a steady increase in the total mass of the fruits and significant increase in transverse and longitudinal diameter, adjusting the double sigmoidal behavior in response to changes in the time. From the 23rd DAA, it was observed the beginning of loss of firmness, increase in total and soluble pectin content and a decrease in starch content. It occurred degradation of total chlorophyll and unmasking of carotenoids from 31st days after anthesis. A decrease in pH and, therefore, increase in acidity, low soluble solids content. The sucrose content was extremely low during the cycle. At the end of development, the respiratory and ethylene production peak was observed, suggesting climacteric behavior.

ABSTRACT

O objetivo deste trabalho foi desenvolver bebidas elaboradas com extratos de arroz (quirera, integral parboilizado e integral) com sabores de mamão e maracujá, e estudar as características físico-químicas, sensoriais e microbiológicas. Foram avaliados custo das formulações, aceitabilidade, contagem de bolores e leveduras, contagem de coliformes a 35 °C e a 45 °C, a presença de Salmonella sp e as demais características: composição centesimal, açúcares redutores, fibra alimentar, acidez titulável total, sólidos solúveis e potencial antioxidante. Todas as bebidas podem ser consideradas alimentos funcionais, em função de seus teores de fibra alimentar total. No entanto, na bebida elaborada com o extrato de arroz integral parboilizado foram detectados os maiores teores de fibra alimentar total (2,37 g.100 g-1) e solúvel (1,20 g.100 g-1). A adição de extratos de arroz integral e integral parboilizado tornou a bebida de maracujá e mamão nutricionalmente mais rico em proteínas e lipídios. Todas as bebidas foram aceitas pela população entrevistada com atributo intenção de compra de acima de 90 %, e apresentaram conformidade nos padrões microbiológicos exigidos pela legislação brasileira. ABSTRACT

O objetivo deste estudo foi verificar o efeito de doses específicas do composto 1-metilciclopropeno (1-MCP), após a colheita, nos aspectos fisiológicos e na qualidade físico-química de maçãs Eva durante o armazenamento refrigerado. Após a aplicação dos tratamentos com diferentes doses de 1-MCP (0, 10, 50, 100 e 500mg L-1), os frutos foram armazenados em câmara fria 0,5°C (±0,5) por até 135 dias. O armazenamento refrigerado juntamente com a aplicação de 1-MCP resultou em uma menor produção de etileno, principalmente nos frutos tratados com as doses de 10, 50 e 100mg L-1. O grupo controle perdeu 45% de sua firmeza, enquanto os grupos tratados perderam, em média, 27% de sua firmeza. O parâmetro C de cor identificou frutos com cor mais intensa aos 135 dias de armazenamento e o ângulo Hue mostrou que, quando tratados com as doses de 10 e 50mg L-1, os frutos apresentaram-se mais amarelados, evidenciando melhor ação do 1-MCP em baixas concentrações. Frutos que não foram submetidos aos tratamentos apresentaram maior relação sólidos solúveis e acidez, demonstrando assim maior atividade metabólica.


The objective of this study was to investigate the effect of specific doses of the compound 1-methylcyclopropene (1-MCP), after harvest, on the physiological and physicochemical quality of apples Eva during refrigerated storage. After applying thetreatment with different doses of 1-MCP (0, 10, 50, 100 and 500mg L-1), fruit were stored in cold 0.5°C (±0.5) for up to 135 days. The cold storage with the application of 1-MCP resulted in a lower production of ethylene in fruits treated with doses of 10, 50 and 100mg L-1. The control group lost 45% of its firmness, while the treated groups lost on average 27% of their firmness the parameter C fruit color identified with a more intense color to the 135 days of storage and Hue angle showed that when treated with doses of 10 and 50mg L-1, fruit showed more yellow, evidenced best action of 1-MCP at low concentrations. Fruit that have not undergone the treatments showed a higher ratio of soluble solids and acidity, thus demonstrating increased metabolic activity.

ABSTRACT

This study evaluated the physical and chemical characteristics (moisture, pH, acidity titratable, soluble solidsand color) and lycopene retention in dried tomatoes submitted to different pretreatments. The tomatoes were cut longitudinally and submitted to the osmotic dehydration for 120 minutes. Six osmotic solutions were used with the following concentrations: NaCl 5, NaCl 10, NaCl 5 + sucrose 10, NaCl 10 + sucrose5, sucrose 5, sucrose 10 (w/v), and the osmotic dehydration was conducted with direct application of the solutes (NaCl or mixture of NaCl + sucrose). Soon afterwards the tomatoes were submitted to drying at65°C for 12 hours. The osmo-convective drying promoted an increase in the level of soluble solids, titratable acidity and reduction of the pH, except for the sucrose solutions, that did not alter the pH of the tomatoes.The ternary solution (NaCl + sucrose), binary (NaCl 10) and the direct application of the solutes promoted significant moisture reduction in relation to the control. The osmotic solutions only containing sucrose or NaCl 5 presented lycopene retention significantly superior to the other treatments. The use of the osmotic dehydration as pretreatment for drying of the tomato can contribute to accelerate the drying process and to preserve the tomato lycopene level.
