ABSTRACT

The contents and production technology of new dry milk product "Femilak-2" were elaborated by Institute of Nutrition of Russia's Academy of Medical Science in collaboration with company "Nutritec". This product, enriched by essential amino acid taurine is intended for correction of dietary intake of lactating women (TU 92 11371 113 4 92). This special product is produced by Balta's (Ukraine) and Volkovyssk's (Byelarus) tinned dairy food factories. The method of introduction of taufon preparation in product and safe keeping of taurine during "Femilak-2"' production and storage are presented.

ABSTRACT

The distribution of nitrate and nitrite ions between the equilibrium phases in the two-phase water--fat-free milk proteins--polysaccharide system has been studied. The partition coefficient was independent of the structure of the polysaccharide used (pectin, sodium salt of carboxymethylcellulose), its concentration, ionic strength of the solution and temperature, and was equal to 1.20 +/- 0.05. This can be explained by the absence of interactions between nitrate and nitrite ions and bipolymeric components of the system. The deviation of the Kd value from unit may be due to the different proportion of the solvent, water in the phases. The partition coefficient calculated with regard to this proportion was close to unit (1.06 +/- 0.05).

ABSTRACT

Yeast autolysis and hydrolysate composition were studied with respect to the autolysis of baker's pressed yeast. A method of isolating a mixture of amino acids and lower peptides from autolysates was developed, using ion-exchange resins. The above compounds reached maximum accumulation by the 15-20th hour of autolysis. A mixture of amino acids applicable to nutrition, including dietotherapy, was prepared.

ABSTRACT

The content of essential amino acids in the total rice protein and its fractions was determined; the degree to which the in vitro protein and starch are liable to be charged by enzymes was studied and also the biological value of the total protein and its fractions underwent appraisal by using the Tetrahymena pyriformis W. as a test organism. As to the amino acids content the protein fractions differ from one another, with lysine level in albumin amounting to 4.07, globulin--2.46, prolamine--0.88 and gluteline--3.15 per cent. Because of a low prolamine content of 1.9 per cent, the biological value of rice is greater than that of other cereals. Following heat treatment the lysine and methionine levels go down by 7 and 6 per cent, respectively, while the degree of the proteins and starch hydrolysis---increases. The hydrolysis of starch forming part of the milled rice results in a greater accessibility of proteins to the action of proteolytic enzymes. The relative nutritional value correlates with the lysine content.
